Assessment of foodservice quality and identification of improvement strategies using hospital foodservice quality model

  • The purposes of this study were to assess hospital foodservice quality and to identify causes of quality problems and improvement strategies. Based on the review of literature, hospital foodservice quality was defined and the Hospital Foodservice Quality model was presented. The study was conducted in two steps. In Step 1, nutritional standards specified on diet manuals and nutrients of planned menus, served meals, and consumed meals for regular, diabetic, and low-sodium diets were assessed in three general hospitals. Quality problems were found in all three hospitals since patients consumed less than their nutritional requirements. Considering the effects of four gaps in the Hospital Foodservice Quality model, Gaps 3 and 4 were selected as critical control points (CCPs) for hospital foodservice quality management. In Step 2, the causes of the gaps and improvement strategies at CCPs were labeled as "quality hazards" and "corrective actions", respectively and were identified using a case study. At Gap 3, inaccurate forecasting and a lack of control during production were identified as quality hazards and corrective actions proposed were establishing an accurate forecasting system, improving standardized recipes, emphasizing the use of standardized recipes, and conducting employee training. At Gap 4, quality hazards were menus of low preferences, inconsistency of menu quality, a lack of menu variety, improper food temperatures, and patients' lack of understanding of their nutritional requirements. To reduce Gap 4, the dietary departments should conduct patient surveys on menu preferences on a regular basis, develop new menus, especially for therapeutic diets, maintain food temperatures during distribution, provide more choices, conduct meal rounds, and provide nutrition education and counseling. The Hospital Foodservice Quality Model was a useful tool for identifying causes of the foodservice quality problems and improvement strategies from a holistic point of view.

Work Measurement of Dietetic Staff through Work Sampling Methodology in School Foodservice Systems (워크샘플링에 의한 학교급식 전담직원의 직무분석)

  • The purpose of this study was to determine the standard work time of dietetic staff through work sampling methodology in school flood service systems. Work measurement through work sampling methodology was conducted in five conventional, five commissary and five joint management flood service systems over two consecutive weeks in October 1999. Statistical analysis was performed on the SAS/Win 6.12 package program for Kruskal-Wallis test and multiple comparison. Observed data were satisfied with a confidence level of 95% and a confidence interval of $\pm$ 0.05. The results of this study can be summarized as follows. The actual time spent by dietetic staff members in conventional, commissary, joint-management flood servile systems was 2,394, 2,521 and 2,110 minutes per week, respectively. Transportation time of each flood service systeml and ILO allowance rate (11%) was applied. Thus, the standard work time per week of dietetic staff members in conventional, commissary, joint-management flood service systems was 2,746.14, 2,861.58 and 2,520.81 minutes, respectively. The standardized index was 1.04, 1.08 and 0.95 men in conventional, commissary, and joint-management flood service systems, respectively. Regardless of the school flood service system, those with "the duty of cooking and distribution management" had the longest labor time, while those with "duty of nutritional education" had the shortest labor time.

A Study on the Improvement of the Information Disclosure System in Central Administrative Agencies (중앙행정기관의 정보공개제도 운영 현황 및 개선 방안 연구)

  • This study aims to present the reorganization plan for the effective operation of the Information Disclosure System by researching on problems with regard to the system's actual operation. For that purpose, this study has examined issues by conducting an investigation regarding a survey by personnel in charge of the system as well as the status of the Information Disclosure System in central administrative agencies. By examining the issues presented, a number of problems were identified for which this study suggests plans for solutions. The solutions proposed in this study are as follows: a) all agencies must establish a department dedicated to information disclosure and improve their system to meet any increase in the amount of work by flexibly allocating human resources according to the workload, b) a uniform and standardized operation guide must be created, c) education programs with regard to the original Information Disclosure System should be expanded, and d) so on.

