This study was intended to investigate physical characteristics of the bread with Laminaria powder. Three different powder concentration levels of 2.5%, 5% and 7.5% were added to flour to make the bread. The puffing rate, density, color, and texture were analyzed. Sensory evaluation was performed among female college students and housewives in their 50s. The volume of the dough during the fermentation and the final volume of the bread containing Laminaria powder was smaller than that of the dough without the powder. While adding the powder to the bread decreased the Hunter L (lightness) and a value (redness), it increased the b value (yellowness). In the texture analyzer measurement, hardness and fracturability of the bread were significantly increased by adding the powder and chewiness tended to increase. However, adhesiveness, springiness and cohesiveness were not significantly different among groups. As the result of the sensory evaluation, differences were observed between female college students and housewives in their 50s. In all indices of the sensory test, college students evaluated the bread with the powder lower than the bread without the powder, while the housewives preferred the bread with the powder. The bread containing 2.5% Laminaria powder obtained the most excellent scores. In conclusion, it is suggested that the bread with 2.5% Laminaria powder would be a highly acceptable bio-active product with proper physical characteristics.
Fried-fish snacks containing surimi are a popular seafood product in Asia. To prepare fried-fish snacks, various ingredients are added to surimi. Among them, starch is important for producing snacks of desirable texture and taste. We investigated the physicochemical properties of fried-fish snacks containing arrowroot, potato, sweet potato, corn, and tapioca starches. The fried-fish snack with arrowroot starch showed the highest drying rate; after drying for 3 hours, the water content was unchanged. None of the starches affected the total volatile basic nitrogen values of the fried-fish snacks, which were approximately 1.5 mg/100 g, indicating freshness. The fried-fish snacks with corn and arrowroot starches had the highest brightness (L) values and the fried-fish snack with tapioca starch, the lowest L value. The hardness value of the fried-fish snack with tapioca starch was significantly higher than that of the other fried-fish snacks. In the sensory evaluation, the fried-fish snacks with arrowroot starch showed the best overall acceptance.
The anti-oxidant activity, sinigrin content, and sensory evaluation of frying batter treated with Dolsan leaf mustard powder (DLMP) were investigated. These endpoints were measured in the control sample (batter without DLMP) and seven other batters with the addition of DLMP in the following quantities: 0.03 g (S-1), 0.02 g (S-2), 0.06 g (S-3), and 0.3 g (S-4, S-5, S-6, and S-7 with different amounts of red pepper powder). The acid value (AV) and peroxide value (POV) were low in the S-4 and S-5 batters; the total polyphenol content was 190.97 mg GAE/g in the control sample and 721.17 mg GAE/g in S-4; and the total flavonoid content of S-6 was 67.82 mg QE/g which was higher than that of the control sample. The anti-oxidant activity was measured by EDA, ABTS, and FRAP assays and was seen to rise as the amount of DLMP increased. Moreover, sinigrin content was higher in S-4, S-5, S-6, and S-7 than in the control, S-1, S-2, and S-3, and there were no significant differences among S-4 to S-7 when just 0.3 g of DLMP was added. Sensory evaluation showed that color, flavor, taste, texture, and overall acceptability values were significantly higher in S-4 and S-5, and that there was no significant difference across the samples. The addition of DLMP is therefore expected to increase the anti-oxidant activity of frying batter which would be effective in improving the storage and quality of the product.

In this study, we evaluated optimal conditions for ethanol production of the spruce hydrolysate (SH) obtained from diethyl oxalate pretreatment. Fermentable sugar concentration in SH was 29.04 g/${\ell}$ except arabinose. Monosaccharides obtained from the oligomer degradation were mainly mannose (39.26 g/${\ell}$) and galactose (12.83 g/${\ell}$). Concentration of 5-HMF and furfural which are inhibitors on ethanol fermentation were 0.09 g/${\ell}$ and 0.04 g/${\ell}$ respectively. Concentration of acetic acid and total phenolic compounds in SH were 1.4 g/${\ell}$ and 2.83 g/${\ell}$. Ethanol production using hydrolysate was 11.7 g/${\ell}$ at optimal pH 6.0 after 48 h. Specific ethanol production was 0.15 (g/(${\ell}^*h$)) at pH 5.0 and 5.5. while that was 0.24 (g/(${\ell}^*h$)) at pH 6.0. Specific ethanol production has difference depend on initial pH for fermentation. Ethanol production was 14.3 g/${\ell}$ after 48 h when xylanase 20 IU was added in SH for degradation of oligomer during fermentation. It implied that ethanol production increased by 22.2% compare with control (without xylanase).
