HACCP의 적용을 위한 피자 전문 레스토랑의 위생관리 기준 설정 -피자생산을 중심으로- (Establishment of Hygienic Standards for Pizza Restaurant Based on HACCP Concept -Focused on Pizza Production-)

  • Hygienic standards for pizza specialty restaurant located in Seoul during summer, 2000 were established based on HACCP concept by measuring temperature, time, pH, $A_{w}$ and microbiological assessments of pizza, and evaluation of hygienic conditions of kitchens and workers. Kitchen and worker conditions were average 1.2 and 1.0 (3 point Sly's scale), respectively, Microbial contaminations occurred at $5-60^{\circ}C$, pH above 5.0, and $A_{w}$ (0.93-0.98). Microbial assessments for pizza processing revealed $1.5{\times}10^{2}-3.9{\times}10^{8}\;CFU/g$ of TPC and $0.5{\times}10^{1}-1.6{\times}10^{7}\;CFU/g$ of coliforms, exceeding standards ($TPC\;10^{6}\;CFU/g\;and\;coliform\;10^{3}\;CFU/g$) established by Solberg et al., although significantly decreased after baking. S. aureus was not discovered, but Salmonella was found in onions. Tools and containers such as pizza cutting knife, topping container, serving bowl, pizza plate, working board, and dough kneading board contained $6.2{\times}10^{2}-1.1{\times}10^{9}\;CFU/g$ of TPC, $2.0{\times}10^{1}-6.2{\times}10^{3}\;CFU/g$ of coliforms. Workers' hands contained $3.1{\times}10^{4}\;CFU/g$ of TPC and S. aureus as compared to safety standards of Harrigan and McCance (500 and 10 CFU/g of TPC and coliforms per $100cm^{2}$). CCPs (critical control points) were determined as receiving, topping, and baking according to CCP decision tree analysis. Results suggest purchase of quality materials, careful monitoring of time and temperature, hygienic use of tools and utensils, and sanitary practicer by workers are recommended as control points for safe pizza production.

적심시기(摘芯時期)와 분시방법(分施方法)이 황금(黃芩)의 생육(生育) 및 근수량(根收量)에 미치는 영향(影響) (Effects of Topping Time and Split Fertilization on Growth and Root Yield of Scutellaria baicalensis G.)

  • 남부지방에서 황금재배시(黃芩栽培時) 적심시기(摘芯時期)와 질소, 가리의 추비방법에 의한 증수효과(增收效果)를 구명하고자 여천(麗川) 재래종(在來種)을 공시(供試)하여 재식거리(裁植距離)를 $4{\times}10cm$$4{\sim}5$립(粒)을 4월 1일에 점파하였고 적심시기(摘芯時期)는 무적심구(無摘芯區)와 7월상순 1회 적심(摘芯), 7월상순과 8월중순에 2회 적심(摘恣)한 3처리에 대해 기비(基肥) : 추비(追肥) 비율(比率)을 70% : 30%, 60% : 20+20%, 50% : 20+20+20%으로 하여 시험을 수행한 결과를 요약(要約)하면 다음과 같다. 1. 토양의 화학성을 보면 시험후 토양이 시험전 토양에 비해 유기물(有機物), 유효린산(有效燐酸), 가리, 칼슘, 마그네슘, C. E. C 함량이 증가되는 경향을 보였다. 2. 적심시기(摘芯時期) 및 분시방법간(分施方法間)의 생육은 7월상순과 8월중순에 적심직후(摘芯直後) 2회 추비(追肥) 시용구가 무적심(無摘芯)의 7월상순 1회 추비(追肥) 시용구에 비하여 경장(莖長)들은 짧았으나 분지수(分枝數,) 경태(莖太등) 지상부와 주근장(主根長), 상근중(上根重) 비율(比率) 등 지하부 생장량이 증대되었다. 3. 건근수량(乾根收量)은 무적심(無摘芯) (158kg/10a)에 비해 2회 적심구(摘芯區)가 15% , 1회 적심구(摘芯區)가 10% 증수(增收)되었으며 질소, 가리 비료의 분시방법간(分施方法間)에는 2회 추비(追肥) 시용구가 1회 추비(追肥) 시용구 (150kg/10a)에 비해 상근중(上根重) 비율(比率) 향상으로 29% 증수(增收)를 보였다. 4. 2회 적심(摘芯) 처리에서 건근수량(乾根收量)은 경장(莖長)과 주당(株當) 생경엽중(生莖葉重), 지상부 생육간(生育間)에 질(負)의 상관(相關)이 인정되었고 주당(株當) 분지수(分枝數) 및 주근량(主根長)및 상근중(上根重) 비율(比率)과는 밀접한 정(正)의 상관(相關)을 보였으며 2회 추비(追肥) 시용재배에서도 경장(莖長), 주당분지수(株當分枝數) 및 주근량(主根長), 주근경(主根徑)등 지상, 지하부 생육과 건근수량간(乾根收量間)에 고도의 유의성이 인정되었다.

