BACKGROUND/OBJECTIVES: Given that adolescents watch Mukbang (eating broadcast) more frequently than other age groups, interest in the potential health effects of watching Mukbang and Cookbang (cooking broadcast) is growing. This study aimed to determine the status of watching Mukbang and Cookbang among Korean adolescents and its relationship with their dietary behaviors. SUBJECTS/METHODS: We used data from the 18th Korea Youth Risk Behavior Survey, conducted in 2022 (n = 51,850). The study included the frequency of watching Mukbang and Cookbang and the self-rated impact of watching them. Dietary behaviors included consumption of the following items: fruits (≥ once a day), vegetables (≥ 3 times a day), fast foods (≥ 3 times a week), late-night snacks (≥ 3 times a week), caffeinated drinks (≥ 3 times a week), and sweet-flavored drinks (≥ 3 times a week). Furthermore, obesity, weight loss attempts during the past 30 days, body image distortion, and inappropriate methods to control weight were also included. RESULTS: Among adolescents, 70.6% watched Mukbang and Cookbang, and 13.2% watched them more than 5 times a week. Approximately 27.6% of the adolescents responded that they were influenced by watching Mukbang and Cookbang. Adolescents who frequently watched Mukbang and Cookbang consumed less vegetable and fruit; however, the likelihood of consuming fast food, late-night snacks, sugary drinks, and caffeinated drinks increased. In addition, they were more likely to attempt inappropriate weight-loss methods and become obese. Adolescents who responded that their eating habits were influenced by watching Mukbang and Cookbang were more likely to have unhealthy eating behavior compared to the group who responded that their habits were not influenced by these shows. CONCLUSION: Watching Mukbang and Cookbang is common among Korean adolescents and is associated with unhealthy dietary behaviors. Prospective studies, including broadcasting content, should evaluate the impact of Mukbang and Cookbang on health.

The aim of this study was to determine the association between, smoking, exercise, sex, and dietary carotenoids ($\alpha$-carotene, $\beta$-carotene, $\beta$-cryptoxanthin, lutein + zeaxanthin, lycopne) intake in Korean middle-aged adults. Food-frequency questionnaire were analyzed from 304 healthy adults (115 men, 189 women) aged 20 - 59. The self-administered questionnaire contained subject s habitual diet and alcohol intake were the previous 3 months. Data on frequency of 102 foods, including vegetables, fruits, beverages and legumes were analyzed. Total dietary carotenoids intake were 27.13 $\pm$ 3.09 mg/d for men and 26.71$\pm$ 2.82 mg/d for women. It was found that smoking had no significant contribution to the dietary intake of carotenoids. Among other lifestyle factors that had significant correlation was the amount of exercise time. The increases in exercise time was associated with increase in carotenoids intake (r= 0.121, p : 0.04). The major contributors of $\alpha$-carotene and $\beta$-carotene were carrots consumed as single-food item or carrot juice. Lutein and Zeaxanthin intake mainly came from spinach and most lycopene intake was derived from tomato products not fresh tomatoes. Persimmon was the major contributor of $\beta$-cryptoxanthin. These findings provide valuable information on understanding the unique pattern of dietary intake of Korean, which might help identify the risks for developing various diseases.

