The purpose of this study was to measure patients satisfaction and expectation with hospital foodservices, and thereby identify areas for improvement and provide basic data for the introduction of total quality management with hospital foodservices. This survey was carried out on 383 hospitalized patients of 7 hospitals in Deagu, Busan, Changwon with 350 beds to determine the quality satisfaction with foodservices. The subjects were 50.5% male and 49.5% female. 62.6% of the subjects were over 40 age, 31.4% were only educated to middle school or below, 28.3% were hospitalized for 7-14 days. The mean score for taste of diet was 2.79, temperature 3.23, appearances 2.96. Most subjects agreed with following foodservice characteristics that meals of movement (4.03), dress of employees (3.84), kindness of employees and meals arrived exactly the same time every day (3.47) and cleanliness of foods (3.34) and dishes (3.33). The unsatisfied quality attributies were information provide (2.82), variety of the meals (2.91), mixing of meals (2.95), the opportunity to meet with a dietitian (2.97) and prompt dealings with meal complaints (3.01). Most subjects expectation that the decrease the multiple of menus, increase provide of fruits in hospital meals and selective menus in hospital foodservices operations. In conclusion, it would seem to be desirable that hospital foodservices departments introduce selective menus, quality assurance, and increase the meal rounding of dietitians in the patient foodservice.
This study was conducted to examine the usefulness of adding final probing step (step3) in dietary assessment by 24-hour recall method among Korean adults. One-hundred fifty five adults (37 males and 118 females) above 30 years of age who visited hospitals for health examination were recruited at three hospitals in Korea. One day dietary intake was obtained using 24-hour recall method from each subject. Dietary interview was conducted in 3 steps, (1) quick list of foods eaten during the previous day, (2) detailed information of all the foods eaten, (3) the final probing for any items forgotten. Items added at the step3 were identified and contributions of energy and nutrient intakes were calculated. The average duration of interview was 10.5 min, and time spent for each step was 4.12 minute for step 1, 5.62 minute for step 2, and 38 second for step 3. The average number of dishes reported by the subjects added at the step 3 was 2.2. (Males = 2.6, Females = 1.6) Frequently reported dishes in the step 3 were Beverage, Tea, alcohol (37.1%) and Fruits (31.8%). From mean total energy intake of 1,589 kcal (Men = 1,846 kcal, Women = 1,509 kcal), 179 kcal (11.3%) was added at the step 3. In the step 3, nutrient intakes increased significantly except retinol in total subjects and except retinol and cholesterol in males but all nutrients increased significantly in females. The final probing step can add significant information on intakes of foods and many nutrients with only about 38 seconds of interview time. Confirmation of the results with larger samples of different age groups is needed.
This study was carried out to investigate the preference for traditional food of university students through the analysis of their daily meal types. Questionnaires were collected from a total of 197 students from December 2007 to February 2008 in Chungnam Province. The results are as follows; 148 of the respondents (73.0%) prefer Korean traditional meal as their favorite food. The significant differences are found in both gender groups and major groups (p<.05). 178 of the respondents (90.4%) answered that the traditional foods are excellent and good. However, the foods were significantly (p<.05) evaluated that major students consider them to be 'excellent' foods, while non-major students consider them to be 'good' foods. 136 of respondents (69.0%) answered that the traditional foods have beneficial influences on their health. In the survey on intake frequency of traditional meals, 137 of respondents (65.9%) have traditional foods more than twice a day. The ratio of traditional meal intake of male students is a significantly higher level (p<.05) than that of female students. Their preference for traditional rice cake, fermented rice punch, and juice mixed with fruits is a very high level of the average of 4.19, 4.22 and 4.34, respectively. The preference for Kimchi, Bulgoki, boiled beef slices, sundae and jelly was a relatively high level of the average of 4.43, 4.65, 4.14, 4.30, and 4.05, respectively. Concludingly, the research shows the majority of students enjoy korean traditional food and expect Korean food as favorite food to be developed and to be inherited.
