Effect of Condiments on the Physicochemical Characteristics of Traditional Kochujang during Fermentation (양념류를 첨가한 전통고추장의 숙성중 이화학적 특성 변화)

  • Physicochemical characteristics of kochujang prepared with addition of garlic and onion, were investigated for 22 weeks of fermentation to obtain information on improving the quality of traditional kochujang. Moisture contents of kochujang increased during fermentation, but total nitrogen contents decreased slightly. The pH and titratable acidity of kochujang changed a little by addition of garlic or onion. Total sugar contents of kochujang decreased rapidly after 4 weeks, but reducing sugar contents increased until 2 weeks of fermentation. As the ratio of garlic increased, reducing sugar contents decreased. Ethanol contents increased during fermentation as mixing ratio of onion increased. Amino nitrogen contents of kochujang increased as mixing ratio of garlic or onion increased, but ammonia nitrogen contents decreased. Water activities of kochujang decreased slightly during fermentation, but consistency increased until 18 weeks. The color values of garlic or onion added kochujang were low in the L-values, but a- and b-values increased. Results of sensory evaluation showed garlic added$(2{\sim}4%)$ kochujang were more acceptable than onion added kochujang due to more favorable taste and flavor.

Design of Spinning and Subsequent Drawing Parameters to Improve the Mechanical Properties of PVA Fibers

  • In this study, efforts were made to enhance the mechanical properties of the poly(vinyl alcohol) (PVA) fibers of medium molecular weight(number-average degree of polymerization=1735) varying the ratio in $DMSO/H_2O$ mixed solvent and spinning/drawing conditions. The gel fibers prepared from pure DMSO were opaquely frozen in the coagulating bath of $-20^{\circ}C$. However, transparent gel fibers were formed without freezing for the mixture to contain water less than 80wt%. As the amount of water in the mixture increased the residual solvent in the coagulated gel fibers decreased ranging from 85 to 42wt%. The complex viscosity increased with increasing PVA concentration in 80/20 $DMSO/H_2O$ exhibiting remarkable shear thinning at 18wt%. In the Cole-Cole plot, the 18wt% PVA solutions gave a deviated curve from 12 and 15wt% ones. Thus the optimum PVA concentration for the spinning processing of medium MW PVA solutions in 80/20 $DMSO/H_2O$ was determined to 18wt% with rheological concept. Low degree of drawing during hot drawing process in the dry state was available for high bath draft in the coagulation bath. The most improved mechanical properties were observed by applying the highest possible draw ratio attained by reducing bath draft over multi-step drawing process. In the given bath draft, linear relationship was observed between both tensile strength and modulus and draw ratio showing the inflection points at the draw ratio of 19.5 and 18.0 for tensile strength and modulus, respectively.

  • Basic design of a 50USRT(175㎾) triple effect absorption chiller driven by hot gas has been carried out for both parallel and series flow cycles. Parallel flow cycle showed higher COP, however, the temperature in the generator was also higher than that in series flow cycle. Dynamic operation behavior of a parallel flow system at off-design conditions, such as the change in heat transfer medium temperature or the construction change of the system components, has been investigated in detail. It was found that the cooling capacity was seriously decreased by reducing hot gas flow rate and UA-value in the high temperature generator. However, the system COP was improved, because thermal load in the system components was reduced. The COP and the cooling capacity was found to be improved as cooling water temperature decreased or chilled water temperature increased. The optimum ratio of solution distribution could be suggested by considering the COP, the cooling capacity and the highest temperature in the system, which is critical for corrosion.

  • Carbon Capture and Storage with ocean sequestration is being considered as one of the most effective option for reducing the $CO_2$ net flux from atmosphere nowadays. But it is still possible for $CO_2$ substance to leaks out from transport pipeline or from the under seabed storage sites and causing damage to ambient environment. The behavior of liquid $CO_2$ under droplet shape would be strongly affected by the presence of other contaminants such as $SO_2$ comes from processing processes. This presentation shows the behavior in the sea water of pure liquid $CO_2$ droplets as well as droplets that consist of $SO_2$ substances. The study uses computational fluid dynamic models in comparison with experimental data from other previous researchers. Droplet of liquid $CO_2$ is assumed to be released at several depths in deep ocean, with other environmental conditions are set up respectively. All calculations are conducted with many different ratio of contaminant $SO_2$ to provide fundamental data of those particles rising characteristics. The effect of contaminants on the behavior of $CO_2$ droplets would be clearly shown through the results of particle deformation, terminal rising velocity happen due to buoyancy force driving from the difference in density of $CO_2$ substance and ocean water around.

