Preparation and Stabilization of an O/W Emulsion Using Liquid Crystalline Phases (액정상을 이용한 O/W형 에멀젼의 제조 및 제형 안정화에 관한 연구)

  • Liquid crystalline phases were formed from acylglutamate; polyglyceryl-10 myristate and glycerine mixture and they were used as a base material for preparing an O/W emulsion. When an oil phase is added into the liquid crystalline phases, it was inserted into the dispersed liquid crystal droplets rather than stayed outside the liquid crystals, which can be known by the fact that the size of liquid crystal droplets increases with the increasing oil phase content. Along with the increase in the droplet size, the complex modulus increases from 100 to 350 pascals and the loss angle decreases from 60 to 24 degrees, from which it can be known that the increase in the internal phase volume results in the increase in the elastic property of oil in liquid crystalline-phases (O/LC). When the water phase was lastly added into the O/LC phase, the emulsification occurred to form a O/W emulsion and the averaged particle size of the O/W emulsion changes from 22.5nm to 538nm with the addition of water phase. The results from the droplet size measurements and stability tests under accelerated conditions such as high temperature show that the obtained O/W emulsion is very consistent with time.

  • DMA-co-DAMA were synthesized from 2-diethylaminoethyl metacrylate and dodecyl-metacrylate containing long chain hydrocarbon group with hydrophilic and hydrophobic radicals. To facilitate water emulsification,acrylic copolymer was cationized by acetic acid to produce acetated acrylic copolymer. The structures of the synthesized copolymer and acetated copolymers were confirmed by IR, NMR, and molecular weight was measured by GPC, and C. H. N elemental analysis. Acetated acrylic copolymers were perfectly emulsified in water and showed increased emulsion stability. Polymer dispersion for cement modifier(PDCM-PDD) was prepared by blending of the guaternized acrylic copolymer synthesized above sodium silicate sodium gluconate oleic acid and triethanol amine. The result with prepared polymer dispersion of cement modfier was examined, and it was found that excellent waterproffing effect; Water permeability ratio is 0.44 under the water pressure of $100g/cm^2$ and 0.55 under $3kg/cm^2$, and water absorption ratio is 0.36~0.47 and 1.02 compressive strength ratio at mixed ratio of water/PDCM-PDD is 45 times.

Synthesis of Carboxylate-Based Anionic surfactant from Coconut Oil Source and Characterization of Interfacial Properties (코코넛 오일로부터 유래된 카르복실레이트계 음이온 계면활성제의 합성 및 계면 특성에 관한 연구)

  • In this study, a carboxylate-based anionic surfactant SLEC-3 was prepared from coconut oil and the structure was elucidated by using FT-IR, 1H-NMR and 13C-NMR analysis. Measurements of interfacial properties such as critical micelle concentration, static and dynamic surface tensions, emulsification index, and foam stability have shown that SLEC-3 is better in terms of interfacial activity and more effective in lowering interfacial free energy than those of SLES, which has been widely used as a conventional anionic surfactant in the detergent industry. Biodegradability, acute oral toxicity and dermal irritation tests also revealed that SLEC-3 surfactant possesses excellent mildness and low toxicity, indicating the potential applicability in detergents and cleaner products formulation.

  • In this study, water in oil (W/O) emulsion fuel was prepared with surfactant mixture of OIMS90 and NP12 by varying ratio of water to bunker-C oil, surfactant concentration and composition, emulsification time, stirring intensity, temperature and mixing time. Diesel engine performance and exhaust emissions were measured and analyzed with prepared emulsified fuel and compared with those measured using bunker Coil. The results indicated that bunker C emulsion fuel stabilized by surfactant mixture of OIMS90 and NP12 is efficient in reducing emissions of particulate matter, $NO_2$, CO, $CO_2$ and $SO_2$. The biggest reduction in exhaust emission was achieved by using emulsion fuel prepared by OIMS90/NP12 = 4 : 6, 500 ppm of total surfactant concentration and 10% water content at $80^{\circ}C$. Boiler efficiency test measured with emulsion fuel showed excellent energy efficiency compared with bunker C oil.

Effects of Propolis Extract on Quality and Storage Characteristics of Chicken Patty (프로폴리스 추출물이 닭고기 패티의 품질 및 저장특성에 미치는 영향)

  • This study was conducted to investigate the effect of propolis extract on chicken patty. the meat quality characteristics and storage properties of chicken patties without propolis extract were compared to those with 0.1%, 0.2%, and 0.4% propolis ethanol extract. The addition of propolis extract resulted in increased fat and ash content in the chicken patties. There were no differences in pH, water holding capacity, cooking loss, and texture profile analysis, indicating that the propolis extract did not negatively affect emulsification stability. However, sensory evaluation showed that the higher the concentration of propolis extract added, the lower the total preference of the chicken patties. Over a storage period, patties treated with propolis extract exhibited a lower total microbial count, and volatile basic nitrogen (VBN) content compared to those without propolis extract. Therefore, the addition of propolis to chicken patties does not reduce emulsion stability but improves storage properties. However, the unique flavor of propolis decreases the preference for chicken patties, so the amount must be considered when using it.

