Comparisons of Properties, In Vitro Anti-Mutagenicity, and Anti-Cancer Effects of Short-Term Fermented Soybean Foods (Chungkukjang, Shuidouchi, and Natto) (콩 발효 식품(청국장, 물두시, 낫또)의 특성, In Vitro 항돌연변이 및 항암 효과)

  • The general characteristics, anti-mutagenicity, and in vitro anti-cancer effects of Chungkukjang, Shuidouchi, and Natto were studied. Representative brands of the three types of soybean-based short-term-fermented foods were chosen and evaluated. Chungkukjang showed the highest amino and ammonia type nitrogen contents, although Natto exhibited lower levels, and Shuidouchi showed the lowest pH and high acidity. Anti-mutagenicity was assessed by the Ames test and in vitro anti-cancer effects were assessed in HT-29 human colon cancer cells. Chungkukjang exhibited the highest anti-mutagenicity and anti-cancer effects. Based on these results, Chungkukjang showed the best functional effects, and Shuidouchi showed better functional effects than Natto. Even if such efficacies depend on raw materials and processing methods, our comparison of three types of foods from representative brands shows that Chungkukjang was the best soybean-derived product in terms of overall quality, followed by Shuidouchi and Natto. These results might be due to differences in duration of fermentation, processing method, and quality of raw materials, but further research on the basis of ethnic culture and administration method of each nation should follow.

Hepatoprotective Effects of Potato Peptide against D-Galactosamine-induced Liver Injury in Rats

  • The effect of some peptides on hepatoprotection and cecal fermentation against D-galactosamine (GalN)-treated rats was studied. In acute hepatic injury tests, serum alanine aminotransferase (ALT), aspartate aminotranferase (AST), and lactic dehydrogenase (LDH) activities were remarkably increased after injection of GalN. However, potato and soybean peptides significantly decreased GalN-induced alterations of serum ALT and AST activities. Hepatic thiobarbituric acid-reactive substance (TBARS) concentration in GalN-treated groups fed potato and soybean peptides was significantly lower than that in GalN-treated control group. Hepatic glutathione level in the GalN-treated group fed potato peptide was significantly higher than that in GalN-treated control group. Furthermore, cecal Lactobacillus level in GalN-treated groups fed potato and soybean peptides was significantly higher than that in GalN-treated control group, and cecal short-chain fatty acid concentrations in GalN-treated group fed potato peptide were significantly higher than in GalN-treated control group. These results indicate that potato peptide may improve the cecal fermentation and prevent the GalN-induced liver damage in rats.

  • In order to study for Onion ethanolic extract on the Heavy Metal Elimination and antioxidation, the peroxide values of oil and eliminated metal were analyzed. The results are follows: It was very effective as a retardant for autoxidation processing of the soybean and olive oil by the Onion ethanolic extract. Quercetin in the Onion ethanolic extract was affected as a ligand for chelating with some metals. Effect of Salt Contents on High Pressure Inactivation of Microorganism in Doenjang (염 함량이 된장의 초고압 살균에 미치는 영향)

  • High pressure processing (HPP) technology was applied to inactivate the microorganisms in Doenjang (soybean paste) and the effects of salt concentration on the HPP inactivation of microorganisms were analyzed. The microorganisms in Doenjang containing low salt content showed greater sensitivity to HPP than those with high salt content. HPP inactivation effects decreased as salt concentration of Doenjang increased. The HPP sensitivity decreased in the order of fungi, yeasts, bacteria in terms of microorganism type. The HPP of Doenjang at 6,500 atm for 40 min inactivated most yeasts and fungi, indicating that the HPP technology was applicable to control the microorganisms in Doenjang, especially with a low level of salt.

