Effects of Anti-Microbial Materials on Storages of Low Salted Doenjang (항균물질을 첨가한 저식염 된장의 저장성)

  • The effect of additives on the quality of low salted doenjang was investigated during storage. Amylase activity gradually decreased during storage and protease activity decreased after four weeks. The number of yeast was lower in the mustard or ethanol added groups without a difference in bacterial count. The L- and b-values decreased gradually during storage with lower total color difference (${\Delta}E$) in garlic added doenjang. Gas production was reduced in the ethanol or mustard added groups. Titratable acidity and acid values were low in the ethanol and ethanol-garlic added ones. A reducing sugar content was higher in the groups with added additives. Ethanol decreased to the largest extent in mustard added doenjang. Amino-type nitrogen decreased in ethanol added doenjang, whereas ammonia-type nitrogen was low in the ethanol or mustard added groups. The taste, flavor, and overall acceptability of doenjang were significantly higher in the ethanol or garlic added groups than in the other groups.

Effect of Seeding Rates on the Forage Quality and Productivity of Direct-Seeded Whole Crop Rice (직파재배시 파종량이 총체 벼의 수량 및 사료가치에 미치는 영향)

  • This experiment was conducted to evaluate the effect of seeding rates on the forage quality and productivity of direct-seeded whole crop rice at the experimental field of the Grassland and Forages Division, National Institute of Animal Science, RDA from 2007 to 2008. Whole crop rice variety, "Nokyang", developed by the National Institute of Crop Science, was directly seeded with four different seeding rates (30, 60, 90 and 120 kg/ha). There were no significant differences (p<0.05) found in emergence date, heading date, greenish and disease resistance based on the seeding rates. Plant height increased at higher seeding rates but the tiller number per plant decreased (p<0.05). The dry matter (DM) content showed no significant difference based on seeding rates (p<0.05) while the yield of fresh and dry matter increased with incremented seeding rates (p<0.05). Acid detergent fiber (ADF) content increased with higher seeding rates, but the neutral detergent fiber (NDF) content did not show a similar tendency. The total digestible nutrient (TDN) content was lowest with 120 kg/ha seeding rate. The grain ratio decreased at higher seeding rates. In economic analysis, the plot seeded at a rate of 60 kg/ha showed the highest income increment. Although high seeding rates increased the DM yield, a seeding rate of 60 kg/ha is recommended as the proper seeding rate for direct-seeded whole crop rice.

Microbiological and Enzymatic Characteristics in Alaska Pollack Sikhae during Fermentation (전통 명태식해 숙성중의 미생물 및 효소학적 특성)

  • The changes of microflora and enzyme activities in Alaska pollack sikhae were evaluated in 3 different temperature conditions, 5$^{\circ}C$, 2$0^{\circ}C$ and alternating temperature (stored at 5$^{\circ}C$ after 10 days of fermentation at 2$0^{\circ}C$), respectively. The number of proteolytic bacteria and 2 lactic acid bacteria including Lactobacillus sp. and Pediococcus sp. increased rapidly up to 10 days and composed major portion of total viable cell (TVC) in sikhae fermented at 2$0^{\circ}C$, whereas those of TVC were occupied by Lactobacillus sp., Pediococcus sp. and yeast after 10 days of fermentation. The major species of microflora in sikhae fermented at alternating temperature were, composed of Lactobacillus, Pediococcus and Streptococcus after 10 days of fermentation. Especially, Leuconostoc sp. was kept up to 27 days at 5$^{\circ}C$ than other temperature conditions (16 days). The activities of protease and lipase in acidic region (pH 3.0) were higher at 2$0^{\circ}C$ than at 5$^{\circ}C$ due to sensitivity of temperature, although those of protease and lipase in neutral region (pH 7.0) were not found any differences in both temperatures. Changing temperature condition from 2$0^{\circ}C$ to 5$^{\circ}C$ in alternating temperature inactivated protease activity, whereas lipase activity was still maintained during fermentation.

