A Study on Health Conditions and Nutritional Status of Elderly Women in Gyeongnam (경남 일부 지역 여자 노인의 건강 및 영양 상태 조사)

  • This study was performed to assess the nutritional status of low income elderly women aged ${\geq}$65 years residing in Gyeongnam Masan (n=124). Nutrition intakes, food intake frequency, and health-related behaviors including smoking, drinking, and exercise were investigated. Nutrition intake was calculated by the 24-hour recall method using CAN-pro (ver. 3.0). Average daily intakes of energy were $1,142.3{\pm}39$ kcal (71.4% of EER) in subjects aged 65~74 years and $1,071.0{\pm}41.7$ kcal (66.9% of EER) in subjects aged ${\geq}$75 years and the subjects consumed energy less than both 75% of estimated energy requirement (EER). The proportions of energy derived from protein, fat, and carbohydrate were 15.4:15.5:70.6 (aged 65~74 years), and 15.3:13.4:70.8 (aged ${\geq}$75). Nutrients consumed at less than estimated average requirements (EARs) were Ca (60.4%), P (98.4%), Zn (91%), vitamin E (48% of adequate intake, AI), vitamin $B_1$ (63.3%), vitamin $B_2$ (54%), niacin (87.7%), vitamin C (62.5%), and folate (50.5%). Especially, the intakes of Ca (58%), vitamin E (41% of AI), vitamin $B_1$ (60%), vitamin $B_2$ (50%), folate (46.5%), and vitamin C (54%) were 75% less than the EAR for people aged ${\geq}$75 years. According to the food intake frequency survey, the intakes of calcium, milk, fruits, and vegetables were very poor. In conclusion, this study suggests that a nutritional support program for elderly women of low socioeconomic class must be provided by the government to improve the quality of remaining life.

A morphological reexamination on the genus Adonis L. sensu lato (Ranunculaceae) in Korea (한국산 복수초속(미나리아재비과)의 형태분류학적 재검토)

  • The morphology of plants and scanning electro-microscopical features of fruits were examined to evaluate the taxonomic entities of Korean Adonis L. in sensu lato (Ranunculaceae). The species of Korean Adonis were readily diagnosed by the branching pattern of stem, the number of flowers, the bifurcation of leaf main axis, the number of tepals, the flowering periods in relation to leaf sprouting, and the number of stomata and the texture of fruit surface. This study demonstrates that there are three species, A. amurensis, A. pseudoamurensis, and A. multiflora., found in Korea. However, A. ramosa, which has been often claimed to be distributed in Korea, is not present in Korea.

The Factors Associated with Dietary Knowledge and Educational Needs of Stroke Patients (뇌졸중 환자의 식이지식 및 식이교육 요구도 관련 요인)

  • Purpose: The purpose of the this study was to examine the dietary knowledge and educational needs of stroke patients and analyze the related factors that are associated with dietary knowledge and educational needs. Methods: Our study analyzed data from 146 stroke patients. The survey was conducted by individual interviews using questionnaires and data collected from participants' medical records. Dietary knowledge and educational needs were measured by tools developed by the author. Results: The mean scores for the dietary knowledge and educational needs were 19.09±3.48 and 36.17±7.18, respectively. Many stroke patients had misconceptions about soy sauce, cholesterol, and fruits. The most needed items in dietary education was first identifying foods that are beneficial or harmful, and second, food interaction with medications. As for the results of multiple regressions, dietary knowledge was significantly associated with gender, educational attainment, monthly income, exercise, body mass index, and level of compliance to dietary therapy. Additionally, the educational needs were significantly related with educational attainment and employment. Conclusion: For secondary prevention of stroke patients, education strategy considering dietary knowledge and educational needs of stroke patients should be established. Special attention is needed for stroke patients with a lower level of dietary knowledge and educational needs.

The Systematic Study on Reduction of Food Waste Products(I) -Survey on Waste Rates of Frequently Consumed Korean Foods and Effect of Education on Kitchen Wastes of Institutional Foodservices - (음식물 쓰레기를 줄이기 위한 체계화 연구(I) -상용식품의 폐기율 조사와 급식소의 유형별 음식물 쓰레기량과 교육에 의한 개선효과-)

  • This research was conducted to estimate waste rates of 69 food items after pre-preparation and amounts of food wastes disposed and it's reduction effect by education in some institutional foodservices for reduction of the food wastes. The result are as follows: 1. The waste rates were 55.40% for sweet corn, 5.73% for potatoes, 19.14% for sweet potatoes, and 33.47% for chestnuts. 2. The waste rates of fruits were 0.21-49.36%. Food items with over 40% waste rate were banana, watermelon, and pineapple. 3. The waste rates of vegetables were 1.14-52.90%. The number of foods with under 10% waste rate were 14 items(red pepper, green pepper, chard, and so on), 10-20% was 9 items(perilla leaf, chinese cabbage, ginger root, and so on), 20-30% was 5 items(root of chinese bellflower, garlic, radish-leaves, burdock, welsh onion-large type), 30-40% was 3 items(shepherd's purse, head lettuce, kale) and over 40% was 3 items(water dropwort, crown daisy, mallow). 4. The waste rates were 24.30% in chicken, 9.53-13.79% in eggs, and 9.30-55.32% in fishes. The waste rates of vegetables and fishes were higher than those of other food groups. 5. There were significantly different in amount of food wastes disposed (g/person/day) to institutional foodservices (hospital>industrial institution> Korean restaurant>elementary school). The amount of food wastes disposed, especially amount in pre-preparation phase, after education for reduction of food wastes was significantly reduced. Since these study results show significant deviations in food waste rates and education effect, there should be more studies for standard waste rates of each food and systematic education method for reduction of food wastes.

