Bond Strength of Plywood Manufactured with Adhesive of pMDI-Ozonized Waste Cooking Oil (오존산화 폐식용유와 pMDI접착제의 합판 접착력)

  • The purpose of this study was to investigate and develop an eco-frendly wood adhesive based on vegetable oil (especially soybean oil), the renewable and sustainable natural resources, using ozonification technology for the chemical structure modification. The waste soybean oil (WSBO) was reacted with $O_3$ at the rate of $450m{\ell}$(acetone) : $50m{\ell}$ (WSBO) for different times, 1, 2, 3 hrs. The investigation of the modified chemical strecture of the ozonied WSBOs were conducted using FT-IR. As ozonification time increased, the peak of the unsaturated double bonds was disappeared especially ozonized-3hrs and aldehyde or carboxyl peak appeared because ozonification broke the oil into small molecules. The plywood were made at $150^{\circ}C$ with 4 minutes hot-press time using the different ozonized 3 hrs WSBO/pMDI adhesives and were tested for the dry, wet, cyclic boil test according to the Korea Industrial Standard F3101 Ordinary plywood. The bond strengths gradually increased until 1 : 0.5~1 : 3, but it decreased 1 : 4, as the contents of pMDI increased. The results of the dry, wet and cyclic bond strengths the equivalent ratio was formed approximately between 1 : 2~1 : 3. And the 1 : 1~1 : 4 strengths met constantly the standard requirement of 7.0kgf/$cm^2$ (KS F3101). From the comprehensive view on the results of above experiment, it could be confirmed that ozonized WSBO/pMDI has characteristics of effective reactivity and wet stability showed as an excellent candidate of wood adhesive applications.

Quality Properties of Beef Patties Replaced Tallow with Rice Bran Oil and Olive Oil during Cold Storage (우지방을 현미유와 올리브유로 대체한 우육 패티의 냉장저장 중 품질변화)

  • The effects of replacing tallow with plant oils on the chemical composition, physical properties, fatty acid composition, and sensory properties of beef patties were investigated. Beef patties were produced with seven different formulations: control (tallow, 100%), rice-bran oil replaced (TR) and olive oil replaced (TO) (each at 20%, 40%, and 60% substitution). Fat content of beef patties increased, whereas moisture content decreased with increased TR and TO. Beef patties had increased lightness and yellowness but decreased pH and redness compared to those in the control (p<0.05). The thiobarbituric acid reactive substances (TBARS) values of all beef patties increased during cold storage. The TBARS values in the replaced TR or TO were similar to or lower than those in the control after 3 d. Saturated fatty acid content of beef patties decreased as the level of TR and TO increased, whereas unsaturated fatty acid content increased. Monounsaturated fatty acids were higher in TO and polyunsaturated fatty acids were higher in TR. The overall acceptability scores showed no significant differences between the control and replaced TR or TO over 7 d of storage.

Manipulating the Fatty Acid Composition of Eggs and Poultry Meat for the Human Health (건강을 생각하는 계란과 닭고기 생산을 위한 지방산 조성방안)

  • Among polyunsaturated fatty acids (PURAs) targeted for manipulation in animal tissues (poultry eggs and meat), omega-3 PUFAs(n-3 PUFAs) are discussed in this review. 3 or 5% dietary menhaden oil (MO) supplemented layer diets was reported to increase docosahexaenoic acid (DHA) and eicosapentaenoic acid (EPA) contents in the egg. MO at 1.5% also increased the deposition of up to 180mg total omega-3 fatty acids / yolk. Utilization of 5% ground flax seed (FS) resulted in similar total omega-3 fatty acid (FA) deposition as 1.5% MO. However, the basic feed formulations used in the Canadian feed industry usually include 10 to 20% FS in the egg laying diets. Recently several studies reported that addition of tocopherols in layer diets increased the tocopherol content more in the egg than any other tissue. One of reports said that 3.5% dietary oil with added tocopherols resulted in increasing tocopherol deposition and FA composition of the egg and other tissues. In the poultry meat, redfish meal (RM;4, 8, 12, 15 and 30% of diet) or redfish oil (RO;2.1 or 4.2% of diet) added to the practical corn-wheat-soybean based diets resulted in an increase in omega-3 FA and docosapentaenoic acid (DPA) contents in broiler meat lipids. Linseed oil (LO;1.0, 2.5, and 5.0% of broiler diet) supplemented in broiler diets also resulted in omega-3 FA and the ratio of omega-6 being significantly higher in poultry meat lipid than MO. Concern about fish flavor resulted in research about fish oil (FO) supplementation in broiler diets. Without the use of antioxidants, no more than 1.5% FO should be fed to broilers due to unacceptable orders from the chicken carcasses. One recent research project found that over 50mg/kg of vitamin E was required for maintaining the stability of unsaturated lipids in the meat. In regards to 'fishy'or 'crabby'taint in the eggs and poultry meat, poultry products remained acceptable when dietary fish oils were stabilized with antioxidants.

