Storage Stability of Intermediate Moisture Deep-Fried Mackerel (고등어튀김 중간수분식품(中間水分食品)의 저장안정성(貯藏安定性))

  • This study indicated that mackerel flesh can be prepared as an intermediate moisture deep-fried product. The fillet were cut into $2{\times}2{\times}1.5cm$ (about 4g each): then submerged in an infusion solution (lg flesh: 1ml solution) containing 45.9% of water, 6% of sodium chloride, 40% of sorbitol, 2.4% of propylene glycol, 0.7% of potassium sorbate, 3% of sugar, 2% of monosodium glutamate, and $0.6m{\ell}$ of alcoholic extracts from red pepper, and heated for 10 min at $105^{\circ}C$. The infused flesh was drained for 15 min and then coated with batter and crumb. The pieces were deep fried in soybean oil for 3 min at $170^{\circ}C$ and cooled on absorbent paper. The initial water activity of the product was 0.86. Judging from the results of experimental data such as peroxide value, TBA value, viable cell count and sensory evaluation, the quality of products were stable for 50 days at room temperature ($25{\pm}2^{\circ}C$).

  • Encapsulating 1-octen-3-ol with alginates solution, the effects of physical properties (viscosity, emulsion activity, emulsion stability) of alginates solutin on the retention of 1-octen-3-ol in capsules were investigated. Only alginates solutions haying less than 350 cP in viscosity were capable to be adopted to spray dry. Adding citric acid to alginates solution in order to reduce its viscosity, the concentration of citric acid became higher, the viscosity of alginates solution were lower. Adding $0.1\% of citric acid could reduce viscosity of alginates solution to 150 cP. The viscosity of alginates solution after emulsifying showed higher value than that of solution before emulsifying, but its viscosity were within the possible ranges for spray drying. The lower viscosity of alginates solution were, EAI became higher but ESI and amount of remaining 1-octen-3-ol in capsules were lower, In reducing the viscosity of alginates solutions, heating time after adding citric acid were longer, the their viscosity became lower. Differences of viscosity of alginates solution after and before emulsifying were little, In encapsulating raw pine agaric with alginates solution, the adding amount of soybean oil increased, the amounts of remaining 1-octen-3-ol in capsules increased. After freeze drying the amount of remaining 1-octen-3-ol in alginates capsules prepared with raw pine agaric was higher than that after cold air flow drying.

Preparation and Evaluation of Liquid Suppository Containing Prostaglandin $E_1-loaded$ Microemulsion (프로스타글란딘 $E_1$ 마이크로에멀젼이 함유된 액상좌제의 제조 및 평가)

  • The purpose of this study is to develop a transurethral liquid suppository containing prostaglandin $E_1\;(PGE_1)-loaded$ microemulsion, which undergoes a phase transition to gels at body temperature. The effects of oils, ethanol as solvent and HCl as pH-controlling agent on the physicochemical properties of liquid suppositories composed of poloxamer P 407, P 188 and carbopol was investigated. The stability of $PGE_1$ and release of $PGE_1$ from liquid suppository were evaluated. Oils such as Neobee and soybean oil significantly decreased the gelation temperature but increased the gel strength of liquid suppository due to their strongly binding with the components of liquid suppository base. However, ethanol slightly did the opposite. The pH of liquid suppositories hardly affected the gelation temperature and gel strength due to addition of very small HCl (0.005-0.01%). A liquid suppository [$PGE_1/P$ 407/P 188/carbopol/Neobee/ethanol/HCl (0.2/14/14/0.4/7/2/0.005%)], which had the gelation temperature $(34.2{\pm}0.6^{\circ}C)$ and gel strength $(31.35{\pm}4.37\;sec)$ suitable for liquid suppository system, was easily administered and not leak out from the body. About 60% of $PGE_1$ was released out within 2 h from this formulation. It was shown that the release of $PGE_1$ was proportional to the square root of time, indicating that $PGE_1$ might be released from the suppository by Fickian diffusion. It was stable at $4^{\circ}C$ for at least 2 months. The results suggest that transurethral liquid suppository containing prostaglandin $E_1-loaded$ microemulsion is thought to be a convenient, safe and effective dosage form for $PGE_1$. However, it should be further developed as a more convenient and stable dosage form for $PGE_1$.

