Ohmic heating is a food processing operation in which heat is internally generated within foods by the passage of alternating electric current. The process enables highly viscous paste foods such as Kochujang, and fermented soybean paste to be heated very fast. In order to develope the novel pasteurization process of paste foods, static Ohmic heating system was built, and heating characteristic during Ohmic heating under various conditions were studied. Electric conductivities of Kochujang and fermented soybean paste at room temperature were 1.865 S/m and 2.510 S/m, respectively and increased linearly with increasing temperature. Specific heating rate was highly dependent on the frequency. The highest heating rate was achieved at 5 KHz for Kochujang and 20 KHz for fermented soybean paste. Uniform heating throughout the sample was achieved during Ohmic heating with low frequency electrical currents, however above 5 KHz frequency, surface temperature was several degrees higher than the bulk.
A numerical study is conducted on the optical fiber coating flow in a primary coating nozzle consisting of three major parts: a resin chamber, a contraction and a coating die of small diameter. The flow is driven by the optical fiber penetrating the center of the nozzle at a high speed. The axisymmetric two-dimensional flow and heat transfer induced by viscous heating are examined based on the laminar flow assumption. Numerical experiments are performed with varying the convergent angle of nozzle contraction and the optical fiber drawing speed. The numerical results show that for high drawing speed greater than 30 m/s, there is a transition in the essential flow features depending on the convergent angle. For a large convergent angle greater than $30^{\circ}$, unfavorable multicellular flow structures are monitored, which could be associated with wall boundary-layer separation. In the regime of small convergent angle, as the angle increases, the highest resin temperature at the exit of die and the coating thickness decrease but the sensitivity of coating thickness on drawing speed and the maximum shear strain of resin on the optical fiber increase. The effects of the convergent angle are discussed in view of compromise searching for an appropriate angle for high-speed optical fiber coating.

This study was conducted in order to develop wind-water heating system where frictional heat is creased between the rotor and working fluid when they are rotating in the cylindrical heat generator. The wind-water heating system is composed of rotor, stator, working fluid, motor, inverter and heat generation tank. Instead of wind turbine, we have used an electrical motor of 30㎾ to rotate the rotor in this system. Two working fluids and six levels of rotor rpm were tested to quantify heat amounts generated by the system. Generally, as motor rpm goes up heat amount increases that we have expected. At the same rpm, viscous fluid showed up better performance than the water, generating more heat by 10$\^{C}$ difference. The greatest heat amount of 31,500kJ/h was obtained when the system constantly drained out the hot water of at the flow rate of 500ℓ/h. Power consumption rate of the motor was measured by thee phase electric power meter where the largest power consumption rate was 14㎾ when motor rpm was 600 and gained heat was 31,500kJ/h, that indicated total thermal efficiency of the wind power water heating system was 62%.
The stability of the geometrically thin, two-temperature hot accretion disk is studied. The general criterion for thermal instability is derived from the linear local analyses, allowing for advective cooling and dynamics in the vertical direction. Specifically, classic unsaturated Comptonization disk is analysed in detail. We find five eigen-modes: (1) Heating mode grows in thermal time scale, $(5/3)({\alpha}{\omega})^{-1}$, where alpha is the viscosity parameter and w the Keplerian frequency. (2) Cooling mode decays in time scale, $(2/5)(T_e/T_i)({\alpha}{\omega})^{-1}$, where $T_e\;and\;T_i$ are the electron and ion temperatures, respectively. (3) Lightman-Eardley viscous mode decays in time scale, $(4/3)(\Lambda/H)^2({\alpha}{\omega})^{-1}$, where $\Lambda$ is the wavelength of the perturbation and H the unperturbed disk height. (4) Two vertically oscillating modes oscillate in Keplerian time scale, $(3/8)^{1/2}\omega^{-1}$ with growth rate $\propto\;(H/\Lambda)^2$. The inclusion of dynamics in the vertical direction does not affect the thermal instability, adding only the oscillatory modes which gradually grow for short wavelength modes. Also, the advective cooling is not strong enough to suppress the growth of heating modes, at least for geometrically thin disk. Non-linear development of the perturbation is followed for simple unsaturated Compton disk: depending on the initial proton temperature perturbation, the disk can evolve to decoupled state with hot protons and cool electrons, or to one-temperature state with very cool protons and electrons.

