The pine mushroom is recognized as a valuable functional food and is considered the first kind of mushroom. One of the product development plans for the pine mushroom is a Teriyaki pickle. The physical properties and sensory evaluation of this product were measured, as well as sensory evaluations and microbe tests after a storage period. 9 types of high pressure-cooking conditions with Teriyaki seasoning were tested. The Teriyaki seasoning was heated from $110^{\circ}C$ for 2 hours, 1 hour or by the traditional method. Based on our testing and evaluations, the pine mushroom Teriyaki pickle heated from $110^{\circ}C$ for 2 hours or 1 hour had the highest preference and color ; Odor and overall preference increased with longer storage periods. Also, from the 21st day, the microbe levels in the traditional method Teriyaki seasoning measured less than those in 30 others. But, until storage 28th day, no microbes were detected in Teriyaki seasoning liquid from the high pressure-cooking condition. As a result, the high pressure-cooking condition was a simpler manufacturing process than the traditional method. The salinity of Teriyaki seasoning liquid from the high pressure-cooking condition was relatively lower than that from the traditional method. Therefore, the pine mushroom pickle prepared with Teriyaki seasoning under high pressure-cooking conditions will be considered for commercialization. The pine mushroom Teriyaki pickle heated from $110^{\circ}C$ for 2 hours was preferred the most, so this method is suitable for the Teriyaki seasoning.
This study is conducted to investigate the effects of Chinese artichoke powder on the antioxidant activities and the quality characteristics of tofu. Tofus are being prepared with different amounts of Chinese artichoke powder in ratios of 0, 0.2, 0.4, 0.6 and 0.8% according to the soy milk quantity. According to the increasing contents of Chinese artichoke powder, the yield and turbidity of tofus are significantly increased (p<0.001) whereas the pH levels of tofus are significantly decreased (p<0.001). In terms of color, the L, a and b values are significantly decreased with increasing Chinese artichoke powder concentrations (p<0.001). From the texture profile analysis of the tofus, the chewiness, gumminess and cohesiveness of tofus are significantly decreased (p>0.01) according to the levels of added Chinese artichoke powder content. The contents of isoflavones such as daidzin and genistin are significantly increased with increasing concentrations of Chinese artichoke powder (p<0.001). The microstructure of tofus is being examined by SEM (Scanning Electron Microscope). In the sensory test, the sample which contains 0.4% of Chinese artichoke powder is ranked significantly higher (p>0.001) than the other groups according to several sensory parameters such as appearance, color, flavor, taste, texture and the overall preferences.

Cheonggukjang (CKJ) is a Korean traditional food made of fermented soybeans. In comparison to normal intake of soybeans, Cheonggukjang has high digestibility with bioactive, antioxidant substances, and thrombolytic enzymes. Recent studies have reported anti-oxidant, anti-cancer, anti-inflammatory, anti-obesity activities as well as inhibitory activities against osteoporosis for CKJ. In this study, we identified the effects of CKJ on osteoblast differentiation by increasing the polyglutamic acid (PGA) content of CKJ. Alkaline phosphatase (ALP) activity and mineralization significantly increased in response to treatment with both natural CKJ (CKJ A) and PGA-increased CKJ (CKJ B). However, CKJ B exhibited higher ALP activity and mineralization than CKJ A. Real-time reverse transcription PCR demonstrated that mRNA expression of osteoblastic-associated genes such as type I collagen, alkaline phosphatase, osteocalcin, and osteopontin in C2C12 cells was significantly up-regulated by CKJ A or B treatment. These results indicate that treatment with CKJ has an anabolic effect on bone by increasing osteoblastic differentiation and ALP activity. Increasing PGA content in CKJ had a greater effect than CKJ A on up-regulation of osteoblastic gene expression in osteoblast cells.