The Influence of Lipids on Exocrine Pancreatic Secretions in Pigs - Review -

  • The characteristics of the exocrine pancreatic secretions in pigs and its hormonal regulation as influenced by dietary lipids are reviewed. There is clear evidence that the secretion of lipolytic enzymes is positively correlated with the amount of fat consumed by the pig. For example, there was an increase in the specific lipase activity by 83% after the dietary fat content was increased from 5% to 25%. Moreover, it was shown that also the quality of fat has an influence on exocrine pancreatic secretions. Peroxidized canola oil stimulated total lipase secretion much more than non-peroxidized oil. The influence of fatty acid composition on exocrine pancreatic secretions is discussed equivocally. Some authors showed that saturated fats stimulated the exocrine pancreatic secretions more than unsaturated. Others showed that the chain length of fatty acids had a strong influence on pancreatic secretions as well. Due to the different surgical methods used for sampling of pancreatic juice and wide variety of fats and oils used in these studies, direct comparisons between studies are extremely difficult to make. Plasma levels of hormones such as cholecystokinin (CCK), neurotensin (NT) and peptide YY (PYY) are influenced by the nutrient composition of the diet. With increasing amounts of fat present in the small intestine, the release of these hormones was stimulated. There is evidence that CCK release is dependent on the chain length of the fatty acids. Medium chain triglycerides stimulated the CCK release more than long chain triglycerides. Neurotensin was released more by unsaturated than by saturated fatty acids; similar results were observed for the PYY release. However, results are contradictory and further investigations are warranted that focus on the underlying mechanisms involved in the regulatory response of the exocrine pancreas to lipids of different origin.

Effect of Oil Extraction Methods on Fractionation Pattern and Fatty Acid Composition of the Each Fraction of Sesame Oil (채유방법(採油方法)이 참기름의 분획별지질(分劃別脂質) 및 지방산(脂肪酸) 조성(組成)에 미치는 영향(影響))

  • In order to examine the effect of oil extraction methods on the charateristics of sesame oil, the fractionation pattern and fatty acid compositions of the each fraction of the oil were compared in the oil extracted by the three different extraction methods, that is, pressure extraction of roasted seed (RTP), acetone extraction of roasted seed (RTE) and acetone extraction of raw seed (RWE). The amount of triglyceride in RWE oil was slightly higher as 77.2% of the total lipid than that in RTP and RTE oil of 73.4%. The content of oleic and linoleic acid in glycolipld and fatty acid fractions, linoleic acid in triglyceride, and palmitic and stearic acid in phospholipid fractions from RTP and RTE oil were higher than those from RWE oil, but the oleic acid in triglyceride. Palmitic and stearic acid in free fatty acid, and oleic and linoleic acid in phospholipid from RTP and RTE oil were lower than those from RWE oil. The ratio of $C_{18}$ to $C_{16}$ fatty acids and unsaturated to saturated fatty acids in glycolipid and phospholipid fractions from RTP and RTE oil were higher than those from RWE oil, but the ratios in triglyceride and free fatty acid fractions from RTP and RTE oil were lower than those from RWE oil.

Effect of Frying Methods of Chickens on the Physicochemical Properties of Frying Oil and Fried Chickens in the School Foodservice (학교급식에서의 닭튀김 방법에 따른 튀김유와 튀김닭의 이화학적 특성)

  • The purpose of this study was to investigate the effect of frying methods of chickens ; deep-fat frying with raw chickens(A), with pre-cooked chickens(B) on the physicochemical properties of frying oil and fried chickens in the school foodservice. Acid, peroxide and TBA value of frying oil were significantly increased by increasing the number of frying times and those of method A were higher than those of method B. On the contrary, Iodine value was decreased significantly with increasing the number of frying times but there is no significant difference between method A and B. In fatty acids, the content of saturated fatty acid increased while that of unsaturated fatty acid decreased as the frying times increased. Also viscosity, yellowness and redness increased significantly by increasing the number of frying times. The content of vitamin $B_1 $, of fried chicken by the frying methods was not significantly different, but vitamin $B_2 $the method A was higher than by the method B. Ca, P, Na, K and Fe contents of fried chickens by the method A were higher than those by the method B.