The effects of improved rice bran oil on the characteristics of exhaust emissions have been experimentally examined by a single cylinder, four cycle, direct injection, water-cooled and agricultural diesel engine operating at several loads and speeds. The experiments are conducted with light oil rice bran oil, and improved rice bran oil as a fuel. The fuel injection timing is fixed to 22$^{\circ}$BTDC regardless of fuel type, engine loads and speeds. To reduce the viscosity of rice bran oil, it is used with the methods of heating, methyl ester and ultrasonic system in a highly viscous rice bran oil. In this study, it is found that the brake specific fuel consumption rate of light oil is the lowest and that of improved rice bran oil is lower than that of pure rice bran oil, and NOx emissions of light oil are the lowest and those of pure rice bran oil are the highest, but soot emissions of light oil are the highest. However these results are not amply satisfied with the emissions regulation limit using the pure and improved rice bran oil as a fuel in diesel engines.
The rheological properties of soybean paste suspensions as affected by concentrations and heating were studied. All suspensions of soybean paste showed thioxotropic plastic behavior. The concentrated suspensions below the ratio of water to soybean paste, 1.25 exhibited Figure-eight phenomena which were presented by two Intersections of the up curve with the dorm curve of shear rate. The dilute suspension (soybean paste: water=1:2) showed H type hysteresis loop at low temperature. But increasing the heating temperature above $60^{\circ}C$, the hysteresis loop exhibited a Figure eight phenomenon. Consistency index of the suspensions increased remarkably by heating and showed the highest value around isoelectric point of the protein. It was suggested that the proteinous nitrogen might be the main component taking part in viscous behavior under different pH and heat treatment.
The effect of catalytic condition on the properties of SiO2 aerogels has been investigated and then the dri-ed aerogels were partially densified to induce mechanical strength by heat treatment in order to prepare Type-VI silica by Sol-Gel method. Aerogel made by 1-step base process had the highest skeletal density lowest shrinkage and the smallest particle size. But in case of using acid catalyst in both 1st and 2nd step had the lowest skeletal density highest shrinkage and the largest particle size The aerogel synthesized by 1-step base process was most transparent because of its homogeneous microstructure. During heat treatments cracks occurred below 200$^{\circ}C$ for aerogel with the skeletal density lower than 1.9 g/cm3 but the with the higher skeletal density did not cracked up to 800$^{\circ}C$ shrinkage and skeletal density increased as heating temperature increased due to condensation and viscous sintering mechanism.
Drying process in the cylindrical thin film layer of sludge with the thickness less than a few millimeters has been investigated. Thin film drying is specially designed and used to dry the viscous materials like sewage sludge. The thin film layer of sludge is dried on the metallic cylindrical surface through which thermal energy is supplied to the layer during drying. The wall temperature is assumed to be constant during drying in the present study for the simplification. In order to solve the equations, the mass transfer rate on the drying surface should be determined. The mass flux of evaporated water vapor on the surface is estimated with the formulation given in the literature. The effect of some physical parameters on drying has been examined to figure out the drying characteristics of the sludge layer.

The time implicit point SGS scheme is applied to compute hypersonic viscous flows in thermochemical nonequilibrium. The performance of the point SGS scheme is then compared with those of the line SGS and the LU-SGS schemes. Comparison of convergence histories with the effect of multiple forward and backward sweeps are made for the flow over a 2D cylinder experimentally studied by Hornung and the flow over a hemisphere at conditions corresponding to the peak heating condition during the reentry flight of an SSTO vehicle. Results indicate that the point SGS scheme with multiple sweeps is as robust and efficient as the line SGS scheme. For the point SGS and the LU-SGS scheme, the rate of improvement in convergence is largest with two sweep cycles. However, for the line SGS scheme, it is found that more than one sweep cycle deteriorates the convergence rate.
