향신료 첨가에 의한 닭고기 분쇄육에서의 미생물 증식 억제 효과 (Effects of Spice Addition on the Inhibition of Bacterial Growth in Ground Chicken Meat)

  • 비가열 닭고기 분쇄육의 제조 시 향신료의 첨가에 의한 세균의 증식 억제 효과에 대하여 연구하였다. 닭가슴살 분쇄육의 일반성분은 수분 72.98±0.15%, 조단백질 23.37±0.46%, 조지방 1.00±0.03%, 조회분 1.90±0.03%였다. 향신료 첨가에 의한 미생물 증식 억제 효과는 로즈마리 > 마늘 > 겨자 순이었으며, 첨가량이 증가할수록 억제 효과가 커졌다. 닭고기 분쇄육의 일반세균 및 대장균 증식 억제를 나타내는 향신료의 최적 첨가 농도는 로즈마리 2%, 마늘 4%, 겨자 1.2%였다. 일반세균 및 대장균에 대한 증식 억제 효과는 단독 및 혼합 첨가 시 저장기간 동안 기간별로 차이가 있었고, 저장 9일째 억제 효과는 MixA(97.4%) > 로즈마리(96.9%) > MixB(96.3%) > 마늘(53.7%) > 겨자(33.3%) 순이었다. 닭고기 분쇄육에 살균마늘과 비살균마늘을 첨가하여 비교했을 때 일반세균 수는 살균마늘 처리구가 비살균마늘 처리구에 비해 초기 2.6-3.0 log CFU/g, 9일째 2.4-3.2 log CFU/g 정도 낮았고, 저장기간이 경과할수록 그 수가 감소하였다. 비살균마늘 처리구는 대조구보다 높은 일반세균 수를 나타냈으며, 저장기간이 경과할수록 증가하는 경향을 나타냈다. 대장균 수의 경우 살균마늘 처리구가 비살균마늘 처리구에 비해 저장 0일째 0.4-1.0 log CFU/g, 9일째 0.5-1.5 log CFU/g 정도 낮았으며, 저장기간의 경과에 따른 변화는 일반세균 수와 비슷한 경향을 나타냈다. 결론적으로 로즈마리, 마늘, 겨자의 다양한 혼합적용에 의해 닭고기 분쇄육 제품의 미생물적 안전성이 향상되었다.

과수 화상병 전염 차단을 위한 전정 가위 소독 방법 (Disinfection Methods of Pruning Scissor for Preventing Transmission of Fire Blight)

  • 화상병은 전정 도구 등에서 장시간 생존이 가능하고 작업 도구를 통해 화상병균이 전파될 수 있다. 특히, 우리나라에서는 꽃이나 어린 과실, 도장지 등을 제거하기 위해 전정 작업이 수시로 이루어지는데 이런 농작업이 화상병 확산의 주요인으로 알려져 있다. 따라서, 본 연구에서는 전정 가위에 묻어 있는 화상병균을 완전히 멸균하기 위하여 국내에 유통되는 소독제의 소독 효과를 검증하고 이를 이용하여 효과적인 소독 방법을 구명하였다. 화상병균을 가위 날에 접종 후에 침지 소독할 경우 70% 에탄올 및 1%와 0.2% 차아염소산나트륨의 경우에는 침지 후 10초가 지나면 바로 멸균되는 반면, 30% 이산화염소는 소독 효과가 거의 보이지 않았다. 분무 처리로 소독할 경우에는 70% 에탄올은 분무 1초 후에는 바로 멸균이 되었지만 1%와 0.2% 차아염소산나트륨은 각각 10초와 60초 후에 멸균되었다. 자연적으로 화상병이 발병한 가지를 5회 및 100회 절단한 후 전정 가위 날 표면에 묻어 있는 화상병균에 대한 침지 소독 시간에 따른 제거 효과를 검증한 결과, 70% 에탄올에 30초 동안 침지 처리한 경우 완전히 세균이 멸균되지 않았지만 60초 이상에서는 세균이 멸균되었다. 이런 결과를 볼 때 현장에서 전정 작업 시 전정 가위를 70% 에탄올에 60초 이상 수시로 침지하여 소독할 것을 제안한다.

  • The effect on the promotion of health by the proper drinking of traditional alcohols was presented. It was proved t fat proper extents of drinking reduce lethal rate and improve physical body condition. The anti- carcinogenic effect of traditional wine from K company was also revised. The destination of traditional wine approached by the use of unprecooked method was also suggested as one of various models which produce excellent products. The diversity for a future survival should be acquired by sterilized Takju, various traditional wines, Liquors, and Soju of wine remainder. The operation of traditional alcoholic museum was also revised.

  • Korea dairy industry is placed on the very critical situation with the progression of free trade marketing system internationally. The sterilized milk or pasteurized extended shelf life milk can be considered as the international trade dairy products. Now all dairy foods would be selling in international market. To keep and improve our dairy foods market, the Korea dairy system improvement committee was inaugurated in 1995. This committee has done so many works to improve or dairy system such as the settlement of raw milk supply and demand, centralization of raw milk collection, ideal raw milk price system and dairy foods marketing structure, etc.

  • Studies were conducted on the preparation methods of strawberry jam. Strawberry was homogenized and centrifuged to serum-pulp portion. Concentration of strawberry serum was carried out at 55~58$^{\circ}C$ under pressure of 30~60mmHg. Strawberry jam bases were mixed throughly and stuffed in retortable pouch, The pouch was sterilized to make a new strawberry jam. The characteristics of new type ism was analyzed gas chromatographic profile, and sensory evaluations.

