과채류 포장용 골판지 상자의 저장온도와 습도에 따른 물리적 특성 변화 (Changes of the Physical Properties of Corrugated Fiberboard Boxes for Fruit and Vegetable Packaging by Preservation Temperature and Relative Humidity)

  • This study was carried out to analyze the effects of preservation temperature and relative humidity to the physical properties of corrugated fiberboard boxes for fruit and vegetable packaging. The preservation temperature did not affect severely to physical properties of corrugated fiber-board. Relative humidity was a major cause of corrugated fiberboard box quality deterioration. The burst and compressive strengths of experimental boxes measured with Mullen high pressure tester and tong crush tester were decreased gradually as relative humidity increased from 55% to 75%. But, the strength properties slightly decreased relative humidity at 75% or higher. This tendency was the greater for single wall (SW) corrugated fiberboard box than that for double wall (DW). It is suggested that development of the water-resistant corrugated fiberboard and box be needed that can be used under the condition of low temperature and high moisture content, which are being employed in the cold chain system.

Impact of Interactions Between Self-Reported Psychological Stress and Habitual Exercise on the Dietary Intake of Japanese Men and Women: a Large-Scale Cross-Sectional Study

  • Background: Modifying lifestyle factors such as diet and exercise can reduce the risk of cancer. Psychological stress (PS) might be indirectly associated with cancer because it alters lifestyle factors. However, the relationship among these variables has not been fully investigated. Thus, we examined interactions between self-reported PS (SRPS) and habitual exercise on diet. Materials and Methods: In all, 5,587 men and 2,718 women were divided into "exerciser" and :non-exerciser" groips, based on whether they exercised reguarly, and classified into three SRPS levels: low, moderate and high. Diet was estimated using a validated food frequency questionnaire. Using a general linear model, food and nutrient consumption was estimated for each SRPS level in the 2 exercise groups, and the interactions between SRPS levels and exercise were calculated. Results: In women, the intake of pork and beef, low fat milk and yogurt, natto (fermented soybean), carrots and squash, other root vegetables, mushrooms, seaweeds, and wine along with the nutrients vegetable protein, soluble, insoluble and total dietary fiber, daidzein, genistein, carotene, retinol equivalents, vitamin B2, pantothenic acid, potassium, calcium, magnesium, phosphorus and iron demonstrated significant interaction with SRPS and habitual exercise (p for interaction <0.05). In men, raw and green leafy vegetable and fruit and vegetable juice significantly interacted with SRPS and habitual exercise (p for interaction <0.05). Conclusions: We suggest that certain foods and nutrients, which are thought to have a protective effect against cancer, interact with SRPS and habitual exercise, especially in women. This information is valuable for understanding and improving interventions for cancer prevention.

식물공장시스탬을 이용한 약초의 채소화에 관한 기초연구 3. 채소화 가능약초의 성분분석 (Studies on Utilization of Medicinal Herbs as Vegetable by Hydroponics 3. Component Analysis of Medicinal Herbs as Vegetable)

  • 우리 나라에서 한양재료로 사용되고 있는 약초의 어린잎과 전초(全草)를 산채류로 이용하기 위한 기초자료를 얻기 위하여 식용이 가능한 7종의 약초 어린잎 및 전초(全草)의 일반성분, 무기성분 및 아미노산등을 분석하였다. 독활을 포함해서 7종의 약초 어린잎 및 전초(全草)의 수분함량은 $79.74{\sim}85.97%$의 범위로 다른 야채류에 비해 낮게 나타났으며, 조단백질의 함량은 당귀(1.12%)와 방풍(1.27%)을 제외하고는 대부분 2%정도로 야채류와 비슷한 경향을 보였다. 그리고 조지방은 $0.69{\sim}1.36%$, 조섬유는 $1.8{\sim}3.9%$, 조회분은 $1.58{\sim}2.79%$의 범위로로 각각 나타나 종류 별로는 다소의 차이를 보이고 있으나 일반 야채류와 대체적으로 비슷하였다. 무기성분에서는 모든 시료에서 K함량이 $202{\sim}504mg%$로 가장 높았고 Ca, Mg 및 Natns으로 나타났다. 총 아미노산의 함량은 두릅 965mg%, 황금 930mg%, 독활 879mg%, 일당귀 851mg%, 배초향가 747mg% 및 방풍 615mg%의 함량을 보였다. 아미노산의 조성을 보면 약초의 종류에 따라 아미노산의 종류별 함량 차이가 있으나 전반적으로 aspartic acid와 glutamic acid가 공통적으로 많았으며, methionine과 cystine은 모든 시료에서 가장 적게 나타났다.