Enhanced Nasal Absorption of Ketoconazole by Inclusion with Cyclodextrin (시클로덱스트린과의 포접에 의한 케토코나졸의 비점막 흡수증가)

  • Inclusion complexes of ketoconazole(KT) with ${\alpha}^_$, ${\beta}^_$cyclodextrin(CD) and $dimethy1-{\beta}-cyclodextrin$ (CD) and $dimethy1-{\beta}-cyclodextrin(DM{\beta}CD)$ as nasal absorption enhancer were prepared in 1: 2 molar ratios by freeze-drying and solvent evaporation methods. In order to compare with the intrinsic absorptivity of KT in the jejunum(J) and the nasal cavity(N), the in situ simultaneous perfusion method was employed. The in situ recirculation study revealed that KT-CD inclusion complexes with the greater stability constant and the faster dissolution rate proportionally increased the absorption of KT in the J and N of rats. The rank order of apparent KT permeability$(P_{app}\;:\;cm/sec\;{\time}\;1O^{-5}{\pm}S.E.)$, corrected by surface area of absorption, was $5.10{\pm}0.3(N,\; KT-DM{\beta}CD)$ )> $4.13{\pm}0.4(N,\;KT-{\beta}-CD)$ )> $3.52{\pm}0.2(N,\;KT-{\alpha}-CD)$ )> $2.76{\pm}0.3(J,\; KT-DM{\beta}CD)$ )> $2.61{\pm}0.5(J,\;KT-{\beta}-CD)$ )> $2.42{\pm}0.4(J,\;KT-{\alpha}-CD)$ at pH 4.0. The in crease in permeability of $KT-DM{\beta}CD$ inclusion complex was 2.6 folds in the J and 4.5 folds in the N when the perfusing solution was changed from the buffer(pH 4.0) to saline. The absorption rate of $KT-DM{\beta}CD$ inclusion complex after nasal administration was more rapid than those of ketoconazole alone and $KT-DM{\beta}CD$ inclusion complex after oral administration to rats. In comparision with an oral administration of ketoconazole suspension in corn oil, the relative bioavailability was calculated 137.3% for the oral and 195.0% for nasal $KT-DM{\beta}CD$ inclusion complex in rats. The present results suggest that $KT-DM{\beta}CD$ inclusion complex may serve as a potential nasal absorption enhancer for the nasal delivery of ketoconazole.

Study on Skin Permeation of Tocopheryl Acetate Using Swollen Micelle (Swollen Micelle을 이용한 Tocopheryl Acetate 의 피부흡수 연구)

  • A study was performed to increase skin permeation of tocopheryl acetate, an oil-soluble component among tocopheryl acetate, salicylic acid, and niacinamide, which are the active ingredients of the anti-hair loss toner. As a method of transparently solubilizing tocopheryl acetate while containing salicyl acid and niacinamide, we used a swollen micelle structure that increased the size of the micelle formed by the aggregation of surfactants. The prepared swollen micelle solution contains three kinds of active ingredients, and poloxamer 407 and octyldodeceth-16 were used as surfactants to increase transparent properties and stability. In addition, isostearic acid was used as a co-surfactant to increase the size of micelles. To evaluate the physical properties of the prepared swollen micelles, turbidity at room temperature (25 ℃) was measured. The Franz diffusion cell method was used to evaluate the skin permeation rate of tocopheryl acetate among the hair-loss prevention components contained in swollen micelles. After 24 h, tocopheryl acetate showed a 6-fold improvement in skin permeation compared to the control group. Therefore, it can be seen that the swollen micelles developed in this study can be applied to hair-loss prevention products or solubilized formulations of various functional cosmetics.

  • The skin and fleshy substance on the net fiber of sponge-gourd fruit pressed mechanically was removed with 0.2% NaOH solution in $3{\sim}5$ hours. The treatment of 0.2% NaOH with 0.02% Monopol(non-ionogenic polyoxethylen derivative) as surfactnat and with 0.1% $Ca(OCl)_2$ as bleaching agent enhanced the effect to remove the fleshy substance and improve the quality of net fiber. Also, the wet hardness and tensile strength of net fiber were controlled by the crosslinkage of the fiber with glu tardialdehyde, glyoxal, and formalin, respectively. The net fiber was stable on the acid and alkaline solutions. Also the range of temperature to degradate the fiber was $338{\sim}385^{\circ}C$. These values indicated a fair stability. The improved net fiber can be used for raw material of bath, dish washing, oil and gas filter, and many kinds of decorations.

