Algae-based antioxidant containing selenium yeast (Economase®) enhanced the growth performance, oxidative stability, and meat quality of broiler chickens

  • Objective: An experiment was conducted to determine the effect of algae-based antioxidant containing Se yeast (EconomasE®) on the growth performance, visceral organ weight, meat quality, and oxidative stability of broiler chickens. Methods: Nine hundred sixty, day-old male broiler chickens (Cobb, 43.97±0.55 g) were divided into three dietary treatments and allocated into 12 deep litter pens in a completely randomized design giving 4 replicate cages for each treatment. Three dietary treatments were: i) control (CON, basal diet with sufficient nutrient), ii) vitamin E (VitE, basal diet supplemented with 100 IU VitE), and iii) Algae-based antioxidant containing Se yeast (EcoE, basal diet supplemented with 0.2% algae-based antioxidant containing Se yeast: EconomasE®). Maize soybean meal based basal diets were formulated to meet or exceed the nutrition requirement for broiler chickens. Chickens were fed ad-libitum experimental diets during the 42 days experiment period. On days 21 and 42, body weight and feed intake were measured to calculate the feed conversion ratio of the chickens. Intestine and visceral organs were measured together with meat quality and oxidative stability on days 14 and 42. Results: Chickens fed with EcoE showed improved (p<0.05) growth performance, meat quality, and higher (p<0.05) oxidative stability compared to the chicken fed on CON. Moreover, broiler chickens fed with EcoE showed similar (p<0.05) growth performance with better (p<0.05) meat quality and higher oxidative stability compared to the broiler chickens fed VitE (p<0.05). Conclusion: The algae-based antioxidant containing Se yeast can be supplemented into commercial broiler diets as a substitution of VitE while maintaining growth performance with enhancing meat quality and oxidative stability of the broiler chickens.

Energy concentration and phosphorus digestibility in meat meal, fish meal, and soybean meal fed to pigs

  • Objective: The objectives of the present study were to determine digestible energy (DE), metabolizable energy (ME), and standardized total tract digestibility (STTD) of phosphorus (P) in meat meal (MM) and to compare these values with those in fish meal (FM), and soybean meal (SBM) fed to pigs. Methods: Two experiments were conducted to determine energy concentrations and STTD of P in MM, FM, and SBM fed to growing pigs. In Exp. 1, DE and ME in the 3 test ingredients were measured using 24 barrows with initial body weight (BW) of 77.7±8.3 kg. A corn-based diet and 3 diets containing corn and 22% to 30% of each test ingredient were prepared. In Exp. 2, the STTD of P in the 3 test ingredients was measured using 24 barrows (90.9±6.6 kg BW). Three diets were formulated to contain each test ingredient as the sole source of P. Results: In Exp. 1, the DE and ME values in MM (3,310 and 2,856 kcal/kg dry matter [DM]) were less (p<0.05) than those in FM (4,121 and 3,572 kcal/kg DM) and SBM (4,390 and 4,032 kcal/kg DM). In Exp. 2, FM (64.3%) had greater (p<0.05) STTD of P than SBM (44.8%) with MM (55.8%) having intermediate STTD of P. Conclusion: The MM contains less energy concentrations compared with FM and SBM, and digestibility of phosphorus in MM does not differ from that in FM and SBM.

한국식단의 식품배합을 통한 단백질의 질적상승효과 (A Study on the Enhancement of Protein Quality by Food Combinations in Korean Diet)

  • A study on the balance of essential amino acids in Korean diet and further investigation on quality of protein through optimum combination of foods using the least square method based on FAO/WHO (1973) provisional score patterns were carried out The results of the optimum gross combination are summarized as follows: 1) The first limiting amino acids of the Korean diet was found to be methionine and cysteine based on both whole egg and FAO/WHO (1973) provisional score patterns. 2) Weight ratios between rice and beef, chicken, pork, rabbit meat are 7 : 3, 4 : 1, 4 : 1, and 3 : 1. The amino acid score and the least amino acid are 100(phe+tyr), 99(thr), 111(trp), and 109(leu) for each combination. This result indicates that pork and rabbit meat can be high quality protein sources for the rice eating people. 3) Weight ratios between rice and anchovy, saury, ark shell, pollack, cuttle fish, tuna and herring are 2 : 1, 5 : 1, 3 : 2, 3 : 1, 3 : 1, 4 : 1, and 3 : 1. 4) Weight ratios between potato and rice, wheat flour are 8 : 1 and 24 : 1. Lysine, the limiting amino acid of rice and wheat flour can be complemented by combining these with potato. 5) It is possible to apply this idea on typical Korean dishes. For example, in case of soybean-sprout rice the optimum combinations of rice : soybean-sprout : pork and rice : soybean-sprout : beef are 4 : 1 : 1 and 11 : 1 : 5. It is of utmost importance to pursue further more desirable combinations with more complex food items and transform the result obtained by the computer analysis into more practical terms for practical use.

