감마선 조사된 장류의 SOS Chromotest에 의한 독성학적 안전성 평가 (Toxicological Safety of Gamma-Irradiated Korean Soybean Fermentation Foods by SOS Chromotest)

  • 우리나라 전통 장류의 위생화와 저장.유통안정성 확보를 위해 20 kGy 감마선 조사된 간장, 된장, 고추장, 청국장의 독성학적 안전성을 SOS Chromotest로 측정하였다. 대사활성계(S-9 mix) 존재 유무의 조건하에서 Escherichia coli PQ37을 SOS Chromotest 균주로 사용하였다. 시료는 물추출물, 용매추출물을 준비한 후 농축하여 S-9 mix를 첨가하거나 첨가하지 않은 조건에서 SOS Chromotes에 사용하였다. 결과적으로 10,00$\mu\textrm{g}$/assay의 투여 농도에서 1.5이하의 IF값을 유지했으며 조사된 모든 시료는 비조사구와 차이가 없었고, 20 kGy로 조사된 전통장류에서 어떠한 돌연변이원성도 발견되지 않았음을 확인할 수 있었다.

기장 향토음식의 조리표준화(제1보) - 멸치찌개, 갈치찌개, 매집찜 - (Recipe Standardization of Native Local Foods in Gijang Region(The First Report) - Myeolchijjigae, Galchijjigae, Maejipjjim -)

  • The purpose of this study was to contribute to merchandising of native local foods. This study was designed to standardize the recipes and to analyze the nutrients of native local foods in Gijang region such as 'Myeolchijjigae', 'Galchijjigae' and 'Maejipjjim'. The test recipe for each food was prepared according to the information obtained from the personal interview of Gijang natives and then supplied for the sensory evaluation. After that, CAN Pro 2.0 was used for the nutritional evaluation. The results are as follows : Myeolchijjigae was preferred when radishes and traditional soybean paste were added. Galchijjigae was more liked when young pumpkins, mixed soy sauce and soybean paste were added. Maejipjjim was preferred with Aeji(Codium adhaerens), Warty sea squirt(Styela clava), soybean paste and powdered perilla seed(Perilla frutescens var. japonica) added. The analysis of nutrient composition revealed that in general energy content was low whereas protein content was as high as recommended requirement in Myeolchijjigae and Maejipjjim. Calcium and phosphorus were high in Myeol-chijjigae, vitamin A in Galchijjigae, and vitamin A, B_6$, folic acid, phosphorus and iron in Maejipjjim.

저염표고된장을 활용한 스프레드잼의 품질특성 (Quality characteristics of spread jam using low-salt Lentinula edodes soybean paste)

  • 본 연구에서는 상품성이 떨어지는 원목표고를 활용하여 전통된장의 기호성과 저장성이 향상된 저염표고된장을 개발하고, 이를 활용한 된장스프레드잼을 제조하여 품질특성을 확인하였다. 대조구로 시판된장(전통된장, 농업회사법인 장흥식품)을 분석하였다. 염도함량은 염수 중 식염 첨가량이 낮은 저염표고된장이 시판된장보다 더 낮게 나타났으며, L(명도)값은 더 높게 나타났다. 일반성분 분석결과 조단백질, 조지방, 회분은 저염표고된장보다 시판된장에서 더 높게 나타났다. 유리당은 시판된장에서 glucose, fructose, maltose가 검출되었으며 저염표고된장에서는 arabinose와 fucose가 추가로 검출되었다. 유기산 분석결과 시판된장과 저염표고된장은 2 종만 검출되었으며, 저염표고된장을 활용한 된장스프레드잼은 4 종의 유기산이 검출되었다. 유리아미노산 분석결과 시판된장과 저염표고된장의 주요 아미노산은 histidine, glutamic acid, arginine이었고 총 유리아미노산 함량은 시판된장(49.26 mg%)보다 저염표고된장(54.81 mg%)에서 더 높은 함량을 나타내었다. 저염표고된장을 활용한 된장스프레드잼의 총 유리아미노산 함량은 43.01 mg%로 나타났다. Ergosterol 함량과 β-glucan은 표고정과를 첨가한 된장스프레드잼에서 가장 높게 나타났으며, 시중된장보다 저염표고된장에서 함량이 월등하게 높게 나타났다. 따라서 본 연구의 저염표고된장 및 된장스프레드잼은 표고의 유용성분을 함유하며, 염도가 낮은 장점이 있어 표고를 활용한 건강식품개발에 기여할 수 있을 것으로 판단되었다.

조선시대 전반기의 두장류(豆醬類)에 관한 문헌적 고찰 (A Literature Study on the Jang (Fermented Soybean Sauce) in the First Half of the Joseon Dynasty)

  • This study categorized and made considerations of the fermented soybean pastes into Meju, Chungjang, Si, mixed Jang, and other Jang in accordance with the manufacturing methods described in the fermented soybean paste section of Sangayorok (1450's), Suunjapbang (1540's) and Gyemiseo (1554). These are ancient cook books written in Chinese characters during the first half of the Joseon Dynasty. The content on the fermented soybean pastes recorded in these books included 24 items in Sangayorok, 11 items in Suunjapbang, and 14 items in Gyemiseo. In conclusion, the most important fermented soybean pastes during the first half of the Joseon Dynasty were those used to produce soy sauce-like seasoning for the purpose of a-chieving a salty taste with Meju made of soybeans as the main ingredient. The manufacturing techniques for such traditional fermented soybean pastes have been passed down through history to the present era.

