Quality Changes of Ground Pork Containing Safflower Seed during Frozen Storage (홍화씨를 첨가한 분쇄돈육의 동결저장 중 품질변화)

  • This study was carried out to investigate the effect of safflower seed on the physicochemical properties of ground pork during frozen storage. Three types of ground pork were evaluated: 20% pork back fat added (T0, control), 10% pork back fat and 10% added safflower seed (T1), and 20% added safflower seed (T2). Water holding capacity decreased with longer storage period, and that of T2 was the highest (p<0.05). Cooking loss increased with longer storage period, and that of T1 and T2 was higher than that of T0 (p<0.05). The reduction in diameter of T0 increased, but that of T1 and T2 was not significantly different with longer storage period. Hardness and chewiness increased, but springiness decreased with longer storage period (p<0.05). Hardness, springiness and chewiness of T2 was the highest (p<0.05). The pH decreased with longer storage period (p<0.05), and those of T0, T1 and T2 were pH 5.41, 5.43 and 5.32, respectively, after 50 days of storage. The TBARS (2-thiobarbituric acid reactive substances) values of T0 and T1 increased, but that of T2 was not significantly different with longer storage period. The TBARS values of T0, T1 and T2 were 4.76, 2.77 and 0.54 mg malonaldehyde/kg, respectively, after 50 days of storage. The $L^*$, $a^*$ and $b^*$ value of T0 was the highest among the samples (p<0.05), the $a^*$ value of the samples decreased with longer storage period (p<0.05). In conclusion, this study demonstrates that the addition safflower seed tended to improve physiological properties and antioxidative effects.

Effects of vitamin E oral administration on the lipid peroxidation in blood and sirloin of castrated Korean indigenous beef cattle (Vitamin E 경구투여가 한우 거세비육우의 혈액 및 근육내 지질과산화 작용에 미치는 영향)

  • This study was evaluated to know the effects of vitamin E(VE) on the lipid peroxidation in blood and sirloin of castrated korean indigenous beef cattle. Experimental groups were divided into VE 500IU(A), 1,500IU additative feeding group(B) and non-VE-treated control group(C). After oral administration to the cattle for 120 and 150 days, body weight gains, VE contents in plasma and sirloin, and thiobarbituric acid(TBA) value were examined according to the exhibition period(1-7 days) in refrigerated showcase between aging and non-aging group. The results obtained from this study were summarized as follows ; 1. Body weight gain per day of control compared with VE additative feeding A and B groups were showed no significantly differences. 2. The concentrations of VE in plasma after oral administration with VE for 120 days were significantly increased(p<0.05) in A and B groups. There were higher(p<0.n) 4.22$\mu\textrm{g}$/$\m\ell$ in A and 6.22$\mu\textrm{g}$/$\m\ell$ in B group than the control(3.0$\mu\textrm{g}$/$\m\ell$). And the concentrations of VE in plasma for 150 days were significantly increased(p<0.05) in VE additative feeding groups. There were higher 4.89$\mu$g/$m\ell$ in A and 7.05$\mu\textrm{g}$/$\m\ell$ in B group than the control(3.15$\mu\textrm{g}$/$\m\ell$). 3. The concentrations of VE in sirloin for 120 days were significantly increased(p<0.05) in A and B groups. There were higher 1.84$\mu\textrm{g}$/g in A group and 2.40$\mu\textrm{g}$/g in B group than the control(0.78$\mu\textrm{g}$/g). And the concentrations of VE in sirloin for 150 days were significantly increased(P<0.05) in A and B groups. There were higher 1.94$\mu\textrm{g}$/g in A group and 2.63$\mu\textrm{g}$/g in B group than the control(1.00$\mu\textrm{g}$/g). 4. TBA values, the indicator of lipid peroxidation, in non-aging sirloin according to the exhibition period(1-7 days) in refrigerated showcase after oral administration with VE additative feed for 120 days were lower 0.73 in A and B groups than 0.82 in control at the third day after exhibition. In the same group, TBA values were significantly(p<().05) tower 0.77 and 0.75 in A and B groups than 1.22 in control at the seventh day after exhibition. Equally, in the aging group, there were significantly(p<0.05) showed lower TBA values 1.05 and 0.99 in A and B groups than 1.87 in control at the seventh day after exhibition. 5. After oral administration with VE additative feed to the cattle for 150 days, TBA values in non-aging sirloin according to the exhibition period(1-7 days) in refrigerated showcase were significantly(p<0.05) decreased to 0.84 and 0.88 in A and B groups than 1.26 in control at the seventh day after exhibition. In the aging group, there were significantly(p<0.05) showed lower TBA values 0.95 and 0.99 in A and B groups than 1.79 in control at the seventh day after exhibition.