Several studies have been conducted on dietary patterns based on carbohydrate nutrition in Asian populations. We examined the cross-sectional associations in dietary patterns based on carbohydrate nutrition, including the glycemic index (GI) with dyslipidemia and diabetes among the Korean adult population. We analyzed 9,725 subjects (3,795 men and 5,930 women, ${\geq}$ 20 years) from the Fourth Korea National Health and Nutrition Examination Survey. Dietary information was collected using single 24-hour recall. Reduced rank regression was used to derive dietary patterns from 22 food groups as predictor variables and four dietary factors related to the quantity and quality of carbohydrates as response variables. Two dietary patterns were identified: 1) the balanced pattern was characterized by high intake of various kinds of foods including white rice, and 2) the rice-oriented pattern was characterized by a high intake of white rice but low intake of vegetables, fruits, meat, and dairy products. Both patterns had considerable amounts of total carbohydrate, but GI values differed. The rice-oriented pattern was positively associated with hypertriglyceridemia in men and low high density lipoprotein-cholesterol in both men and women. The balanced pattern had no overall significant association with the prevalence of dyslipidemia or diabetes, however, men with energy intake above the median showed a reduced prevalence of diabetes across quintiles of balanced pattern scores. The results show that dietary patterns based on carbohydrate nutrition are associated with prevalence of dyslipidemia and diabetes in the Korean adult population.
The dietary habits and eating behaviors of nonagenarian subjects over 90 years old in Korean representative longevity belts of Damyang, Gokseong, Kurye, Sunchang were evaluated. The subjects of the study were 91 elderly people (26 males and 65 females) over 90 years old and their dietary habits, food preferences and meal patterns were collected by individual interview. The percentage of subjects, who answered 'very good' or 'good' for their health status, was $65.9\%$. In this study, $55\%$ of subjects were without chronic diseases, and there was no significance difference in gender. Many subjects had performed regular exercise and outdoor activity. The rate of eating together with their family was $79.1\%$. Most of subjects ($91.2\%$) had a regular mealtime consuming three meals a day, and they had good appetite and pleasure of eating. The higher preference of food group was fruits ($95.6\%$), legumes ($94.5\%$), mushrooms ($93.4\%$) and vegetables ($92.3\%$), but the amount of intakes is higher in vegetables than the others. Eating with family, regular exercise and self-rated good health are improved their nutrient intakes. Most frequently consumed meal pattern was rice plus soup and side dishes. The side dish consumed frequently was Namul (blanch and seasoned vegetables). From this study, the nonagenarian populations in longevity belt in Korea have good dietary habits such as regular mealtime, constant amount of meal and eat with pleasure. They are taking Korean traditional meal pattern, providing enriched antioxidant vegetable foods. Also, it can be concluded that the amount and quality of diet in the long-lived elderly are responsible for the Korean traditional family system.

Background: For stable induction of tetraploidy in Fallopia multiflora Haraldson, colchicine was treated to establish the condition of induction and investigated the morphological and cytogenetic traits of the tetraploid plants obtained compared to those of diploid ones. Methods and Results: For the induction of tetraploidy, F. multiflora plants were soaked in aqueous solutions of colchicine at various concentration (0.1, 0.5, and 1.0%). After this, 2% dimethyl sulfoxide (DMSO) was added at room temperature on a shaker set at 150 rpm for periods of 12, 24, and 48 h. The induction rate of tetraploids appeared to be the highest in plants treated with 0.5% colchicine for 24 h. As the colchicine concentration and soaking time increased above these levels, the growing tip of the roots did not develop and they began to rot. When compared to diploid plants, tetraploids differed greatly in various characteristics, including the sizes and shapes of the leaves, fruits, flowers and roots. The induced tetraploid F. multiflora had larger guard cells, and chloroplasts, increased number of chloroplast in the guard cells and decreased stomatal densities. Conclusions: When colchicine induced plants for tetraploid, it can be distinguished from diploids, in various characteristics such as morphological changes as stomatal size, number of chloroplasts per guard cell, number of chromosomes and flow cytometry. Therefore, it proved that these methods are suitable, quick and easy methods for the identification of the ploidy level of F. multiflora.
This retrospective study was conducted to investigate the growth of children and their care person's weaning behaviors and its relation between the growth and care person's attitude and behaviors about weaning. 272 subjects who had child under 2 years old at that time were randomly selected and answered the special questionnaire. Results were as follows: Using to Kaup index, 13.4% of children were estimated undernutrition, 60.6% were normal and 26.0% were estimated overnutrition. 97.6% of respondant (children's mother) were recognized the need of weaning and the first prurpose of weaning was supplement of nutrients, and the next one was to set up normal food habits. 39.1% of subjects were used normal adult foods as weaning food. 60.9% of subjects were proepared special foods (making at home or buying commercial weaning food). The socioeconomic status was major factor to influence mother's behaviors about weaning. Vegetable and meat gruel was the most commen weaning food and the next one was fruits puree and rice with soup. The correlationship were found between Kaup index and the score of mother's weaning behaviors, between momer's eductional level and the score of weanig behaviors. 96% of subjects wanted nutritional education about weaning. They wanted to know about desirable weaning process and correct informations of commercial weaning foods mid the convenient cooking methods. According to the difference of socioeconomic status subjects were wanted different eductional methods. Upper socioeconomic group wanted special books about weaning and lower class wanted to be educted through the mass media especially television programs.