Effect of Rosemary Leaf on Quality and Sensory Characteristics of Kimchi (로즈마리 첨가가 김치의 품질 및 관능적 특성에 미치는 영향)

  • The quality and sensory characteristics of kimchi added various levels of rosemary leaf during fermentation at 15$^{\circ}C$ were evaluated. Rosemary leaf amounts were added 0.5g(R0.5%), 1g(R1%), 1.5g(R1.5%) per brined chinese cabbage 100g. The pHs and reducing sugar contents of all experimental groups decreased with increasing the fermentation time, whereas levels of titratible acidity increased. The pHs and reducing sugar contents of experimental groups added rosemary leaf showed higher than control, but titratible acidity of these groups showed lower. Also, the period reached the maximum levels of the log number of lactic acid bacteria counts(cfu/ml) and total viable bacteria counts(cfu/ml) of experimental groups added rosemary leaf were more delayed than control. These results showed that the fermentation of experimental groups added various levels of rosemary leaf were slower than that of control. On the 5th day of fermentation which had most delicious kimchi flavor, the sensory evaluation analyzed by ANOVA followed Duncan's multiple range test showed that sour smell of experimental groups added rosemary leaf was significantly lower, but green flavor and green smell of these groups were significantly higher than control(p<0.05). The most preference among experimental groups was R0.5% and next was control, R1.5%, R1%.

Effects of Sweet Persimmon Powder Type on Quality Properties of Low Salted Pork Patties during Cold Storage (단감분말 첨가 유형에 따른 저염 미트패티제품의 저온저장 중 품질특성)

  • Four different pork patties were made with two levels, HP/FP-3% and HP/FP-6%, containing 3.0 and 6.0% HP(hot air dried sweet persimmon powder)/FP(freeze-dried sweet persimmon powder), respectively. After manufacture, the meat patties were packaged with  polyvinyl wrap and stored at 4℃ for 8 days. CTL(control) and HP-3% meat patties were significantly(p<0.05) higher in moisture content than the other samples. FP-6% was found higher in protein content than the other treatments. FP-3% had a higher fat content than other meat patty samples. However, ash contents were not found significantly(p>0.05) different among the meat patty samples. The value of pH, L* and a* values were decreased as the cold storage time increased in all treatments(p<0.05). WHC(water holding capacity) of CTL and HP-6% and cooking loss of HP-3% were significantly(p<0.05) decreased with increased storage period. The diameter and thickness of all meat patties decreased with increasing the storage period. VBN(volatile basic nitrogen) values of all meat patties were increased(p<0.05) with increased storage period. TBARS (thiobarbituric acid reactive substance) of treatments were higher than that of CTL during whole storage time. The number of microorganisms(Total plate counts, Escherichia coli.) were maintained below 4.61 log10 CFU/cm2 during the whole storage period. In sensory evaluation, treatment groups had higher(p<0.05) scores in aroma, flavor, color and overall acceptability.

Development of Baikkimchi Sauce using Natural Color (천연색소를 활용한 백김치 소스 개발)

  • The characteristics of the Baikkimchi sauce made from natural pigments according to the preservation period were explored. For this research, two Baikkimchi sauces were made. One was made of Baikkimchi and only side materials (Sauce I). The other was made of Baikkimchi, side materials and 1.5% of orange paprika powders (Sauce II). There was no significant change in pH and the total acidity. The color showed better stability in the sauce II, the one with the natural pigments. As the preservation period increased, vitamin C content and the viscosity decreased. In addition, the number of lactic acid bacteria became rather reduced. Sevral sensory features were different significantly according to the preservation period, and the one with source II showed better features overally.

EFFECTS OF ACTIVATED CARBON ON GROWTH, RUMINAL CHARACTERISTICS, BLOOD PROFILES AND FEED DIGESTIBILITY IN SHEEP

  • This study was carried out to investigate the effects of activated carbon (AC) on growth, ruminal charateristics, blood profiles and feed digestibility in sheep, using roughage-based or concentrate-based diets. Twelve Suffolk breed of sheep of similar age and weight were distributed into 4 groups in a $2{\times}2$ factorial design. Two groups were fed a roughage-based diet with (R + AC) and without AC (R - AC), while the other two were fed a concentrate-based diet with (C + AC) and without AC (C - AC), respectively. The addition of 0.3% AC was based on dry matter of feed offered to animals. The incorporation of AC in roughage and concentrate based diets had no marked effects on feed intake, daily gain and feed conversion of the animals within experimental diets. The results obtained might be due to the low level of AC added in the diet. The animal on both concentrate-based diets were higher than the roughage-based diets in terms of daily gain and feed conversion ratio. However, it was observed that the animals provided with AC in the concentrate-based diet did not suffer from diarrhea and easily adjusted to high concentrate feeding. Further, the pH value for all diets before feeding was noted to be similar. After feeding, however, pH was shown to be higher in R + AC (p < 0.05) than in C + AC diet. Rumen protozoa number was decreased after feeding for both + AC diets, but in C - AC diet it was higher than in the roughage-based diets. For ammonia-nitrogen, C - AC was found to be higher than C + AC diet and the roughage-based diets before feeding. Total volatile fatty acid concentration, propionate and valerate molar ratios for both diets and time of collection were not affected. However, acetate, butyrate and valerate molar ratios were observed to be affected by diets and time of collections. The diets with AC increased (p < 0.05) before feeding for acetate molar ratio, but not different within diet, however, the roughage diets were found to be higher (p < 0.05) in acetate than the concentrate diet. In the blood parameters, the glutamic pyruvic transaminase (GPT), red and white blood cell (RBC, WBC) counts and packed cell volume (PCV) did not differ within and among the diets. Likewise, the WBC differential count in both diets with either - AC or + AC were similar in trend. However, lymphocyte count was noted to be increased in R + AC than the R - AC diet. The addition of AC in both diets did not affect nutrient digestibilities within diets.