2-Chloroethyl Phosphonic Acid가 잎담배 조열에 미치는 영향 (Accelerating Effect of 2-Chloroethyl Phosphonic Acid Foliar Applications on Leaf Tobacco Maturity)

  • Cultivar Yeollow Special A, the most leading Korean economic leaf tobacco in Korea, were field-cultivated in four different localities of Korea for the period of two years (1970 and 1971) and sprayed at varied levels of 2-chloroethyl phosphonic acid (CEPA) for foliar application few days after topping. While no striking difference in leaf yield by weight was obtained among the treatments when compared with control, leaf quality as expressed for shipment price in won tended when compared with control, leaf quality as expressed for shipment price in won tended to improve. The treated leaves with 300 to 900 ppm of CEPA (approximately 140 1/acre of 500 ppm) not only showed yellowing and accelerated maturity to pick 4 to 5 days with practicable optimal level earlier than control, but also speeded up to take nearly with practicable optimal level earlier than control, but also speeded up to take nearly last half of the total time required for the five stages of flue-curing. It is therefore considered that CEPA is as effective maturity-accelerating agent and useful as known for other solanaceous plants showing climacteric stage respiration, and discussions were made about physiological actions of ethylene gas released from CEPA at plant tissues sprayed.

  • Since a humanoid robot inherently suffers from instability and always risks tipping itself over, or topping to the ground, it is necessary to ensure high stability and reliability of walk. An unexpected ground condition is one of the principal factors of instability. This paper proposes a walk stabilization method consisting of a Fuzzy algorithm and geometry under uneven terrain. The ground reaction forces that are measured by the FSR sensors on the sole are used to check the ground condition and the robot posture. The effectiveness of proposed method is verified by computer simulations.

버어리종 담배 품종의 생육특성이 수량, 품종, 내용성분 및 물리성에 미치는 영향 (Effects of Growth Characteristics on the Yield, Quality, Chemical Contents and Physical Properties in some Burley Tobacco Varieties)

  • To investigate tile effects of growth characteristics on the yield, price per Kg, chemical contents and physical properties in Burley tobacco, ten varieties including Burley 21 were tested in this study. The results obtained are summarized as follows. 1 Forty to fifty days after transplanting, CCR (Crop Growth Rate) was the highest. RCR (Relative Growth Rate) increased up to 40 days, but decreased 50 days when maturation began. High- yielding varieties showed high CCR and RCR till 60 days. 2. Total alkaloid content of cured leaf increased about three times than that of topping stage, but the increased rates were some what different among varieties. 3. Leaf area, stalk diameter, stalk height and days to flower showed positive correlations to yield, whereas leaf thickness and weight per unit leaf area showed negative. 4 Varieties which are high in cured leaf weight ratio and weight per unit leaf thickeners showed relatively poor quality. 5 Nitrogen content was high in leafy and larger stalk diameter variety. 6. There are positive correlation between weight per unit leaf thickness and filling power. The time of combustion was positively correlated to leaf thickness and weight Per unit leaf. 7. It can be concluded that many characteristics are related to the yield, but not quality. It is, there fore, easy to Predict tile yield, but difficult to forecast the qualiffy.