Characterization of Rhizodermea veluwensis Isolated from the Roots of Rhododendron mucronulatum in Korea

  • A fungal strain was isolated from surface-sterilized roots of Rhododendron mucronulatum, a plant species belonging to the Ericaceae family, collected from Mt. Minjujisan, Korea. This fungal strain was identified as Rhizodermea veluwensis based on its morphological characteristics and based on phylogenetic analysis of its internal transcribed spacer regions and large-subunit rDNA. R. veluwensis has not been previously reported in Korea, and for the first time, we report and describe it herein.

  • To produce ginsenoside-$Rg_3$ enriched yeast from ginseng-steaming effluent (GSE), Lipomyces starkeyi, which tends to grow well in GSE, was cultured in sterilized GSE and its growth and production of ginsenoside-$Rg_3$ were determined. Growth of L. starkeyi was 86.1 mg per g GSE and its ginsenoside-$Rg_3$ contents was 0.013 mg per g GSE.

난관불임술에 관한 임상적 고찰 (Clinical Study on Tubal Sterilizations)

  • A clinical analysis has been made on 717 cases of tubal sterilization which had been performed at the Dept. of Obstet. & Gynecol., Kyung Hee University Hospital from Jan. 1, 1976 to Dec. 31, 1980. The results are as follows: 1) Prominant age group consisted of those 26-30 years old with frequency of 43.9%, the average being 30.6 years old. 2) Women having 2 living children represented 52.4% of the total and the average No. of living children was 2.5. 3) According to the sex of their children, 29.7% of all cases had one son and one daughter. 12.1% of cases had no son, while 25.7% of cases had no daughter, which showed a trend of male preference. 4) 47.7% of total cases had not experienced artificial abortion before sterilization and the mean No. of artificial abortion was 1.8. 5) With respect to interval between last delivery and tubal sterilization, 76.1% of cases was sterilized within postpartum period (including-c-section) and 12.4% of cases was sterilized within 3 years. 6) The contraceptive methods prior to sterilization were 42.8% with no method used, 17.7% by condom, 16.6% by oral pills, 14.9% by IUD method. 7) 84.5% of puerperal sterilization operation was performed within 48 hours after bearing. 8) Sterilization procedures were coincidentally performed with appendectomy (36.7%), D&E (15.8%), perineorrhaphy (5.0%), salpingectomy (1.8%), and ovarian cystectomy (1.5%). 9) General anesthesia was performed in the majority cases (88.4%). 10) Complications after the procedure were encountered in 7.8% (56 cases), but no intensive medical care was required for these complications. 11) The failure (0.3%) resulting in intrauterine pregnancies occured after the laparoscopic sterilization.

김치 부재료가 젖산균 생육에 미치는 영향 (Effects of Kimchi Minor Ingredients on the Growth of Lactic Acid Bacteria)

  • 파, 마늘, 생강, 적생고추, 고추가루의 멸균 추출액의 농도가 2%와 4%가 되도록 첨가한 배지에서 김치의 주된 젖산균들인 Leu. mesenteroides와 Lac. plantarum의 생육을 조사하였는데, 모든 부재료가 Lac. plantarum의 생육을 저해하였으며 마늘은 이 균에의 저해효과가 가장 컸으며, 생강이 Leu. mesenteroides의 생육에 증진 효과를 보였고, 마늘이 역시 Leu. mesonteroides의 생육에 저해효과를 나타내었다. 마늘, 생강 및 고추가루의 연속분획추출 후 멸균액을 배지에 첨가해 역시 두균의 생육정도를 조사하였을 때 마늘의 부탄을 분획물이 두균의 생육에 저해효과를 보여 그 효과물질은 alkaloid나 flavonoid일 것으로, 또 생강과 고추가루의 물 분획물이 Leu. mesenteroides의 생육 촉진 효과를 나타낸 바 그 효과물질은 당류일 것으로 추정되었다.

Biodegradation of Diazinon by Serratia marcescens DI101 and its Use in Bioremediation of Contaminated Environment

  • Four diazinon-degrading bacteria were isolated from agricultural soil by using an enrichment technique. The biochemical analysis and molecular method including RFLP indicated that these isolates were identical, and one strain designated DI101 was selected for further study. Phylogenetic analysis based on 16S rDNA sequencing indicated that the strain DI101 clearly belongs to the Serratia marcescens group. The ability of the strain to utilize diazinon as a source of carbon and phosphorus was investigated under different culture conditions. The DI101 strain was able to completely degrade 50 mg/l diazinon in MSM within 11 days with a degradation rate of 0.226 $day^{-1}$. The inoculation of sterilized soil treated with 100 mg/kg of diazinon with $10^6$ CFU/g DI101 resulted in a faster degradation rate than was recorded in non-sterilized soil. The diazinon degradation rate by DI101 was efficient at temperatures from 25 to $30^{\circ}C$ and at pHs from 7.0 to 8.0. The degradation rate of diazinon was not affected by the absence of a phosphorus supplement, and addition of other carbon sources (glucose or succinate) resulted in the slowing down of the degradation rate. The maximum degradation rate ($V_{max}$) of diazinon was 0.292 $day^{-1}$ and its saturation constant ($K_s$) was 11 mg/l, as determined by a Michaelis-Menten curve. The strain was able to degrade diethylthiophosphate-containing organophosphates such as chlorpyrifos, coumaphos, parathion, and isazofos when provided as a source of carbon and phosphorus, but not ethoprophos, cadusafos, and fenamiphos. These results propose useful information for the potential application of the DI101 strain in bioremediation of pesticide-contaminated environments.