Effect of Packaging Methods on the Quality Properties of Stick Type Restructured Jerky (재구성 스틱형 육포의 포장방법이 저장중 품질특성에 미치는 영향)

  • The effect of packaging methods on the quality of stick type restructured jerky was investigated in terms of pH, water activity $(A_w)$, TBA (thiobarbituric acid) value, total bacterial counts, and sensory evaluation during storage at room temperature $(25^{\circ}C)$ for 90 days. The jerky was subjected to plastic or vacuum packaging at $(25^{\circ}C)$. The pH decreased slightly as storage time increased (p<0.05), but there were no significant differences between the packaging methods. The water activity of jerky in plastic packaging decreased as storage time increased (p<0.05), however jerky in vacuum packaging showed no significant change. Vacuum packaging resulted in a higher water activity value than plastic packaging. The TBA and hardness values decreased as storage time increased (p<0.05), and there were significant differences between packaging methods during the storage period (p<0.05). The total bacterial counts in vacuum packaged jerky were lower than jerky in plastic packaging. The sensory evaluation of each treatment decreased slightly as storage time increased (p<0.05), however there was no significant difference between packaging methods. Based on our findings, we conclude that vacuum packaging provides more effective storage than common packaging of jerky.

Effect of Pumpkin, Corn Silk, Adzuki Bean, and Their Mixture on Weight Control and Antioxidant Activities in High Fat Diet-Induced Obesity Rats (호박즙, 옥수수수염차, 팥차 및 혼합물이 식이유도 비만동물모델에서 체중과 항산화 활성에 미치는 영향)

  • Pumpkin juice (PJ), corn silk tea (CT), and adzuki bean tea (AT) have long been used for treatment of obesity in Korea. This study investigated the efficacy of PJ, CT, AT, and their mixture (PCA) on alteration of body weight and antioxidant metabolism in high-fat diet (HFD)-induced obese rats. After being fed HFD for 4 weeks, SD rats were divided into six groups fed a normal diet (ND), HFD, HFD+PJ [250 mg/kg body weight (BW)], HFD+CT (250 mg/kg BW), HFD+AT (250 mg/kg BW), and HFD+PCA (PJ : CT : AT=1:1:1, 250 mg/kg BW) for another 9 weeks. HFD consumption resulted in total lipid, triglyceride, and total cholesterol accumulation in adipose tissue, which was reduced by administration of PJ, CT, AT, or PCA. The plasma oxygen radical absorbance capacity value and hepatic glutathione peroxidase activity significantly increased compared to the HFD group. The liver thiobarbituric acid reactive substances was significantly lower in the PCA group than the HFD group. HFD-induced DNA damage in hepatocytes, as measured by comet assay, decreased in the PJ, AT, and PCA-supplemented groups. The PCA group exerted a superior antigenotoxic effect compared to other treatments. PCA recovered the concentration of plasma adiponectin, which was reduced by HFD. Adipocyte surface area (%) was significantly higher in the HFD group than the ND group, significantly lower in the PJ and PCA groups than the HFD group, and not significantly different compared with the ND group. Based on the results, supplementation of PJ, CT, AT, and PCA exhibited lipid-lowering effects in adipocytes of HFD-induced obese rats. Furthermore, the PCA group exhibited superior antioxidant activity in all treated groups. This study suggests that a mixed beverage consisting of PJ, CT, and AT may be a significant source of natural antioxidants, which might be helpful in preventing obesity and progress of various oxidative stresses induced by HFD.

Effect of Freeze-Thaw Process on Myoglobin Oxidation of Pork Loin during Cold Storage (돈육 등심의 냉동 및 해동과정이 냉장저장동안 육색소 산화에 미치는 영향)

