The purpose of this study was to investigate the effects of alcohol intake on nutritional intake status among the college students. The subjects were divided three groups; no-alcohol group(n=78), alcohol group(n=113), and high-alcohol group(n=82) according to intake and frequency of alcohol. And they were observed characteristics of alcohol drinking, dietary behavior and attitude, and nutrient intakes using questionnaires. The frequency of skipping meals in breakfast in high-alcohol group were higher than in other two groups(p<0.01). There were no significant differences in frequency of skipping meals of lunch and supper, reason why skipped meals, and total score of dietary attitude among three groups. However, the score of dietary attitude about no heavy drinking and smoking in high-alcohol group was higher than in other two groups(p<0.01). There were significant difference in vitamin B2 intake, alcohol intake, and energy intakes from carbohydrate, lipid, and alcohol among three groups(p<0.05, p<0.05, p<0.01, p<0.05, p<0.05). Compared energy intake of high-alcohol group with other two groups, intake from carbohydrate was low and intakes from lipid and alcohol were high. In the nutrient density, plant protein and carbohydrate in no-alcohol group, lipid and vitamin B2 in alcohol group, and animal lipid in high-alcohol group were highest among three groups. NAR and MAR were not significant difference among three groups except that NAR of P in alcohol group is highest among three groups(p<0.05). In conclusion, students high consuming alcohol have unhealty dietary behaviors in the light of high frequency of skipping breakfast, undesirable dietary attitude of alcohol drinking and smoking, and low energy inake from diet. Therefore, this results should be considered in meal management and nutritional education for student of high alcohol consumption.
The purpose of this study was to investigate the relationship between dietary fat intake, anthropometric data, blood lipids, C-reactive protein, and adiponectin in Korean male college students. Forty-eight subjects were divided into 2 groups based on dietary fat intake: UERF (under 30% of energy ratio for fat source), AERF (above 30% of energy ratio for fat souce). We collected dietary intake data using 24-hour dietary recall for 3 days. Anthropometric and biochemical parameters were measured by using standard methods. Segmental body composition analysis was carried out using an 8-electrode multifrequency bioelectrical impedance method of body fat estimation. There was no significant difference in anthropometric data and serum lipid profile between UERF and AERF group. Serum C-reactive protein level was significantly higher in the AERF group compared to the UERF group. Although there was no significant difference in serum adiponectin level between UERF and AERF groups, subjects had lower adiponectin levels. Correlation data show that serum adiponectin level was positively correlated with vegetable intake (p < 0.05). In addition, dietary fat intake had a positive correlation with meat (p < 0.01), whereas a negative correlation with grain (p < 0.01), vegetables (p < 0.05), and fish (p < 0.05). These results suggest that the increased fat intake of non-obese Korean male college students is associated with their increased serum C-reactive protein concentration. Therefore, proper guidelines on fat intake and nutrition education are necessary for the prevention and management of metabolic syndromes.
The purpose of this study was to compare the nutrient intake and diet quality of male college student according to smoking groups. Subjects were recruited and divided into three groups according to the smoking, which included non-smoker (n = 100), light-smoker (n = 78; packyear < 5), and heavy-smoker (n = 76; packyear ${\geq}$ 5). Subjects were interviewed using a general questionnaire, 24-hour recall method for dietary intake and diet quality. The average age of the subjects were 22.7 years for non-smoker, 23.5 years for light-smoker, and 23.4 years for heavy-smoker. Also the results showed that the heavy-smoker was significantly more often to drink coffee and alcohol compared with the other two groups (p<0.001, p<0.05). The mean daily energy intake was 2278.1 kcal in non-smoker, 2148.3 kcal in light-smoker, and 2144.4 kcal in heavy-smoker. The heavy-smoker consumed significantly lower intakes of vitamin C (p<0.001), calcium (p<0.01), animal calcium (p<0.01), and potassium (p<0.05) compared to the non-smoker and light-smoker. Also NAR (Nutrient Adequacy Ratio), ND (Nutrient Density), and INQ (Index of Nutritional Quality) of these nutrients in heavy-smoker were lower than the other two groups. Mean adequacy ratio (MAR) was 0.78 in non-smoker, 0.78 in light-smoker, and 0.74 in heavy smoker (p<0.05). The heavy-smoker consumed significantly lower intakes of fruits (p<0.001) compared to the non-smoker and light-smoker. The DVS (Dietary Variety Score) of heavy-smoker (26.8) was significantly lower than that 30.4 of non-smoker and 31.5 of light-smoker (p<0.01). In conclusion, heavy-smoker man have low intake status of vitamin C, calcium and potassium, and partly low diet quality. Therefore it was needed that well planed diet to replace the nutrients supplied from excluded food groups in heavy- smoker.
