Quality characteristics of retort samgyetang marinated with different levels of soy sauce and processed at different F0 values

  • The aim of this study was to develop retorted samgyetang marinated with different levels of soy sauce and processed at different F0 (thermal death time at 121℃) values. The tested marinade series comprised different percentages of soy sauce in water (0%, 25%, and 50% [w/w]) containing a fixed concentration of sodium tripolyphosphate (0.3% [w/w]). Following marination, samgyetang was prepared and subjected to retort processing, until an F0 value of either 8 or 29 was achieved. Meat quality analysis of the breast meat, sensory evaluation, and aroma analysis were performed as indicators of acceptability. The meat pH decreased as the soy sauce content increased, regardless of the F0 value. The shear force value significantly decreased as the concentration of soy sauce increased, but increased as the F0 value increased (p < 0.05). Lipid oxidation was not affected by marination, but increased significantly as the F0 value increased (p < 0.05). The proportion of polyunsaturated fatty acids decreased significantly (p < 0.05) as the F0 value increased. The total alkane content decreased as the F0 value increased (p < 0.05). Changes in the total volatile sulfur compound and 2-butyl-1-octanol content were affected by soy sauce marination. Marination using 25% soy sauce and retort sterilization, until an F0 value of either 8 or 29 was achieved, improved the acceptability of samgyetang. Therefore, marination using 25% soy sauce and retort sterilization until an F0 value of 8 is the process recommended for developing a soy sauce-flavored, retorted samgyetang product of acceptable quality.

  • This study was carried out to develop the normal temperature-circulatable retort sterilized imitation crab leg (RSIC) with long shelf-life by retort sterilization. We have examined the optimum retort sterilization conditions and quality characteristics of the RSIC. Central composite design for response surface methodology (RSM) was adopted for optimization of retort sterilization, and experimental central composite design consisted of 11 samples such as 4 factorial points; 4 star points; 3 central points. Sterilization temperature and $F_0-value$ for retort sterilization were chosen for independent variables, and shearing force, whiteness and sensory score about texture were selected as a dependent variable. As a results of RSM analysis, multiple response optimization for the RSIC by Minitap statistical programing was $F_0-value$ 3.3 min. at $117.5{^{\circ}C}$. Also RSM analysis indicated such as sterilization temperature during retort sterilization was the most influential factor, while $F_0-value$ little affected on quality of the RSIC.

  • The objectives of this paper are to see how the declination is realized in the different positions/lengths of the utterance, to see if the $F_0$ value throughout the utterance changes in a predictable way, and if so, to find out the best quantitative model which fits the declination. The experiment results are as follows. First, the peak value over the utterance can be affected by the position of the peak and length of the utterance. Second, the choice of quantitative models is dependent on the different list lengths. Third, in everyone's speech, there is a baseline (the lowest $F_0$ value a speaker can use), and the $F_0$ will not fall below the baseline. Forth, the peak $F_0$ of the last word in each list shows little variation in pitch value (target $F_0$) while the number of words in the list affects the starting $F_0$ values.

  • To investigate the effects of oscillatory feed cutting on the chip breaking and surface roughness and circularity, A prototype unit developed for the experiment is used. The results obtained are as follows. (1) It is obtained the region of chip breaking as Ftmin $f_{+min}$0.03mm ( = 0.3f). (2) The surface roughness becomes worse with increasing the value of A/f, but the type of variation with respect to n/N differs from the case of A/f>1, f<1. (3) The circularity of workpiece is increasing from the fundamental mode of n/N=i to the maximum value of n/N=i+0.5, and becomes worse with increasing the value of A/f. (4) From the viewpoint of above details and tool mechanics, the condition of A/f=1.0 and n/N=i.+-. .delta. (0.3<.delta.<0.4) is recommended.

POSITIVE SOLUTIONS OF SINGULAR FOURTH-ORDER TWO POINT BOUNDARY VALUE PROBLEMS

  • In this paper, we consider singular fourth-order two point boundary value problems $u^{(4)}$ (t) = f(t, u), 0 < t < 1, u(0) = u(l) = u'(0) = u'(l) = 0, where $f:(0,1){\times}(0,+{\infty}){\rightarrow}[0,+{\infty})$ may be singular at t = 0, 1 and u = 0. By using the upper and lower solution method, we obtained the existence of positive solutions to the above boundary value problems. An example is also given to illustrate the obtained theorems.

  • A ratio type of capacitance measurement circuit is proposed to measure an extremely small value of the fF capacitance on this paper. This measurement circuit is formed with a switched-capacitor integrator, a comparator, and logic circuit blocks to control the switches. It converts the measured ratio value between the known value of on-chip capacitor and the unknown value of capacitor to the digital signal. The fF capacitance with minimized error can be obtained by calculating this ratio. This proposed circuit is designed with standard CMOS $0.18{\mu}m$ process, and various HSpice simulations prove that this capacitance measurement circuit is able to measure the capacitance under 5fF with less than ${\pm}0.3%$ error rate.