The Effect of Dietary Fermented Soybean on the Growth Performance and Meat Quality of Pigs

  • This study investigated the effects of fermented soybean (FS) on growth and meat quality in pigs. A total thirty-six pigs were divided into 2 groups (2 treatment$\times$18 pigs each) and fed the experimental diets for 4 wk as follows: control (FS free); and T1 (FS 1%). The pigs in T1 had a higher feed efficiency compared with pigs fed control diets. pH was also significantly higher in the T1 group (p<0.05). Water-holding capacity measured in T1 was slightly higher than that of the control. Cooking loss in T1 was significantly lower than controls (p<0.05). CIE $L^*$ and CIE $b^*$ value were significantly higher in the control (p<0.05), but CIE $a^*$ value of T1 was higher than control (p<0.05). The drip loss of T1 were significantly lower than controls (p<0.05). Sensory characteristics of the treatment group showed higher than controls (p<0.05). These results showed that FS could be served as a favorable feed additive and feedstuff for enhancing pork quality.

Physicochemical and Sensory Properties of Restructured Jerky with Four Additives

  • This study was carried out to evaluate the effect on properties of restructured jerky by the addition volume of additives. The treatments were divided into glutinous rice flour, potato starch, soybean and acorn powder. Moisture content, water activity ($a_w$), thiobarbituric acid reactive substances (TBARS), color, yield and sensory evaluation were performed. The moisture contents of four types of restructured jerkies were in the range of 8.92-12.47%, and were lower than that of the control (17.92%). Water activity tended to decreased with increasing addition of all treatments. The restructured jerkies containing glutinous rice flour, potato starch, soybean and acorn powder had lower TBARS than the control. The drying yield tended to increase with increasing amount of additives. In the sensory evaluation results, the highest overall acceptability was found in jerky containing glutinous rice flour, potato starch, and acorn powder when the addition was 9%, while that for soybean powder was determined to be 5%. These results suggest that 9% additions of glutinous rice flour, potato starch or acorn, or 5% soybean powder are optimal addition volumes for the preparation of restructured jerkies.

런천미트 통조림의 품질비교 (Quality Comparison of Luncheon Meats)

  • 국내에서 런천미트라고 통칭되는 돈육통조림의 품질 비교를 위하여 시중에서 유통되는 4개국 8개회사의 제품 12가지를 분석하였다. 아질산염 함량은 제품간에 다양한 수준을 보여주었으나 모두 낮은 수준이었으며, 소디움은 한두개의 제품을 제외하고는 비슷한 수준이었다. 사용된 원료육의 품질비교를 위하여 콜라젠 함량과 총육색소 함량을 분석하고 전기영동으로 순수한 돈육과 비교하였다. 수입품에서는 런천미트와 chopped meat 사이에는 차이가 있었으며, 국내산에서는 대부분 비슷하였다. 수입품과 국내산 비교시에는 국내산은 콜라젠 함량이 수입품의 chopped meat와 비슷한 수준이었으나 총육색소 함량은 월등히 높았다. 전기영동상으로는 런천미트나 chopped meat 제품 혹은 기타제품 모두의 돈육함량을 정량적으로 비교하기가 매우 곤란한 것으로 보인다. 일반성분상으로는 국내산이나 수입품 모두 런천미트가 다른 제품보다 탄수화물 함량이 높고, 국내산 런천미트의 품질은 수입품 런천미트나 chopped meat 제품의 혼합상태로 판단된다. 따라서 국내에서도 런천미트라는 저가제품의 품질규격이 확립되어야 수입품과의 가격경쟁력을 가질 수 있을 것이다.