  • To investigate the effect of ${\beta}$-hydroxyacyl CoA-dehydrogenase(HADH) activity increased by freezed and thaw process on myoglobin(Mb) oxidation without lipid oxidation during, pork loins were collected at postmortem 24 hts and sliced to steaks (3 cm thickness). Samples were packaged in a polyethylene bag and subjected to flesh group (control), one cycle fieezed and thaw group (treatment 1) and two cycles freezed and thaw group (treatment 2), respectively. Samples were measure meat color (CIE $L^*,\;a^*,\;b^*$), the contents(%) of MetMb, thiobarbituric acid reactive substance (TBARS) value and HADH(${\beta}$-hydroxyacyl CoA-dehydrogenase) activity at 0, 3, and 7 days of storage at $4^{\circ}C$. Both treatments showed significantly (p<0.05) lower $L^*$ and higher $L^*$ value compared to those of control at 7 days. On the contrary, MetMb contents(%) of treatments were significantly (p<0.05) higher than those of control during cold storage. However there were no significant (p> 0.05) differences in TBARS values between control and treatments during 7 days. There were significant (p<0.05) differences in HADH activity between control and treatments at 3 days of cold storage. Both treatments showed higher HADH activity compared to those of control. These results suggested that the freezed and thaw process could accelerate meat color deterioration, i.e. increased MetMb percentage without lipid oxidation in pork loin during cold storage. This also implied that autoxidation of Mb in freezed and thaw pork loin was influenced by enzyme-catalysed reactions in the tissue that would lead to decreased OxyMb.

Effects of Ligularia fischeri Extracts on Oxidation of Low Density Lipoprotein (저밀도 지방단백질의 산화에 대한 곰취 추출물의 항산화 효과)

  • The study was carried out to investigate the antioxidant effects of ethanol, methanol, and water extracts or fractions of ethanol extract of Ligularia fischeri on low density lipoprotein(LDL) and ethanol extract was further fractionated. The methanol extract and ethyl acetate fraction showed strong antioxidant effect with 71.7% (13.36 nmol/mg) and 95% (1.35 nmol/mg) inhibition in the presence of $15\;{\mu}g/mL$, respectively. In the value of malondialdehyde(MDA) with oxidation time, ethanol, methanol and water extract in the presence of $25\;{\mu}g/mL$ inhibited the oxidation up to 4h incubation and ethyl acetate fraction showed strong antioxidant effect up to 8h incubation. Also, the ethanol, methanol and water extract showed antioxidant effects in the agarose gel electrophoresis test. The conjugated diene formation by lipid oxidation with addition of $Cu^{2+}$ in the Ligularia fischeri extracts and their fractions was decreased approximately 1.1 to 2.8 times and 2.2 to 3.2 times, respectively compared to control. In the degradation of apo B-100 by oxidation using SDS-PAGE, ethanol, methanol and water extract showed similar degradation band pattern compared to that of native LDL band. Apo B-100 contents using densitometer were 77.8, 92.5% and 82.3% in the ethanol, methanol and water extract, respectively, compared to 100% of native LDL. In the meanwhile, apo B-100 contents in hexane, ethyl acetate and water fraction were 38.8, 94.5 and 65.5% respectively. This results indicated that ethyl acetate fraction showed the strongest antioxidant effect on MDA value or apo B-100 contents of LDL.

Effects of Selenium and Vitamin E Supplementation on Meat Quality and Shelf-Life in Finishing Pigs (Selenium과 비타민 E의 급여가 비육돈의 육질 특성 및 저장성에 미치는 영향)

  • This study was conducted to investigate the effect of seleium (Se) and vitamin E supplementation on meat quality and shelf-life in finishing pigs. A total of eighty ($Landrace{\times}Yorkshire{\times}Duroc$) pigs (74.74 initial BW) were randomly allocated into five treatments with four replications and fed for six weeks. Dietary treatments included 1) CON (basal diet), 2) ISE2 (basal diet+0.2 ppm inorganic Se+100 ppm vitamin E), 3) ISE4 (basal diet+0.4 ppm inorganic Se+100 ppm vitamin E), 4) OSE2 (basal diet+0.2 ppm organic Se+100 ppm vitamin E) and 5) OSE4 (basal diet+0.4 ppm organic Se+100 ppm vitamin E). Cooking loss was decreased in treatment of ISE4 as compared with treatment of CON (p<0.05). Crude fat (%) of OSE2 was higher than those of others (p<0.05). Redness ($a^*$- value) of M. longissimus dorsi was increased in treatment of OSE2 as compared with other treatments after 100 of storage (p<0.05). Thiobarbituric acid reactive substances (TBARS) was decreased in treatment of OSE4 compared with treatments of CON and ISE2 after 10d of storage (p<0.05). In conclusion, Se and vitamin E combination did not significantly affect cooking loss,$a^*$- value and TBARS except for cases.

