눈다랑어(Thunnus obesus)를 활용한 고령친화식품용 연화식 함박스테이크, 완탕 및 토마토스프의 개발 및 품질특성 (Development and Quality Characteristics of Softened Hamburger Steak, Wantang, and Tomato Soup for Senior-friendly Seafoods Using Bigeye Tuna Thunnus obesus)

  • This study was developed to prepare hamburger steak (HS), wantang soup (WS), and tomato soup (TS) for senior-friendly seafood's (SFS) using bigeye tuna Thunnus obesus, and to investigate their quality characteristics. All data were presented in the order of HS, WS, and TS. The hardness values were 298.9×1.03, 47.1×1.03 and 14.9 ×1.03 N/m2, respectively. The viscosity of TS was 2,856 mPa·s. The protein contents were 13.8, 11.7, and 9.7 g/100 g, respectively. The fat-soluble vitamins content were as follows: vitamin A 21.88, 5.03, and 23.72 ㎍RAE/100 g; vitamin D 1.15, ND, and 1.81 ㎍/100 g, respectively. The water soluble vitamins contents were as follows: vitamin C 47.22, 32.83 and 37.01 mg/100 g; vitamin B2 0.17, 0.11 and 0.10 mg/100 g; vitamin B3 34.87, 34.76 and 54.62 mgNE/100 g. The Ca contents were 15.9, 16.8, 28.9 mg/100 g, and the K contents were 383.8, 167.4, and 300.0 mg/100 g, respectively. The dietary fiber was 0.04, 0.07 and 0.08 g/100 g, respectively. Escherichia coli was not detected in any of the products. These results suggest that the products should be classified as follows, based on their appropriateness as SFS: HS, WS and TS.

Isolation and Characterization of Cinnamoyl-CoA Reductase Gene from Panax ginseng C. A. Meyer

  • Cinnamoyl-CoA reductase (CCR, EC 1.2.1.44) catalyses the reduction of cinnamic acid CoA esters into their corresponding aldehydes, the first step of the phenylpropanoid pathway specially dedicated to monolignol biosynthesis. A cDNA clones encoding CCR have been isolated from Panax ginseng C.A. Meyer and its expression was investigated in response to abiotic stresses. The cDNA, designated PgCCR which is 865 nucleotides long and has an open reading frame of 590 bp with a deduced amino acid sequence of 176 residues. The PgCCR encoded protein possesses substantial homology with CCRs isolated and cloned from other sources; the highest identity (51.8%) was observed with CCR from Tomato (Lycopersicon esculentum). Under various stress conditions, expression patterns of the PgCCR were highly induced in adventitious and hairy roots by several abiotic stresses. These results indicated that PgCCR plays protective role against diverse environmental stresses.

Screening of Fungicides and Natural Plant Products and Their Efficacy on Control of Aspergillosis in Silkworm, Bombyx mori L.

  • Seven fungicides viz., salcylic acid, bacistin (Carbandazim 50% WP), bayleton (Triadimefon 25% WP), Dithane M-45 (Mancozeb 75% WP), captan (Captaf 50% WP) formaldehyde and benzoic acid at three concentrations (0.50,0.75 and 1.0%) and ten plant products viz., Hena leaf, garlic bulb, tomato leaf, mango bark, cotton leaf, turmeric powder, onion, tulsi leaf, neem leaf and ginger at 1.0,2.0 and 3.0% concentrations were screened against Aspergillus flavus and A. tamarii in vitro. Among fungicides, salcylic acid and bavistin and among plants Hena and Mango bark powder were found to be very effective at all concentrations tested. Based on in vitro screening, only selected six fungicides at 1.0, 1.5 and 2.(0% and six plants at 2.0,4.0 and 6.0% concentrations were tested in vivo for controlling Aspergillosis in silkworm. Salcylic acid and bavistin fungicides and Hena leaf powder and Mango bark powder have shown considerable effect in controlling Aspergillus infection in silkworm at all concentrations tested.