온도 및 $CO_2$ 농도 상승에 따른 무의 건물생산 및 일반 영양성분 변화 (Changes of Plant Biomass and Proximate Composition of Radish Exposed to Elevated Temperature and $CO_2$ Concentration)

  • 상승 온도와 상승 $CO_2$ 농도 처리가 무의 생장량, C/N율, 그리고 식품 일반 영양성분에 미치는 효과를 검토한 결과, 대기 온도보다 $2{\sim}2.5^{\circ}C$ 범위의 온도 상승은 무의 건물생산을 26~39% 범위의 감소를 가져오며, 대기 $CO_2$ 농도가 220~230ppm 상승함에 따라서 건물생산의 감소가 9~15% 범위로 어느 정도 줄어들지만, 온도 상승에 의한 감소 효과를 극복하지 못했다. 온도 상승은 무의 T/R율을 봄에는 86%, 가을에는 60% 증가시켰으며, C/N율을 낮추고, 조단백질, 조지방, 그리고 회분의 함량을 높이는 결과를 나타내었다. 반면에 상승 $CO_2$ 처리는 C/N율은 높이고 조단백질, 조섬유, 그리고 회분의 함량을 저하시키는 결과를 나타내었다. 따라서 앞으로 온도 상승과 $CO_2$ 농도 상승 정도에 따라 무의 건물생산, T/R율, C/N율, 그리고 일반 영양성분에 상당한 영향을 미칠 것으로 판단된다.

Fruit and vegetable discards preserved with sodium metabisulfite as a high-moisture ingredient in total mixed ration for ruminants: effect on in vitro ruminal fermentation and in vivo metabolism

  • Objective: Our recent series of laboratory- and large-scale experiments confirmed that under aerobic and anaerobic conditions, sodium metabisulfite (SMB) was effective in preserving nutrients and antioxidant capacity of highly perishable fruit and vegetable discards (FVD). Hence, the purpose of this study was to examine how partial inclusion of SMB-treated FVD in total mixed ration (TMR) influences in vitro ruminal fermentation, whole-tract digestibility, nitrogen metabolism, blood metabolites, and voluntary feed intake of sheep. Methods: The FVD were mixed thoroughly with 6 g SMB/kg wet biomass and kept outdoors under aerobic conditions for 7 days. Four TMRs including four levels of SMB-treated FVD (as-fed basis) at 0%, 10%, 20%, and 30% (equaling to 0%, 1.9%, 3.8%, and 5.7% on dry matter basis, respectively), were prepared as replacement for corn grain. The ruminal fermentation metabolites were studied using an in vitro gas production test. Four mature male Corriedale sheep were assigned at random to the 4 diets for two separate sub-experiments; i) digestibility trial with four 21-d periods, and ii) voluntary feed intake trial with four 28-d periods. Results: Inclusion of SMB-treated FVD in the TMR tended to quadratically increase partitioning factor. No effect was seen on total-tract digestibility of organic matter, ether extract, crude protein, and acid detergent fiber, except for neutral detergent fiber digestibility that tended to linearly increase with increasing SMB-treated FVD in the TMR. The progressive increase of FVD preserved with SMB in the diet had no effect on nitrogen metabolism. Treatment had no effect on serum antioxidant capacity and blood metabolites assayed. Voluntary feed intake was not impaired by inclusion of SMB-treated FVD in the TMR. Conclusion: It appears that FVD preserved with SMB can be safely incorporated into TMR as replacement of corn grain without impairment of nutrient metabolism and feed intake.

무기질 출납에 있어서의 섬유질 및 Vitamin 급원 식품의 영향 (Effects of Fiber and Vitamin Food Sources on Mineral Balance)

