본 연구는 찹쌀가루액에 효소처리 및 미생물 접종을 시킴으로써 유과의 제조시 수침과정을 거치지 않고도 유과를 만들수 있는 새로운 방법을 개발하기 위하여 시도되었다. 찹쌀 수침액에 분포된 미샐울은 Bacillus sp와 Lastobacillus spp.로 나타났다. 찹쌀 수침액에 인위적으로 상기 미생물을 배양하였을 대 유과를 제조하기 위한 최적 조건은 3$0^{\circ}C$에서 18시간 이었다. 이때 찹쌀수침액의 PH는 배양시간이 증가함에 따라 증가하였다. 이 찹쌀 수침액에서는 수침시간이 증가함에 따라 $\alpha$-amylase 활성이 증가하여 효소처리된 시료액의 효소 활성화 유사한 경향을 나타내었다. 유과의 팽화도는 효소처리시킨 혼합 접종처리 군을 제외한 모든 처리군에서 28일간 수침한것과 유사하게 나타났다. 경도와 peak수는 모든 처리순에서 28일간 수침시킨 대조군에 비해 유의적으로 더 낮게 나타났다.(P<0.05). 미세구조에서 기공수는 효소처리시킨 단독 접종군이 다른 모든 처리군에 비해 더 많은 기공수를 지니고 있었고 기공의 둘레 및 면적도 유의 적으로 낮은 수치를 나타내었다. .(P<0.05). 따라서, 수침공정을 대폭 단축할 수 있었으며, 향후 미생물 접종을 고려한 효소처리 조건을 정밀 분석한다면 수침공정이 없어도 유과의 품질특성을 나타내는것이 가능할 것으로 보인다.
In this study, experiments were conducted to determine the effect of different compost teas on plant growth reponses and yield of leaf lettuce. Compost tea is a liquid extract of compost obtained by mixing compost and water for a defined period of time. The pig manure and spent mushroom compost were made by steeping compost in water. Compost tea was aerated from 24 hours and molasses and kelp were added as supplements. The four types of compost were tested growth of lettuce. EC of animal manure compost tea was higher than that of spent mushroom compost tea. Mineral nutrients were significantly higher in animal manure compost tea compared with spent mushroom compost tea. Compost tea contains nutrient and a ranges of different organisms. The beneficial fungi and actinomycetes were prominent in a spent mushroom compost tea. Compost tea from animal manure had the higher numbers of total bacteria. The actinomycetes densities were high in spent mushroom compost tea. But actinomycetes were not founded in animal manure compost tea. The growth characteristics of lettuce in animal manure compost tea were higher than those of spent mushroom compost tea. And also SPAD value in leaf was high in plot treated with animal manure compost tea. The fresh yield of lettuce in animal compost tea was higher by 181% that of control plot. The effect of compost tea on growth of lettuce was largely attributable to mineral nutrient.
Eight samples of Korean two-rowed barley, 9 samples of North American barley and 3 samples of Korean six-rowed barley were analysed for 1,000 kernel weight, steeping time, germinative capacity, and protein content. The barley samples were malted with the same malting schedule and analyzed for malting loss, protein content, soluble protein, percent extract, wort viscosity, and diastatic power. The American barleys were higher in germinative capacity, percent extract and diastatic power than the Korean two-rowed barleys. The protein content ranged from 11.8 to 14.2% for the North American barleys and 9.7 to 15.5% for Korean barleys. The three Korean six-rowed barleys were lower in germinative capacity, percent extract and diastatic power, but were higher in wort viscosity than the Korean two-rowed barleys.

Barleys at different malting stages from steeping to 5 day germination were investigated for soluble, insoluble, and total arabinoxylans at three different extraction temperatures of 21, 45 and $65^{\circ}C$. Slight differences in total arabinoxylan levels in barleys were observed during malting stages. During germination, initially insoluble arabinoxylan could be more soluble, thus the solubilized arabinoxylan tended to increase until 4 day germination. The proportion of soluble arabinoxylan in germinating barleys was increased from ambient temp ($21^{\circ}C$) to 45 or $65^{\circ}C$. Two barley malt samples were selected at two different stages of germination, well-modified malt germinated for 96 hr and poorly-modified malt for 60 hr, and mashed isothermally at 45, 55, 65, or $75^{\circ}C$ for 2 hr. Increasing temperature over 45 to $75^{\circ}C$ slightly decreased the amount of arabinoxylan solubilized in wort. Arabinoxylan content of wort from well-modified malt was not significantly different from poorly- modified malt at all mashing temperatures.
Circadian susceptibility of sleeping induced by pentobarbital was observrd in male DDO mouse treated with phenobarbital and ginseng saponin. The pentobarbital elimination rate was also measured in the same animal. The mouse had been maintained for one week under 12 hours of artificial illumination extending from 06:00 to 18:00 hours alternating with 12 hours of darkness. During the period the animals were administered intraperitoneally with 100mg/kg of phenobarbital for three days or 10mg/kg and 100mg/kg of ginseng saponin for seven days. At 24 hours after last injection pentobarbital sleeping time and elimination rate were measured following intraperitoneal administration of 50mg/kg of pentobarbital sodium. In a control group treated with saline, the duration of pentobarbital-induced sleep varied with circadian rhythmicity, which had a trough at 02:00 hours of light phase and a crest at 14:00 hours of dark phase. And the elimination rate measured at 02:00 hours was faster than that at 14:00 hours. Pretreatment with phenobarbital markedly shortened the pentobarbital steeping time and abolished the circadian rhythmicity. Those were correlated with the increased pentobartital elimination by phenobarbital throughout light and dark phases examined. Ginseng saponin, given for seven days in a dose of 10mg/kg or 100mg/kg, did not affect the circadian rhythmicity of sleeping and the elimination rate. Sleeping time during light phase, however, was somewhat shortened in ginseng treated animals, which was not matched with the finding of unaltered elimination rate. It seemed that the central nervous system stimulating effect of ginseng saponin might be involved in the findings observed.