Excessive presence of heavy metals in environment affects plants and fruits grown in the contaminated area. Rapid on-site monitoring of heavy metals can provide useful information for efficiently characterizing heavy metal-contaminated sites and for minimizing the exposure of the contaminated food crops to humans. This study reports on the evaluation of gold and glassy carbon (GC) electrodes with mercury or bismuth as a coating material for simultaneous determination of cadmium (Cd) and lead (Pb) in 0.1 M $HNO_3$ solution by anodic stripping voltammetry (ASV). The use of a square-wave voltammetric potential between a working electrode and a reference electrode caused Cd and Pb ions deposited on the electrode surface to be oxidized, thereby generating electric currents at different potentials. The mercury-coated gold electrode was not sensitive enough to detect the usable range of Cd concentrations (1 to 100 ppb). The GC electrodes with mercury or bismuth displayed well-defined, sharp and separate current peaks for Cd and Pb ions when the square-wave voltammetric potentials were applied. The peak currents measured with both mercury- and bismuth- coated GC electrodes were linearly proportional to Cd and Pb concentrations in the range of 1 to 200 ppb in 0.1 M $HNO_3$ with strong linear relationships between concentration and peak current ($R^2$ > 0.95), indicating that both of Cd and Pb ions could be quantitatively measured.
This study was conducted to evaluate the effects of Ligustrum lucidum (LL) on growth performance, antioxidation, and meat quality in broilers. 270 birds (1 d old) were allotted to 3 treatments with 6 replicates per treatment. The feeding program included a starter diet from d 1 to 21 of age and a grower diet from d 22 to 42 of age. The birds were given a basal corn-soybean meal diet supplemented with 0 (the control), 5 or 10 g of LL/kg, respectively. The results showed that in the starter, grower and overall phase, broilers fed with 5 or 10 g of LL/kg had better (p<0.01) average daily gain, but there were no differences in feed: gain between treatments. In the starter and overall phase, average daily feed intake of LL groups was greater (p<0.05) than that of the control, but this difference was not observed in the grower phase. Supplementation of LL significantly increased (p<0.05) superoxide dismutase activity and total antioxidant capability in serum of chickens. In breast muscle, birds fed 5 g of LL/kg had an increase (p<0.05) in superoxide dismutase activity. The LL supplementation significantly decreased (p<0.05) malondialdehyde contents. Adding 5 or 10 g of LL/kg to the diet significantly increased pH value and reduced drip loss of meat (p<0.05). The results of this study indicated that dietary LL could improve growth performance, increase pH value and reduce drip loss of meat by decreasing lipid peroxidation and by improving antioxidative status in broilers.

Mucormycosis is an acute opportunistic infection caused by a saprophytic fungus found in soil, decaying fruits and vegetables. Numerous predisposing risk factors are associated with mucormycosis, although most cases have been reported in poorly controlled diabetics or in patients with hematologic malignant conditions. Throughout the history of mucormycosis, from the first case in humans reported in 1885 by Paltauf, through publication by Gregory et al of the first observation of rhino-orbital cerebral mucormycosis in 1943, to the report by Harris in 1955 of the first known survivor, little has changed in the diagnosis and outcome of this disease. Without treatment, the patient may die after an interval ranging from a few days to a few weeks. Regulation of diabetes mellitus and a decrease in the dose of immunosuppressive drugs facilitate the treatment of Mucormycosis. Extensive debridement of craniofacial lesions appears to be very important. intravenous amphotericin B is clearly of value. This is a case report of a patient with mucormycosis in maxilla. He was an uncontrolled DM patient, and for the treatment of intravenous amphotericin B and sequestrectomy were applied.

This study reports on the evaluation of a bismuth-coated glassy carbon electrode for simultaneous determination of cadmium (Cd) and lead (Pb) in a NIST-SRM 1568a rice flour by anodic stripping voltammetry (ASV). The use of a supporting electrolyte 0.1 M $HNO_3$ at a dilution ratio (sample pretreated with acid digestion in a microwave oven: supporting electrolyte) of 1:1 provided well-defined, sharp and separate peaks for Cd and Pb ions, thereby resulting in strongly linear relationships between Cd and Pb concentrations and peak currents measured with the electrode ($R^2\;=\;0.97$, 0.99 for Cd and Pb, respectively). The validation test results for spiked standard solutions with different concentrations of Cd and Pb gave acceptable predictability for both spiked Cd and Pb ions with mean prediction errors of 6 to 30%. However, the applicability of the electrode to the real rice flour sample was limited by the fact that Cd concentrations spiked in the rice flour sample were overly estimated with relatively high variations even though Pb ion could be quantitatively measured with the electrode.