  • 종류가 다른 채소 3종을 임의로 선정하여 마우스의 Na, K, Ca, Fe, Cu, Zn, Mg 밸런스에 어떠한 영향을 미치며, 또한 채소의 종류나 양, 사육기간이 영향을 미칠 수 있는 요인인지 조사하였다. 실험동물은 8주된 SPF계 마우스 130마리를 사용했으며 평균 체중은 $29{\sim}38g$이었다. 마우스 10마리를 대조군으로, 나머지 120마리를 3군으로 나누어 이를 다시 두군으로 나누어 한마리씩 분리 사육시켰다. 대조군은 물(2차 증류수)과 식이를 제한없이 주고 다른군은 물 대신 임의로 선정한 채소 3종(당근, 껍질콩, 호박)으로 대체하고 각군 20마리 중 10마리는 1주(단기간) 10마리는 2주(장기간) 사육시켜 실험 완료일 까지의 실험식이 섭취량이 대조군과 유의적인 차가 없는 마우스만을 실험대상으로 하였다. 또한 이들 채소의 양에 따라서 당근대량군(12마리), 당근소량군(10마리), 껍질콩대량군(11마리), 껍질콩소량군(9마리), 호박대량군(10마리), 호박소량군(14마리)으로 분류하였다. 체중증가는 대조군에 비하여 껍질콩대량군이 높게 나타났으며, 식이 효율은 대조군에 대한 차이가 없었다. 분변과 요량은 채소 급여에 의하여 증가하였다. 체중증가와 식이효율, 분변과 요량에는 채소의 종류나 양, 사육기간등이 작용인자로는 확인되지 않았다. 무기질 섭취량은 대조군에 비하여 Na, Ca, Fe, Cu가 호박대량군에서 가장 낮게 나타났고, K는 당근대량군이 가장 높게 나타났으며 Zn, Mg는 껍질콩대량군에서 가장 높게 나타났다. Na, K, Ca, Fe, Cu, Zn, Mg의 흡수율과 밸런스는 대조군이 플러스의 균형을 나타내는데 반하여 채소 급여군은 모두 마이너스의 균형을 나타내었다. 채소의 종류, 양, 사육기간이 Na, K, Ca, Cu, Zn의 섭취량에, Cu, Zn의 흡수율에, K, Cu, Zn 평형에 각각 영향을 미치는 요인인 것으로 확인되었다. K, Zn, Mg는 대조군에 비하여 실험군의 섭취량이 증대 했음에도 불구하고 흡수율은 마이너스이였다.

Dietary supplementation with different types of fiber in gestation and lactation: effects on sow serum biochemical values and performance

  • Objective: Three types of dietary fiber were fed to sows during gestation and lactation stages to monitor their physiological and metabolic adaptations during the pre-partum period and to determine how these effects may influence the lactation period and sow performance. Methods: Soon after breeding, 54 sows were selected and were fed with 20% supplementation as fed of wheat bran (WB), soya hulls (SH), or rice hulls (RH) in diets during gestation and lactation. Sows were weighed, backfat thickness was measured ultrasonically and jugular blood samples were collected from all sows. The litter size was equalized to 10, by fostering piglets from sows on the same treatment. Results: Sows gained 22.0, 21.8, and 25.5 kg of net maternal body weight during gestation (for WB, SH, and RH sows, respectively; p = 0.007). There was no treatment effect on the body weight change during lactation (p = 0.158), however RH sows consumed an average of 133.66 kg of feed, WB sows took 121.29 kg and SH sows took 126.77 kg during lactation (p<0.001). The SH litters gained an average of 59.34 kg of weight during lactation, while other litters gained 51.58 and 49.98 kg (for WB and RH litters, respectively; p<0.001). Exception for aspartate aminotransferase and alanine aminotransferase, measured serum biochemical values were broadly in agreement with earlier reports. Despite the use of additional vegetable oil to balance the energy level, RH sows still had lower concentrations of serum triglycerides in late gestation. Conclusion: Different types of fibrous ingredients in the gestation diet influenced most of the investigated reference values for sows. The values of serum biochemical parameters were generally not affected by fiber type during the lactation stage. The SH supplementation for sows is an effective approach to give heavier litters at birth and weaning and to increase voluntary feed intake in early lactation.

Incidence and Predictors of Inadequate Bowel Preparation before Elective Colonoscopy in Thai Patients

  • Background: The incidence of inadequate bowel preparation before elective colonoscopy in this region has never been studied. Materials and Methods: The authors prospectively described the incidence and factors related to inadequate bowel preparation in Thammasat university hospital. Bowel preparation quality was accessed by using Aronchick scale. Factors associated with inadequate bowel preparation were also recorded. Results: Two hundred patients undergoing elective outpatient colonoscopy were enrolled. Inadequate and fair bowel preparation was documented in 9 and 43%, respectively. Factors associated with inadequate bowel preparation were incomplete cleansing agent ingestion (odds ratio 7.7; 95%CI 1.62-36.64) and patient's unrecognization of vegetable avoidance (odds ratio 3.26; 95%CI 1.14-9.28). Conclusions: Compared with previous reported, inadequate bowel preparation was seen less in our study, however, more patients with fair bowel preparation was documented. Further study aiming at investigating the type and amount of fiber contained in diet before elective colonoscopy should be commenced.