Comparison of Triglyceride Structures of Human Milk, Infant Formulas and Market Milk (인유, 조제 분유 및 시유의 트리글리세리드 구조의 비교)

  • The fatty acid composition acyl carbon atoms and species of triglycerides from human mature milk, infant formulas (modified milk formula) and market milk were determined by argentation thin-lager and gas-liquid chromatography. Short-chain fatty acids which sere not detected in human milk were present in very small amount in modified milk formula and market milk. The levels for 5:0, 22:0 and 24:0 in modified milk formula and for 8:0, 10:0, 18:0, 22:0 and 24:0 in market milk were significantly higher than those in human milk. The levels for 10:0 and 14:0 in modified milk formula and for 12:0 and 20:0 in market milk were significantly lower than those in human milk. The relative percent of $18:2{\omega}6$ in human milk, modified milk formula and market milk were on average 12.0, 15.0 and 3.8 percents respectively. Human milk contained significantly higher proportions of both ${\omega}6-and{\omega}3-derived$ long chain polyunsaturated fatty acids than modified milk formula and market milk. The major triglycerides of human milk, modified milk formula and market milk made by the glycerides with 44-52, 50-54 and 36-40 acyl carbon atoms, respectively. There were significant differences in levels for total number of acyl carbon atoms per glycerid molecule of human milk, modified milk formula and market milk. In comparison with human milk, modified milk formula and market milk showed significantly higher levels for saturates but significantly lower levels for trienes to polyenes.

Characteristic Changes of Kochujang by Heat Treatment (가열 처리에 의한 고추장의 특성 변화)

  • Kochujang, which is one of most favorable fermented hot seasonings in Korea, has swelling problem and color changes during distribution. To stop the gas formation, heat treatments were conducted at $50^{\circ}C\;to\;70^{\circ}C$ for 5 to 15 min. at the beginning or after 40 days fermentation. Yeast were not detected at $60^{\circ}C$ for 15min. heat treatment and bacteria were not effected in number that is concerned in fermentation of kochujang. At above heat treatment, there was no effect ${\alpha}-amylase$ but ${\beta}-amylase$ activity was increased in heat treated kochujang. The acid protease activity was higher than nonheat treated kochujang after 60 days fermentation but neutral protease decreased after 80 days fermentation. The L, a and b value by Hunter were gradually decreased during fermentation and ${\Delta}E$ value showed difference in kochujang heated before fermentation. The total hydroxy methyfurfural content was increased, and carotenoid and capsanthin in heated kochujang decreased during fermentation.

Quality Improvement of Galbijjim Using Superheated Steam and High Hydrostatic Pressure (Superheated Steam과 High Hydrostatic Pressure에 의한 갈비찜의 품질 개선 효과)

  • This study investigated the effects of superheated steam (SHS) and high hydrostatic pressure (HHP) on the quality of Galbijjim. SHS cooking increased moisture and crude fat contents and decreased crude protein contents (P<0.05). The value of L was significantly higher upon SHS cooking compared to conventional cooking (CC), whereas a and b values were not significantly different among the samples. Hardness decreased more upon CC than SHS. The results of the safety storage experiment at refrigeration temperature showed that the total number of bacteria was lower in SHS-HHP than in CC-HHP. The thiobarbituric acid value increased to 0.70~1.56 mg malonaldehyde (MA)/kg in CC-HHP after 15 days, and SHS-HHP showed 0.69 (0 day)~1.24 (15 days, $10^{\circ}C$) mg MA/kg. Volatile basic nitrogen value was 18.07~36.76 mg% in CC-HHP, and that in SHS-HHP also increased to 17.06 (0 day)~35.76 mg% (15 days, $10^{\circ}C$). Overall, SHS cooking and HHP reduced microorganisms, which could improve product quality and sanitation.