The number of North Korean refugees residing in the Republic of Korea (South) has reached 17,000, and this number is expected to exceed 20,000 (North Korean Supporter's Association, 2009). Refugees have developed improper dietary habits while hiding and escaping North Korea. They have also developed preferences for exotic food. This thesis attempts determine the changes in Korean food. This study also describes the view on South Korean food by North Korean refugees. According to our survey, women refugees had better dietary habits than men. Moreover, women and those in their 40's showed a tendency to choose food based on quality over quantity. Both men and women refugees responded that they cook food based on North Korean recipes. Those who view their current financial status as average or higher stated that South Korean food is tastier than North Korean food. Those whose financial status among North Koreans was average or higher when they lived in North Korea appreciated the splendor and beauty of South Korean food more. The results of this study are expected to assist in determining the differences in dietary habits between those from the North compared to Koreans living in the Republic of Korea. Therefore, studies between South and North Korean food should continue.
This study examined dietary culture in Korea regarding collectivism through literature review. Based on the evidence from the origin of lineage and traditional customs, the Koreans' traditional collectivity appeared to have been grounded upon the northen nomadic culture emphasizing sentimental collectivity and harmonized with the characteristics of southern agrarian society related to mutual support and sociability. The inseparable relationship between collectivity and food was well revealed in the occasions such as rice-planting, kimchi and jang makings in which pooled labor was common as well as the gathering of mutual aid association. In these occasions, foods were offered and shared among members. Food sharing was a main activity and almost play a central role regarding the promotion of friendly relations among each other. In sacrificial memorials, food sharing was extended not only to the live persons but also to the passing spirits. Collectivity was also disclosed in the eating or table manners of Koreans. Koreans quite literally share food at every meal since the side dishes placed centrally on the table. The taste of Korean foods is completed inside the mouth by mixing foods with various combination, which let people create their own choice of taste. Therefore, the collectivity manners at the table appeared to be harmonized with individual freedom of creating his/her own taste of foods. The collectivity is still a very important concept in modem Korean dietary culture, as reflected by an increase of restaurants sewed shared dishes.

Physicochemical characteristics of traditional kochujang fermented for 6 months and commercial kochujang were compared. Tested kochujang included 18 kinds of Sunchang kochujang prepared with glutinous rice, 10 kinds of Boeun kochujang prepared with barley and 17 kinds of Sachun kochujang prepared with wheat, and 10 kinds of commercial kochujang. Major free sugar was found to be glucose both in traditional and commercial kochujang. Fructose, maltose, and sucrose were also detected in small amounts. The contents of free sugars in traditional kochujang was approximately one fourth of those presented in commercial kochujang. Commercial kochujang showed the highest level of total free amino acids followed in decreasing order by Sachun, Sunchang, and Boeun kochujang. The most abundant free amino acid was serine in Sunchang kochujang and aspartic acid both in Boeun and Sachun kochujang. On the other hand, glutamic acid was the most abundant amino acid in commercial kochujang. Volatile organic acids in various kochujang were determined and acetic, propionic, butyric, and 3-methyl butanoic acids were found in traditional kochujang. However, 3-methyl butanoic arid was not found in commercial kochujang. The most abundant volatile acid was acetic acid in both tradtional and commercial kochujang. Analysis of non-volatile organic acids showed that large amounts of lactic, oxalic, and succinic acids were found in traditional and commercial kochujang. In addition to these, small amounts of itaconic, malic, malonic, and pyroglutamic acids were found in commercial kochujang.
