Volatile flavor compounds of 3 commercial products of black onion extract (produced in Changnyeong, Muan and Jeungpyeong) purchased in the online/offline markets were analyzed. A total of 51 compounds were detected in samples by solid phase microextraction (SPME)/GC/MSD, consisting mainly of carbonyl compounds (15), sulfur-containing compounds (8), aromatic compounds (6), furans (6), nitrogen-containing compounds (3), alcohols (2), acids (2) and miscellaneous compounds (10). Among carbonyls, 4 compounds including 2-methylbutanal, 3-methylbutanal, nonanal and benzaldehyde were detected in all samples, while two sulfur containing compounds, dimethyl disulfide and dimethyl trisulfide, were detected in high amounts and considered to be key flavors in black onion extracts. Particularly, thiophenes and 3 sulfur containing compounds (methylpropyl disulfide, methyl-(Z)-propenyl disulfide and methyl-(E)-propenyl disulfide) were detected only in two products. With acetic acid, furfural and pyrazines that formed through Maillard reaction during black onion aging were detected in high amounts in all samples. This also contributed to characteristic flavors such as roasted, sweet, and sour, in the flavor of black onion extracts.
The antioxidant activities of hot water extracts from fresh, red and black garlic processed in low temperatures were compared. The chromaticity value of browning garlic was between that of fresh and black garlic. Red garlic was similar in browning intensity to fresh garlic. Also, total phenol, flavonoids, total pyruvate and thiosulfate contents were similar between fresh and black garlic. DPPH, ABTs, NO radical scavenging activity and reducing power of red garlic were significantly higher than fresh garlic, but lower than those of black garlic. $\alpha$-Glucosidase inhibitory activity in red garlic was similar to that in black garlic. Antioxidant activities of red garlic were higher than fresh garlic but lower than black garlic, and it was confirmed that antioxidant activity by production of browning material through the thermal process was the main parameter of the biological activity in the aged red garlic.

This study investigated the quality characteristics and microbial hazards of commercial garlic available in supermarkets, traditional markets, and online shopping malls. Total bacterial counts were 2.55 log CFU/g in whole garlic and 5.20~7.40 log CFU/g in processed garlic, possibly due to contamination during processing. The total bacterial count from garlic purchased in supermarkets was below 5 log CFU/g, while garlic purchased in traditional markets and online shopping malls had counts of 3.87~6.34 and 3.73~6.11 log CFU/g, respectively. Thus garlic purchased at supermarkets appears to be more hygienic than garlic from traditional markets or online shopping malls. Some garlic purchased from supermarkets also had a lower pH (4.96~5.17) compared to fresh chopped garlic (7.4~7.5), likely due to the addition of citric acid and ascorbic acid, to reduce microbes and prevent browning. The moisture content of chopped garlic was 61.92~89.32%, with moisture content in imported garlic from China above 75%. The L, a, and b color values were 52.63~64.47, -3.74~8.75, and 10.67~17.88, respectively. The a and b values of supermarket garlic (-3.74~-3.20 and 10.67~13.90) were lower due to the addition of citric acid.

The object of this study was to evaluate the quality characteristics and antioxidant activities of Sikhe added with 25%, 50%, and 100% Artemisia capillaris extract instead of water. The control group showed higher sweetness and lower pH than the other groups. Longer storage time was associated with increased turbidity. In the chromaticity determination, $L^*$ value decreased while $a^*$ and $b^*$ values increased as A. capillaris extracts increased. In terms of free sugars, sucrose and maltose were detected. Maltose was generated through glycosylated action with amylase. The total polyphenol and flavonoid contents and antioxidant activities proportionally increased with levels of A. capillaris extract. In the sensory evaluation, Sikhe made with 50% A. capillaris extract showed the highest preferences for color, taste, plumpness of rice granules, and overall acceptance. These results suggest that A. capillaris maybe a useful ingredient in Sikhe to improve quality and sensory properties.
The effects of various coating materials (alginate, 0.3%; xanthan gum, 0.05%; chitosan, 0.8%) and storage temperatures (4, 12, $25^{\circ}C$) on the shelf-life of Lentinus edodes mushroom were investigated in terms of weight loss, color, polyphenoloxidase (PPO) activity, and texture profiles. Out of the three coating materials tested in this study, chitosan was effective in maintaining the color, PPO activity, and texture of the mushrooms during storage for 6 days at $12^{\circ}C$. Moreover, when stored at 4, 12, and $25^{\circ}C$ for 6 days, the chitosan spray-coated mushrooms stored at $4^{\circ}C$ had higher Lvalues and lower ${\Delta}E$. Also, lower temperature storage inhibited PPO activity in the mushrooms and prevented the loss of textural properties during storage. Therefore, the shelf-life of Lentinus edodes mushroom can be further extended two-fold by spray-coating with chitosan and storing at a lower temperature ($4^{\circ}C$).

