  • Purpose: The purpose of this study was to compare working condition and health status between parcel delivery workers (PDW) and food delivery workers (FDW) and to examine the factors influencing their health status. Methods: This was a secondary analysis of data collected from the fifth Korean Working Conditions Survey (KWCS). Based on existing literature, a set of variables was chosen from the KWCS. Results: The proportion of PDW who carryied/moved heavy loads and experienced high job stress and lack of rest time was significantly higher than that of FDW. However, more FDW than their counterparts worked atypical hours. The differences in fatigue and well-being between PDW and FDW were not statistically significant. The multiple logistic regression analysis revealed low temperature, tobacco smoke, standing for long periods, and job stress were significant predictors of fatigue or well-being of FDW. Among PDW, noise, tobacco smoke, sitting for long periods, quantitative demands, hiding emotions, support from colleagues, job stress, no recovery period, and night work were significant predictors of fatigue or well-being. Conclusion: The findings of this study may be useful in developing nursing interventions for disease protection health promotion of delivery workers.

  • Dietary life was formed as being influenced by the people's cultural, social and environmental situations. The people's food culture is unique that was adapted to their surroundings. It was developed and industrialized in the ethnic food. Now the ethnic food was contributed to tour industry or culture industry. Then, food life style was change from the meat diet to the vegetable diet in the diffusion of well-being trends. So, we analyzed Koreans' Korean food image and investigated the difference as a demographics. We made questionnaire and did a survey to 220 bloggers using cooking internet sites on 10 August, 2009. We analyzed 206 questionnaires by SPSS package 12.0 except 14 untrustworthy questionnaires. We measured credibility and validity 39 items related Korean food image: Chronbach's ${\alpha}$ was highly 0.855. We checked that KMO examination was 0.775 and $x^2$ of Barttlet was 2482.342. After verymax rotation, we deducted 5 Koran food images-healthy, visuality, spicy, variety, low calorie. We analyzed ANOVA of 5 Korean food images according to demographics. We confirmed the differences by ages, monthly income and job except academic background (p<0.05). Therefore, Korean food images were learned and recognized in everyday life. Especially, we found that visuality and variety were recognized the more stronger high-income earners and teachers than others. So, Korean learned Korean food images in real life and recognized Korean food quite differently by demographics.

  • This study looks at the patterns of married women's lifestyles and verifies whether there are differences in their preferences, the will to continue shopping, and the importance of healthy foods. The paper analyzes the relative influence of each lifestyle pattern on the level of satisfaction with healthy foods. The results of the analysis of this study are as follows. To find patterns in the lifestyles of married women ages 20s to 50s, the factors were analyzed and five lifestyle patterns were extracted: health managing type, fashion pursuing type, self-expressing type, family-oriented type, and eco-friendly type. If we examine the purchasing of healthy foods for each lifestyle, women with a self-expressing lifestyle gain more information from news articles, books, and salespeople than from other information sources. Women of the health managing, family-oriented, and eco-friendly types had high purchasing frequencies and amounts. A cluster analysis was carried out to categorize the different groups being investigated into lifestyle types. They were categorized into the four clusters: active multiple-oriented type; fashion, self-expressing compromising type; passive well-being oriented type; and family and health managing type. It has been verified that there are differences among the clusters in terms of the level of importance of products, contributions to health, as well as distribution and management of healthy foods. To be more specific, the level of importance of the products as well as their distribution and management manifested as being higher among the active multiple-oriented type and the family-oriented and health managing types. The level of importance of contributions to health scored high among all groups, except the passive well-being oriented type. The active multiple-oriented type and the family-oriented and health managing types showed a high level of preference and will to continue purchasing healthy foods, while the fashion and self-expressing compromising types and passive well-being oriented type showed a low level of preference and will. In order to find patterns in the level of satisfaction with healthy foods, three factors were analyzed: credibility of labels, contributions to health, and satisfaction with the store. The factors that had the greatest influence on the total level of satisfaction was the credibility of labels for the family-oriented lifestyle; a product's contribution to health for the health managing lifestyle; and the store for the fashion pursuing lifestyle.

  • Extracellular vesicles (EVs) are nanosized vesicles secreted from cells into the extracellular environment and are composed of a lipid bilayer that contains cargos with biological activity, such as lipids, proteins, mRNAs, and noncoding microRNAs (miRNAs). Due to their biological activity and their role in cell-to-cell communication, interest in EVs is rapidly increasing. Bovine milk is a food consumed by people of all ages around the world that contains not only a significant amount of nutrients but also EVs. Milk-derived EVs also exhibit biological activity similar to other source-derived EVs, and studies on bovine milk EVs have been conducted in various research fields regarding sufficient milk production. In particular, not only are the effects of milk EVs themselves being studied, but the possibility of using them as drug carriers or biomarkers is also being studied. In this review, the characteristics and cargo of milk EVs are summarized, as well as their uptake and stability, efficacy and biological effects as carriers, and future research directions are presented.

  • Recently, due to the cognition that obesity is the cause of adult diseases, interests of consumers in low-sugar and low-calorie foods are growing more and more. While various policies are being implemented to reduce sugar contents in processed foods, the reduced sweetness caused by lesser sugar content is complemented by using high-intensity sweeteners. Some of the typical high-intensity sweeteners are sucralose, aspartame, acesulfame potassium and stevia, etc. Since the relative sweetness degree, sweetness profile, and physical properties of these sweeteners should be different from one another, it is important that all these characteristics are well-understood before applying them. Thus, the objective of this study is to introduce the properties and applications of high-intensity sweeteners in order to reduce sugar content of processed foods.

  • Microplastics with a size of less than 5 mm have emerged as an important environmental and food safety issue, as they have been detected not only in marine but also in terrestrial ecosystem and drinking water. Although many studies have been conducted on the exposure of microplastics and the effects on human health, the lack of standardized experimental methods for microplastics has been reviewed as a major problem. In order to overcome this, European countries such as the Netherlands and Germany are conducting a project to develop detection methods for microplastics as well as to establish the risk assessment methodologies for microplastics. Being the microplastics suggested to have a substantially potential risk on human health, reliable risk assessments should be conducted considering the various sources of microplastics, chemical pollutants and biological factors. In addition, international standards and regulations should be applied.

  • Archaea are prokaryotic organisms distinct from bacteria in the structural and molecular biological sense, and these microorganisms are known to thrive mostly at extreme environments. In particular, most studies on halophilic archaea have been focused on environmental and ecological researches. However, new species of halophilic archaea are being isolated and identified from high salt-fermented foods consumed by humans, and it has been found that various types of halophilic archaea exist in food products by culture-independent molecular biological methods. In addition, even if the numbers are not quite high, DNAs of various halophilic archaea are being detected in human intestines and much interest is given to their possible roles. This review aims to summarize the types and characteristics of halophilic archaea reported to be present in foods and human intestines and to discuss their application as well.