태국 소비자의 한국산 파프리카 및 토마토에 대한 인식과 지불의사에 관한 연구 (A Study on the Thai Consumers' Perception and Willingness to Pay for Korean Paprika and Tomatoes)

  • This study investigated Thai consumers' perception and willingness to pay for Korean paprika and tomatoes to establish effective export strategies, To this end, an online survey was conducted on 300 consumers living in Bangkok, Thailand, and the factors affecting the purchase intent and willingness to pay price premium for Korean paprika and tomatoes were analyzed. The results are as follows. First, Thai consumers usually buy fruit and vegetables offline, such as supermarkets and large discount stores, but not a few respondents obtained purchase information online. Second, the price competitiveness of Korean paprika and tomatoes is low to Thai products, and the quality, safety, freshness, and cost-effectiveness are similar or low to other exporting countries. Therefore it is important to improve non-price competitiveness using positive perceptions of Korean products and Korean Wave. Third, the most important reason why Thai consumers not buying Korean paprika and tomatoes is the lack of stores and high prices. Fourth, as a result of analyzing the factors affecting the purchase intent for Korean paprika and tomatoes, the strategy of selling paprika and tomatoes through supermarkets to consumers with high income is effective. Fifth, considering the factors of willingness to pay premium prices for Korean paprika and tomatoes, a high pricing strategy targeted consumers with high income and many family members is appropriate.

농가 자가제조 유기액비의 토마토 생육 촉진 효과 및 무기영양소 평가 (Evaluation of Tomato Growth-promoting Effect and Mineral Nutrient of Farm-made Liquid Fertilizers)

  • 본 연구는 유기재배에서 작물촉진용으로 활용되고 있는 농가 자가 제조 액비에 대한 토마토 생육 효과와 무기영양소를 평가하여 액비의 표준화 제조기술을 개발하는데 기초자료로 활용하고자 수행되었다. 농가 자가 제조 액비 62개 중 생선 액비 14개, 해조류 액비 8개, 음식물 액비 5개, 식물·농작물 액비 23개, 기타 액비 12개로 다양한 원료를 이용하여 제조되었다. 수집 62개 액비를 농도별로 희석하여 파종 후 20일된 토마토 육묘에 처리한 경우 경엽처리의 47~48개와 그리고 토양처리의 30~31개에서 지상부 생체중이 20~30% 증가하였다. 그러나 파종 후 40일된 토마토 육묘에 처리한 경우 경엽처리의 17~32개 및 토양처리의 6~7개에서 지상부 생체중이 20~30% 증가하였다. 따라서 파종 후 40일된 토마토 육묘에 액비를 처리한 경우보다도 20일에 처리한 경우에서, 토양처리보다는 경엽처리에서 토마토 육묘 생육이 더욱 증가하였다. 일반적으로 액비 처리량이 많을수록 토마토 육묘 생육이 증가하였고, 1회 액비처리에 비해 2회 액비처리에서 토마토 육묘 생육이 증진되었다. 또한 액비 처리에 의한 효과는 초장보다는 지상부 생체중에서 더욱 효과적이었다. 선발 액비 10종에 대해 성분을 분석한 결과 다량 및 미량원소 함량은 시료 간 차이가 크지만 농가 자가 제조 액비 처리에 의한 토마토 생육증진은 액비에 존재하는 다량 및 미량원소에 의해서 기인되는 것으로 사료된다.

LPS로 유도된 RAW 264.7 세포에 대한 흑색 방울토마토 주스의 항염증 효과 (Anti-inflammatory Effects of Black Cherry Tomato (Lycopersicon esculentum M.) Juice on LPS-induced RAW 264.7 Cells)