The purpose of this study was to compare the dietary behavior of middle school and high school students who had working mothers with students whose mothers were not employed. Self-reports on their dietary behavior and one-day dietary records were obtained from 396 middle school students and 364 high school students using anonymous questionnaires. The results were summarized as follows; the students with working mothers were more likely to not to eat properly and their dietary behavior was generally inadequate, showing a greater irregularity for meals, more of a tendency to skip breakfast, less diversity of food intake, and a higher incidence of drinking and smoking. One-day dietary records obtained by 24k recall methods showed less diverse food intake and a higher rate of skipped meals in students with working mothers. Drinking and smoking were more prevalent among middle school students whose mothers were working than among those students with unemployed mothers, but in the case of high school student the difference was not significant. With more and more housewives seeking jobs, more attention needs to be given to the dietary and nutritional intake of their children, especially among middle school students. High school students seem to be less affected than middle school students by their mother's employment.
We investigated the intake trends of street foods for middle school, high school and colleges students through the survey study. In addition, the factors affecting the students' consumption of street foods and their perception toward hygiene status of street vendor were studied. The levels of total aerobic bacteria, coliform groups and enterobacteriaceae in Kimbab, eomuk, and eomuk-kukmul were counted using 3M petrifilms. More than ninety seven % of the respondents had experienced street foods. All the respondents ate street foods 1 to 5 times a month. Forty percent of the respondent stated that 'good taste' and 'time-saving convenience' were their reason for eating the street foods. Their favorite foods were ddokbokgi and various fried foods. All the students responded that frying oil, drinking water, and soy sauce as well as the street vendors' attire and their cooking tools in street vendor were unsanitary. Forty percent of the respondents ranked frying oil as the most unsanitary substance. Eighty percent of the respondents responded that an enforcement of hygiene should be imposed on the street foods vendor. There were significant differences (p<0.001) among the student's age in the opinion related to the reasons of eating street foods, hygiene enforcement, existence of street foods and interest of hygiene status of street foods. High correlation (p<0.05) between the frequency of street foods and snack intakes was shown, regardless of student's age. The result shows that those who eat snacks more than once a day tend to eat street foods more frequently. Aerobic plate counts in Kimbab in 5 different vendors exceeded 10$^5$/g and contamination levels of enterobacteriaceae or coliform in Kimbab exceeded more than 10$^3$/g, which did not satisfy the microbiological standards. In conclusion, although the respondents thought that the sanitation of street foods was poor, most of them want the street food vendor to be maintained with better hygiene condition. This indicated that the regulation for safe street foods should be enforced and educational information about the preparation and serving for safe street foods should be provided to street food vendor.
This study was designed to investigate the relationship between the dietary intake according to calorie intake from a coffee containing beverage and the bone health status of 189 female collegians. The study was conducted through questionnaires, anthropometric checkup, 3-days food records and ultrasound measurement of calcaneus bone mineral density. Subjects were divided into three groups: students not drinking coffee(non-coffee group, N=56), students consuming <100 kcal daily from coffee(low-calorie coffee group, N=84), and students consuming $\geq100$ kcal of their total daily calories from coffee(high- calorie coffee group, N=49). There were no significant differences in weight, height, body mass index, body fat and calcaneus bone mineral density among the three groups. The low-calorie coffee group usually drank black coffee or instant coffee mix, and the high-calorie coffee group habitually drank coffee with milk or sugar syrup. There were no significant differences in the mean daily energy and food intake among the three groups. However, vitamin $B_2$(p<0.05) and calcium (p<0.01) intake in the high-calorie coffee group were higher than in the non-coffee group. Also, mean intake of sugars, fish and shellfishes, milks and beverages in the high-calorie coffee group were also significantly higher than in non coffee group(p<0.05). There was no significant difference in the Korean Dietary Diversity Score(KDDS) among the three groups. The main calcium source was milk in all three groups, and milk intake(total and included with coffee) was highest in the high-calorie coffee group. Although no significant difference was apparent between the high-calorie and non-coffee groups concerning anthropometric factors and calcaneus bone mineral density, consumption of coffee may have influenced food and nutrient intake. The results suggest that consumption of milk-supplemented coffee may be of nutritional benefit.
Recent studies have shown that environmental, biochemical, nutritional or genetic factors affect bone mineral density (BMD). The purpose of the present study was to investigate the effect of vitamin D receptor (VDR) gentotype and nutritional status on BMD of elderly women living in a rural area. Three hundred thirty five elderly women over 65 years in Asan participated the study. Data for demographic and nutrient intakes were obtained by survey with a two day 24 hr recall method. BMD was measured by broadband ultrasound attenuation (BUA) using quantitative ultrasound (QUS). VDR genotypes of the subjects analyzed with Bsm I restriction enzyme were bb (92%), Bb (7%) and BB (1%). No differences were found between genotypes bb and Bb/BB in age, menopausal age, body mass index and body fat. BUA of bb genotype was higher (62.5 $\pm$ 15.6 dB/MHz) than Bb/BB genotype (56.1 $\pm$ 17.6 dB/MHz) by Student's t-tests. Correlation analyses showed strong negative correlation of BMD and age, but positive correlation with BMI, energy and calcium intake. When subgroup analyses were conducted after stratification by the median calcium intake level (412.9 mg/d), the above median calcium intake group showed significant difference in BUA by VDR genotype while the lower median calcium intake group did not show significant difference. The current study confirmed interaction of calcium intake and VDR genotype in association with BMD. Further nutritional intervention will be needed to improve calcium status of the elderly women living in rural areas.