Different processing methods, including steeping, boiling, roasting, and pressure roasting were used to deactivate anti-nutritional factors and remove off-flavor present in legumes. The physical and textural characteristic of cookie made with the treated flours were examined. The lightness of roasted cowpea flour was higher than that of the other treated legume flours, whereas that of pressure-roasted mungbean flour was the lowest. The boiled and pressure-roasted legume flours exhibited substantially lower pasting viscosity since the starches in these flours were considerably gelatinized during the heat treatment. Steeped mungbean flour had a significantly higher final viscosity than the other treated legume flours. Cookies containing mungbean flour had a higher protein content but lower lipid content than those containing cowpea flour. Cookies made with cowpea flour had a greater hardness than those made with mungbean flour. Cookies containing roasted flour had relatively better color properties than did those containing flours that were treated using other methods.
In this study, we attempted to apply ultrasonic treatment for the preservative treatment of two softwood species, Korean pine and Japanese red pines to evaluate its effectiveness. Wood samples were submerged in oilborne preservative, copper naphthenate (NCU) and waterborne preservative, alkyl ammonium compound (AAC) and then treated with ultrasonic wave of 40 kHz, 400 W. After the treatment, the retention and penetration depth of these preservatives in the specimens were measured as a function of treatment time. Both the retention and penetration depth were continuously increased with increasing the treatment time up to 120 hours, where the retention reached about 95% by the application of AAC and the penetrating depth of 95% and 83% by the application of NCU, respectively for both species. The results of electronic microscopic observation showed that the improved retention capacity could be attributed to air deflation, wood extractive deflation working of ultrasonic wavelength, and destruction of wood pits which served as the pathway of preservatives. The results suggested that the use of ultrasonic treatment could be applied to thick wood veneers for the production of laminated wood products.
To prove the extension of shelflife of soybean curd(Tofu) steeped in the diluted solution of botanical antimicrobial agent and stored at 20$^{\circ}C$, such chemical & microbial properties as the contents of moisture, crude protein and crude fat, colony count and surface color of Tofu were investigated in comparison with the control. Tofu treated with botanical antimicrobial agents showed higher contents of moisture, crude protein and crude fat compared to those of the control Tofu through all the storage period. After 7 days of the storage period, cell count of coliform bacteria reach 75 x 103CFU/m1 in the control Tofu, whereas 13∼39 CFU/ml in Tofu treated with botanical antimicrobial agent Treatment of Tofu with botanical antimicrobial agent seemed to be a potential method to prolong the shelflife of processed Tofu.
Coptis chinensis extract and grapefruit seed extract, natural antimicrobial substances, were applied to the dipping treatment of strawberry and incorporated in the packaging films. Strawberry was steeped in the extract solutions of 50 ppm concentration and packed with the low density polyethylene(LDPE) films incorporated with 1% extracts. During the storage at 5$^{\circ}C$, the qualities of microbial counts, awぶy ratio, texture and chemical attributes were measured for the pretreated strawberry. The LDPE films incorporated with the extracts retarded the growth of aerobic bacteria, lactic acid bacteria and yeast that had been contaminated before the pretreatment, significantly lowed the decay ratio, and gave better retention of textural firmness. The chemical and physical qualities of strawberry were not affected by the packaging films. When strawberry was steeped in the extract solutions, the effects of the packaging film incorporated with the extracts on the qualities of strawberry were accelerated.
To investigate the status of farmers health management for health promotion, and for checking the effect of village health care center during 1 year, 746 subjects were selected with cluster method in 8 provinces of Korea. The most frequent group was 40th of age (39%) : elementary school graduates (32%) The self-conscious of health status tested with CMI (Cornell Medical Index) questionnaire, the subjects in the village of health care center had lower health status than those of conventional village. The farmers living in the village with health care center had longer agricultural work (p<0.05) and more frequency of spraying pesticides in the fields. The subjects of living the village of health care center were frequently exercise (34%) with health appliance use methods (30%), but the duration time of exercise was similar, Dietary habits and agricultural work condition were similar between two groups. For the fatigue recovery, steeping and bathing were most favorite methods, but exercise was lowest. It was significantly different between 2 groups the fatigue recovering methods, the subjects of village with health care center were more doing exercise (p<0.01), less sleeping (p<0.01) than those of conventional village. The working condition of self-estimated of farmers was not good, only 8.7% was thought pleasant condition. Of the various health factors, exercise, nutrition, and working situation would be more important. Considering on farmers exercise, it was very weak point for health management. The foundation and leading of the Farmers health care center was encouraged to farmers. For more effective operations, the experts education, easy and funny exercise program, and health promotion committee for administrators would be needed. The better systemic and continuous exercise programs should develop for associating livelihood. Funding for this project provided by the ministry of health and welfare of Korea.