Antimutagenic Effects on Aflatoxin $B_1$ of Soybean Pastes Fermented by Bacillus Strains

  • Antimutagenic effects of methanol extracts of various soybean pastes against aflatoxin B1 were examined using Salmonella typhimurium TA98 and TA100. Antimutagenic activities of boiled soybeans, Japanese Miso, traditional Korean soybean pastes, soybean pastes fermented by wild type strains, and soybean pastes fermented by mutants, transformants, and cell fusants were 53.6 to 54.6%, 73 to 79.7%, 78.3 to 95.7%, 85 to 97.1%, 71.9 to 78.3%, 65.5 to 77.7%, and 73.4 to 79.0%, respectively. Soybean pastes fermented by wild type strains showed higher activities than those fermented by mutant, transformant, and cell fusant strains.

메주에서 분리되어 단독균으로 발효된 메주와 간장 (kanjang and Meju Made with a Single Inoculum of the Microorgamism Isolated from the Korean Traditional Meju)

  • Fifty three microbes, mainly fungal genera, were isolated from sixteen Mejus of different region. From those collected isolates, Meju was manufactured and assayed for the activities of amylase and protease. Correlations between sensory evaluation and color measurement were investigated with Kanjang (soy sauce) prepared by each pure inoculation. Color of Kanjang was quite various depedning on fungal genera, but the taste was not quite related with the activity of amylase or protease. This fact might mean that taste of Kanjang depended on the complicate mechanistic action of enzyme for the substrate involved in the soybean hydrolysis. Thus, the taste of Kanjang origenated from Korean traditional Meju seems to belong to complex flora of participated fungal genera as well as Bacillus. sp.

첨가제가 배접용 풀의 특성에 미치는 영향: 콩, 석회, 황랍, 백반 첨가제를 중심으로 (The Effect of the Additives on the Properties of Pasting)

  • 본 연구는 문헌연구를 바탕으로 하여 전통적인 방법으로 풀을 조제하여 배접하는 경우 첨가제가 풀의 성질 및 접착특성에 미치는 영향을 고찰한 결과이다. 본 연구는 향후 회화문화재의 보존처리용 천연접착제 개발을 위한 기초자료로 제시하고자 한다. 따라서 본 연구에서는 접착제에 첨가제가 미치는 영향을 검토하기 위하여 임원경제지(林園經濟志), 거가필용사류전집(居家必用事類全集), 다능비사(多能鄙事), 죽여산방잡부(竹嶼山房雜部)에서 공통적으로 사용되고 있는 백반과 황랍을, 장황지(裝潢志)와 제민요술(濟民要術)에서 공통적으로 사용되고 있는 석회를 첨가제로 사용하여 그 특성 즉, 점도, pH, 유연성, 박리강도, 항균성, 방미성, 보존성 등을 측정하여 고찰하였다. 그 결과 첨가제 고유의 특성이 풀의 특성에 큰 영향을 미치는 것을 알 수 있었다. 백반은 유연성을 증가시켰으나, 점도, 접착강도, pH는 감소시켰으며, 황랍은 유연성, 점도, 접착강도, pH를 모두 감소시켰으며, 석회는 유연성, 점도, pH, 접착강도를 모두 증가시키는 경향을 나타내었다.

재래식 된장으로부터 아민 산화 효소를 생산하는 프로바이오틱 바실러스균의 분리 동정 (Isolation and Identification of Probiotic Bacillus strain Forming Amine Oxidase from Traditional Fermented Soybean Paste)

  • 본 연구의 목적은 3년 이상 숙성된 재래식 된장으로부터 아민 산화 효소를 생산하는 프로바이오틱 바실러스균을 분리 동정하는 것이다. 시료로부터 분리된 바이오제닉 아민(biogenic amines, BA) 생성균은 Bacillus sp. TS09, Bacillus licheniformis TS17, Bacillus subtilis TS19, Bacillus cereus TS23, Bacillus sp. TS30, Bacillus megaterium TS31, B. subtilis TS44, Bacillus coagulans TS46 및 Bacillus amyloliquefaciens TS59 등으로 동정되었다. 한편 동일한 시료로부터 분리된 B. subtilis TS04와 TS50은 인공 위액 및 담즙액에 대한 저항성, 장내 상피세포에 대한 부착능 및 BA 생성균(Bacillus sp. TS30 및 B. subtilis TS44)에 대한 박테리오신 생산 등의 프로바이오틱 활성을 나타내었다. 게다가 B. subtilis TS04와 TS50 균주가 생산한 아민 산화 효소에 의하여 카다베린, 푸트레신 및 티라민의 생성량을 감소시킬 수 있었으므로 이들은 BA 중독 위험을 낮출 수 있는 프로바이오틱스 소재로서의 활용 가치가 높을 것으로 판단된다.