Establishment of Foliar Application Assays for Developing Natural Herbicides (천연물 제초제 개발을 위한 전식물체 수준의 경엽처리 검정법 확립)

  • This study was carried out to establish an improved bioassay system, whole-plant bioassay which is more effective in developing natural herbicides for foliar treatment such as herbicidal essential oils. Two bioassay systems using four weed species (Echinochloa crus-galli, Digitaria sanguinalis, Aeschynomene indica, and Abutilon theophrasti), spraying method and spotting method, were established. Spraying method is applicable if the amount of test compounds is enough, while spotting method is useful for the small amount of test compounds. The initial application rate was desirable at $2,500{\sim}5,000\;{\mu}g\;mL^{-1}$. Herbicidal activities were higher in the NOP treatment when compared to the Tween 20 treatment. To efficiently evaluate volatile compounds such as essential oils, if the compound-treated pots were incubated in dew chamber for about 10hrs, better results were obtained in the degree and stability of herbicidal responses. When the efficiency of bioassay systems established in this study was compared, the spraying method was minimized four times to the conventional method that has beed used for screening of synthetic compounds in KRICT. On the other hand, in the spotting method, screening for development of a natural herbicides was possible even in level of 1/100 test volume and 1/200 amounts of test compound compared to the spraying method.

Analysis of energy security by the diversity indices: A case study of South Korea (다양성지수를 통한 에너지안보수준 분석: 한국사례를 중심으로)

  • How to determine the extent of national energy security? In this paper, we estimate it by comparative analysis of South Korea and other OECD countries in terms of energy diversity (fuel diversity). Energy security consists of 4 key factors such as availability, accessibility, acceptability, affordability. Especially the importance of accessibility can grow as local imbalance of supply and demand increases. As a proxy of the accessibility, fuel diversity can be a significant indicator to estimate a measure of energy security. In this paper, we use Shannon-Wiener index to measure energy diversity. If fuel diversity increases, the stability of energy security also should increase, because of the smoothing effect to lessen dependence on key energy sources. In 2012 Korean growth rate of H-index (energy diversity) is 18.38%, which is higher than other OECD countries. However, Korean H-index itself is 1.93, lesser than other countries. Shift from oil to coals/gas within fossil fuels has more impact on H-index than weight transition from fossil fuels to renewable energies in Korea. We conclude that more renewable energy is an effective solution to achieve higher energy diversity and ultimately higher energy security as the same as the German case.

  • Carbon dioxide ($CO_2$) is the greatest contributor among the major greenhouse gases covered by the Kyoto Protocol. Therefore, substantial efforts for the control and reduction of $CO_2$ emissions, including increased efficiency of fossil fuel energy usage, development of energy sources with lower carbon content, and increased reliability on alternative energy sources, are being performed worldwide. However, development and industrial application of $CO_2$ sequestration techniques are needed to meet the requirements of the Kyoto Protocol. Among the $CO_2$ sequestration methods developed, geological sequestration methods such as the storage in deep aquifers, deep coal seams and oil and gas reservoirs and the mineral carbonation is considered most favorable because of its stability and environmental effectiveness. In this review, geochemical concepts and technologic development of geologic sequestration technology, especially the storage in deep aquifers and the mineral carbonation, are discussed. The weakness and strengths for each of geologic sequestration methods, are also reviewed.

  • When fish meat is washed for the processing of surimi, about 50ff of lipid in the fish meat is removed from the fish meat to the effluent. The removed lipid was easily recovered by centrifugation or filteration of wastewater washed fish meat. Then, the recovered lipid was utilized as a material of mayonnaise sauce processing. The major fatty acids in the recovered lipids are $C_{16:0},\;C_{18:0},\;C_{16:1},\;C_{20:5},\;and\;C_{22:6}$ Polyenoic fatty acids were composed of $33.6\%$ to total fatty acids. When the recovered lipid was substituted for soybean oil in processing of mayonnaise sauce, the maximum percentage of substitution ratio presumed to be $30\%$ according to viscosity, color difference, and emulsion stability evalution for the substituted ones.