가정 간호 환자의 일상생활 수행정도와 가족의 부담감 및 사회적 지지와의 관계 (Relationship between the Patients' Activities Daily Living and Family Burden, Social Support under)

  • The purpose of this study is to clarify the correlation between the degree of patients daily activities and that of a sense and social support of families. This study covers families of 252 patients under home health nursing care at 6 University Hospitals during the period of March to May. 1999. The data were collected by using three different questionnaires. Data were analysed by utilizing SAS program such as frequency. average. percentage. t-test. ANOVA. Scheffe test and Pearson Correlation Coefficient. The results were as follows: 1. The average score of patients' daily living activity was $2.36\pm0.67$. $97.2\%$ patients turned out to be. in part. dependent on their family's care. $66.5\%$ of the patients were still dependent on their families in walking: $66.3\%$ In bathing: and $61.0\%$ in using toilet. 2. The average score burdened family caregivers had felt was 2.25 in 4 full point which can be interpreted as average. Among the six burden dimensions. time was said to be the No. 1 burden-yielding factor. When it comes to the characteristics of patients. there were tendencies for patients with lower incomes residing in communal housing. with cerebrovasculal diseases and with higher score of daily living activity to show a higher burden scores. 3. The average score of social support was 2.49 in 5 point. which represents a average score. Among other items. the opportunity of social integration was 2.66. topping the list whereas a chance of upbringing was starkly low at 2.42. The higher scores of social support were shown in cases where the caregiver was male spouse. total care giving duration exceeded 25 months and malignant patients daily living activity scores were low. 4. The score of patients daily activity was positively correlated to the degree of the family burden (r=0.1942). Data indicates there was direct correlation between daily living activity and burden of time consuming, self-improving and physical impairment. 5. The score of the patients daily living was negatively correlated to the social support (r=0.3414), As a whole. there was negative correlation between social support and the formation of intimacy and self-confidence.

Pavement condition assessment through jointly estimated road roughness and vehicle parameters

  • Performance assessment of pavements proves useful, in terms of handling the ride quality, controlling the travel time of vehicles and adequate maintenance of pavements. Roughness profiles provide a good measure of the deteriorating condition of the pavement. For the accurate estimates of pavement roughness from dynamic vehicle responses, vehicle parameters should be known accurately. Information on vehicle parameters is uncertain, due to the wear and tear over time. Hence, condition monitoring of pavement requires the identification of pavement roughness along with vehicle parameters. The present study proposes a scheme which estimates the roughness profile of the pavement with the use of accurate estimates of vehicle parameters computed in parallel. Pavement model used in this study is a two-layer Euler-Bernoulli beam resting on a nonlinear Pasternak foundation. The asphalt topping of the pavement in the top layer is modeled as viscoelastic, and the base course bottom layer is modeled as elastic. The viscoelastic response of the top layer is modeled with the help of the Burgers model. The vehicle model considered in this study is a half car model, fitted with accelerometers at specified points. The identification of the coupled system of vehicle-pavement interaction employs a coupled scheme of an unbiased minimum variance estimator and an optimization scheme. The partitioning of observed noisy quantities to be used in the two schemes is investigated in detail before the analysis. The unbiased minimum variance estimator (MVE) make use of a linear state-space formulation including roughness, to overcome the linearization difficulties as in conventional nonlinear filters. MVE gives estimates for the unknown input and fed into the optimization scheme to yield estimates of vehicle parameters. The issue of ill-posedness of the problem is dealt with by introducing a regularization equivalent term in the objective function, specifically where a large number of parameters are to be estimated. Effect of different objective functions is also studied. The outcome of this research is an overall measure of pavement condition.

적심시기가 감초의 생육 및 품질에 미치는 영향 (Effect of Topping Time on Growth and Quality in Glycyrrhiza uralensis)

  • 본 연구는 적심이 감초의 생육 및 수량에 미치는 영향을 구명코자 2008년부터 2009년까지 2년간 충북농업기술원에서 수행하였다. 적심 처리시기에 따라 6월 30일(JUN), 7월 30일(JUL), 8월 30일(AUG), 무적심(대조구) 등 4처리를 하였으며, 적심량은 줄기 길이의 20%를 제거하였다. 본 연구의 결과는 다음과 같이 요약할 수 있다. (1) 초장과 분지수는 적심처리구보다 대조구에서 우수하였으며, 경엽중은 적심시기가 빠를수록 무거웠다. (2) 초장과 줄기 직경은 적심 시기에 따른 영향을 받지 않았다. (3) 지표면의 포복경 생장에는 일정한 경향이 없었다. (4) 본 실험에서 적심이 뿌리 생장을 유도하고, 조기 적심이 뿌리 생육을 촉진하였다. (5) 근중은 대조구 2년생 238 kg/10a에 비해 JUN 처리구와 JUL 처리구에서 각각 11~30% 증가하였으며, 3년생은 대조구 432 kg/10a에 비해 6~11% 증가하였다.