Microbiological Safety During Processing of Food Ingredients Supplied to Elementary School Food Services in Daegu and Gyeongbuk Provinces (대구.경북지역 초등학교 급식에 공급되는 식재료의 제조.가공단계별 미생물 평가)

  • The purpose of this study was to evaluate changes in the microbiological safety of food ingredients supplied to elementary school food services during processing. For this purpose, fifteen food ingredients and twelve factories were chosen in the provinces of Daegu and Gyeongbuk. Total plate counts and coliform counts were reduced in the ingredients after washing, but they increased after packing. After packing, the following levels of total plate counts and coliforms were detected, respectively: peeled bellflower roots ($1.2{\sim}3.6{\times}10^6$, $3.1{\sim}4.6{\times}10^5$ CFU/g), blanched vegetables ($5.6{\times}10^3{\sim}2.0{\times}10^5$, <5~$1.5{\times}10^4$ CFU/g), soybean curd (<5~$5.4{\times}10^3$, <5~$2.2{\times}10^3$ CFU/g), buckwheat starch jelly (<5, <5 CFU/g), soybean sprouts ($1.2{\times}10^6{\sim}1.8{\times}10^7$, $2.4{\times}10^5{\sim}4.3{\times}10^6$ CFU/g), mackerel ($2.2{\times}10^2$, $1.3{\times}10^2$ CFU/g), chicken ($3.8{\times}10^4$, $6.7{\times}10^2$ CFU/g), pork ($6.7{\times}10^2$, <5 CFU/g), and beef ($9.4{\times}10^2{\sim}5.2{\times}10^4$, <5~$2.1{\times}10^3$ CFU/g). Generally, the microbiological safety of the food ingredients was better during the processing stage than during the other stages, with the exception of packing. Staphylococcus aureus, E. coli, and Bacillus cereus were detected in small amounts on the peeled bellflower roots, chicken, and pork, respectively. These results indicate that peeled bellflower roots, chicken, and pork need to be sanitized at the washing stage and cross contamination must be prevented at the packing stage.

A review of canola meal as an alternative feed ingredient for ducks

  • This review provides an overview of the published data on the canola meal and its suitability for duck as an alternative plant-origin protein source to soybean meal. Canola meal is a legume origin protein source containing comparable amino acid profile to soybean meal and rich in essential minerals and vitamins. Nonetheless, it is known to contain less in energy content than soybean meal. Factors like field conditions and processing methods creates compositional variations among canola meal. Presence of anti-nutritional factors such as phenolic substances, phytate and glucosinolates which are known to reduce growth performance in livestock animals, are the major drawbacks for canola meal to be a competitive plant-origin protein source in the feed industry. This review is focused to address i) nutritional characteristics and feeding value of canola meal for ducks and ii) impacts of feeding canola meal on performances of ducks.

Optimization of Sweet Rice Muffin Processing Prepared with Oak Mushroom (Lentinus edodes) Powder (표고버섯 첨가 찹쌀머핀의 최적화 및 품질특성)

  • The purpose of this study was to bake sweet rice muffins with oak mushroom ($Lentinus$ $edodes$) powder. The process included substituting sweet rice flour for cake flour and adding oak mushroom powder. This study determined the optimal mixing conditions of oak mushroom muffins by adjusting the amounts of oak mushroom powder, whole eggs, and soybean oil. The mixing conditions for the oak mushroom muffins included 3 categories: oak mushroom powder (X1), whole eggs (X2), and soybean oil (X3) by Central Composite Design (CCD) which was optimized by Response Surface Methodology (RSM). Oak mushroom muffin formulation was optimized using rheology. Yellowness (p<0.001) and redness (p<0.05) displayed a linear model pattern, whereas lightness (p<0.05) was represented by a quadratic model. Among the sensory properties, variables that appeared to show significant values such as appearance (p<0.5), texture (p<0.5), and overall quality (p<0.5) were used to identify optimums. The result of mechanical properties showed significant values in gumminess (p<0.5) and chewiness (p<0.5). The numerical and graphical methods used in this study determined that the optimum formulation for oak mushroom powder sweet rice muffins was 8.75 g of oak mushroom powder, 235.95 g of whole eggs, and 19.93 g of soybean oil.