식이섬유의 철분결합력에 관한 in vitro 연구 (Binding of Iron by Vegetable Fiber)

  • 한국인 상용채소로부터 추출한 식이섬유는 철분과 결합하였으며 결합량은 채소의 종류에 따라 차이가 있었는데 37.83∼85.51%로서 대부분은 50%이상 결합하였다. 식이섬유의 철분결합력은 pH가 증가함에 따라 증가했으며 pH 7에서 최대 값을 나타내었다. 식이섬유에 결합된 철분의 양은 철분의 농도가 증가함에 따라 증가했으며 농도에 따른 증가폭은 채소종류에 따라 다양했다. 본 실험결과 한국인 상용 채소의 식이섬유가 철분과 상당량 결합하였으므로 특히 철분자의 결합력이 높은 채소들을 다량 섭취할 경우 철분의 흡수 문제가 야기될 가능성이 있다고 생각된다. 또한 채소의 종류에 따라 철분결합력에 상당한 차이가 있다는 것을 알았는데 한국에서 모든 부식의 양념재료로 쓰이는 마늘과 파는 철분결합력이 다른 채소들에 비해 낮은 것으로 나타났다. 한편 식이섬유의 철분자의 결합력은 철분의 농도를 증가시킬수록 계속 증가하였는데 본 실험에 사용된 식이섬유와 철분의 농도 비율 범위는 한국인의 섭취량에 기준을 두고 설정된 것으로, 본 실험결과 철분의 농도를 증가시켜도 철분 흡수를 저해하는 식이섬유의 작용이 감소되지 않고 오히려 증가했다. 그러므로 체내에서의 철분 이용률을 고려해 볼 때 본 실험에 사용된 식이섬유와 철분의 농도비율 범위에서는 철분의 급원이 되는 식품을 한번에 다량 섭취하는 것보다는 소량씩 자주 섭취하는 것이 바람직할 것으로 생각되나 체내에서의 연구가 뒷받침되어야 할 것으로 생각된다. 특히 철의 경우 그 항상성은 배설능력의 제한성에 의해 소장의 흡수정도로써 조절되므로 철 흡수이용의 장해인자인 섬유소의 작용은 중요하며 전세계적으로 20% 이상의 인구가 Fe 결핍성 빈혈상태이고 특히 서구 선진국들의 섬유소 섭취량의 3∼4배 이상 섭취하는 한국인들의 Fe섭취 형태가 90% 이상 식물성 식품에서 얻는다는 보고를 볼 때 채소식이섬유의 철분결합은 빈혈질환의 원인분석의 일환으로 중요하리라 생각된다. 그러나 본 실험은 in vitro실험으로서 이상의 결과를 인체에 직접적으로 적용시키는 데는 무리가 있다고 생각되므로 앞으로 in vivo 실험이 병행되어져야 할 것으로 사료된다.

Recent strategies for improving the quality of meat products

  • Processed meat products play a vital role in our daily dietary intake due to their rich protein content and the inherent convenience they offer. However, they often contain synthetic additives and ingredients that may pose health risks when taken excessively. This review explores strategies to improve meat product quality, focusing on three key approaches: substituting synthetic additives, reducing the ingredients potentially harmful when overconsumed like salt and animal fat, and boosting nutritional value. To replace synthetic additives, natural sources like celery and beet powders, as well as atmospheric cold plasma treatment, have been considered. However, for phosphates, the use of organic alternatives is limited due to the low phosphate content in natural substances. Thus, dietary fiber has been used to replicate phosphate functions by enhancing water retention and emulsion stability in meat products. Reducing the excessive salt and animal fat has garnered attention. Plant polysaccharides interact with water, fat, and proteins, improving gel formation and water retention, and enabling the development of low-salt and low-fat products. Replacing saturated fats with vegetable oils is also an option, but it requires techniques like Pickering emulsion or encapsulation to maintain product quality. These strategies aim to reduce or replace synthetic additives and ingredients that can potentially harm health. Dietary fiber offers numerous health benefits, including gut health improvement, calorie reduction, and blood glucose and lipid level regulation. Natural plant extracts not only enhance oxidative stability but also reduce potential carcinogens as antioxidants. Controlling protein and lipid bioavailability is also considered, especially for specific consumer groups like infants, the elderly, and individuals engaged in physical training with dietary management. Future research should explore the full potential of dietary fiber, encompassing synthetic additive substitution, salt and animal fat reduction, and nutritional enhancement. Additionally, optimal sources and dosages of polysaccharides should be determined, considering their distinct properties in interactions with water, proteins, and fats. This holistic approach holds promise for improving meat product quality with minimal processing.
