Quality Characteristics and Antioxidant Activity of Calcium-added Garlic Yanggaeng (칼슘 첨가 마늘 페이스트로 제조한 양갱의 품질특성 및 항산화성)

  • This study was performed to investigate the quality characteristics and antioxidant activity of garlic yanggaeng added with several calcium sources (calcium carbonate, calcium citrate, calcium lactate, mixed calcium and calcium powder). The pH and lightness of calcium-added garlic yanggaeng decreased compared with control. Lightness of garlic yanggaeng added with calcium lactate, calcium carbonate and calcium powder was similar with that of control. As for texture profile analysis, hardness of garlic yanggaeng added with calcium lactate, calcium carbonate and calcium powder was increased compared to control. The antioxidant activities determined by DPPH and hydroxyl radical scavenging activities of the garlic yanggaeng added with calcium lactate, calcium carbonate and calcium powder were significantly higher than those of control. The pungent and taste of garlic were reduced in garlic yanggaeng added with calcium lactate, calcium carbonate and calcium powder. Consumer test showed that the score of overall acceptance was higher in the garlic yanggaeng added with calcium lactate and calcium carbonate, compared to those of other calcium sources. Based on these results, it was suggested that garlic paste added with calcium carbonate or calcium lactate may be useful materials to improve quality of garlic yanggaeng.

Effect of Chicken Skin and Pork Backfat on Quality of Dakgalbi-Taste Chicken Sausage (닭갈비맛 계육 소시지의 닭 껍질과 돼지 등지방의 첨가 효과)

  • This study was conducted to investigate the effect of chicken skin and pork backfat on quality of Dakgalbi-taste chicken sausage as fat sources. The sausages were manufactured with 100% chicken breast without fat sources, 85% chicken breast meat with 15% chicken skin or 85% chicken breast meat with 15% pork backfat, respectively. Batters for production of chicken sausage were mixed with 5% Dakgalbi sauce and 4.92% ingredients (meat and lipid basis) for 20 min and then stuffed into casing. All cooked sausages were vacuum-packaged and stored at $4^{\circ}C$ for 14 days. Moisture and crude protein contents were higher in the control, and crude lipid content was higher in chicken sausage with pork backfat (p<0.05). Unsaturated fatty acids content and monounsaturated fatty acids/saturated fatty acids ratio of sausage with pork backfat were lower than those of control and sausage with chicken skin (p<0.05), which were influenced by fatty acids compositions of fat sources. The chicken sausage with pork backfat showed a lower hardness and chewiness, and higher springiness measured by food texture analyzer. The sausage with pork backfat had a high level of water holding capacity (WHC) during storage (p<0.05). In conclusion, Dakgalbi-taste chicken sausage containing chicken skin had higher unsaturated fatty acid compositions, but showed lower textural quality compared with that containing pork backfat.

Effect of Storage Conditions on the Sensory Characteristics of Cooked Rice (보온 조건이 쌀밥의 관능 특성에 미치는 영향)

  • Physicochemical and sensory characteristics of cooked rice during warm-keeping with different temperature $(70,\;75,\;80^{\circ}C)$ and period (0, 6, 12, 24, 48 hr) were investigated. As the storage temperature increased, sweet flavor, glossiness, moistness, taste and moisture content decreased but off-flavor, color and sensory and texturometric hardness increased. This trend was significant with storage period. As the storage time and temperature increased, yellowness(b) measured by Hunter color difference meter increased while lightness(L) and whiteness decreased. Degree of retrogradation of cooked rice during storage increased, particularly did in cooked rice stored at $80^{\circ}C$. Cooked rice stored at 70 and $75^{\circ}C$, 6 hr had the least changes in flavor and appearance but more changes in them longer storage time. Cooked rice stored at $80^{\circ}C$ had rapid changes in flavor, appearance and texture at initial state of storage. These results showed that the changes in moisture content of cooked rice stored at various conditions had the most important effect upon sensory characteristics of cooked rice.