Physicochemical Properties and Sensory Score of Press Ham Made from Chicken Fed with Citrus Byproduct (감귤부산물 급여 닭고기 프레스 Ham의 이화학적 특성 및 기호성)

  • In this study, the physicochemical and sensory characteristics of chicken press ham not fed with citrus byproduct (T0) and fed with citrus byproduct (T1) were compared. There was not a significant difference in moisture, crude protein, crude fat, crude ash, crude fiber, Hunter's $L^*$ (lightness), $a^*$ (redness), $b^*$ (yellowness), hardness, springiness, cohesiveness, gumminess, chewiness, shear force, water holding capacity and pH between T0 and T1. There was not a significant difference between T0 and T1 in terms of the chicken ham's VBN (volatile basic nitrogen) content for the first three weeks of storage, but after the fourth week of storage, the VBN content was 15.1 and 13.7 mg% for T0 and T1, respectively, which implies that feeding citrus byproduct significantly reduced the VBN content. There was not a significant difference between T0 and T1 in terms of the chicken press ham's TBARS (2-thiobarbituric acid reactive substances) value for the first two weeks of storage. However, the TBARS value was 0.31 and 0.22 mg malonaldehyde/kg for T0 and T1 during the third week of storage, and 0.49 and 0.32 mg malonaldehyde/kg for T0 and T1 during the fourth week of storage. There was not a significant difference between T0 and T1 in terms of the chicken press ham's TPC (total plate counts) for the first three weeks of storage, but after the fourth week of storage, the TPC was 4.96 and 4.72 log CFU/g for T0 and T1, respectively, which implies that T1 showed a significantly lower TPC than T0. T1 showed significantly higher aroma, taste, and palatability of the chicken press ham than T0, but there was a not significant difference in texture and juiciness between T0 and T1.

Effects of Dietary Supplementation of Yacon(Polymnia sonchifolia) By-products and Pine Needle Powder on Growth Performance and Meat Quality of Chicken Thigh Meat (야콘 부산물과 솔잎 분말을 사료에 첨가 급여한 육계의 생산성 및 닭 다리육의 품질에 미치는 영향)

  • This study was investigated the effects of dietary supplementation of Yacon by-products and pine needle powder on growth performance, carcass characteristics, pH, TBARS (thiobarbituric acid reactive substance), WHC (water holding capacity), shear force, and meat color of chicken thigh meat. Broiler chicks were fed diets for five weeks containing 0% Yacon by-products and pine needle powder (Control), 0.5% Yacon by-products powder (T1), 1.0% Yacon by-products powder (T2), 0.5% pine needle powder (T3), and 1.0% pine needle powder (T4). There was no significant difference in growth performance among treatments, but mortality was decreased in diets by the supplementation of Yacon by-products and pine needle powder than that of control. The chicken fed control diet had higher cholesterol. LDL-cholesterol. triglyceride compared to those chicken fed Yacon by-products and pine needle powder regardless of concentrations, and HDL-cholesterol of control was lower than treatment. The pH and TBARS were significantly decreased by the supplementation of Yacon by-products and pine needle powder compared to the control (P<0.05), especially, pine needle powder group was significantly more effective in improving freshness compared to other test groups (P<0.05). The WHC and shear force were not significantly different. CIE $L^*$ and $a^*$ value of test groups showed significantly higher value compare to the control, however, no difference in the CIE $b^*$ values was observed among test groups. In conclusion, a supplementation of Yacon by-products and pine needle powder were effective in decreasing pH, TBARS, total cholesterol and LDL-cholesterol and increasing HDL-cholesterol concentration. Pine needle powder supplementation was most effective (T3 and T4).

  • Processing conditions of retort pouched fried mackerel fish meat paste and quality stability during storage were investigated. The reasonable amounts of added ingredients to the frozen mackerel meat paste were $10\%$ of corn starch, $1\%$ of soybean protein, $1.5\%$ of sodium chloride, $0.6\%$ of monosodium glutamate, $0.3\%$ of alcoholic extract of red pepper, and $0.1\%$ of sodium erythorbate as an antioxidant and also added water corresponding to $10\%$ of the frozen mackerel meat paste. After grinding the defrosted mackerel fish meat paste with ingredients, the meat paste was molded in bar type and fried in soybean oil at $170-180^{\circ}C$ for 3 minutes. The fried mackerel meat paste was cooled, vacuum-packed in laminated plastic film bag (polyester/polyvinylidene chloride/unoriented polypropylene : $12{\mu}m/15{\mu}/50{\mu}m,\;14{\times}19cm$) and finally sterilized at $120^{\circ}C$ for 20 minutes in a hot water circulating retort. The pH, volatile basic nitrogen, moisture content, water activity, color, thiobarbituric acid value, peroxide value, texture and viable bacterial count of products were examined during 100 days of storage at $25{\pm}3^{\circ}C\;and\;5^{\circ}C$. The results showed that products could be preserved in good condition for 100 days at $25{\pm}3^{\circ}C$. Judging from sensory evaluation, the quality of products was not inferior to that of market products.