Effect of Lycium chinense Fruit on the Physicochemical Properties of Kochujang (구기자를 첨가한 고추장의 숙성 중 이화학적 특성)

  • Effects of fruit of Lycium chinense (Chinese matrimony vine) on enzyme activities, and microbial and physicochemical properties of kochjuang were investigated during 12 weeks of fermentation. Enzyme activities were higher during middle of fermentation, and protease activities increased as the ratio of L. chinense increased. Facultative anaerobic bacteria counts decreased in L. chinense-added kochujang, whereas viable cell count of yeasts was higher in 1% L. chinense-added kochujang. Consistency of kochujang decreased by addition of L. chinense. Hunter L- and a-values of L. chinense added kochujang were high, causing slight change in total color difference (E) as the ratio of L chinense increased. Moisture contents of kochujang increased during fermentation, whereas water activities decreased. As the ratio of L. chinense increased, water activities increased. Titrable acidities and oxidation-reduction potential increased by addition of L. chinense. Total sugar contents of kochujang decreased rapidly during fermentation, whereas reducing sugar contents increased up to $2{\sim}4$ weeks of fermentation. As the ratio of L. chinense increased, reducing sugar contents decreased. Ethanol contents of kochujang increased during fermentation, with higher values in 3% L. chinense-added kochujang. Amino and ammonia nitrogen contents of kochujang increased L. chinense content increased. After 12 weeks of fermentation, sensory results showed 3% L. chinense-added kochujang showed highest taste and overall acceptability, and color acceptability increased as L. chinense content increased.

Analysis of runoff reduction performance of permeable pavement and rain barrel in Mokgam stream basin and determination of installation priorities (목감천 유역 내 투수성포장과 빗물저류조의 유출량 저감 성능 분석 및 설치 우선 순위 결정)

  • This study aimed to assess runoff reduction performance and determine installation priorities for Permeable Pavement (PP) and Rain Barrel (RB) within the Mokgam Stream basin. Optimal design parameters were determined to maximize the effectiveness of PP and RB in reducing runoff. Furthermore, the optimal parameters were incorporated to compare the runoff reduction performance of PP and RB. Analysis of the runoff curve at the basin outlet indicated that PP demonstrated superior performance in reducing runoff during the rising limb of the curve. At the same time, RB excelled within the falling limb. Comparisons of total runoff and peak runoff reduction by sub-catchment revealed that in larger sub-catchment areas, PP outperformed RB in runoff reduction. In contrast, RB exhibited higher performance in areas with a higher impervious ratio. Based on the evaluation of runoff reduction performance for PP and RB, installation priorities were determined within the Mokgam Stream basin. The results showed that PP and RB installations were prioritized for sub-catchments with larger areas and a higher impervious ratio. Furthermore, the correlation between the ranking of runoff reduction performance and sub-catchment characteristics showed a high correlation with both the impervious area ratio and sub-catchment geometrical properties in sub-watersheds exhibiting the top 25% runoff reduction performance. These results emphasize that when determining the priority for installing LID facilities in developed urban areas, it is necessary to consider not only the impervious area ratio but also the geometrical properties of the sub-catchment.

The Reduction Properties of Nitrate in Water with Palladium and Indium on Aluminum Pillared Montmorillonite Catalyst (팔라디움과 인디움을 담지한 Al 층간가교 몬모릴로나이트 촉매의 수중 질산성질소 환원 특성)

