Evaluation of Diet Quality according to Nutrient Intake between Highly Educated, Married, Unemployed and Employed Women (고학력 기혼여성의 취업여부별 영양소 섭취로 본 식사의 질 평가)

  • This study was conducted to provide foundation data for making health care policy for married women by assessing the dietary intake between highly educated married, employed and unemployed women. It is a direct interview, cross-sectional study with 24-hour recall method for one day. In selecting the subjects for this study, married, unemployed women were selected from a certain area (Daedeok Science Town) in Daejeon where there are high rates of highly educated women, and the married, employed women were selected from the teaching profession in order to avoid confounding due to including a variety of jobs. According to the Korean Standard Classification of Occupations, teaching is the representational occupation of highly educated, married women. Then, to prevent confounding due to age, we selected the subjects out of each age group at the same rate through random sampling. Women who had not graduated college, worked only part-time, or had no current spouse were excluded. As a result, 486 highly-educated, married, unemployed (250) and employed (236) women were used for analyzing data. The unemployed women consumed a higher amount of fat, cholesterol, sodium, vitamin C and folic acid while the employed women consumed a higher amount of iron, vitamin $B_l$ and vitamin $B_2$. P/M/S ratio being 1/1.18/1.05 and 1/1.05/0.87, for the unemployed women and the employed women, respectively, unemployed respondents had a higher saturated fat intake than those of employed. It is in excess of the standard ratio (1/1/1) of the Korean RDA. At the same time, in unemployed respondents the percent of energy intake from fat (24.8%, 23.2%) and animal fat (12.4%, 11.4%) were higher than those of employed respondents. The mean daily nutrient intake of calcium, zinc, and iron for both groups of respondents were lower than the Korean RDA. Both groups had phosphorus as the highest nutrient and calcium as the lowest nutrient of INQ (Index of Nutritional Quality) while nutrients with the INQ being less than 1 were calcium and iron. To sum up, the following conclusions can be made: Nutrition education and guidance for reduction of the intake of fat, especially animal fat, are necessary for unemployed women. In addition, highly educated, married, unemployed and employed women should increase the consumption of foods rich in iron and calcium to prevent anemia and osteoporosis, while decreasing the intake of phosphorus to balance proportions of calcium and phosphorus.

A Comparative Study on Nutrition Knowledge, Eating Behavior and Nutrient Intake for Students at Elementary Schools with and without Nutrition Education Program (영양교육 실시교와 미실시교 초등학생들의 영양지식ㆍ식행동 및 영양소 섭취 상태 비교 연구)

  • This study was conducted to investigate the effect of the nutrition education on the nutrition knowledge, eating behaviour and nutrient intake of the children. Questionnaire and dietary record were executed to 105 children in the 4th and 5th grade in elementary school with nutrition education and 107 in the same grade without nutrition education. The results were as follows; In nutrition aspect, higher acknowledgement and precision level was observed(p<0.001) in the educated group. Higher practice will of nutrition knowledge, lower rate of skipping meal, better appetite were also observed in the educated group. In the aspect of food group intake, meatㆍfishㆍegg, tofu and bean, fruits, milk and milk products intake frequency were higher in the educated group. Most nutrient intake except fat and vitamin B₂ were observed to be higher in the educated group. Therefore, it was concluded that continuous nutrition education was recommended in order to put positive effect on the eating behaviour and nutrient intake of the children.

Effects of Low Glycemic Index Nutrition Education on the Blood Glucose Control in Patients with Type 2 Diabetes Mellitus (제 2형 당뇨 환자의 저혈당지수 영양교육이 혈당관리에 미치는 영향)

  • This study was intended to assess the effects of low glycemic index (LGI) nutrition education on dietary management and glycemic control of patients with type 2 diabetes mellitus. The subjects were 48 sex-matched patients with type 2 diabetes mellitus, aged $66.5\;{\pm}\;6.2$ years, visiting a public health center. They were divided into two groups: the control group (males 10, females 14) and the educated group (males 10, females 14). The educated group was provided with a LGI nutrition education program for 7 weeks. The control group was educated only one time for general diabetic education. Anthropometric indices, knowledge and perception of efficacy of low glycemic index carbohydrates, dietary glycemic index (DGI) and glycemic load (DGL), fasting blood glucose, and HbA1c were assessed. In the educated group body weight, body mass index and systolic blood pressure (from $138.0\;{\pm}\;18.9\;mmHg$ to $130.6\;{\pm}\;15.0\;mmHg$) were significantly reduced after the nutrition education (p < 0.05). The scores of knowledge and perception of efficacy of low glycemic index carbohydrates increased significantly in the educated group. Dietary glycemic index and glycemic load of the educated group decreased significantly from $103.4\;{\pm}\;67.6$ to $45.4\;{\pm}\;27.1$ (p < 0.001), and from $173.3\;{\pm}\;135.9$ to $66.8\;{\pm}\;50.4$ (p < 0.001), respectively. Also fasting blood glucose and HbA1c levels of the educated group significantly decreased from $124.5\;{\pm}\;28.8\;mg/dL$ to $96.7\;{\pm}\;21.6\;mg/dL$ (p < 0.001) and from $7.1\;{\pm}\;1.3%$ to $6.4\;{\pm}\;1.2%$ (p < 0.05), respectively. The score of knowledge and perception of efficacy of low glycemic index significantly correlated with fasting blood glucose and HbA1c levels negatively. DGI, DGL and duration of diabetes significantly correlated with HbA1c level positively. From stepwise multiple linear regression analysis, DGI, DGL and the duration of diabetes were extracted as factors influencing HbA1c level of the subjects. The results of this study suggest that low glycemic index nutrition education programs is an effective intervention measure for the glycemic control in type 2 diabetic patients.