  • In this study, ASCO SLES-430 surfactant was synthesized by adducting 3 moles of ethylene oxide and 1 mole of propylene oxide to lauryl alcohol followed by a sulfation process, and the structure of the synthesized ASCO SLES-430 was elucidated by performing FT-IR, 1H-NMR and 13C-NMR analyses. Interfacial properties such as critical micelle concentration, static surface tension, emulsification index, and contact angle were measured, and environmental compatibility indices such as oral toxicity and skin irritation were also estimated for ASCO SLES-430. Both results were compared with ASCO SLES-226 and ASCO SLES-328 SLES surfactants possessing 2 moles and 3 moles of ethylene oxide, respectively. In particular, both foaming ability and foam stability were evaluated for ASCO SLES-430 and compared with ASCO SLES-226 and ASCO SLES-328, which have been widely used in detergent products, in order to test the potential applicability of ASCO SLES-430 in detergent product formulation for a small capacity built-in washing machine.

Formation and Stability of Nanoemulsion Containing CoQ10 by Mechanical Emulsification (코엔자임 Q10을 함유하는 나노에멀젼의 제조)

  • Coenzyme Q10 (CoQ10) is a natural lipid cofactor with antioxidant and anti-aging properties as cosmetic and food ingredients, involved in cellular energy metabolism. Here, nano-emulsions with CoQ10 were fabricated with lecithin, ethanol, oil, and sorbitan monostearate (Arlacel 60), as major components. Phase inversion emulsion method with ultrasonicator was utilized in producing CoQ10 solution, and stabilization effects from lecithin and ethanol and other diverse perturbation factors were evaluated over time. Physical properties of the emulsion were characterized such as its size, surface charges by zeta-potential, and the overall structures. Optimal concentrations of CoQ10 and Arlacel 60 were 0.8% and 3%, respectively, for producing the smallest sizes of nanoemersions in a 100 nm diameter with best morphology. No notable changes in the size were observed over 7 days from Ostwald ripening, when the concentration of Arlacel 60 was higher than 2%. Even after 270 days at room temperature, the size of nanoemulsions maintained as 115 nm in diameter, revealing only a 10% increase with high degrees of long termed stability and substantiality. In addition, changes in the surface potential occurred possible due to the flocculation effect on the nanoparticles.

Effects of Wheat Fiber on the Quality of Meat Batter (Wheat Fiber 첨가가 Meat Batter의 품질에 미치는 영향)

  • The purpose of this study was to investigate the effect of wheat fiber as a replacement for isolated soy protein (ISP) or concentrated soy protein (CSP) on the quality characteristics of meat batter. Meat batter formulations were prepared with 2% levels of ISP, CSP, or wheat fiber. The pH values of each formulation were not significantly different (p>0.05). The L-values of meat batter containing wheat fiber, ISP, or CSP were higher than the control, however the a- and b-values were lower than the control (p<0.05). Relative to the control meat batter, the water holding capacity, viscosity, hardness, gumminess, and chewiness of meat batter containing ISP, CSP, or wheat fiber was significantly higher than the control (p<0.05). All supplemented meat batters had significantly lower cooking loss and emulsification stability than the control (p<0.05), with no significant difference among the supplemented meat batters. The results of this study show that the use of wheat fiber as an ISP or CSP replacer does not affect the overall quality of meat batter.

  • Guar gum is an edible starch extracted from Cyamopsis tetragonolobus and used as an auxiliary ingredient to enhance the viscosity and adhesiveness of food and improve its emulsification stability. Here, characteristics of fish surimi mixture with various added amounts (0, 0.23, 0.45, 0.67, and 0.89 wt%) of guar gum were analyzed. In unheated surimi with guar gum, the pH decreased as the content increased. In the color values analysis, only the b* (yellowness) increased depending on the amount of added guar gum. The firmness increased with increasing guar gum content, and no significant difference in adhesiveness was observed. In heated surimi, a* (redness) and b* decreased in a content-dependent manner, and L* (lightness) was higher than that of unheated surimi. Regarding physical properties, the highest values of hardness, gumminess, and chewiness were observed in the heated surimi with 0.67 wt% of guar gum. However, no significant change was observed in springiness and cohesiveness. Results of sensory evaluation indicated that with higher guar gum content, only the hardness increased slightly, and significant differences were absent in the remaining parameters. Thus, surimi with 0.67 wt% of guar gum is considered to be optimal for 3D printing.

Purification and Characterization of Biosurfactant from Bacillus sp. DYL130 (Bacillus sp. DYL130 균주의 Biosurfactant의 정제 및 특성)

  • Bacillus sp. DYL130 producing biosurfactant was isolated from soil samples in the Duck-yu mountain and identified as Bacillus sp. by analysis of 16S rDNA sequence. Purification of the biosurfactant was performed by using affinity chromatography and TLC. The biosurfactant of culture medium from Bacillus sp. DYL130 was eluted with 100% methanol using affinity chromatography. To remove methanol, a rotary evaporator was used and enrichment sample was dissolved in alkaline water(pH 10). The purified biosurfactant was identified by TLC. It was confirmed that the Rf value of the biosurfactant was 0.78. Antifungal activity against Botrytis cineria was showed the strongly activity as active antagonist. Maximum emulsification activity and stability were obtained from soybean oil. The critical micelle concentration (CMC) of purified biosurfactant was 35mg/l and the purified biosurfactant inhibited biofilm forming by Bacillus sp..