The Difference of Perception about Nutritional Problems and Food intakes, Nutrition Knowledge Score and Realities of Nutrition Education between Parents and Preschool Teachers (유아교육기관 교사와 학부모의 유아의 영양문제 및 식품섭취에 대한 인식, 영양지식 및 영양교육에 관한 차이)

  • This study was conducted to investigate the difference of perception about nutritional problems and food intakes and nutrition knowledge score and realities of nutrition education between parents and preschool teachers. This research can be summarized as follows: there was the statistical difference of perception (${\chi}^2$= 52.451, p = 0.000) about nutritional problem of preschoolers between parents and preschool teachers. Parents (56.4%) and teachers (58.5%) identified eating only what they want as the most common nutritional problem of children, but they had different perception about the other problems. To parents, "No nutritional problem" (16.3%) is the second and "Overindulgence of processed food" (11.1%) is the third problem of preschoolers. To teachers, "Overindulgence of processed food" (23.8%) is the second and "Obesity" (14.3%) is the third problem. The perception on food intakes of preschoolers was statistically different in meats (${\chi}^2$= 8.892, p = 0.030), fish (${\chi}^2$= 32.241, p = 0.000), beans (${\chi}^2$= 14.770, p = 0.005), vegetables (${\chi}^2$= 12.706, p = 0.013), fruits (${\chi}^2$= 14.438, p = 0.006) and milk & dairy products (${\chi}^2$= 28.591, p = 0.000) between parents and preschool teachers. However, nutritional knowledge was not different between parents and preschool teachers. While 96.6% of preschool teachers felt that it was necessary to educate preschoolers, only 41.5% of them said that they fulfilled nutrition education, showing that nutrition education was not adequately carried out on the spot. Therefore providing basic materials through which nutritional management guidance and proper nutrition education for preschoolers can be carried out by investigating and analyzing knowledge on their nutrition and meal guidance activities for preschooler teachers and parents.

Antibacterial and Antioxidant Effect of Botanical Antimicrobial Agent-Citrus product on Pollack or Ascidian Fishmeat (식물성 천연항균처리에 의한 저장 명태와 우렁쉥이 어육제품의 항균 및 항산화효과)

  • The antibiotic and antioxidant effect of botanical antimicrobial agent-citrus product(BAAC) prepared from citrus fruits were investigated by using fishmeats made from pollack and ascidian fillet. We inoculated Salmonella typhi into fishmeats that were aferwards treated with BAAC varying the concentration level (50-500ppm) including the control not-treated with BAAC. While specimens were stored at 5$^{\circ}C$ for designated period, we measured changes of total number of bacteria, peroxide level and textural properties. In addition, we performed organoleptic examination, focusing on appearance, texture and odor for fishmeats treated with BAAC and stored for designated period. For pollack and ascidian fishmeats, the initial total number of bacteria were 3.7${\times}$l0$^4$CFU/g and 7.5${\times}$l0$^4$CFU/g, respectively. After they were treated with 250 ppm of BAAC solution and stored for 5 days at 5$^{\circ}C$, the figures reduced to 2.5${\times}$l0CFU/g and 8.4${\times}$10CFU/g. No bacteria were found in fishmeats treated with above 500 ppm of BAAC, which remarkably proved antibiotic effect of BAAC solution. Furthermore, all the BAAC-treated specimens exhibited notable antioxidant effect. Fishmeats which were previously treated with 500 ppm of BAAC solution and stored for 30 days at 5$^{\circ}C$, showed the lower peroxide level of 16.5 meq/kg than 68.9 meq/kg in the control of pollack and 21.2 meq/kg than 80.7 meq/kg in the control of ascidian. In the results of texture and organoleptic evaluation we could also observe good effects of BAAC on maintaining the freshness of fisher products.

