Trends for the management of hazardous substances derived from fatty acids (지방산 유래 유해물질 관리 동향)

  • More than 500 different compounds have been identified in the cooking process of frying oil as a result of chemical reactions such as oxidation, polymerization, hydrolysis and pyrolysis, 3-MCPDe(3-Monochloropropane -1,2-diol ester) and GE(glycidyl ester) are also included in these compounds. When MCPDe and GE derivatives are absorbed into the body, they are converted into free forms by lipase enzymes, which turn into 3-MCPD and glycidol(2,3-epoxy-1-propanol), respectively. These exhibit genotoxic and carcinogenic effects. As the toxicity of 3-MCPDe and GE is known worldwide, the health risk is being researched. However, regulations have not been established in countries other than the European Union(EU). Several studies for the analysis of 3-MCPDe and GE are being conducted, and direct methods and indirect methods are applied. As a result of analyzing 3-MCPDe and GE contained in commercially available foods by various analysis methods, the content of 3-MCPDe in baby food/infant formula was ND~600 ㎍/mL and GE was ND~750 ㎍/mL. and purified vegetable oils and fats showed <250-8,430 ㎍/mL and 1,880-9,530 ㎍/mL. Thus, 3-MCPDe and GE were detected in various food types, several studies for the reduction of 3-MCPDe and GE are being conducted around the world.

Comparisons of food intake between breast cancer patients and controls in Korean women

  • The purpose of this study was to compare food intakes between Korean breast cancer patients and a healthy control group. We compared the intake of nutrients of 117 food items between Korean breast cancer patients (n=97) and age matched healthy controls (n=97). Nutrient intake was estimated using a quantitative food frequency questionnaire. The mean caloric intake of breast cancer patients and healthy controls was not significantly different. Breast cancer patients consumed significantly less fat and antioxidant nutrients such as vitamin A, retinol, ${\beta}-carotene$, vitamin C and vitamin E when compared to the control subjects. Among the food items, the intake of eggs (p<0.01), legumes (p<0.05), vegetables (p<0.05), seasonings (p<0.001), and oils and fats (p<0.01) in breast cancer patients was significantly lower than that in the controls. These results suggest that Korean breast cancer patients consumed less amount of soy and vegetables, which are rich source of antioxidant nutrients and phytosterols. Thus, dietary guidance to increase intake of these foods may be beneficial in the prevention of breast cancer.

Analysis of Priority Countries and Products for Indonesian Export Diversification in Latin America

  • Purpose - Indonesian economy often receives negative impact from external factors, particularly through trade linkage. To mitigate that impact, the export market and product diversification should be established. Latin America is one of the potential regions to augment the Indonesian export market. Research design, data, and methodology - This study attempts to classify the potential market and product for Indonesian export, particularly in Latin America, by using panel regression, trade complementarity, and export similarity index over the period 2000-2015. Regression was also used to examine whether the presence of the Indonesian Trade Promotion Center (ITPC) can support diversification. Results - Based on regression results, those indexes established Chile, Uruguay, Suriname, and Ecuador as the priority countries with the products: animal and vegetable oils, fats and waxes; chemicals and related products; miscellaneous manufactured articles; commodities and transactions. Conclusions - The results of the regression concludes that the trade complementarity index gave a significant positive effect to boost Indonesian export, whereas, the export similarity index gave a significant negative effect. The regression also conclude that ITPC gave a significant positive impact on Indonesian export. For instance, the government should prioritize those countries and products and also develop ITPC there to optimize Indonesian export.

Nutrient Intake of Rural Housewives in Yeo-Ju Area (여주지역 농촌주부들의 영양소 섭취실태)

  • An attempt was made to assess nutrient intake of a group of rural housewives living in the area of Yeo-Ju, forty persons were surveyed between July 4 and 5, 1984. All foods and beverage were weighed and collected as consumed in the home over 24-hour periods and protein and ten inorganic element in the diets were assayed by laboratory analysis. 1) The average food intakes of the subject per day were 1105.7g, which consisted of vegetable food (93.1%), animal food 96.6%), and fats and oils (0.3% . The energy percentage of carbohydrate, protein, and fat were 79.5%, 13.4% and 7.1%, respectively, showing higher dependence on carbohydrate. 2) The protein intake calculated from food table was 64.98g. The contribution of animal proteins to total protein was only 18.6g, for below the recommenced allowance. 3) Analysed daily mean intake (% of RDA) of protein (g), Ca(mg), K(g), Na(g), Mg(mg), P(mg), Zn(mg), Cu (mg), Mn(mg), Fe(mg) and Cl(g) were 60.79(93.3%), 395(65.9%), 4.79(85.268%), 6.53(198-594%), 321.4(107.15%), 827.8(103.38%), 15.81(105.4%), 1.66(55-835), 5.12(102.205%), 14.12(78.44%), 9.57(188-563%), respectively.