  • This paper deals with the existence of triple positive solutions for the nonlinear second-order three-point boundary value problem z"(t)+a(t)f(t, z(t), z'(t))=0, t $\in$ (0, 1), $z(0)={\nu}z(1)\;{\geq}\;0$, $z'(\eta)=0$, where 0 < $\nu$ < 1, 0 < $\eta$ < 1 are constants. f : [0, 1] $\times$ [0, $+{\infty}$) $\times$ R $\rightarrow$ [0, $+{\infty}$) and a : (0, 1) $\rightarrow$ [0, $+{\infty}$) are continuous. First, Green's function for the associated linear boundary value problem is constructed, and then, by means of a fixed point theorem due to Avery and Peterson, sufficient conditions are obtained that guarantee the existence of triple positive solutions to the boundary value problem. The interesting point is that the nonlinear term f is involved with the first-order derivative explicitly.

Association of genotype of POU1F1 intron 1 with carcass characteristics in crossbred pigs

  • This study was carried out to investigate the association of POU1F1 (POU domain, class 1, transcription factor 1, Pit1, renamed as POU1F1) gene with backfat thickness (mm), carcass weight (kg), pH, and color values ($L^*$, $a^*$, $b^*$) in crossbred pigs (Landrace ${\times}$ Yorkshire ${\times}$ Duroc). Frequency of the AA genotype indel was at the highest level (66.67%). Frequency of A allele (0.81) was higher than that of b allele (0.19). This population followed Hardy-Weinberg equilibrium. Carcass weights and $a^*$ values of the three genotypes were all significantly different (p < 0.05), respectively. However, backfat thickness, $L^*$, $b^*$, visual color, and pH of the three genotypes were not significantly different (p > 0.05). Visual color was negatively correlated with $L^*$ (r = -0.521) and $b^*$ (r = -0.390) values, $L^*$ value was correlated with $b^*$ (r = 0.419) value, and $a^*$ value was positively correlated with $b^*$ (r = 0.612) value. These results indicate that the POU1F1 gene affected carcass weight and meat redness.

A Study of Ethical Sense of Value and Discord of the Clinical Nurse (임상간호사(臨床看護師)의 윤리적(倫理的) 가치관(價値觀)과 윤리적(倫理的) 갈등(葛藤)에 관한 연구(硏究))

  • Professional nurse shall possess the firm nursing idea and ethical nursing philosophy based on the professional knowledge and technology but due to the rapid social situations has changed the value to man thus the nurse's sense of value in the nursing secenes has been confused and changed bringing the new ethical problems and discord due to the ethically difficult problems. This study is aimed to know about the discord between the ruling ethical sense of value and the ethical discord exeriencing in the clinical scenes of the nurse and to help them establish affirmative ethical sense of value and provide them with the materials which can effectively meet the ethical discord. The study research has been conducted by selecting 515 clinical nurses in 8 general hospitals as the subject from Mar. 13, 1995 to Apr. 3. The tool measuring the ethical sense of value disigned by Lee, Young Sook has been used and supplemented and the tool measuring the ethical discord was the question papers about the ethical dillemma of Han, Sung Sook. The collected materials have been analyzed by the statistical methods of arithmetical everage, t-test, ANOVA, Pearson's Correlation Coefficient and etc. The result of the study is as the below ; 1) The average point of the ethical sense of value of the nurse was 3.62(maximum point : 5) which showed that the ethical level was so high and the highest question item in the ethical level of the whole items of the ethical sense of value was "They conduct as directed by the doctor in case the disposition of the doctor looks mistaken"(4.56 point), "They keep the secret of the patients while serving them."(4.56) and the lowest item was "using placobo for the patients is not allowed" : (1.85 point). 2) Statistical variation which showed the significant difference in the relation with the ethical sense of value according to the general characters of the nurse has shown as scholarly years(F=3.47, p=.016), religion(F=1.66, p=.004), interest degree of ethical education(F=4.18, p=.006),attitude to the job of nursing(F=6.76, p=.006), ethical standard(F=3.28, p=.021), and recognition degree on ethical principles(F=4.53, p=.001). 3) The average point of the ethical discord of the nurse was 0.54(The maximum-1 point) point and the ethical discord in the clinical scenes : "the problems arising from the lack of manpower of the nurse"(0.86), "the discord from the uncooperative relation between them and the medical staff and"(0.75) and indifference of the doctor about the report of the nurse(0.73). 4) The variation which showed the significant difference statistically in the ethical discord according to the general characters of the nurse was that Age(F=19.88, p=.000), schooling(F=5.32, p=.001), Experience(F=15.77, p=.000), position(F=13.58, p=.000) and ethical standard(F=2.63, p=.049). 5) The results of the analysis of correlation between ethical sense of value and discord(r=0.519, p=.239) showed no significant correlation statistically.