A Study on Domestic and Foreign Research Movement of the Eco-tourism Certification/Designation System and Its Application in Korea (국내·외 생태관광 인증/지정제도 동향 및 국내 제도 도입 방안)

  • This study was conducted to provide sustainable measures for conservation and management to protect valuable natural/ecological resources, offer differentiated quality assurance services for eco-tourism products, and explore measures for eco-tourism certification/designation systems. To achieve its goals, the study discussed domestic and overseas trends and literatures that concern eco-tourism certification/designation system and investigated case studies that were presently operational. A group of experts and a group of non-experts were surveyed separatedly to investigate the awareness of the national eco-tourism certification/designation system. The results from the investigation indicate that Europe, since the late 1990s to early 2000, has actively introduced a system that establishes and operates a dedicated institution, and European members have created a cooperation framework to formulate international partnerships and develop standardized assessment benchmarks to adhere to the goals of the system, the period for certification was designated from one year to five years, and renewals were granted based on periodic monitoring and reassessment. In Korea, from early 2000, the Ministry of Culture, Sorts and Tourism and other organizations have certified product quality and assessed travel products and national park tour programs. The certification period was established to be set between one and three years, and the vast majority were not reassessed. Upon investigating the results for awareness of national eco-tourism certification/designation system, a high number of respondents agreed with the need to establish a eco-tourism certification/designation system (90% of respondents), and the respondents cited eco-tourism quality assurance, conservation of value, means to maintain established institutions, and environmental education and information as reasons for needing a certification/designation system. In Korea, a certification/designation system for the eco-tourism industry is presently in operation, but the system regulates target institutions based on their characteristics. Therefore, this study proposes its suggestions via various categories, including designated institutions, designated purpose, designated subjects, designated organization, laws, regulations, and incentives.

A Survey on Public Health Doctor of Korean Medicine Participating in School Doctor of Korean Medicine Program (한의사 교의사업 활성화를 위한 사업 참여 공중보건한의사 대상 설문조사)

  • Objectives: This study provides basic data for activating the school doctor of Korean medicine (SDKM) program by conducting a questionnaire survey for public health doctor of Korean medicine (PHDKM) Methods: The survey questionnaire was produced by referring to the previous satisfaction survey studies for the Doctor of Korean medicine applying for the SDKM program (SDKMP). The survey questionnaire was composed of 10 questions regarding the satisfaction level, difficulties in progress, and suggestions for activation. The survey was conducted online for a total of 35 PHDKM applying for SDKMP, and 32 responses were collected. Results: Of the 32 subjects, 9 (28.1%) conducted the SDKMP. The total satisfaction level of the SDKMP was 3.69 ± 1.12 points. The lack of a standardized manual and information system was the most difficult in the program's progress (43.8%), followed by the bad cooperation of the public health centers (40.6%), and the lack of personal circumstances (40.6%). The establishment of a system to enlist cooperation with related institutions was suggested the most as a question for activating the SDKMP (71.9%), followed by the expansion of the SDKMP manual and guidance system (53.1%), and the expansion of publicity about SDKMP (37.5%). Conclusions: To activate the SDKMP in a public health environment, it is necessary to improve the system to enlist cooperation with related institutions. Also, the need to expand the standardized manual, the guidance system, and the education to PHDKM about SDKMP.

A Study on Improvement through Analysis of Problem on Physical Activity Promotion System(PAPS) (학생건강체력시스템(PAPS)의 문제점 분석과 개선방안에 대한 연구)

  • The purpose of this study is to analyze the problems of the Physical Activity Promotion System(PAPS) implemented in elementary, middle, and high schools in Korea and to prepare improvement measures. The data of the study was obtained through in-depth interviews, related papers, and press releases. The research participants of this study were 5 incumbent physical education teachers who directly instruct and measure PAPS at school and 5 college students who directly experienced PAPS. The results of the study are as follows. First, the problems that occurred in the educational environment of PAPS were students' indifference, teachers' passive guidance, and decreased physical education hours replaced by PAPS measurement days. Second, the problems occurring in the measurement environment of PAPS were errors due to measurement equipment, deviations due to different measurement locations, and differences in grades according to measurement items. Third, the problems that occur in the measurement process of PAPS are the lack of measurement personnel, the expedient physical fitness measurement, and the non-standardized measurement method. In order to improve these problems and successfully apply PAPS, the following improvement measures should be attempted. Details on this are as follows. First, teachers should inspire students' interest and interest in PAPS. Second, it is necessary to secure the reliability of the measurement result value of PAPS. Third, it is necessary to systematically supplement the school education system for PAPS measurement.