Relationship between Dietary Behaviors and Life Stress of Middle School Students in Gyeonggi Area (경기지역 일부 중학생의 식행동과 생활스트레스와의 관계)

  • Objectives: The study was performed to examine the dietary behaviors and life stress of middle school students in the Gyeonggi area. Methods: A total of 580 middle school students (295 males, 285 females) in the Gyeonggi area participated in the study between July and August in 2011. The study was a questionnaire-based survey that included dietary habits, dietary behaviors, and life stress. Results: For dietary habits, the score for drinking milk was higher in male students than in female students, whereas the score for eating fruits was higher in female students compared to male students. There were significant differences in foods eaten and preferred under stress between male and female students. Male students showed significantly less changes in the number of meals, amount of meal intake, number of snacks, snack intake, frequency of overeating, and appetite during stress than female students. Life stress score of students largely came from academic factors, and female students showed higher stress levels in personal and surrounding environment factors than male students. Life stress score was significantly lower in students with high and moderate levels of dietary habits than in students with a low level of dietary habits. Total score for dietary habits and scores for eating adequate amounts of foods for each meal, considering a combination of food groups at each meal and eating green and orange vegetables, were significantly negatively correlated with life stress score. Life stress score was significantly negatively correlated with meal regularity and positively with the level of overeating. Conclusions: This study may provide basic information on dietary habits and life stress according to gender and the relationship between dietary behaviors and life stress of middle school students, and it suggests gender-based nutrition education programs to solve undesirable dietary habits and dietary behaviors in students with higher stress.

Annual Occurrence and Bionomics of the Pumpkin Fruit Fly[Bactrocera (paradacus) depressa Shiraki] (호박과실파리 [Bactrocera (paradacus) depressa (Shiraki)]의 년중소장과 생물에 관한 연구)

  • The pumpkin fruit fly [Bactrocera (paradacus) depressa Shiraki] was first trapped on June 1st with ground and Mcphail traps in Jinan and Iksan drea, Chonbuk Province and was found to have single generation during the grow-ing season in 2002. Not much difference existed in the number of B. (paradacus) depressa flies attracted to various colors but Bactrocera (zugodacus) scurellatus Hendal came to yellow and green more than to blue color. In a study of the effect of diets on the degree of attraction by the flies, it turned out that B. (paradacus) depressa came more to yeast hydrolysate (YH) and in June i.e, the early period of adult emergence of the year. However, more individuals of B. (zugodacus) scutellatus are attracted to the extract of young pumpkin fruits. More B. (paradacus) depressa was caught with McPhail traps while more B. (zugodacus) scurellatus was caught with sticky traps and accordingly, species specific traps are recommended when yearly population trends of fruit flies are studied.

An Infection Model of Apple White Rot Based on Conidial Germination and Appressorium Formation of Botryosphaeria dothidea

  • Regression models for determining infection periods of apple white rot were developed based on conidial germination and appressorium formation of Botryosphaeria dothidea. A total of 120 apple fruits were inoculated with the fungal conidial suspension and subjected to 6 temperatures and 10 wetness periods. Conidia germinated and produced appressoria, exhibiting swollen tips of germ tubes on the fruit surface. Conidial germination (G) increased with temperature (T) and wetness period (W), and was described as $G=-89.273+7.649T+7.056W-0.109T^{2}-0.085W^{2}-0.066TW(R^{2}=0.75)$. Less than 2 hr of wetness period were enough for conidia to germinate at 25 to $30^{\circ}C$. Effects of temperature and wetness period on appressorium formation (A) could be explained as $A=-1.540-2.375W+0.045W^{2}+0.213TW(R^{2}=0.77)$. The relationship between conidial germination and appressorium formation ($A_g$) was described as$A_g=0.381-0.227G+0.005G^{2}(R^{2}=0.67)$, suggesting that conidial germination may have to reach approximately $43.7\%$ to initiate appressorium formation. Using the regression equation for conidial germination and the criterion of $43.7\%$ conidial germination, an infection model was developed to determine infection periods based on temperature and wetness period. The infection model with the criterion of $43.7\%$ conidial germination was apparently more conservative than the appressorium formation model in determining possibility of apple infection. The infection model seemed sensitive to variable weather conditions, suggesting possible use of the model for timing fungicide sprays to control white rot of apples in practice.

Protective Effect of Ursolic Acid from Corni fructus on the Hydrogen Peroxide-induced Damage of HEI-OC1 Auditory Cells (산수유로부터 추출한 ursolic acid가 과산화수소로 손상된 HEI-OC1 청각세포보호에 미치는 영향)

  • The fruits of Cornus officinalis have been used in traditional Oriental medicine for treatment of inner ear diseases, such as tinnitus and hearing loss. In the present study, we showed that the ursolic acid obtained from Corni fructus protected HEI-OC1 auditory cells from hydrogen peroxide cytotoxicity in a dose-dependent fashion. In addition, to investigate the protection mechanism of ursolic acid on hydrogen peroxide cytotoxicity toward HEI-OC1, we measured the effects of ursolic acid on lipid peroxidation and activities of superoxide dismutase (SOD), catalase (CAT), and glutathione peroxidase (GPX) in hydrogen peroxide treated cells. Ursolic acid (0.05 - 2 ${\mu}g/ml$) had protective effect against the hydrogen peroxide-induced HEI-OC1 cell damage and reduced lipid peroxidation in a dose-dependent manner. Pre-treatment with ursolic acid significantly attenuated the decrease in activities of CAT and GPX, but SOD activity was not affected by the ursolic acid or hydrogen peroxide. These results indicate that ursolic acid protects hydrogen peroxide-induced HEI-OC1 cell damage through inhibition of lipid peroxidation and induce the antioxidant enzymes CAT and GPX.