  • 본 연구에서는 흑색 방울토마토 주스의 항산화 활성, 아질산염 소거능, 알코올 분해능, 및 RAW 264.7 세포에서의 항염증 활성에 미치는 영향을 알아보았다. 흑색 방울토마토 주스의 총 페놀 함량은 $156.83{\mu}g\;TAE/ml$로 나타났다. 토마토주스의 항산화활성은 DPPH 라디칼 소거능과 SOD 유사활성으로 측정하였다. 토마토주스의 DPPH radical 소거능은 농도의존적으로 현저히 증가하였으며 40%의 농도에서의 83.39%로 나타났다. SOD 유사활성은 100% 농도에서의 SOD 유사활성은 22.01%로 나타났다. 흑색 방울토마토 주스의 숙취 해소능을 알아보기 위하여 체내 알코올 대사의 일차 효소인 ADH 활성 및 아세트알데히드를 분해하는 ALDH 활성을 알코올 분해와 숙취해소에 효과가 있는 것으로 알려진 hepos를 대조구로 하여 분석한 결과, ADH 활성 및 ALDH 활성 모두 농도 의존적으로 증가하였으며(p<0.05), 40% 농도에서의 ADH 활성과 ALDH 활성은 각각 198.87%와 181.89%로 높은 활성을 보였다. 아질산염 소거능 분석에서는 흑색 방울토마토 주스 50% 농도, pH 1.2, 3.0, 6.0에서 각각 85.06, 58.25, 43.68%로 pH가 낮을수록 아질산염 소거능이 증가하는 것으로 나타났다. 흑색 방울토마토 주스의 항염증 활성을 측정하기 위하여 LPS에 의해 유도된 RAW 264.7 대식세포의 NO 합성을 측정한 결과 농도 10%에서의 NO 합성은 1.28%로 LPS 처리군(7.79%)보다 83.57% 현저하게 감소하였다(p<0.05). 이상의 결과에서와 같이 흑색 방울토마토 주스는 항산화 활성과 알코올 분해능 및 항염증 효과가 높은 것으로 나타났기에 기능성 식품으로서의 가치가 높을 것으로 판단된다.

열풍 건조 토마토 분말 첨가가 돈육 패티의 냉장저장 중 품질특성에 미치는 영향 (Effect of Hot-Air Dried Tomato Powder on the Quality Properties of Pork Patties during Cold Storage)

  • 미트패티에 무첨가구와 열풍 건조 토마토 분말을 각각 0.00(C), 0.25(T1), 0.50(T2), 0.75(T3) 및 1.00%(T4)씩 첨가하여 제품을 제조한 후 5℃에서 7일간 저장하면서 물리화학적 및 관능적 품질특성을 조사하였다. 건조 토마토 분말은 열풍건조기에서 80℃에서 2시간 동안 열처리 후 60℃에서 48시간 동안 재처리한 것이다. pH는 T4가 대조구와 다른 처리구에 비해 저장 초기에 유의적으로 낮았다가 저장말기에 유의적으로 가장 높게 나타났다(p<0.05). 가열감량은 대조구와 처리구간 유의적인 차이는 없었다(p>0.05). TBARS는 저장 전 기간 동안 첨가구가 대조구에 비해 유의적으로 낮은 값을 보였다(p<0.05). VBN은 T2가 유의적으로 증가하였으나(p<0.05), 대조구와 나머지 처리구에서 유의적인 차이가 없었다(p>0.05). 육색(CIE L*a*b*)은 첨가구가 대조구보다 높은 경향을 보였으며, T4의 a*와 b*값이 다른 제품들보다 유의적으로 가장 높게 나타났다(p<0.05). 저장기간이 경과함에 따라 총균수는 유의적으로 증가하였으며(p<0.05), 저장 7일차에 5.48(T2)~ 6.98(C) log CFU/g 범위 이었다. 관능검사 결과 열풍 건조 토마토 분말을 첨가한 처리구들의 제품이 대조구에 비해 다소 양호한 평가를 받았다.

후쿠시마산(産) 농산물 수요감소에 대비한 농산물 수출전략 (Export Strategies Against Decreasing Demand of Fukushima's Agricultural Porducts)