A brief general discussion of the nature and function of biosensors is presented. While the primary motivator for biosensor development has been the health-care industries, recent research efforts have spread to problems in agriculture and biological production systems. To illustrate some of the research from our laboratory, three example biosensors and their corresponding applications are presented. The first of these is an immunosensor for measurement of the hormone progesterone during milking as a method to improve reproductive management of dairy herds. The second example is an enzyme sensor for measurement of urea in milk as a menas to determine the efficiency of conversion of input protein to milk protein and, thus, improve nutritional management of dairy herds. The third example is a DNA sensor using polymerase chain reaction to detect pathogenic bacteria in the wash water of fresh and minimally processed fruits and vegetables. The potential for application of biosensors in agriculture, agrobiotechnology, food processing, and environmental monitoring has barely been realized.
Jatropha curcas L. (Physic nut) is a commercially important non-edible oil seed crop known for its use as an alternate source of biodiesel. In order to investigate the morphogenic potential of immature embryo, explants from four developmental stages were cultured on medium supplemented with combinations of auxins and cytokinins. It was found that the size of embryo is critical for the establishment of callus. Immature embryos (1.1-1.5 cm) obtained from the fruits 6 weeks after pollination showed a good response of morphogenic callus induction (85.7%) and subsequent plant regeneration (70%) with the maximum number of plantlets (4.7/explant) on Murashige and Skoog's (MS) medium supplemented with IBA (0.5 $mg\;l^{-1}$) and BA (1.0 $mg\;l^{-1}$). The above medium when supplemented with growth adjuvants such as 100 $mg\;l^{-1}$ casein hydrolysate + 200 $mg\;l^{-1}$ L-glutamine + 8.0 $mg\;l^{-1}$$CuSO_4$ resulted in an even higher frequency of callus induction (100%). Plant regeneration (90%) with the maximum number of plantlets (10/explant) was achieved on MS medium supplemented with 500 $mg\;l^{-1}$ polyvinyl pyrrolidone + 30 $mg\;l^{-1}$ citric acid + 1 $mg\;l^{-1}$ BA + 0.5 $mg\;l^{-1}$ Kn + 0.25 $mg\;l^{-1}$ IBA. It was observed that plantlet regeneration could occur either through organogenesis of morphogenic callus or via multiplication of pre-existing meristem in immature embryos. The age of immature embryos and addition of a combination of growth adjuvants to the culture medium appear to be critical for obtaining high regeneration rates. Well-developed shoots rooted on half-halfstrength MS medium supplemented with 0.5 $mg\;l^{-1}$ IBA and 342 $mg\;l^{-1}$ trehalose. The rooted plants after acclimatization were successfully transferred to the field in different agro-climatic zones in India. This protocol has been successfully evaluated on five elite lines of J. curcas.
The iron contents in the foodstuffs used for treatment of anemia as dietary treatments in Part Tang-Aik(湯液編) of Tong-Eui-Bo-Gam, (which was treatments of herb medicine. in Royal family) are studied on the purpose of comparing these Korean traditional and oriental herb medicine with modern nutrition and medicine, focusing especially upon the scientific values residing in them. The iron contents in grains, reptilla, feathered tribes, mammals, and fruits advised good for anemia in Tong-Eui-Bo-Gam are in average per 100g weight base, 8.6, 5.0, 6.5, 3.4, and 2.12 mg each respectively, while in thoes not advised good for anemia in the same part, the iron contents are 2.34, 2.63, 1.4, 2.21 and 0.97mg each respectively. To compare these two groups, in the foodstuffs advised good for anemia in Korean traditional herb medicine represented in Tong-Eui-Bo-Gam, the iron contents are much higher than in those not advised groups. However, in classes of vegetables and fishes, the iron contents are reversed. In conclusion, it is very difficult to say that all the dietary treatments advised in Korean traditional herb medicine are scientific in modern medical view point, however, it has some value doubtlessly to research Korean traditional herb medicine in modern aspect. Furthermore, in this study, Korean traditional medicine, arguing being built upon thousands years of experiences has been found .to have some scientific bases such as high iron contents in food stuffs advised good for anemia represented in Tong-Eui-Bo-Gam.

The purpose of this study was to investigate night-time eating habits, and dietary habit and nutrient intake of university students in a particular area of Chungnam. We surveyed night-time eating status, frequency, and preference for eating foods at night in 458 university students. We divided the subjects into two groups according to their night-time eating habits and gender and compared dietary behavior, lifestyle, and nutrient intake between the groups. In total, 77.1% of the students ate a night-time snack. The major reason why they ate a night-time snack was hunger. The cost of the night-time snacks was 3,000~10,000 won and they ate mostly with their friends. The order of frequent night-time eating foods was beverage, milk and its products, snacks, flour foods, and fruits. The subjects with a night-time eating habit skipped breakfast, went to bed late, and drank alcohol more than subjects without a night-time eating habit. Total and animal fat intake of subjects with a night-time eating habit in both men and women were significantly higher than subjects without a night-time eating habit. In conclusion, night-time eating by university students may be a bad habit from the viewpoint of skipping breakfast, drinking alcohol, and eating a high fat diet. Therefore, in support of proper dietary management, it is necessary to form positive dietary habits, including night-time eating.