전남지역 농촌 주부들의 식생활관리 실태 조사 (A study on Food Management for Housewives Living in the Rural Area of Chonnam)

  • A survey on the traditional management of dietary life, seasonal diets, and frequency of using traditional fermented foods, was conducted from six hundred forty housewives living in rural areas of Yosu and Yocheon district, and the following results were obtained. 1. Majority of the subjects was in the range of 50-59 years old (43.1%), elementary schooling in education (38.1%), composition of family with parents and children (57.5%) with 3-4 family members (40.6%), and annual income of 5-8 million Won. 2. Korean style-house (36.7%), modernized kitchen (58.5%), and liquid fuel (69.7%) held the majority of the living environment. 3. Most of the households possessed refrigerator (98.9%), kitchenette range (98.4%) and electric rice pot (97.9%). 4. Access to traditional dishes was mostly prompted through elders or friends (84%). Preparing a meal was regarded to be a troublesome duty (41.5%). Husband's preference was the major factor for the meal preparation (53.7%) and about 30 min was spent for preparing dinner (53.7%). 5. Cooked rice was a main staple (99.5%) while three kinds of Kimchi (55.3%) were served as prime side dishes in the diets. Most Kimchi(94.7%) was prepared at home. To this basic menu, two or three side dishes were added at breakfast (77.2%), lunch (76.1%), and dinner (65.4%). MSG (mono-sodium glutamate) was consumed by 62.2% of the households. 6. Most rural households prepared traditional dishes on the traditional holidays in lunar calendar including New Year's Day (98.9%), First Full Moon of The Year (81.4%), and Autumn Full Moon (96.8%). 7 Traditional fermented foods prepared at home comprised Kimchi (87.2%), soybean paste (75.5%), red pepper soybean paste (73.9%), and soy sauce (70.7%).

외식급식산업에 있어서 국(탕)이 고객 충성도에 미치는 영향 (Effect of Korean Soup(Tang) upon Customers Royalty in the Food Service Industry in Korea)

  • This study has been designed to stress the thoughts that soups should be offered taking into account customer's preference aimed at leading to eventual customer's satisfaction and the importance that Korean traditional food should take the lead in shifting dining-out industry's paradigm to customer-orientation instead of product-orientation. From August 15 through August 30, 2003, the drawn-up questionnaires were handed out to 500 numbers of adults aged over 20 living in Seoul, metropolitan city of Korea and the finally collected 361 questionnaires from them have been analysed as a subject for this study. It showed that the male respondents(44%) dined out much more frequently than the female respondents(35%) and their rate of 5,000-7,000 Won for a meal was most preferred as their average expenditure at one sitting in the restaurant. When eating Korean food at home or in a restaurant, the majority(5l,3%) of them think the soups(Tang) should be served coupled with their ordered meals. Among soups using flesh and meat as a staple material, they most preferred beef & bone soup(33.2%), followed by beep rib soup(30.4%) and beef soup with seasoned red pepper(l0.8%), and among soups using fish & shell and crustacean as a staple material, most preferred were hot fish soup(20.6%), loach soup(l5.2%) and hot crab soup(11.4%). Among soups using beans as a staple material, they most preferred soybean paste stew(33.2%), uncurdled soybean curd stew(29.4%) and Dambuk stew(l5.8%). Among soups using fowls and birds as a staple material, chicken soup with ginseng(51.9%), plain chicken soup(l8.4%) and chicken soup with red pepper sauce(l2.3%) falls on the most preferred. Among soups using vegetables and seaweeds as a staple material, most preferred are sea mustard soup(25.3%), Kimchi soup(16.8%), soybean paste soup with Chinese cabbage(13.0%) and bean sprout soup(10.1%). The soups(Tang) most preferred in the morning time are those soups whose staple materials are vegetables and seaweeds, such as sea mustard soup, bean sprout soup, Kimchi soup and soybean paste soup with Chinese cabbage while the soups most preferred for the lunch time are beef & bone soup, beep rib soup, chicken soup with ginseng and beef soup with seasoned red pepper while beef soup with seasoned red pepper, beef & bone soup, soybean curd stew and Kimchi soup are most preferred soups for the dinner time. The survey showed that 41 % of the subject preferred chicken soup with ginseng for a food considered good by themselves for their health. The male respondents preferred Bosin-tang(soup of edible-dog meat) than the female counterparts did, while the female respondents preferred chicken soup with ginseng than the male counterparts did. The survey showed that when eating korean traditional food, 70% of the subject are visiting a restaurant where soups are cooked delicious while 61% of the subject think that price does not matter if only food tastes good, which is reflecting that taste of food is a decisive factor in selecting menu rather than its price is. In conclusion, you can say that taste of soup is the most important factor creating steady customer in the restaurant, taking it into account Korean people most prefer their traditional food when dining out.
