비타민 K와 골 건강 (Vitamin K and Bone Health)

  • Vitamin K, which is a nutritional factor, play a role in the regulation of bone metabolism. Vitamin K exists naturally in 2 forms, namely, vitamin $K_1$ (phylloquinone) in green plants and vitamin $K_2$ (menaquinone) in animals and bacteria. Vitamin $K_1$ has an effect on bone metabolism. Vitamin $K_2$ is essential for the ${\gamma}$-carboxylation of osteocalcin, a bone matrix protein containing ${\gamma}$-carboxyglutamic acid (Gla) which is synthesized in osteoblast of bone tissues. This paper is to provide the basic information of vitamin K by supplying function and biological activity of vitamin K together with vitamin K producing lactic acid bacteria and it's utilization for the dairy products production.

Enrichment of Vitamins $D_3$, K and Iron in Eggs of Laying Hens

  • An experiment was conducted to produce eggs enriched with vitamins $D_3$, K and iron in eggs. Six hundred 97-wk-old ISA Brown force molted hens were allocated to completely randomized block arrangement of six dietary treatments: T1; control (C), T2; C+4,000 IU vitamin $D_3$+2.5 mg vitamin K+100 ppm Fe, T3; C+8,000 IU vitamin $D_3$+5.0 mg vitamin K+100 ppm Fe, T4; C+12,000 IU vitamin $D_3$+7.5 mg vitamin K+100 ppm Fe, T5; C+16,000 IU vitamin $D_3$+10.0 mg vitamin K+100 ppm Fe, T6; C+20,000 IU vitamin $D_3$+12.5 mg vitamin K+100 ppm Fe. Fe was supplemented with Fe-methionine. Each treatment consisted of five replicates of ten cages with two birds per cage. Egg production and egg weight were highest in T2 and incidence of soft and broken egg was highest in T6. Haugh unit was not different among treatments although it tended to be increased as dietary vitamins $D_3$ and K increased. Eggshell strength was not different among treatment. Concentrations of vitamin $D_3$ and K in egg yolk increased and plateaued approximately 20 days after feeding supplemented diets. The level of these vitamins peaked at 12,000 IU/kg vitamin $D_3$ and 7.5 mg/kg vitamin K supplementation and then decreased at the higher than these supplementation levels. The peak concentrations of vitamin $D_3$ and vitamin K were 4.6 times and 4.8 times greater than the control, respectively. Supplementary Fe also increased Fe content in egg yolk. It is concluded that vitamin $D_3$ and K in eggs can be effectively enriched by proper supplementation time and level of these vitamins.

수유부의 식이 섭취 및 건강관련 습관이 모유내 비타민 B 함량에 미치는 영향 (Effects of Maternal Dietary Intakes and Health-Related Behaviors on Vitamin B Concentrations in Human Milk)

  • Adequate vitamin $B_2$, vitamin $B_6$, folate and vitamin $B_{12}$ intakes are known to be important for the growth and development in infants. The purpose of this study was to evaluate concentrations of vitamin $B_2$, vitamin $B_6$, folate and vitamin $B_{12}$ in human milk and to investigate the relationship between vitamin B levels in human milk and dietary habits and other health-related behaviors. Milk samples were obtained from 38 healthy lactating women (aged 29.0 $\pm$ 3.2 years) who are participating in the cohort study on pregnant women. Vitamin $B_2$ concentrations in human milk were positively correlated with maternal vitamin $B_2$ intakes in lactating mothers. Vitamin $B_6$, folate and vitamin $B_{12}$ concentrations in human milk were not correlated with maternal B vitamin intakes. Vitamin $B_6$ concentrations in human milk were negatively correlated with the amount of postpartum weight loss. The vitamin B concentrations in human milk were not associated with maternal age, height, weight and parity. Mothers who were exposed to indirect smoking had lower vitamin $B_2$ concentrations, and those who reported to consume health foods had higher vitamin $B_2$ concentrations in their milk. In conclusion, lactating women need to consume more vitamin B intakes for the growth and development in infants. Further researches are needed to find other diet and health-related factors which influence on B vitamin concentrations in human milk.