Abeliophyllum distichum Nakai (O1eaceae) is a monotype of Korea and is distinguished from related genus Forsythia Vahl by the morphological characters such as fruit shape, flower color and etc. Even though several intraspecific taxa were reported according to the color of flowers and shape of fruits, there have been many controversals on the taxonomic indentity and status of rank on those taxa. In the present study, we performed the RAPD analysis to delimit the infraspecific taxa of Abeliophyllum distichum and to investigate the genetic polymorphism and relationships among 12 populations. 212 scorable RAPD markers with 70 common markers were found from the PCR reactions with 16 random oligoprimers and were analyzed by Nei's genetic distance. From 0.108 to 0.321 of genetic variations were showed among the taxa. Some regional groups instead of same taxa were clustered from the phonogram of UPGMA analysis. Also, we could not find distinct lineage among intraspecific taxa. The result from RAPD analysis supported that the infraspecific taxa of Abeliophyllum distichum might be the individual variations and treated as the same taxa. RAPD analysis was very useful to confirm the high gene pool with diverse genetic polymorphism among Abeliophyllum distichum populations.
This study was designed to assess the perception and use of weaning diets and to serve as a guideline of processed weaning diets through a survey focused on the Gwangju-Jeonnam regions. The following results were obtained. Most subjects mixed 'home-made' and 'commercial' weaning diets and considered weaning diets as 'a diet for supplementing insufficient nutrition'. The most frequently used type of weaning diet was 'a kind of gruel with vegetables or meat', followed by 'boiling powder with water' and 'grinding or crushing fruits'. Two thirds (68%) of subjects had experienced buying weaning diets, mainly a powder type. The most common reason to buy weaning diets was 'troublesome', followed by 'excellent nutrition', 'convenient to go out', and 'don't know how to make'. The following results according to factors were found. The types of provided and of weaning diets were significantly different by age; the understanding of weaning diets, by education and mothers' employment; and where to get information about weaning diets, by economic status. The highest request for developing weaning diets was a type of 'powder' and 'gruel', and the highest cooking type was 'adding boiling water', followed by 'a semi-cooking product' and 'a finished product'. 'Retort pouch' package, a 'single' package unit, and 'keeping cold' were also requested by the participants. A desirable package unit in developing weaning diets was significantly different by mother's employment; the cooking type of product, by economic status; a way to keep product, by mother's employment; and package types, by education and economic status. When weaning diets were made by environmentally friendly agriculture, 69.5% of subjects were willing to purchase them. With the increase in economic status, education, and employment rate, the use of weaning diets on the market will increase. For this reason, correct nutrition education is needed. With the increasing demand for environmentally friendly agriculture, a variety of weaning diets should be developed to meet this demand.
This study was performed to determine the optimal month of harvest between May and July for wild peach (Prunus davidiana) by comparison of functional materials. The general composition, amino acid and vitamin (A, C, and E) content, and antioxidant activity were determined. With respect to the general composition of wild peach according to the month of harvest, wild peach harvested in May (HMP) and July (HJP) contained mostly carbohydrate, the contents of which amounted to 77.37 g/100 g and 77.92 g/100 g, respectively. The total amino acid content of HMP and HJP were 675.29 mg% and 573.25 mg%, respectively. Regarding the vitamin contents, vitamin A (retinol), E (${\alpha}-tocopherol$) and C in HMP were higher than those in HJP. The total polyphenol content of HMP (218.37 mg TAE/g) was higher than that of HJP (71.45 mg TAE/g). The total flavonoid content of HMP (64.95 mg RE/g) was also higher than that of HJP (32.67 mg RE/g). Moreover, the DPPH and ABTS radical scavenging activities ($IC_{50}$) were higher in HMP ($137.18{\mu}g/mL$ and $157.15{\mu}g/mL$) than those in HJP ($160.10 {\mu}g/mL$ and $186.01 {\mu}g/mL$), meaning that the former produces better antioxidant effects. It can be concluded that wild peach harvested in May contained higher functional materials such as vitamins and amino acids and had a higher antioxidant effect, than wild peach harvested in july.
