Characterization of quality changes of whole super sweet corn (Zea mays saccharata Sturt.) during thermal sterilization for shelf-stable products (상온유통을 위한 가열살균 중의 통 초당옥수수의 품질변화 연구)

  • This study investigated the quality changes in whole super sweet corn during thermal processing to extend its shelf-life. To minimize the reduction of unique texture of whole sweet corn after the sterilization, the alcohol sanitation applied and the cold point of a whole corn ear was determined using a computer simulation. The cold point was located between the corn kernel and the cob. The microorganisms on the surface of sweet corn were reduced by more than 1 log CFU/g after alcohol sanitation, then the whole corn was treated to satisfy the degree of sterilization ($F_{121.1}=4$). The quality of sterilized sweet corn was compared with the control that was treated with steaming. The quality changes of sterilized sweet corn during storage were monitored for 9 months at $25^{\circ}C$. The hardness was maintained within 30% of its initial value. The minimum of hardness was $464.50{\pm}103.35g$ and maximum of hardness was $514.50{\pm}81.83g$. The differences in the sugar content among the samples were found, but the sugar content of corn kernel remained within 30% of the control, ranging from $28.83{\pm}1.05$ to $34.36{\pm}0.42%$. The yellowness was higher than that of control by 5%. The maximum value of yellowness was $34.36{\pm}0.42$. The general bacteria and molds and yeasts in corn kernel stored at $25^{\circ}C$ were not detected after 9 months of storage at $25^{\circ}C$. Therefore, in this study, we have demonstrated that the thermal sterilized method extends the shelf-life of whole sweet corn with minimizing its quality changes over 6 months in room temperature.

  • Fresh corn, one of the main food crops, must be harvested by hand. A harvest mechanization technology is required. In this study, a tractor-attached harvester was designed and manufactured to sequentially perform stem reaping, fresh corn detaching, and collecting. The(harvester was designed so that the main device could operate through a hydraulic pump and a generator could be operated through the tractor's PTO. Factor tests were conducted according to cultivars (Ilmichal, Super sweet corn) and working speed (0.12 m/s, 0.17, 0.22). After the factor test, detached corns ratio, collected corns ratio, and damaged corns ratio were analyzed and harvest performance was evaluated. Harvesting performance was good for super sweet corn. Considering operation efficiency, 0.22 m/s was judged to be an appropriate working speed. It was found that it took two hours to work an area of 10 a.

Food value or Freshwater Rotifer (Brachionus calyciflorus) for Culture of Sweetfish (Plecoglossus altivelis) Larvae (은어 자어 (Plecoglossus altivelis) 사육에 있어서 담수산 rotifer (Brachionus calyciflorus)의 먹이효과)

  • This study investigated the possibility of salinity acclimation of freshwater rotifers (Brachionus calyciflorus) as live food for sweetfish (Plecoglossus altivelis) larvae, and also examined the optimal salinity for the growth of sweetfish. Freshwater rotifers cultured in 0 and 4 PSU and seawater rotifers (B. rotundiformis) cultured in 33 PSU were supplied to the larvae with four kinds of enrichment material (condensed freshwater Chlorella, $\omega-yeast,$ baker's yeast, Super Selco) and larval growth at 4 PSU was examined. Growth of the freshwater rotifers positively increased from 0 PSU to 6 PSU, but decreased when over 8 PSU was reached. Growth and survival of the sweet fish larvae reared in 0 PSU were significantly lower than those reared in either 4 PSU or 33 PSU. This indicated that the freshwater rotifers (B. calyciflorus) could be used as live food for sweetfish larvae reared in 4 PSU. The body weight of sweetfish larvae fed on freshwater rotifers enriched with Super Selco was the highest at 0.163 mg, but there was no significant difference in survival and body length of the fish fed with the other enrichment materials. The content of n-3 HUFA of the sweetfish larvae fed on the freshwater rotifers enriched with Super Selco and the condensed freshwater Chlorella was higher than that enriched with $\omega-yeast$ and baker's yeast. These results indicated that B. calyciflorus cultured with the condensed freshwater Chlorella could be used for the sweetfish larvae without enrichment, and the most efficient enrichment material for B. calyciflorus is Super Selco.

Survey on consumer response of Kochujang (fermented hot pepper-soybean paste) in Market (시판 고추장에 대한 소비자 반응에 관한 조사 연구)

  • General views of 1,436 housewives respondents through the country on commercial kochujang (fermented hot pepper-soybean paste) were surveyed by questionnaires. The 65.0% of total respondents had experience of purchasing commercial kochujang on the market, mostly super market (43.0%) of respondents, and the respondents who has job and live in apartment purchased the commercial products more often than the others (80.5%). The reason for purchasing commercial products were convenience (36.1%) and short of time (13.0%). The critera for purchasing commercial product were previous experience (40.1%) and well known trademark (20.6%) and not for purchasing were concerning of noxiousness (29.2%) and inferior taste (25.0%). Respondents prefered glass packing (44.3%) and plastic bottle (20.2%) of 500 g pack for single usage (42.3%). The most important standards for kochujang taste were pungency (59.1%) and savory taste (28.6%). The problems indicated to commercial products were inferior taste (32.2%), especially too sweet (52.6%), and safety (20.6%).