비타민 $K_2$ 첨가 식이가 난소절제쥐의 골밀도에 미치는 영향 (Effect of Dietary Vitamin $K_2$ Supplementation on Bone Mineral Density in Ovariectomized Rats)

  • Vitamin K has been suggested to plays a role in bone metabolism. The objective of this study was to determine whether vitamin K2 supplementation is related to bone mineral density, bone formation markers, and bone resorption in ovariectomized (OVX) rats. Forty Sprague-Dawley female rats (body weight, $200{\pm}10$ g) were divided into four groups: a sham group fed a control diet, a sham group fed a vitamin K2 supplemented diet, OVX fed a control diet, and OVX fed a vitamin $K_2$ supplemented diet (3.5 mg vitamin $K_2$/kg diet). All rats were fed the experimental diets for 6 weeks, and deionized water was provided ad libitum. Serum alkaline phosphatase activity (ALP), osteocalcin, and urinary deoxypyridinoline crosslink values were measured as markers of bone formation and resorption. Bone mineral density (BMD) and bone mineral content were measured in the spine and femur using PIXImus (GE Lunar Co., Madison, WI, USA). No significant differences in body weight gain, food intake, or food efficiency ratio were observed between the control and experimental groups. Serum ALP, osteocalcin, and urinary crosslink values were not significantly different between the vitamin $K_2$ supplemented groups. No significant differences were observed for any of the variables in the sham group. Spine BMD values were significantly lower in the OVX than those in the sham groups. Spine and femur BMD per weight of vitamin $K_2$ tended to be higher than the control diet group within the OVX group, but no significant differences were observed. In conclusion, dietary vitamin $K_2$ supplementation may have a beneficial effect on spine and femur BMD in OVX rats. Further research is needed to understand the potential benefits of vitamin $K_2$ on bone loss in OVX rats.

담도 결찰한 백서에 있어서 담즙산 및 UDCA 투여에 따른 혈중 지용성 비타민의 농도 변화에 관한 연구 (Serum Fat Soluble Vitamins in Bile Duct Ligated Rats)

  • 목 적: 저자들은 백서에서 수술적으로 담도 결찰전과 결찰 4주 후에 지용성 비타민(vitamin A와 D)의 혈중 농도 변화 및 담도 결찰 후 담즙산을 투여했을 때 장관내 지용성 비타민의 흡수 변화에 대하여 알아보고자 하였다. 대상 및 방법: 생후 4주된 Sprague-Dawley rats을 대상으로 하여 수술적으로 담도를 결찰하였다. 담도 결찰 전과 결찰 4주후의 혈중 ALT, total bilirubin, vitamin A, vitamin D의 농도를 측정하였다. 백서들은 담도 결찰 후 4주간 사육하였으며, 사육기간 중 비타민만을 투요한 군, 담즙산을 투여한 군 및 UDCA를 투여한 3군으로 나누었다. 결 과: 1) 수술전 혈중 농도(평균): ALT 74.2 IU, total bilirubin 0.26 mg/dL; vitamin D 13.01 ng/mL vitamin A $0.87\;{\mu}g/mL$, total bile acids $25.16\;{\mu}mol/L$. 2) 수술 4주후 농도(평균): ALT 100.7 IU, total bilirubin 2.58 mg/dL; vitamin D 7.89 ng/mL vitamin A $1.37\;{\mu}g/mL$, total bile acids $278.22\;{\mu}mol/L$. 3) 수술후 각 군간의 혈중 vitamin A와 vitamin D의 농도 차이는 없었다. 결 론: 담도 결찰 후 vitmain A 혈중 농도는 상승 하였으며, vitamin D 농도는 감소하였다. 경구로 담즙산을 투였을 때 혈중 지용성 vitamin 농도는 투여하지 않은 경우와 차이가 없었다.