Transesterification Using the Cross-Linked Enzyme Aggregate of Photobacterium lipolyticum Lipase M37

  • Biodiesel is methyl and ethyl esters of long-chain fatty acids produced from vegetable oils or animal fats. Lipase enzymes have occasionally been used for the production of this biofuel. Recently, biodiesel production using immobilized lipase has received increased attention. Through enhanced stability and reusability, immobilized lipase can contribute to the reduction of the costs inherent to biodiesel production. In this study, methanol-tolerant lipase M37 from Photobacterium lipolyticum was immobilized using the cross-linked enzyme aggregate (CLEA) method. Lipase M37 has a high lysine content (9.7%) in its protein sequence. Most lysine residues are located evenly over the surface of the protein, except for the lid structure region, which makes the CLEA preparation yield quite high (~93%). CLEA M37 evidences an optimal temperature of $30^{\circ}C$, and an optimal pH of 9-10. It was stable up to $50^{\circ}C$ and in a pH range of 4.0-11.0. Both soluble M37 and CLEA M37 were stable in the presence of high concentrations of methanol, ethanol, 1-propanol, and n-butanol. That is, their activities were maintained at solvent concentrations above 10% (v/v). CLEA M37 could produce biodiesel from olive oil and alcohols such as methanol and ethanol. Additionally, CLEA M37 generated biodiesel via both 2-step methanol feeding procedures. Considering its physical stability and reusability, CLEA M37 may potentially be used as a catalyst in organic synthesis, including the biodiesel production reaction.

Conversion of Vegetable Oils and Mixed Fat into Biodiesel Using $Al_2O_3$-Supported CaO Catalyst ($Al_2O_3$ 지지 CaO촉매에 의한 식물유와 혼합지방의 바이오디젤화)

  • The transesterification of rapeseed oil, soybean oil, and mixed fat were conducted at $65^{\circ}C$ with $Al_2O_3$-supported CaO, 0.8 wt% KOH, 1 wt% NaOH and mixed catalyst. The overall conversion(%) of rapeseed oil indicated to be 96% at the 12:1 molar ratio of methanol to oil, 8 wt% CaO and 2 wt% water. The pH ranges of biodiesel for mixed fat using four catalysts and for three fats using 8wt% CaO were 7.3-9.1, 7.3-7.5, respectively. The volumes of water needed to wash biodiesel from rapeseed oil using 0.8 wt% KOH and 8 wt% CaO were 15 mL and 3 mL.

  • Recently, we have a lot interest in a sudden rise of oil prices and a change weather for the earth warmming, so, development of new alternative fuels need in order to spare fossil fuel and reduce exhaust emissions for air pollution prevention. Biodiesel, which can be generated from natural renewable sources such as new or used vegetable oils or animal fats, may be used as fuel in diesel engine of compression ignition engine. In this paper, the combustion characteristics between neat diesel oil and biodiesel blends(10 vol.% biodiesel and 20 vol.% biodiesel) were tested using four stroke, direct injection diesel engine, especially this biodiesel was produced from soybean oil at our laboratory. This analysis showed that cylinder pressures, the rate of pressure rises and the rate of heat releases were decreased as the blending ratios of biodiesel to diesel oil increased because of lower heating value of biodiesel in spite of increased oxygen content in biodiesel.

  • Recently, we have a lot of interest in alternative fuels to provide energy independence from oil producing country and to reduce exhaust emissions for air pollution prevention. Biodiesel, which can be generated from natural renewable sources such as new or used vegetable oils or animal fats, may be used as fuel in diesel engine of compression ignition engine. In this paper, the test results on specific fuel consumption and exhaust emissions of neat diesel oil and biodiesel blends(10 vol.% biodiesel and 20 vol.% biodiesel) were presented using four stroke, direct injection diesel engine, especially this biodisel was produced from soybean oil at our laboratory. This study showed that Soot and CO emission were decreased as the blending ratios of biodiesel to diesel oil increased, on the other hand NOx emission was slightly increased because of the oxygen content in biodiesel. Also, the biodiesel blends yielded slightly higher specific fuel consumption than that of diesel oil because of lower heating value of biodiesel.