Fruit Quality Characteristics and Pithiness Tissue Occurrence with Fruit Gravities in 'Niitaka' Pear Fruit ('신고' 배의 비중에 따른 과실 품질 특성과 바람들이 발생)

  • The primary objective of this study was to determine the relationship between fruit quality characteristics and pithiness fruit occurrence for confirming occurrence factors of pithiness tissues in 'Niitaka' pears ($Pyrus$ $pyrifolia$ Nakai). Fruits were harvested 4 times in 1 week intervals from 160 days after full bloom (DAFB) to 181 DAFB. Harvested fruits were separated with the specific gravity by Archimedes laws. Also, with specific gravity level in pear fruit, sugar content, acidity, and texture profile analysis (TPA) were investigated. Final verifiability of pithiness fruit was approved by eye observation at 90 days after storage. Also, in ASS (Alcohol Soluble Solid) and AIS (Alcohol Insoluble Solid), calcium contents were investigated. Although the differences in sugar and organic acid content were not significant in fruits divided by gravity, flesh hardness was depressed in fruits that showed low gravity. These results were more conspicuous in late harvested fruits (at 174 and 181days after full bloom) which showed low gravity, representing less content of AIS content and calcium in ASS and AIS when compared with early harvest fruits. Fruits of lower gravity below 1.0 measured with dipping induced the progression of pithiness symptom up to 76%. Consequently, harvest timing is a more concise factor in pithiness fruit occurrence although those symptom also affected by storage condition. Furthermore, the cause of pithiness fruit occurrence by late harvest is due to the lower cell wall binding calcium.

  • In the present paper, we investigated the quality stability of mackerel based burger during frozen storage. The moisture and crude lipid contents of products were $60.2{\sim}61.5%$ and $14.7{\sim}14.9%$, respectively. The pH showed a tendency of decrease, while volatile basic nitrogen content showed a tendency of increase during frozen storage. The histamine content was $2.60{\sim}2.81\;mg/100g$, and this value increased slowly during frozen storage. The increasing ratio in the peroxide value, carbonyl value, TBA value, fatty acid composition and color value of vacuum packed product and antioxidants added product were lower than those of air packed product. The texture profile analysis parameters such as hardness and toughness showed a tendency of a slight increase in air packed product and showed less increase in vacuum packed product and antioxidants added product. From the results of chemical experiments and sensory evaluation during frozen storage, it is concluded that the vacuum packed mackerel based burger and antioxidants added mackerel based burger were good condition for preserving the quality during frozen storage of 60 days.

Effect of Medicinal Herbs Extracts on Physicochemical Characteristics of Cooked Rice (복합 약용식물 추출물이 쌀밥의 이화학적 특성에 미치는 영향)

  • This study was conducted to investigate the effect of medical herbs extracts on physicochemical characteristics of cooked rice. Three types (CLP 1, CLP 2, CLP 3) of extracts were prepared using 11 medicinal herbs, respectively. Polished rice was cooked with different concentration of medicinal herbs extracts by electric cooker. The moisture contents in cooked rice were decreased by increased concentration of herbs extracts, while total polyphenol contents were significantly increased. DPPH radical scavenging activities of cooked rice obviously were increased as herb extracts level increased. The consistency and setback value of the rice flour was reduced at all of the extracts, while breakdown and initial pasting temperature was increased. Color of cooked rice was shown different comparing to the control. However, the hardness, adhesiveness, springiness, cohesiveness and gumminess of cooked rice was increased depending on the concentration of extracts. These results showed that medicinal herbs extracts, which can benefit human health, is inducing the changes of physicochemical characteristics of cooked rice.