Advancement of science technology, combined with other technologies including smart clothing, enables value added product developments and market creation. Accordingly, it became necessary to identify technology trends promptly and to prepare future technology road map. For this purpose, many bibliometric analysis using thesis and patents have been made. However, few such attempts are made in clothing study. Thus, the study examined the latest technology trends and future technology development directions of smart clothing from empirical bibliometric analysis based on smart clothing patent documents. In addition, comparative analysis was made about the market leadership and technology development capability of core sectors by countries utilizing market reach index expressed as patent families and technology development index. The study revealed that overall smart clothing technology development trends has been continuously increasing since 2000. Also the results confirmed that it is in the development stage from the fact that each year the number of patents and patent applicants in portfolio analysis also has been increasing. In addition, comparative results of patent market share and market reach index, with the highest in electronics/ICT technology sectors, indicated that this is the technology sector with competitive acquisition of comparatively advanced technology and market expansion. The analysis methodology of economic value of technology including the presented market reach index in this report is expected to be utilized in the process to identify the current positioning of core technology and future development direction.

In this study, sponge cakes were prepared with substitution of 5, 10, 15, and 20% banana powder. The specific gravity and viscosity tended to increase as the ratio of banana powder increased. The foaming stability was highest at the 10% substitution level. The control group had significantly higher moisture content and volume index than the banana powder samples. The crust color values (a, b) decreased significantly with increased content of banana powder, but the a value increased. Crumb colors values (L, b) decreased as banana powder content increased while the a value increased. In terms of textural characteristics, the samples containing 5, 15, and 20% banana powder had significantly higher hardness than the 0 and 10% samples. Fracturability and resilience were maximal with 15% and 5%, respectively. Adhesiveness and chewiness were not significantly different among the samples. In the sensory evaluation, scores for banana flavor, coarseness, color, flavor, softness, and overall acceptability increased as the level of banana powder content increased. Sweetness was not significantly different among the samples. The control group had significantly higher egg-flavor as compared to the samples containing banana powder. The results indicated that substituting 10% banana powder to sponge cake is optimal for quality and provides a product with reasonably high overall acceptability.
This study is to investigate the properties of domestic fly ash for utilization as data in regard to fly ash which is by-product of domestic coal powder plants and the possibility of utilization as insulation material of domestic fly ash. Composition refractoriness size distribution density contents of hollow particles and crystalline phase were examined as the properties of domestic fly ash. As to the fired test pieces of fly ash by itself that varied contents of hollow particles with four kinds and of the fly ash-clay-saw dust system linear shrinkage bulk density app. porosity compressive strength thermal conductivity and structures were investigated for the possibility of utilization as an insulation material. The results are as follows : 1. The properties of the fly ash I) The constituent particle of the fly ash is spherical and it contains not a few hollow particles (floats by water 0.30-0.50 floats by $ZnCl_2$ aq.(SpG=1.71) 6.97-16.72%). ii) The chemical compositions of fly ash are $SiO_243.9-54.1%$ , $Al_2O_321.0-30.7%$ Ig loss is 7.4-24.1% and the principal of Ig loss is unburned carbon. iii) Fly ash was not suitable to use for mortar and concrete mixture because Ig. loss value is higher than 5% 2. Utilization as insulation material I) The test pieces of original fly ash floats by water floats by ZnCl2 aq(SpG=1.71) p, p t by ZnCl2 aq.(SpG=1.71) that were fired at 110$0^{\circ}C$ represented 0.11-0.18 kcal/mh$^{\circ}$ C as thermal conductivity value. ii) The test pieces which (76.5-85.5) wt% fly ash-(8.5, 9.5) wt% clay-(5.0-15.0) wt% saw dust system(68.0-72.0) wt% fly ash -(17.0-18.0)wt% clay-(10.0-15.0) wt% saw dust system and 59.5 wt% fly ash-25.5 wt% clay-15.0wt% saw dust system were fired at 110$0^{\circ}C$ the thermal conductivity was less than 0.1Kcal/mh$^{\circ}$ C. iii) In view of thermal conductivity and economic aspect insulation materials which added saw dust as blowing agent and clay as inorganic binder are better than that of fly ash as it is or separated hollow fly ash particles. iv) When the saw dust contents increased in the (59.5-90.0) wt% saw dust system and when amount of clay de-creased and firing temperature decreased under the condition of equal addition of saw dust app. porosity increased but bulk density compressive strength and thermal conductivity decreased.