  • In this study, catalyst was made through incipient wetness method using palladium (Pd) as noble metal, indium (In) as secondary metal, and montmorillonite (MK10) and Al pillared montmorillonite (Al-MK10) as supporters. The nitrate reduction rate of the catalysts was measured by batch experiments where H2 gas was used as reducing agent and formic acid as pH controller. Transmission electron microscopy (TEM) equipped with energy dispersive spectroscopy (EDS) and X-ray photoelectron spectroscopy (XPS) were all used to determine the elemental distribution of Pd, In, Al, and Si on catalysts. It was observed that Al pillaring increased the Al/Si elemental composition ratio and point of zero charge of MK10, but decreased its BET specific surface area and pore volume. The nitrate reduction rate of Al-MK10 Pd/In was 2.0 ~ 2.5 times higher than that of MK10 Pd/In using artificial groundwater (GW) in ambient temperature and pressure. Nitrate reduction rates in GW were 1.2 ~ 1.7 times lower than those in distilled deionized water (DDW). Nitrate reduction rates in acidic conditions were higher than those in neutral condition in both GW and DDW. The amount of produced NH3-N over degraded NO3- at acid conditions was lower than that of neutral condition. Even though the leaching of Pd after reaction was measured in DDW it was not detected when both Al-MK10 Pd/In and MK10 Pd/In were used in GW. The modification of montmorillonite as a supporter significantly increased the reductive catalytic activities of nitrates. However, the ratio of producing ammonia by-products to degraded nitrates in ambient temperature and pressure was similar.

Fundamental Study of Mix Proportions of High-Flow Cement-Based Mortar for Gravel-Fill Used in Restoration of Collapsed Roads (도로유실 복구를 위한 골재 충전 고흐름도 모르타르의 기초 배합 연구)

  • PURPOSES: As a part of our research into repair techniques for roads that have collapsed as a result of a natural disaster, this study set out to find the optimum mix proportion for gravels to be used to restore a damaged area. METHODS: This study considered flow and strength-development characteristics. The experimental variables were the W/C ratio, the usage of the admixture, the types of cement, and the quantity of fine aggregate over three different experimental stages. The compressive strength was measured at 12 hours, one day, three days, and seven days. RESULTS : The flow varied with the amount of fine aggregate and the use of a high-range water-reducing (HRWR) admixture. The compressive strength also varied with respect to the type of cement and the W/C ratios. The strength satisfied the expected requirement of 21 MPa after one day, provided the mix proportion was appropriate. CONCLUSIONS: A gravel-filling high-flow cement-based mortar exhibited strength and consistency with a W/C ratio in the range of 0.40 to 0.45, assuming the use of HRWR at 0.5 to 0.7% and a fine aggregate/cement ratio of 1.0 to 1.5.

Analysis of concrete characteristic depending on chemical admixtures changing component content ratio (화학혼화제의 성분함유율 변화에 따른 콘크리트의 특성분석)

  • W/C and unit volume, which significantly affect quality of concrete related to strength and durability, are regulated at below $185kg/m^3$ for regular concrete generally used in standard specification for constructions. The aim of this research is to develop chemical admixture and find out its potential use by identifying characteristics of admixtures added to soft concrete and hardening concrete, of which content ratio of component for each type of admixtures is subject to change in accordance with unit volume within KS' allowable range. Sodium gluconate, polyoxyethylene nonylphenyl ether, poly carboxylic copolymer in slump, which is characteristic of soft concrete, are deemed highly sensitive while there is no air entrainment except for $10\sim70%$ in WE, WR component content ratio and NP. In hardening concrete, strength in general showed higher action in compressive strength and tensile strength than in plain strength. Use of proper AE agent and AE water reducing agent at the same time is deemed to be used as chemical admixtures capable of manufacturing high-quality, high-quantity concrete.

  • Offset printing is one of the well known printing technique of lithographic process and consists of image area and 'non-image area on a flat image carrier. The surface tension of dampening water can be controlled by adding IPA after mixing of raw water and etching solution. The etching solution contains a surfactant for reducing surface energy, a clean agent for non-imaging area, wetting agent for protecting non-imaging area from oil components like ink and also an emulsifying agent for controlling emulsification. In this study, the present situation of dampening water maintenance has examined by collecting dampening water using at domestic companies. The pH related to dampening water, conductivity, contact angle, emulsification curve are measured to define the current situation of dampening water control of each companies and to analyze the relationship among measured properties. In the study most of companies among 16 printing companies tested controlling dampening water through pH value. However, the quality of printing has varied depending upon conductivity, contact angle, IPA content, and emulsification value. The control of dampening water should be carry at the state of the standard when adding proper ratio of etching solution. It would be more effective when pH or conductivity control carries out in parallel with controlling dampening water. Therefore the concept that pH5.5 is correct is based concept. Based on these initial tests it is defined that the standardization of dampening water control is required.