비타민 A 과량 섭취가 흰쥐의 간 Microsome의 비타민 K-dependent Carboxylation에 미치는 영향 (The Effect of Excess Dietary Vitamin A on Vitamin K-dependent Carboxylation in Rat Liver Microsomes)

  • 본 연구에서는 비타민 A 과량 섭취가 비타민 K 기능에 미치는 영향을 알아보기 위하여 carboxylase의 기질인 쥐의 간내 microsome 단백질과 첨가된 펩티드의 vitamin K-dependent carboxylation rate를 측정하였다. In vitro 실험에서는 정상 vit.A 섭취군의 간 microsome을 vit.A 로 incubation했을때 간 내 prothrombin 선구 물질이나 첨가된 peptide기질의 carboxylation rate는 영향을 받지 않았다. 이와 비슷한 양상으로서 무비타민 K 식이와 함께 비타민 A를 정상수준 혹은 과잉 수준으로 섭취한 쥐를 비교한 경우에는 동일군 간에는 carboxylation rate에 유의한 차이를 나타내지 않았다. 그러나 비타민 A 과잉군의 간내 단백질의 carboxylation rate는 대조군에 비하여 증가하는 경향이었다, 비타민 A 과잉군은 비타민 A로 incubate한 경우나 하지 않은 경우 모두 대조군에 비하여 약 2~3 배 의 carboxylase 활성을 보였다. In vivo study 에서는 첨가된 peptide에 대한 carboxylase활성은 비타민 A 광일 섭취에 의하여 영향을 받지 않았다. 그러나 간 내 단백질의 carboxylation rate는 비타민 A과잉군이 대조군에 비하여 2~3 배나 더 높았다. Carboxylase 활성은 대조군이나 비타민 A과잉군 모두 연구기간이 진행될수록 더 증가하였다. 그리고 간 내 단백질의 carboxylation에 대한 비타민 A 과잉 효과는 실험 식이를 시작한 후 일주일 정도에서 나타나기 시작하였다. 그러므로 이 연구 결과는 비타민 A 과잉 시에는 과잉증이 빠른 시일내에 일어나며, 비타민 A 과잉은 비타민 K 결핍의 지표인 prothrombin 의 선구물질을 증가시킨다는 것을 시사한다.

초임계 ASES 공정으로 제조된 Vitamin-C 포접복합체의 안정성 평가 (Stability Evaluation of Vitamin-C Inclusion Complexes Prepared using Supercritical ASES Process)

  • 본 연구에서는 초임계 ASES 공정을 이용하여 인체내 및 피부에 여러 가지로 유익한 대표적 생리활성물질인 Vitamin-C의 불안정성을 극복하기 위하여 HP-${\beta}$-CD와의 포접복합체를 제조하여 수용액상에서의 안정성을 분석하였다. X-선 회절을 이용한 Vitamin-C와 HP-${\beta}$-CD의 결정성 분석으로 초임계 ASES 공정을 통하여 포접복합체가 용이하게 형성될 수 있음을 확인하였다. HP-${\beta}$-CD가 Vitamin-C의 안정성을 향상시키는 방법으로 이용될 수 있음을 확인하였으며, $25{\pm}0.1^{\circ}C$의 온도를 유지한 pH 7.0의 50 mM 인산완충용액 상에서 순수한 Vitamin-C, 물리적인 혼합물 및 용매증발법과 초임계 ASES 공정을 이용하여 제조된 포접복합체의 Vitamin-C 겉보기 1차 분해 속도 상수는 각각 $1.45{\times}10^{-2}h^{-1},\;1.41{\times}10^{-2}h^{-1},\;1.34{\times}10^{-2}h^{-1},\;0.20{\times}10^{-2}h^{-1}$로 초임계 ASES 공정으로 제조된 포접복합체의 경우 Vitamin-C의 안정성이 매우 크게 향상되는 것을 확인하였다.