Craftsmanship of Non-Educated Constructors in Korean-Style Secondary Station(Gong-So) of Naepo Region (충남 내포지방의 한옥 공소에 나타난 민간 기술자의 현장기법)

  • This study is aimed to look into the craftsmanship non-educated constructors in Korean-style secondary stations(Gong-So) of Naepo region which is located in the northwestern Chungcheongnam-do. Although the area was persecuted as one of three cradles of Korean Catholicism, Catholic activities flourished there. The 13 cases of Korean-style secondary stations were selected through a survey report list about modern cultural assets of Chungcheongnam-do published in december 2004. This study examined the methods of plan layout and framework of Gong-So to look into craftsmanship of non-educated constructors, the results are as follows; The methods of plan layout are divided into three types according to existence and arrangement of inner column(Nae-Ju); 'Layout with Nae-Ju' is considered as the primary form of Korean-style Gong-So with using regular Nae-Ju. 'Layout with the different position of the center between Nae-Ju and exterior column(Oe-Ju)' and 'layout without Nae-Ju' is appeared in Korean-style Gong-So which is important to assembly and alter function. The methods of framework are appeared variously according to different plan layout for securing worship space. The unusal beam(Chung-Ryang) is used to solve different spans of altar and narthex. When space was formed widely without Nae-Ju, diagonal members and M letter type rafters are used, they are influenced by the technique of western wooden roof truss.

A Phenomenological Study on the Stress Experience of Rural Mothers-in-Law with Highly Educated Foreign-Daughters-in-Law

  • Purpose. The purpose of this study is to understand the stress of rural mothers-in-law by identifying the nature of their stress experiences with highly educated foreign daughters-in-law using phenomenological methods, and to provide basic data on nursing intervention plan. Methods. The method of this study is to first examine the relationship between marriage and marriage of highly educated immigrant women in Philippines, centered on the nuclear family, through literature reviews such as existing media reports, papers, books and reports, and then to analyze by using Colaizzi's phenomenological research methodology. Results. The results of this study were based on interviews with an elderly women who lives in a rural area and accepted a highly educated foreign daughter-in-law 10 years ago. The essential themes that fit into the context of the 4-existential grounds of Making an Inevitable Choice, Augmenting Conflicts, Expecting hope beyond the endless fence, Crisis in Crisis - Still my family Conclusions. Recently, interest in multicultural families and societies is growing, but there is little empirical study of the system for adopting international marriages, especially for rural mothers to live with foreign wives and to intake such cultural interactions.

Comparison of Food Hygiene Knowledge and Performance of Food Major and Nonmajor College Students (식품전공자와 비전공자의 식품위생지식과 실행도 비교)

  • This survey was conducted to investigate the attitude towards food hygiene, and the correlation between sanitary knowledge and the performance of college students in Daejeon. The respondents were composed of 218 food majors and 296 nonmajors. The answer that food hygiene was very important was given more often by food majors (82.9%) and those educated (80.5%) than non-majors (65.1%) and the uneducated (68.7%) (p<0.05). Information on food hygiene was mainly obtained from TV, radio, or the internet. The average food hygiene knowledge score was 4.08 and that in practice was 3.37 (p < 0.001). The average score was lower in practice than knowledge for personal hygiene, food separation use and storage, washing-sterilization of food, and utensils. The average knowledge score was higher for food majors and educated than that in non-majors and uneducated (p<0.001). The degree of HACCP perception was much higher in food majors (34.9%) and educated (37.4%) than in non-majors (5.4%) and uneducated (8.2%). The knowledge and practice scores were correlated (p<0.01). It is necessary that college students be educated to obtain useful knowledge about food hygiene and conduct proper personal food sanitation in their daily life.