In order to predict the risk of freeze injury for 'Changhowon Hwangdo' peach trees, we used the dormancy depth (i.e., the daily chill unit accumulation during the overwintering period) as a proxy for the short-term, physiological tolerance to freezing temperatures. A Chill-days model was employed and its parameters such as base temperature and chilling requirement were optimized for peach trees based on the 12 observational experiments during the 2008-2009 winter. The model predicted the flowering dates much closer to the observations than other models without considering dormancy depth, showing the strength of employing dormancy depth into consideration. To derive empirical equations for calculating the probabilistic freeze risk, the dormancy depth was then combined with the browning ratio and the budburst ratio of frozen peach fruit branches. Given the exact date and the predicted minimum temperature, the equations calculate the probability of freeze damages such as a failure in budburst or tissue browning. This method of employing dormancy depth in addition to freezing temperature would be useful in locating in advance the risky areas of freezing injury for peach trees production under the projected climate change.

This study was conducted to analyze the influence of simulated acid rain on leaves of Liliodendron tulipifera seedlings. The seedlings were treated with four levels of simulated acid rain with pH of 5.6, 4.9, 3.9 and 2.9, and then chlorophyll contents and the degree of foliar damage were investigated. Differences were statistically significant among treatments in chlorophyll contents in all of the tested soils. The total contents of chlorophyll tended to decrease as the simulated acid rain treatment was maintained. Chlorophyll contents, however, did not decrease according to the decrement of pH levels. Foliar damage increased as the simulated acid rain was maintained in all tested soils. Especially, the damage dramatically increased between May and July as the acidity increased. As the treatment of simulated acid rain continued, deformed new leaves appeared. In all treatments except the control, the leaves turned brown and the damage increased with time. Necrotic spots appeared during the first month of treatment at the pH level of 2.9 in all soil types. The damage by acid rain should be considered when we plant Liliodendron tulipifera.
'Wonhwang' pear ($Pyrus$$pyrifolia$ Nakai) often showed physiological disorder and quality deterioration during long-term storage and shelf life although this cultivar has the advantage of a good appearance and better taste for overseas exportation. This study was conducted to investigate the effect of temperature during transportation and continuing market temperature on fruit quality, and the occurrence of physiological disorder to set up the appropriate transportation and distribution temperatures in the fruits harvested at different times. Unripe fruits harvested 120 days after full bloom maintained higher firmness until 21days of shelf life at both 18 and $25^{\circ}C$ than late harvested ones. Otherwise, ripe fruits harvested 130 days after full bloom showed high incidence of mealiness breakdown of flesh tissues in 21 days of shelf-life at $25^{\circ}C$ of market temperature, but not in the fruits stored at $18^{\circ}C$. Late harvested fruits showed much severe physiological disorders when compared with early harvested ones that showed relatively lower respiration rates. Fruit quality parameters were more highly affected by market temperature than transportation temperature. Results showed that unripe fruits harvested at 120 days after full bloom maintains high marketability until 21 days of shelf-life, while the maximum shelf-life of ripe fruits harvested 130 days after full bloom will be considered at within 7 days.
Onion has been reported to contain various organosulfur compounds which have antibiotic and anticarcinogenic properties and flavonoid like quercetin which is a valuable natural source of antioxidants. Carbohydrates in onion constitute about 80% of dry matter, and the major non-structural carbohydrate of onion bulb is fructo-oligosaccharides, well known as fructan, followed by glucose, fructose, and sucrose. The sugar concentration is associated with dormancy and storage life of onion, occurring as decrease in glucose, fructose and fructan, particularly towards the end of storage. Forced air pre-drying for 15-20 days at room temperature is an essential procedure to reduce freezing injury and sprouting, then onion bulbs can be stored at $0^{\circ}C$ for 6 months to control sprouting and decay. Bacterial soft rot caused by $Erwinia$ and $Pseudomonas$ is the main postharvest disease when the bulbs are infected with the bacteria and stored at room temperature. Browning in sliced onion is due to oxidation of phenolic compounds by polyphenol oxidase and it can be inhibited by citric acid treatment, packing with nitrogen gas, and polyethylene film.
This study was carried out to investigate the antioxidant activity of the ethanol extract from $d\bar{o}d\bar{o}k$ compared with that from ginseng. The peroxide values and thiobarbituric acid values were examined in order to estimate the antioxidant activity of the extract in soybean oil and lard.