In the Joseon Dynasty, various fruit teas were popularized to promote health, with spread of Donguibogam and Hyangyag gugeupbang. As interest in fruit tea has recently increased, studies on its manufacture have become necessary. We used response surface analysis for rediscovery and commercialization of grape tea. Major materials of traditional grape tea are grape juice, pear juice, ginger juice, and honey, and the sugar contents of these materials were 12.3, 14.1, 3.3 and 75 $^{\circ}Brix$, respectively. When sensory examinations were conducted with subjects aged 40-60 years, the difference between dilution ratios of 100% and 150% was not significant, but tea diluted by 150% showed somewhat higher scores than did tea diluted by 100%. Ginger taste and sweetness were found to have the greatest effect on overall acceptance. Regression analysis on color, flavor, taste, and overall acceptance values, with reference to ginger juice and honey as independent variables, revealed that the $R^2$ values were 0.8411, 0.6717, 0.9499, and 0.9015, respectively. Contour maps were superimposed to obtain an optimal combination of ingredients for traditional grape tea, and the indicated levels of ginger juice and honey were 0.46-0.69% and 3.85-5.20%, in combination with grape juice, pear juice, and water concentrations of 28%, 9% and 60% (all w/w), respectively. Thus, it is now possible to prepare traditional grape tea.
The purpose of this study was to evaluate perception, acceptance and satisfaction of dessert menu in elementary school children. Five hundred students (246 male, 254 female) were recruited at the elementary schools in Seoul. The results show that dessert menus of elementary school lunches are needed to satisfy diverse acceptance and preference levels of children. For dessert items chocolate milk among beverage items, peaches among fruits, chocolate cookies among cookies, piece cake among breads and honey rice cake among rice cakes presented high acceptance scores. Furthermore, fruits, ice creams, juices and cookies were the most liked food items. Taste and health of desserts were important factors in perception of dessert. Rice cake (48.6%), a Korean traditional food, was the most preferred food item, followed by tea punch (31.2%), Korean cracker (10.0%) and Shanja (4.0%). Taste (51.4%) was considered as the most important factor for improvement of dessert, and increasing variety of dessert items (43.4%) was considered as the most important factor affecting demand of dessert. It is suggested that continuous update of school dessert menus is needed to meet consumers' demands and health aspects. Furthermore, Korean traditional desserts might be the key for improving satisfaction in desserts in elementary school lunches.
The traditional food - jungkwa of Korea, is difficult to manufacture. In this study, jungkwa with carrots was made in a rice cooker to simplify preparation. The boiling times for red color, chewiness and overall acceptability of jungkwa with carrots in a rice cooker as compared to the traditional method were 135 minutes, 150 minutes, 165 minutes, 180 minutes and 195 minutes, respectively. The rice cooker produced a lower moisture content in jungkwa with carrots when cooked for a longer time period, whereas the sugar content increased significantly. The color value of jungkwa with carrots was reduced at a longer boiling time as compared to the traditional method, yellowness increased when boiling time was longer than 195 minutes, whereas it remained the same with the traditional method. The hardness of jungkwa with carrots increased and candied jungkwa's result increased significantly when the boiling time was longer than 165 minutes. The rice cooker created a similar chewiness even when boiling time was over 165 minutes, although not consistently. The sensory evaluation scores of jungkwa made with carrots in terms of appearance, smell, taste, texture and overall preference were highest at 150 minutes and 165 minutes. Boiling jungkwa for 150 minutes in the rice cooker is the traditional method which simmers jungkwa at a lower timethan the preference time. Therefore, the best time for boiling jungkwa in the rice cooker highest was 165 minutes. After storage for 15 days chewiness and moisture content of jungkwa made with carrots at different boiling times, increased and decreases respectively. Therefore, the rice cooker can used to achieve comparable jungkwa without the traditional method.
The extract of Platycodi radix has long been used as an anti-inflammatory traditional medicine in Korea for the treatment of bronchitis, asthma and acute respiratory disease. In this study, the anti-inflammatory actions of the methanol extract of Platycodi radix administered via oral administration were evaluated. The results revealed that the extracts exhibited potent anti-inflammatory action. Of the hexane, chloroform, ethyl acetate, butanol and water fractions, the butanol fraction had the most potent anti-inflammatory action. Additioinally the sapogenin obtained through acid hydrolysis of the butanol fraction did not show anti-inflammatory action. These findings confirm the value of Platycodi radix as a traditional Korean medicine.