  • Regular exercise is effective in preventing coronary disease such as angina pectoris and infarction, inside it can lower the blood pressure and aids in weight control and release of stress. Risk factors of arteriosclerosis is hypertension, hyperlipidemia, diabetes, obesity, physical inactivity and excessive smoking. Arteriosclerosis begins at young age worsens with age, particulary in male. For people with risk factors of arteriosclerosis, it is important to prevent arteriosclerosis-related disease with dietary, living pattern and exercise prescription. Dietary fibers promote exercise of the digestive tract and shortens the time food remains inside the digestive tract. It can prevent obesity, hyperlipidemia, arteriosclerosis and colin cancer by blocking the absorption of cholesterol. Various vegetables and sea foods are lichen unsaturated fats and prevent the absorption of cholesterol inside the digestive tract. Essential fatty acids and unsaturated fats which are contained in vegetable oils, promotes metabolism while preventing absorption. In fruits, pectin water-soluble fiber, is present and lowers the level of cholesterol. By consuming foods that low in cholesterol and saturated fats, and rich in unsaturated fats, aliomentotherapy alone can reduce the plasma cholesterol by 10~l5$\%$. For ideal exercise, it should be aerobic with intensity of 60~80$\%$ HRmax, duration of 15~60min/day. The frequancy of 3~6/week is desirable the better exercise prescription is endurance aerobic exercise. To get more effect exercise, exercise consistency is very important.

Effects of Dietary Fats and Oils On the Growth and Serum Cholesterol Content of Rats and Chicks (섭취(攝取) 지방(脂肪)의 종류(種類)가 흰쥐와 병아리의 성장(成長) 및 혈청(血淸) Cholesterol 함량(含量)에 미치는 영향(影響))

  • A series of experiment was carried out to study the effect of commonly used dietary fat or oils on the growth, feed efficiency, nutrient utilizability, nitrogen retention and serum cholesterol of rats and chicks fed various fat or oils at the level of 10% during 12 weeks of experimentation. Fat and oils used in this experiment were also analyzed for the composition of some fatty acids. The main observations made are as follows: 1. All groups received fat or oils gained more body weight than unsupplemented control group except chicks fed fish oil and rapeseed oil although no statistical significance was found between treatments. It was found that body weight gain achieved by the rats fed soybean oil, rapeseed oil, animal fat or corn oil was much greater than other group and that achieved by the chicks fed corn oil and animal fat was greater than other vegetable oil groups, although no statistical significance was found among treatments. 2. Feed intake data indicated that corn oil group of both rats and chicks consumed considerably more feed than other groups. Whereas feed intake of fish oil groups was the lowest among the experimental animals indicating that fish oil might contain unfavorable compound that depresses the palatability. In feed efficiency, soybean oil group of rats and corn oil group of chicks were significantly better than other experimental groups. In general, addition of fat or oils in the diet improved feed effeciency of diet. 3. Nutrient utiIizabiIity and nitrogen retention data showed that fat in the experimental diet containing 10% fat or oils was absorbed better than crude fat in control diet. It was also found that there was no significant difference in nitrogen retention among treatment. 4. Liver fat content of rapeseed oil group was much higher than that of control group and other group. It was also noticed that feeding more polyunsaturated fatty acids resulted in higher content of Iiver fat. 5. Present data indicated that serum cholesterol content of rapeseed oil and sesame oil group of rat was the higher than that of control group. Serum cholesterol content of animal fat group of chicks was higher than other group. It was interesting to note that serum cholesterol content of chicken was higher than that of rats?regardless of the kind of oils received. 6. Analytical data revealed that fatty acid composition of vegetable oil was composed mainly of oleic acid and linoleic acid, whereas animal fat and fish oil were composed of saturated fatty acid such as, myristic and palmitic acid. It should be mentionted that the perilla oil contained a very large amount of linolenic acid (58.4%) comparing with that in order vegetable oils. Little arachidonic acid was detected in vegetable oil, whereas none in animal fat and. fish oil.