Occurrence and Biological Control of Postharvest Decay in Onion Caused by Fungi

  • Postharvest decay of onion bulbs was examined by inspecting the commercial packages in the market or in storage. Bulb rot incidence was unexpectedly high, and onion bulbs with 1st quality grade were rotten most severely by 51%, followed by 32% for 2nd and 21% for 3rd grades. This indicates that larger bulbs had higher incidences of bulb rots. Major pathogens associated with basal and neck rots were Fusarium oxysporum and Aspergillus sp. or Botrytis allii, respectively, of which basal rot was most prevalent and damaging during storage. Among the epiphytic microorgani는 from onion plants, several Bacillus and Paenibacillus spp. and previously selected Pseudomonas putida and Trichoderma harzianum had inhibitory efficacy against bulb rot pathogens. Among these B. amyloliquefaciens BL-3, Paenibacillus polymyxa BL-4, and P. putida Cha 94 were highly inhibitory to conidial germination of F. oxysporum and B. allii. P. putida Cha 94, B. amyloliquefaciens BL-3, P. polymyxa BL-4, and T. harzianum TM were applied in the rhizoplane of onion at transplanting. Initially antagonist populations decreased rapidly during the first one month. However, among these antagonists, rhizoplane population densities of BL-3, Cha 94, and TM were consistently high thereafter, maintaining about 10$^4$-10$^{5}$ cells or spores per gram of onion root up to harvest time. The other bacterial antagonist BL-4 survived only for two months. TM was the most effective biocontrol agent against basal rot, with the number of rotten bulbs recorded at 4%, while that of the control was 16%. Cha 94 was effective for the first 20 days, but basal rot increased thereafter and had about the same control efficacy as that of BL-3 and BL-4. When the antagonists were applied to the topping areas of onion bulbs at harvest, TM was the most effective in protecting the stored onion bulbs from neck rotting. The second effective antagonist was BL-3. TM and BL-3 completely suppressed the neck rot in another test, suggesting that biocontrol of postharvest decay of onion using these microorganisms either at the time of transplanting or at harvesting may be promising.

냉동 콩나물 비빔밥 제조를 위한 전처리 공정 최적화 (Processing optimization of soybean sprouts pre-treatment for manufacturing frozen Kongnamul-Bibimbap product)

  • 본 연구는 냉동 콩나물비빔밥 제품의 공정 최적화를 위해 수행되었고, 각 공정에서 공정변수에 따른 콩나물의 전단력, 배축직경, 중량감소 등과 같은 물리적 특성의 변화를 살펴보았다. 또한 각 공정마다 유효한 공정변수들을 조합하여 최종 냉동 후 조리에 의한 콩나물의 물리적 특성에 미치는 영향을 살펴보았다. 콩나물 데치기 공정에서, 처리시간의 감소와 당수 사용은 배축직경 수축과 중량감소를 줄이는 효과가 있었다. 조미 배합에서는 설탕의 사용이 소금과 설탕 혼합 사용보다 배축직경이 크고 중량감소가 적게 나타났다. 하지만 이와 같은 단위공정 단일변수적용에 의해서는 콩나물비빔밥 냉동 후 조리한 콩나물에서 배축직경 감소와 중량감소 완화의 유의적 효과는 관찰되지 않았다. 대조구 공정은 열수 데치기, 염과 설탕의 혼합 조미, 취반미 비빔형태로 진행되었고, 공정변수 조합은 당수 데치기, 설탕 조미, 취반미 비빔 또는 토핑형태로 진행되었다. 조합 공정은 대조구 공정 보다 냉동 후 조리콩나물의 유의적으로 높은 전단력과 배축직경, 낮은 중량감소를 유도하였다(p<0.05). 결론적으로, 각 공정에서 유의적 효과를 도출한 공정변수의 조합은 콩나물 비빔밥 냉동 후 조리 시 콩나물 물리적 특성을 개선시킬 수 있을 것으로 사료되었다.