Relationship between vitamin D levels and intravenous immunoglobulin resistance in Kawasaki disease

  • Purpose: Vitamin D is associated with various pathological conditions such as cardiovascular diseases and cancer. We investigated the relationship between vitamin D and Kawasaki disease (KD). Methods: We performed a retrospective review of the medical records of patients with KD between February 2013 and March 2016 in Daegu Fatima Hospital. Study participants were grouped according to vitamin D serum concentration. Group 1 included patients with 25(OH)-vitamin D ${\geq}20ng/mL$. Group 2 included patients with 25(OH)-vitamin D <20 ng/mL. We analyzed the clinical characteristics and laboratory data of the 2 groups. Results: Of the 91 patients, 52 were included in group 1, and 39 in group 2. Group 1 patients had significantly higher levels of calcium, phosphate, albumin and sodium than group 2 patients did. There were no differences in clinical characteristics, but the proportion of patients with polymorphic rash was significantly higher in group 2. Resistance to intravenous immunoglobulin was more frequent in group 2 (P=0.023). No significant difference in the incidence of coronary artery complications was observed. Conclusion: Low vitamin D levels are associated with resistance to intravenous immunoglobulin therapy in KD. Vitamin D deficiency might be a risk factor for immunoglobulin resistance in KD.

Vitamin C Is an Essential Factor on the Anti-viral Immune Responses through the Production of Interferon-${\alpha}/{\beta}$ at the Initial Stage of Influenza A Virus (H3N2) Infection

  • L-ascorbic acid (vitamin C) is one of the well-known antiviral agents, especially to influenza virus. Since the in vivo antiviral effect is still controversial, we investigated whether vitamin C could regulate influenza virus infection in vivo by using Gulo (-/-) mice, which cannot synthesize vitamin C like humans. First, we found that vitamin C-insufficient Gulo (-/-) mice expired within 1 week after intranasal inoculation of influenza virus (H3N2/Hongkong). Viral titers in the lung of vitamin C-insufficient Gulo (-/-) mice were definitely increased but production of anti-viral cytokine, interferon (IFN)-${\alpha}/{\beta}$, was decreased. On the contrary, the infiltration of inflammatory cells into the lung and production of pro-inflammatory cytokines, tumor necrosis factor (TNF)-${\alpha}$ and interleukin (IL)-${\alpha}/{\beta}$, were increased in the lung. Taken together, vitamin C shows in vivo antiviral immune responses at the early time of infection, especially against influenza virus, through increased production of IFN-${\alpha}/{\beta}$.

아위버섯의 성분에 관한 연구 (Stuy on the Composition of Pleurotus ferulae Fruit Body)

  • 아위버섯을 약용과 식용으로 이용하고자 일반성분, 무기질, 구성아미노산, 유리 아미노산, 비타민 등을 분석검토한 결과 조지방이 8.0 g%, 탄수화물이 54.3 g%, 조단백질이 20.2 g%이었다. 무기물은 K가 2,337.0 mg%으로 가장 많이 함유 되어있고, Mg, Na, Zn, Ca, Fe의 순으로 함유되었다. 구성 아미노산은 glutamic acid가 13.65 %mol로 가장 많이 함유되어있고, aspartic acid, glysine, alanine, leucine, arginine, valine, lysine등의 순으로 17종의 아미노산을 함유하고 있으며 필수아미노산은 37,78 %mol이었다. 유리아미노산은 alanine이 547.97 $\mu\textrm{g}$%으로 가장 많이 함유되어 있고, phenylalanine, tyrosine, leucine 등의 순이며, 총 함유량은 2,737.38 $\mu\textrm{g}$%이고, 21종을 함유하고 있기 때문에 아위버섯의 맛이 좋을 것이라 생각되어 진다. 비타민의 경우 vitamin A가 0.12 mg%, vitamin B$_1$은 0.31 mg%, vitamin B$_2$는 0.68 mg%, vitamin C는 7.99 mg%, vitamin E는 316.88 mg%, vitamin D$_3$는 0.29 mg%을 함유하였고, 비타민의 총 함유량은 326.27 mg%이었다. 특히 vitamin C와 vitamin E가 많이 함유되어 노화방지에 좋으리라 생각된다.