Exploring Ways to Improve the First Major Area of the Examination for Appointing Secondary Science Teachers with the Change of Educational Environment (교육환경 변화에 따른 중등 과학교사 임용시험의 1차 전공영역에 대한 개선 방안 탐색)

  • The purpose of this study is to examine the teacher expertise to be evaluated in the secondary science teacher employment test (TET, hereafter) in order to respond to changes in educational environments including the transition to competency-based curriculum, and ways to improve the first exam in major areas in the current TET. For this purpose, Delphi surveys and in-depth interviews were conducted with 18 professors of science education who have experience in the TET. According to the research results, teacher expertise such as subject teaching, student understanding, intelligence information utilization, community competencies, and so on were suggested. Ways to improve science content exam in the TET include securing fairness and validity by increasing the number of questions, strengthening the connection with the secondary school curriculum, updating assessment areas for certificate subjects periodically, etc. Ways to improve science education exam in the TET include research and development on the types of science education questions, introducing essay test to science education exam, development of a standardized curriculum on science education, etc. Based on the research results, the necessity of revising the curriculum for teacher training colleges, differentiating curriculum between teachers' colleges and natural science colleges, and reforming the teacher training system by introducing graduate school of education were suggested.

  • Since the specifications of public services in broadcasting-telecommunication convergence environment are not standardized, the public services should be developed and presented by each IPTV service provider, and therefore it is worried that public organizations and IPTV service providers may invest in the public services redundantly, which are managed inefficiently. To resolve those problem, in this paper, the service and network interfaces among multiple public organizations and multiple IPTV service providers and the interactive VOD-type public service providing system of one source multi-use based on ACAP-J are proposed. The proposed system can be utilized in the standard platform of the evolved new public services. And the used technologies can be utilized as a guide for the development of new services.

Effectiveness of nutrition education intervention focusing on fruits and vegetables in children aged six years and under: a systematic review and meta-analysis (유아 대상 과일·채소 영양교육 효과분석: 체계적 문헌고찰 및 메타분석)

  • Purpose: A systematic review and meta-analysis of nutrition educational intervention studies was performed to assess the association between nutrition education intervention and fruit & vegetable (F&V) preferences and nutrition knowledge in preschool children. Methods: The relevant studies of nutrition education intervention and F&V preferences and nutrition knowledge published from January 2000 to June 2020 were located using PubMed, Web of Science, Cochrane Library, Research Information Sharing Service, Korean Studies Information Service System databases, and lists of references. A random-effects meta-analysis was conducted to estimate the standardized mean difference with a 95% confidence interval (CI). Subgroup analyses were performed to identify the association between nutrition education and F&V preferences and nutrition knowledge. Results: The results show that the effect sizes (ES) of F&V preferences and nutrition knowledge of preschool children were 0.31(95% CI, 0.23, 0.39), and 1.69(95% CI, 1.27, 2.12), respectively. The result of subgroup analysis, nutrition education focused on F&V (F&V preferences, ES: 0.32; nutrition knowledge, ES: 2.09) presented a slightly larger effect than general nutrition education (F&V preferences, ES: 0.26; nutrition knowledge, ES: 1.62). As for the type of exposure to F&V, direct exposure education (F&V preferences, ES: 0.40) had a greater effect than indirect exposure (F&V preferences, ES: 0.26). This meta-analysis showed that nutrition education intervention had positive effects on the F&V preferences and nutrition knowledge in preschool children. Conclusion: In conclusion, from the meta-analysis and subsequent subgroup analysis, we found that varied types of nutrition education intervention had varying effects on F&V preferences and nutrition knowledge in preschool children.

A Study on The Development and Management of The IT Standard Contents for On-line Education Based on SCORM(Sharable Content Object Reference Model) (SCORM 기반의 온라인 교육 IT 표준 컨텐츠 개발 및 운영에 관한 연구)

  • To nurture skilled IT professionals required in the 21st information society, we have been faced to the need of learner-centered open lifelong education through the e-learning system that crosses the boundaries of time, space and geography. The object of this research is primarily as-is analysis of the IT contents in present cyber institutions, then making out the basic research data by to-be analysis and international standardization trend through benchmarking. Eventually this research intends to produce a prototype of the contents especially for the subjects related to the IT which is based on the modeling of e-Learning standard contents development model. It is possible that the final output of this project is used for the contents producing and operating data in cyber universities and institutions. This output also enhances the international competitiveness by the standardization and presents a standardized guideline to the domestic cyber education institutions.