Kimchi is the most well-known Korean traditional food, but it is also the main leftover of school lunch and dinner menus. This study aimed to familiarize teenagers with kimchi through school meals and to increase their daily kimchi intake, ultimately by appealing to the young generation's taste. A questionnaire survey was conducted in the Ansan area to examine student's acceptability of kimchi and their attitudes toward kimchi. Approximately 65% of males and 67% of female students liked the moderately fermented and pungent taste of kimchi. Kimchi served in school meals was regarded as nutritional but cheap. Approximately 72% of male and 82% of female students responded that they liked menu items using kimchi. Approximately 48% of students responded that menu items using kimchi in schools are not diverse. Students preferred meat as an ingredient in kimchi. The preferred cooking methods were stir-frying and frying, whereas boiling was the least favorite. Based on the survey results, ten kimchi menu items had been developed. The suitability of the menu was evaluated by students and cooks. Six kimchi items, including Kimchi mixed with rice, chicken, soybean sprouts, Kimchi cheese rice, stewed beef ribs with kimchi, rice topped with kimchi curry, kimchi cheese meat roast, and kimchi udong were considered appropriate for school meals, whereas kimchi kangchong, kimchi topokki, kimchi stew with surimi, and frozen Pollack kimchi soup were not suitable as menu items. Kimchi topokki was not accepted by students, while kimchi kangchong was not accepted by cooks. Cooks judged the suitability of a menu item by the cooking process and cooking times, whereas students judged an item by its sensory preference. Approximately 63% of students responded that kimchi intake has increased by participating in the development of kimchi dishes.
Proper nutrient intakes and physical fitness focus one's attention on health promotion. This study was conducted to investigate nutrient intakes and physical fitness by BMI in middle school students. Health-related questionnaire, dietary intakes, food frequency questionnaire and physical fitness were studied. There were no significant differences in health-related questionnaire, food frequency questionnaire and physical fitness by BMI, but several nutrition intakes, preference of salty tastes and the proportion of iron deficiency of female students were significantly different by BMI. Although the female obese group (BMI 85 - 100 percentile) had decreased the proportion of iron deficiency and increased fish intake frequency than other groups, obese females did not show better physical fitmess than other groups. And the average Ca intake was below $75\%$ of Korean RDA in both male and female students. Significantly positive correlation was found between calorie intake and push-up of normal (BMI 15 - 84 percentile) male students (r = 0.29), also significantly negative correlation was found between protein intake and 50m dash of normal female students (r = 0.22). And significantly positive correlation was found between beans and bent knee sit-up of normal male students (r = 0.25), and significantly positive correlations were found between beans, meat, eggs, green & yellow vegetable and sit and reach (r = 0.20, r = 0.28, r = 0.21, r = 0.19) and significantly negative correlation was found between beans and long distance race of normal female students. Therefore, this study suggests that proper nutrition and non-obese states should be achieved for health promotion in middle school students.
The purpose of this study was to compare the nutrient intake, dietary habits and serum lipid profiles of smoking male college students to those of non-smoking subjects. The subjects were composed of two group: 111 smokers and 120 non-smokers was used along with a questionnaire. Anthropometric measure, dietary intakes using 24-hours recall method were compared. The average ages of smokers and non-smokers were 21.6 and 21.1 years old, respectively. The height, weight and BMI of smokers and non-smokers were no significant difference. The average numbers of smoked cigarettes were 15.9/d and the average packyear was 4.9 in the smokers. About 92.8% of the smokers drank alcoholic beverages, while 72.5% of the non-smokers did. The smokers tended to eat less breakfast meal, but drink coffee more often compared to the non-smokers. The mean daily energy and food intake were 2,135.8 kcal and 1,169.5 g in the smokers and 2,034.3 kcal and 1,229.4 g in the non-smokers. The smokers consumed significantly higher intake of fat. The serum triglyceride level of the smokers was significantly higher than that of the non-smokers. In conclusion, the smokers of this study showed a more undesirable dietary intake in the light of their high Int an alcoholic beverages, and coffee. Therefore, it could be suggested that more systematic research be conducted with respect to serum triglyceride and smoking and that increased nutrition education and guidelines for smokers are required.