Effect of Different Defoliation on Dry and TDN yield of Sorghum Cultivars (예취시기가 Sorghum류 품종의 건물 및 양분수량에 미치는 영향)

  • Yield and plant constituent responses of forage sorghum cultivars have usually been compared in uniform defoliation management test. However the influence of harvest time on differential response of cultivars needs more precise definition. Therefore this study with sorghum-sorgo-sudan hybrid cv. NC+Sweet Leaf, and Super Su 22 and Sorghum-Sorghum hybrid cv. Pioneer 931 was carried out under two defoliation regimes, namely defoliation at heading stage of each variety and defoliation on the same calendar date in response to heading stage of early variety. The results are summarized as follows; 1. Three harvests were taken by early variety with 80 days and two harvests by late variety with 94 days from sowing to heading. 2. Dry matter and TDN yield tend to be higher when the plants are cut at ear emergence stage of late variety. 3. Crude protein content was similar for the same growth growth stage of 1st growth and 1st regrowth, and rather big different between varieties. 4. Considering only dry matter and TDN yield, it is recommendable to cut two times at ear emergence stage of late variety and also three times at ear emergence stage of early variety in view point of utilization period extension and distribution of forage products.

Resistance of Commercial Tomato Cultivars to Meloidogyne arenaria and M. incognita (시판 토마토품종의 고구마 뿌리혹선충과 땅콩 뿌리혹선충에 대한 저항성)

  • Root-knot nematodes (Meloidogyne spp.) are among the main pathogens of greenhouse crops worldwide. Plant resistance is currently the method of choice for controlling these pests. To select resistant tomato against two common species of root-knot nematodes, M. incognita and M. arenaria, 36 commercial tomato (Lycopersicon esculentum Mill.) cultivars were screened. Seventeen tomato cultivars were resistant to both root-knot nematodes: six in cherry tomato, 'Tenten', 'Cadillac', 'Cutti', 'Sweet', 'Ppotto', 'Lycopin-9', eight in globe tomato, 'Lovely 240', 'Dotaerang Dia', 'Cupirang', 'Dotaerang Master', 'Super Dotaerang', 'Dotaerang Season', 'Miroku', 'Hoyong', and three in root stock, 'Special', 'Fighting', and 'Magnet'.

Physicochemical Characteristics of Corn Silk (옥수수 수염의 이화학적 특성과 변이)

  • This study was carried out to investigate the physicochemical characteristics of corn silks. Pollination of corn silks was finished within three days after silking, and elongation of open pollinated corn silks was stopped, but unpollinated silks elongated until eight days after silking. Moisture contents of corn silks were about 92-94% at silking stage, but continuously decreased. these were about 70-75% at 30 days after silking. Chlorophyll b was higher than chlorophyll a in corn silks, and chlorophyll a/b ratios of four hybrids were high in this order : silage > sweet > super sweet > waxy corn. Free sugars in corn silks were mainly fructose, glucose and maltose. Their composition rate was 55% of glucose, 42% of fructose and 4% of maltose. Water soluble solid (Brix %) contents of unpollinated corn silks were ranged from 13.7 to 16.8 Brix % and pollinated corn silks were from 12.6 to 13.7 Brix %. Phytic, oxalic, malic. shikimic, glutaric and acetic acid were detected on corn silks. Phytic, oxalic and glutaric acid were considered as a major organic acids in corn silks. Amino acids in corn silks were high in this order : waxy > silage > sweet >sweet corn. Serine, glycine and thereoine were contained more than 10%, and five amino acids such as aspartic, glutaric, arginine, alanine and proline were ranged about 5 to 8%. Methionine and cystine, amino acids containing sulfur were contained only small quantity as about 2.1% and 1.3%, respectively. Acetaldehyde, ethanol, acetone, DMS, isobutylaldehyde, cis-3-hexanol, 3-hexe-1-ol, acetate, trans-2-hexanol and pentanol were detected as the volatile components in corn silks, but acetaldehyde and DMS were major volitiles in silage corn silks, and acetaldehyde, ethanol and DMS were major volitiles in waxy corn silks. The length of corn silks was a positively correlated with organic acids (r=${0.556}^*$), and a negatively correlated with amino acids (r=${-0.514}^*$), respectively. Free sugars were positively correlated with all characteristics tested and significantly correlated with organic acid (r=TEX>${0.703}^{**}$), and flavonoids (r=TEX>${0.544}^*$). Chlorophyll was significantly correlated with flavonoid contents (r=TEX>${0.523}^*$). For this reason chlorophyll was evaluated as an indirect selection character for the high flavonoid containing varieties.