The Quality Improvement of Emulsion-type Pork Sausages Formulated by Substituting Pork Back fat with Rice Bran Oil

  • The effects of pork back fat (PBF) substitution with various concentrations of rice bran oil (RBO) (50%, 45%, 40% and 35%) on the physicochemical characteristics and sensory attributes of emulsion-type pork sausages were studied. The modified pork sausages were compared with control sausages produced using PBF only. The sausages with RBO had significantly lower (p<0.05) moisture content than the control sausages. Sausages made from PBF substituted with 40% RBO showed the lowest cooking loss. Substitution of PBF with RBO had no significant effect on the emulsion stability of pork sausages. All sausages with RBO showed significantly lower (p<0.05) hardness values than control sausages. Sausages with RBO also had significantly higher values (p<0.05) of unsaturated fatty acid and polyunsaturated to saturated fatty acid contents than the controls. RBO substitution had no effect on the flavor intensity of sausages, but it improved the tenderness and produced a softer texture.

Separation of EPA and DHA from Fatty Acid of Fish Oil by Urea Adduct Formation Using Supercritical Carbon Dioxide Solvent (초임계 이산화탄소 용매하의 요소부가법에 의한 어유지방산으로부터 EPA와 DHA의 분리)

  • Separation of EPA and DHA from fish oil fatty acid ethyl ester (FAFE) by urea adductive crystallization method was carried out in the supercritical carbon dioxide (SC $CO_2$) as a solvent. Our results showed that SC $CO_2$ is a good candidate as a solvent in the urea adductive crystallization to separate FAFE by the number of unsaturated bonds. Compared to the separation process using methanol. SC $CO_2$ yielded better performance in the overall selectivity of EPA and DHA. The effect of process variables on separation of EPA and DHA was discussed in detailed. A hybrid technology of SC $CO_2$ fractionation and urea adductive crystallization with SC $CO_2$ was conformed as a viable process to separate and concentrate EPA and DHA from fish oil.

Comparison of Biomass and Oil Content of Chlorella sp., Nannochloris sp., and Botryococcus braunii in the Mixotrophic Conditions using Glycerol (글리세롤을 이용한 복합영양소에서 Chlorella sp., Nannochloris sp.와 Botryococcus braunii 의 바이오매스 생산량과 오일 함유량 비교)

  • The focus of this study was to observe the growth of Chlorella sp., Nannochloris sp., and Botryococcus braunii under mixotrophic conditions (i.e., added glycerol) with the aim of increasing the growth of biomass and algae oil content. A significant growth of biomass was obtained when grown in glycerol rich environment comparing to autotrophic conditions. 5 g/L glycerol yielded the highest biomass concentration for these strains. Mixotrophic conditions improved both the growth of the microalgae and the accumulation of triacylglycerols (TAGs). The maximum amount of TAG in Botryococcus braunii was reached in the growth medium with 10 g/L glycerol and Chlorella sp., Nannochloris sp. with 2 g/L glycerol. The content of saturated fatty acids of Chlorella sp., Nannochloris sp., and Botryococcus braunii was found to be 34.94, 14.23 and 13.39%, and the amount of unsaturated fatty acids was 65.06, 85.78 and 86.61% of total fatty acids, respectively. The fatty acid profiles of the oil for the culture possibility met the necessary requirements and are, therefore, promising resource for biofuel production.

Studies on the Texture Properties of the Processed Cheese Substituted with Vegetable Oils (식물성 유지를 첨가한 가공치즈의 조직특성에 관한 연구)

  • This study was carried out to develop the processed cheese with the increase of unsaturated fatty acid by substituting different vegetable oils for the improvement of nutritional aspects without reducing its sensory advantage and texture properties. The texture properties(hardness, elasticity, adhesiveness, cohesiveness, brittleness and gumminess), meltability, fat leakage degree and sensory evaluation of the processed cheese were analyzed and compared. The meltability of the processed cheese was measured in the range from 59.7 to 138.3mm, the sample substituted with corn oil showed the lowest meltability but the sample substituted with butter resulted in the highest meltability. The degree of fat leakage had the range from 8.28 to 14.71$\textrm{cm}^2$. The sample substituted with safflower oil showed the lowest fat leakage degree but the sample substituted with butter had the highest fat leakage degree. The sample substituted with butter had the lowest hardness. There was no significant difference in the elasticity between the samples tested. The sample substituted with butter showed the lowest value in adhesiveness, cohesiveness, brittleness and gumminess, respectively. The preference score of the processed cheese samples ranged from 3.22 to 6.59. The texture score ranged from 3.12 to 3.26.