Effect of PSE Pork on Physiochemical and Microbiological Properties of European Style Fermented Sausages during Ripening (원료육질이 발효소세지의 이화학적인 성상과 미생물 특성에 미치는 영향)

  • European style fermented sausages were made with normal pork, PSE and a 50 : 50 mixture, inoculated with Lactobacillus plantarum 1-74 and Staphylococcus simulans MIII and ripened for 21 days following commercial manufacturing procedures. In all treatments, pH droped sharply between 0 and 3 days during ripening. PSE sausages showed the lowest pH and Aw at the end of ripening than other treatment groups. Protein solubility, hardness, cohesiveness and chewiness were significantly (P<0.05) low for PSE sausages. Springiness was the highest for normal sausages but the other two treatment were not different. PSE sausages had poor texture low redness value during the ripening. The added sugars apparently dropped the pH fast in PSE sausages. Total bacterial count and lactobacilli increased from 0 day to the third day of ripening. The number of Staphylococcus sp. decreased in normal sausages by the end of the ripening period. Fermented sausages with PSE meat could be produced if the mixture had lower (<50%) amounts of PSE meat. In addition, added sugar must be reduced to prevent lowering the pH to a level that will affect processing and quality attributes of fermented sausages.

Functional Properties of Soy Protein Isolate from Heat Treated Soybean (열처리 대두에서 분리한 대두 단백질의 기능성)

  • Effects of heat treatment on functional properties of soy protein were examined. Soy protein isolate (SPI) was prepared from Korean soybean varieties, Manli and Taekwang, subjected to heat treatment at $60^{\circ}C$ for 30, 60, 90, and 120 min. pH-solubility results of SPI showed typical U-shape profiles with minimum solubility at pH 4-5 of isoelectric points of soy proteins, longer heat treatments showing slightly higher solubility. Water absorption, emulsifying activity, emulsion stability, and emulsion capacity of SPI increased, while oil absorption decreased, with heating time in Manli variety. Manli and Taekwang showed the highest emulsion capacities after 90-and 60-min heat treatments, respectively. Foam expansion of all SPIs increased with heating time up to 90 min. Texture profile analysis showed heat treatment up to 90 min significantly increased hardness, adhesiveness, springiness, gumminess, and chewiness, whereas significantly decreased cohesiveness of SPI gels (p<0.05).

Quality characteristics and antioxidant activity of rice sponge cake with added green tea powder (녹차 분말 함유 쌀스펀지 케이크의 품질특성 및 산화방지 활성)

  • We investigated the quality and antioxidant activities of sponge cake prepared containing 1-5% of green tea powder (GT). The water content in the cake increased with an increase in the amount of GT added. Although the hardness and springiness of the rice sponge cake increased, the adhesiveness decreased with increasing the level of GT. The cohesiveness, chewiness, and resilience of the rice sponge cake with GT were similar to those of the control. Chromaticity determination revealed that lightness, redness, and yellowness of the crust decreased with increasing GT content. Total polyphenol and flavonoid contents increased proportionally with increasing GT level. Antioxidant activity, measured by DPPH and ABTS radical scavenging as well as reducing power activities, was significantly higher in the rice sponge cake with GT than in the control. Sensory evaluation determined that addition of 1-3% GT to the rice sponge cake maintained the color, taste, texture, flavor, and overall acceptance similar to that of the control.

Quality Characteristics of Retort Tteok (Korean Rice Cake) Prepared with Various Dextrinization Time (호정화시간을 달리하여 제조한 레토르트 떡의 품질 특성)

  • In this study, the quality characteristics of retort Tteok (Korean rice cake) prepared with various dextrinization times were investigated during storage. The moisture content of the retort Tteok made with dextrinized rice was 43.19-43.34% at 0 day and there were no differences in the samples during storage. As dextrinization time increased, the L value of the retort Tteok decreased, and the a and b values increased. Again there were no differences in the samples during storage. In the texture profiles, the hardness, gumminess and chewiness of the retort Tteok increased with increasing dextrinization time for all the samples, except the ones that were dextrinized for 32 minutes. The adhesiveness of the retort Tteok increased with decreasing dextrinization time, and springiness and cohesiveness did not differ among the samples. Also, the quality characteristics showed no differences after 15 days of storage. In the sensory evaluation, color, smell and delicate taste were significantly different between the retort Tteok made with rice dextrinized over 16 minutes and that made with no dextrinized rice. The retort Tteok with rice dextrinized for 16 minutes showed the highest score in the softness. Storage times up to 120 days made no differences in the sensory evaluation measurements. These results indicate that a dextrinization time of 16 minutes seems to give the best quality to retort Tteok made with dextrinized rice.