Field Technique of Non-Educated Constructors in Timber Structure of Korean-Style Secondary Station(Gong-So) -Focused on the Sin-Sung and Su-Bun Secondary Stations- (한옥 공소의 목구조 방식에 나타난 민간 기술자의 현장기법 -천주교 신성공소와 장수천주교회 수분공소를 중심으로-)

  • This paper is aimed to clarify field technique of non-educated constructors in timber structure of korean-style secondary station(Gong-So) on the annex of catholic church. The main object of this study is Sin-Sung and Su-Bun secondary stations which post-lintel structure was 2high columns(Go-Ju) 5beams(Ryang) in Jeon-Buk area of Korea. We reached the following conclusion. Firstly, these secondary stations are required a lots of space for number of persons with the introduction of basilica plane. These plans have different intervals in the layout. Secondly, they constructed the holy space by using high columns(Nae-Jin-Go-Ju). The former problems of plan layout are sloved by reinforcement and replacement eaves and rafter of logitudinal. Thirdly, the elements showed the natural feature such as irregular wooden floor, arch-type head pentrating tie and a ceiling. In the end, we knew that non-educated constructor had found a way in the problem for accepting unreasonable work.

Effects of Nutrition Education Providing School Lunch by Personalized Daily Needed Food Exchange Units for Adolescent Athletes in Jeonbuk Province (전북지역 청소년 운동선수 대상 하루 필요 식품군 수 맞춤 점심급식을 병행한 영양교육 효과)

  • Objectives: The purpose of this study was to investigate effects of nutrition education providing school lunch by personalized daily needed food exchange units using Food Exchange System for adolescent athletes. Methods: The subjects were 60 sports high school students (educated group, 30 vs. noneducated group 30). Nutrition education was provided for 4 weeks (40 min/lesson/week). In addition, personalized school lunch was served for 4 weeks, nutrition education period. The personalized lunch were provided Food Exchange Units according to personalized daily needed energy. The lessons were '5 Major nutrients, functions and foods', 'My daily needed energy and food exchange units by Food Exchange System', 'My meal plan by food exchange units according to my daily needed energy' and 'Smart choice of healthy snacks and eating outs'. After nutrition education, we examined the differences in anthropometric characteristics, nutrition knowledge, dietary attitude and dietary intake between the educated and the non-educated group. Results: We observed improvements in lean body mass in the educated group. With regard to nutrition knowledge, there were improvements in 'Functions of vitamins', 'Functions of minerals', 'Foods of fat', 'Foods of vitamin', and 'Foods of mineral' in the educated group. In relation to dietary attitude, there were improvements in 'Taking a meal with family and friend', 'Taking a meal at ease', 'Taking a meal with kimchi and vegetables', 'Taking a meal with three kinds of side dishes', 'Priority of choosing snacks' and 'Type of snacks' in the educated group. With regard to dietary intakes according to Dietary Reference Intakes for Koreans, there were improvements in intakes levels of fiber, vitamin A, vitamin C, folate, calcium, iron and zinc. The index of nutrition quality, as indicated by nutrition adequacy ratio also improved in the educated group. Conclusions: These results showed that a nutrition education program providing education lessons and personalized school lunch by food exchange units according to daily needed energy showed positive changes in nutrition knowledge, dietary attitude and dietary intake of adolescent athletes. Nutrition education program providing personalized school lunch by Food Exchange Units may improve dietary behaviors and dietary intakes of adolescents.

Survey of conditions of dental prosthesis incentives of it in some area in Korea (우리나라 일부지역의 치과보철물 장착 동기에 관련된 요인에 관한 연구)

  • In the present work the knowledge of dental health as well as dental prosthesis has been studied on the basis of analysis of current dental prosthetic treatments for dental diseases prophylaxis and the final decision for dental prosthetic appliance. The results have been analyzed by the current dental health care and the subjective acknowledgement from 700 people of urban as well as rural inhabitance in our country. The results from the present work have been summarized as following: Depending dental status has been shown worse to be in the cases of divorce and bereavement, age and less educated or jobless. It is also interesting to note that the dental status has shown to be even worse than health status. It has been shown that the dental prosthetic treatments have been mainly caused by the oral disease (62.2%) and depend on the age and the educational level. According to the actual status of dental prosthetic treatments, the fixed partial denture was the most case (78.9%) that increased as divorced, bereavement and as less educated, less income, retired and jobless as well as from urban to rural. As a clinic for the dental prosthetic treatments, dental clinics have been most frequent visited as indicated by 59.6%, then the un-licensed dentist (6.5%), then the hospitals (3.7%), then the public health centers (2.2%). Most of those who are older in age, less educated and jobless have been treated by the un-licensed dentists. In point of view on the cost for dental prosthetic treatments, 93.1% have claimed to be too expensive, in as the divorced and the bereaved, the older age, the less educated and the jobless. About satisfaction of dental prosthetic treatments, 51.4% was satisfied, 39.4% was normal and 9.2% was dissatisfied. Most of people experienced increasing levels of satisfaction as their income increase. Most in the age range of 40-60 have wanted to be insured for the dental prosthetic treatments. It is also interesting to note that the older age and the less educated wanted to apply this kind of insurance.