  • In 1995, the WTO started to ease the trade barriers. Globalization has accelerated. The opening of the agricultural products market is rapidly gaining momentum with the conclusion of an FTA. The acceleration of this FTA is expected to be a threat to Korea's agriculture, and a new strategy is needed. At the beginning of the nuclear accident, mainly radioactive materials are found in the surface layer of the soil. Over time, the concentration of the plant gradually increases. After 5 years, it becomes noticeable. In March 2016, it will be five years after the nuclear accident. Radioactive contamination is very likely to occur in agricultural products produced in the Fukushima area at this time. In this period, agricultural products produced in the Fukushima region are expected to generate supply disruptions in Japan, and imports to replace them will increase. Therefore, it is necessary to establish a mid- and long-term strategy for exporting to Japan by analyzing the competitiveness of Korean agricultural products. In this study, standardization index was derived by using agricultural price ratio, TSI, export CAC. Based on this, we analyzed the competitiveness of each item in the Japanese market. The analysis shows that garlic is the most competitive product in the Japanese market. Also, strawberry, tomato, and cucumber were found to be competitive. On the other hand, Kiwi, pineapple, soybean, onion, potato, etc. As a result of the analysis, the following strategies were proposed for the export of agricultural products with high competitiveness. First, it is necessary to develop technology to suppress deterioration of export transportation quality. Second, continuous supply of local consumption pattern information is required. Third, it is necessary to expand exports by processing fresh food. Fourth, it suggested the establishment of export base and strengthening of support system.

Prevalence and Thermal Stability of Enterobacter sakazakii from Unprocessed Ready-to-Eat Agricultural Products and Powdered Infant Formulas

  • Enterobacter sakazakii, designated as an unique microbial species in 1980, may cause bacteremia, necrotizing enterocolitis and infant meningitis. The distribution and the thermostability of E. sakazakii in unprocessed ready-to-eat (RTE) agricultural products of 252 and in 25 powdered infant formulas (PIF) were analyzed. Eighty one, 50, 43, and 47% of brown rice, pumpkin, potato, and carrot samples, respectively, had aerobic plate counts (ARC) in the range of 5 log CFU/g or more. Almost all the other products sampled had APC of approximately 2 log CFU/g. Fifty three, 75, 67, and 68% of banana, pumpkin, soybean, and carrot had Enterobacteriaceae counts approximating 3 log CFU/g. Sixty six percent of the brown rice tested had Enterobacteriaceae counts approximating 5-6 log CFU/g. E. sakazakii was isolated from 3/25(12%), 4/23(17%), 1/24(4%), and 1/27(4%) of PIF, brown rice, laver, and tomato samples, respectively. D-values were 3.52-4.79 min at 60 and $D_{60}-values$ were similar as the isolates reported. Thermal inactivation of four thermovariant E. sakazakii strains during the rehydration of PIF with hot water were investigated. At $50^{\circ}C$, the levels of E. sakazakii decreased one log CFU/g for 4-6 min and thereafter the levels remained stable for 20 min. At $60^{\circ}C$, inactivation by about 2 log CFU/g occurred for 20 min. Therefore, the unprocessed agricultural products might be a source of contamination for PIF when used as an ingredient after drying and pulverization. Rehydration of PIF for infant feeding with a water temperature of $60^{\circ}C$ rather than $50^{\circ}C$, as recommended by the manufacturers, may be helpful in the reduction of potential E. sakazakii risk.

청주지역 유통 농산물 중 잔류농약 모니터링 및 안전성 평가 (Monitoring and Risk Assessment of Pesticide Residues in Agricultural Products Collected from Wholesale and Traditional Markets in Cheongju)

  • 청주지역에서 유통중인 농산물 중 농약의 잔류실태를 조사하고 안전성을 평가하기 위하여 도매시장과 재래시장에서 총 120점의 농산물을 채취하여 GLC와 HPLC 및 GC-MSD를 이용한 다성분동시분석법으로 분석하였다. Procymidone과 penconazole 및 tetraconazole과 같은 3종의 살균제가 양파, 부추, 토마토, 풋고추에서 검출되었다. 도매시장에서 채취한 양파에서 살균제 penconazole이 검출되었으며, 재래시장의 경우는 살균제 procymidone이 부추와 토마토에서, 살균제 tetraconazole이 풋고추에서 검출되어 3.3%의 검출율을 나타내었다. 검출된 농약의 일일섭취추정량(EDI)은 일일섭취허용량(ADI)의 0.1% 미만으로 안전한 것으로 판단되었다.