This study was conducted to investigate the potential of non-used forest biomass residues as raw materials for making wood pellets with additives such as wood tar and starch and to evaluate fuel characteristics of the pellets. Wood tar, a by-product provided from the carbonization process of wood, could be a suitable additive for wood pellet production due to its higher calorific value and lower hazardous heavy metals, such as cadmium and mercury, compared to woody biomass. When the wood tar (10 wt%) was added, the calorific value was increased from 4,630 kcal/kg (wood pellet without additive) to 4,800 kcal/kg (wood pellet with additive). With the increase of additive amount into wood pellet, the length and individual density of wood pellet increased. In addition, bulk density of the pellets was increased, whereas the fine content was decreased. Consequently the overall productivity of wood pellets was improved by adding 2 w% additives into wood pellets; the percentage of productivity increase was 5.9% and 4.9% for adding starch and wood tar, respectively.

In this study, the product characteristics and physicochemical properties were investigated through collection of commercial porridge. The addition rate of grain raw materials was about 6.5~11.75%, glutinous rice was added at a rate of about 23~60% to improve the viscosity and various other food additives were used. The moisture content characteristics varied among the products. The rotational viscosity of CP (Commercial Porridge)4 was the highest at 39,054 cP, while the flow viscosity of CP3 was least at 4.80 cm/30 seconds. The starch content differed among the products in the range of total starch 6.96~8.08%, amylose 1.41~2.61%, total sugar 6.55~12.81% and reducing sugar 0.50~0.99%. Particularly, total sugar showed a very high correlation (-0.920) while rotational viscosity and color value (b) showed significant correlation with most of the properties i.e. moisture, solids content etc. There was a rapid increase in the reactivity of starch degrading enzyme at the early stage of the reaction which gradually decreased with time. The physicochemical characteristics of commercial porridge presented in this study could be expected to increase the industrial use value of the related research because it considers the quality of the currently commercialized porridge for the future selection of suitable porridge raw materials.

Kwamaegi is made from the flesh of Pacific saury, Cololabis Saira, which is traditional Korean seafood. It is well-recognized as a valuable health food containing EPA(eicosapentaenoic acid) and DHA(docosahexaenoic acid) to be known ${\omega}$-3 fatty acid. This study was conducted to obtain basic data which can be applied to process of canned Kwamaegi using tomato paste sauce. Commercial Kwamaegi was cut into $2{\times}3cm$ lengths, filled 90 g into can (301-3), added with 60 g water and then precooked for 10 min. at $100^{\circ}C$. After precooking, water was drained. The precooked Kwamaegi was packed into the can, and added with 60 g of tomato paste sauce(tomato paste 42%, gum guar 1.0%, salt 2.0%, starch syrup 2.0%, cooking wine 1%, water 52%). The cans were seamed using a vacuum seamer, and then sterilized for various Fo values (Fo 8~12 min.) in a steam system retort at $121^{\circ}C$. pH, VBN, amino-N, total amino acid, free amino acid, color value (L, a, b), texture profile, TBA value, mineral, sensory evaluation and viable bacterial count of the canned Kwamaegi using tomato paste sauce produced at various sterilization condition(Fo 8~12 min.) were measured. There was no remarkable difference between sterilization conditions and sensual characteristics. The results showed that the product sterilized at Fo 8 min. was the most desirable because this condition is the most economical and tasty.