Studies on Changes of Isoflavone and Nutrients during Germination of Soybean Varieties (발아기간에 따른 대두 품종별 이소플라본 및 영양성분 변화)

  • The purpose of this study is to investigate changes of isoflavone and nutrients during germination of soybean varieties and to determine the optimal germination condition for soybean processing. After 5 days' germination, water content of the soybeans increased in the order of Poongsannamoolkong> Sinpaldal#2> Black#1> Jinpumkong. Ash content was higher in the order of Poongsannamoolkong> Sinpaldal#2> Jinpumkong> black#1 soybean. All varieties of the soybean samples increased in ash content during germination. Crude fat content was higher in the order of Poongsannamoolkong> Black#1> Jinpumkong> Shinpaldalkong. Crude protein content was higher in the order of Shinpaldalkong> Black#1> Jinpumkong> Poongsannamoolkong. Polypeptide subunits separated from the SDS-PAGE of the entire proteins were showing comparatively high level in the range of 2-16KD in Jinpumkong and 2-21KD in Poongsannamoolkong till the first day of germination, 2-25KD in Sinpaldal#2 till the second day, and 6-27KD in Black#l till the third day. Changes of total isoflavone contents during germination showed different patterns in soybean varieties: Jinpumkong and Black#1 had the highest total isoflavone content on the fourth day of germination, Poongsannamoolkong and Sinpaldal#2 on the first and the second day of germination, respectively.

Inheritance of 7S α' - subunit Protein in Soybean Seed (콩의 7S α' - subunit 단백질의 유전)

  • Soybean is an important sources of plant proteins for human and animal nutrition. The use of soybean proteins has been expanded in the food industry due to their excellent nutritional benefits. But, Soybeans contain allergenic proteins that cause allergies to sensitive individuals. ${\beta}$-conglycinin(7S globulin) and glycinin(11S globulin) are the major components of storage protein in soybean. ${\beta}$-conglycinin consists of three subunits, ${\alpha}^{\prime}$, ${\alpha}$, ${\beta}$ and exhibits poorer nutritional and food processing properties than glycinin. There is a great deal of interest in the development of soybean lines with reduced amounts of ${\beta}$-conglycinin. The objective of this study was to determine the inheritance of ${\alpha}^{\prime}$-subunit protein in 7S globulin. F2 population was developed from the cross of "Jinpumkong2ho"(${\alpha}^{\prime}$-subunit presence) and PI506876(${\alpha}^{\prime}$-subunit absence) parent. Total 98 of F2 seeds were obtained and analyzed for the segregation of ${\alpha}^{\prime}$-subunit protein by SDS-PAGE. Among 98 F2 seeds, 70 F2 seeds showed ${\alpha}^{\prime}$-subunit protein and 28 F2 seeds did not show ${\alpha}^{\prime}$-subunit protein. The segregation ratios of 3 : 1 for presence and absence of ${\alpha}^{\prime}$-subunit protein were observed(${\chi}^2=0.667$, P=0.414). These data indicate that presence and absence of ${\alpha}^{\prime}$-subunit protein is controlled by a single major gene and might be useful for strain selection of 7S protein reduced soybean.

Changes of Chemical Properties during Liquid Fertilizer Processing using Different Organic materials (유기물을 이용한 액비 제조시 발효액의 화학적 특성 변화)

  • This study was carried out to investigate the chemical characteristics of different organic liquid fertilizer during fermentation at plastic house in Chungbuk Agricultural Research and Extension Service. Chicken dung, soybean meal, and rice bran were used for nutrient sources. The obtained results from this study were summarized as follows; Total nitrogen contained the highest in soybean meal as 55 mg·kg-1, and phosphate and potassium contained high in chicken dung and rice bran in organic liquid fertilizer materials. The pH of chicken dung was near 7.0, that of soybean meal and rice bran indicated acidity(pH 3.8~4.4). The electrical conductivity of chicken dung consistently increased during fermentation, and that of soybean meal and rice bran increased and decreased early season and increased at late incubation period. Hydrogen sulfide gas occurrence of chicken dung was 3,200 mg·L-1 at early season and 1,600 mg·L-1 at late incubation period, and that of soybean meal and rice bran treatments were not or very low concentration of hydrogen sulfide gas during manufacturing period. The nitrogen and calcium content of organic liquid fertilizer were the higher in chicken dung and soybean meal than rice bran. The phosphate and magnesium content of rice bran was the high as 5.6 g·kg-1 and 1.5 g·kg-1, respectively. There was no difference in potassium content among the different liquid fertilizers during fermentation.