  • In order to substitute sweet and super sweet maize hybrid seeds which are introduced at current, and to meet national demand for human consumption, inbreds and hybrids of waxy maize were developed by using Korean native lines, Six inbreds were used to produce 15 hybrids in a diallel cross, Six inbreds used were significantly different in tasseling dates, plant and ear heights, leaf area, and shank length, The inbred line, Bosung showed the longest shank length among the lines used, The ear characters like ear length and diameter, 100 kernel weight, row number, and kernel number per ear varied among lines, The inbred line Bosung was again significantly different from other lines in ear length and diameter, row number and 100 kernel weight. However, ]ewon had the highest kernel yield per 100. Hybrids were also different in plant and ear characteristics depending upon the inbreds used. The hybrids of Bosung showed the longest ear length and the heaviest kernel weight. Highest kernel yield per unit area was obtained by the hybrids crossed with Dangjin, The general combining ability(GCA) of Dangjin was found very effective in reducing plant and ear height of hybrids. The GCA of Jewon was very effective in increasing tiller number per plant. The inbred line Bosung was effective in increasing ear length and 100 kernel weight and in decreasing row number. The hybrid which showed the highest specific combining ability in ear length and 100 kernel weight was Jewon Chilbo.

Growth Characters and Sugar Content During Grain Filling in New Hybrid, Chalok 1/Cooktail 51 Corn

  • 'Chalok 1/Cooktail 51' corns, supersweet corn gene controlled by either brittle-l (bt l) or shrunken-2(sh2) gene introduced into waxy corn, showed agronomic characteristics between supersweet corn and waxy corn. The ears were harvested at different development stages from 15 to 35 days after silking (DAS). Ear diameter of Cocktail 51 and 'Cocktail 51'/Chalok 1 increased from 15 DAS to 30 DAS and little increased thereafter, but that of Chalok 1/Cocktail 51 and 'Chalok l' increased until 35 DAS. Diameter of ear extension increased more in Cocktail 51 and Chalok 1/Cocktail 51 corn than Chalok 1. Ear fresh weight of Cocktail 51 decreased later 30 DAS but those of the other hybrids were vice versa. Rate of super-sweet kernels per ear of Chalok 1/Cocktail 51 corns was about 38 %. Development, and elongation of kernel were much more prominent in supersweet kernel than in waxy kernel, but fresh weight increased higher in waxy kernel than supersweet kernel. Moisture content in kernel decreased from 15 DAS to 35 DAS. Total sugar content of the kernel increased until 25 DAS, and that of Cocktail 51 kernel showed the highest among of them. After cooked by steam, flavor and mastication feeling rate cooked by steam of Cocktail 51 and Chalok 1/Cocktail 51 were increased from 15 DAS to 25 DAS and markedly decreased thereafter. But those of Chalok l/Cocktail 51 and, Chalok 1 were decreased after 30 DAS. These results suggested that the optimum harvest date for fresh supersweet corn (Cocktail 51), Cocktail 51/Chalok 1 seems to be about 20 DAS and Chalok 1/Cocktail 51 and waxy com (Chalok 1) was about 25 DAS.

Preparation and Quality Characteristics of Different Mackerel Scomber japonicas-based Processed Products as Senior-friendly Seafoods (물성을 달리한 고등어(Scomber japonicus) 활용 고령친화식품의 제조 및 품질특성)

  • Mackerel Scomber japonicus is an excellent source of vitamins (A, D and B12), omega-3 fatty acids, dietary protein and minerals. This study was conducted to prepare mackerel-based processed seafood products such as grilled product with super-heated (GM), tang (TM) and salad with sweet potato (SSM) using mackerel as senior-friendly seafoods and to examine their quality characteristics. The hardness of GM, TM and SSM were 240.3×1.03, 21.7×1.03 and 7.4×1.03 N/m2, respectively. The viscosity of SSM was 25,450 m·Pas. The nutritional content of mackerel-processed products was within the senior-friendly standard specifications for protein, vitamin C, vitamin B2 (riboflavin) and vitamin B3 (niacin) ing GM, protein, vitamin B3 and calcium for TM, and protein, vitamin D, vitamin B2 and vitamin B3 in SSM. All the mackerel-processed products were safe as senior-friendly seafoods, since digestibility rates were 81.5% for GM, 87.9% for TM and 93.5% for SSM. The physical, nutritional and the sanitation results indicated that senior-friendly seafoods classified of the mackerel-processed products was step 1 for GM, step 2 for TM and step 3 for SSM according to the Korean Food Code and Korean Indusrty Standards.