Ingestive Behavior and Nitrogen Balance of Confined Santa Ines Lambs Fed Diets Containing Soybean Hulls

  • The objective of this study was to assess the effect of substituting corn with soybean hulls on the ingestive behavior and nitrogen balance of Santa Ines lambs. A total of 25 lambs with an initial body weight of $20{\pm}2$ kg at approximately six months of age, sheltered individually in stalls ($1.10m{\times}1.0m$), considering an entirely casual experimental delineation. Soybean hulls were substituted for corn at 0, 250, 500, 750, and 1,000 g/kg of dry matter (DM). The time spent feeding, ruminating, masticating, and resting was not affected by the substitution of corn with soybean hulls. In fact, the feeding efficiency in g DM/h and the rumination efficiency in g DM/bolus increased linearly with soybean hull substitution in the feed. Although the nitrogen balance was not altered by the use of soybean hulls as a substitute for corn in the diets of Santa Ines lambs, the N ingested and N digested expressed in g/d, N retained as a percentage of that ingested, and N retained as a percentage of that digested displayed quadratic behavior. In conclusion, corn can be substituted with soybean hulls up to 1,000 g/kg of dry matter in the concentrate, without changing the ingestive behavior and nitrogen balance.

설문조사를 통한 식이섭취 유형과 동맥경화 위험인자에 관한 연구 (A Study on Dietary Intake Pattern and Risk Factors of Atherosclersis in Korean healthy Adults by Dietary Survey)

  • This study was conducted to investigate correlation between soybean and their products consumption and risk factors for atherosclerosis in the healthyKorean adults. Health behaviors such as smoking, exercise, alcohol consumption and dietary patterns and nutrient intakes of 193 healthy adult subjects aged from 26 to 69 were assessed by using interview and semiquantitative food frequency questionnaire. The BMI, blood pressure and biochemical parameters of blood were examined as well as preferences for taste and family history of disease. Data were expressed as quartile according to soybean and their products consumption. The average daily soybean and their product consumption for 1st, 2nd, 3rd, and 4th percentile group were 36, 78, 112, and 182g, respectively. The more consumption of soybean and their products, the more intake of energy, protein, lipid, fiber, Ca, cholesterol as well as frequency of exercise, smoking and drinking. Serum TG, total cholesterol and LDL-cholesterol and AI as risk factors of atherosclerosis were positively correlated with smoking and drinking (p<0.05). Especially, serum TG was positively correlated with hypertension and BMI (p<0.01). But, no correlation between exercise, salty taste, meat preference, soybean products consumption and atherosclerosis risk factors was found, which means that life styles such as smoking and drinking rather than dietary habits might influence atherosclerosis in healthy adults. In conclusion, present soy products consumption should be increased by way of developing new generation soy products in order to exert anti-atherosclerotic effect by soybean in human.

육가공품(肉加工品)중 단백질의 전기영동(電氣泳動) 패턴 (Electrophoretic Pattern of Specific Proteins in Meat Products)

  • 여러가지 육가공품(肉加工品)중 특정 단백질 원료의 첨가여부를 판정하여 변조식품(變造食品)을 검출하는 한 방법으로서, 각종 육류단백질, non-meat protein, 어육(魚肉)가공품을 대상으로 disc SDS-Poly acrylamide gel electrophoresis의 사용 가능성을 실험하였다. Total protein fraction에 대한 전기영동 결과 복잡하고 많은 band를 보여 각 시료에 고유한 특성을 찾아보기 어려웠다. Low salt-soluble protein fraction에서는 total protein fraction 에서 보다 band 수가 상당히 감소함을 보였고 각 단백질 원료에 대하여 보다 고유한 band pattern을 나타내었다. Acetone-insoluble protein fraction 에서는 non-meat protein의 경우 육류단백질과 상당히 다른 경향을 나타내었고. 소세지 원료의 가열처리에 의하여 단백질의 band수와 양이 감소하였다. 따라서 적당한 단백질 추출조건(抽出條件)을 설정하여 전기영동을 실시하면, 특정(特定) 단백질을 첨가한 변조식품의 검출이 가능해질 것으로 생각된다.

고주파가열을 이용한 정어리 발포건조제품의 가공 I. 첨가물의 배합 및 가공방법 (Dehydration of foamed sardine-starch paste by microwave heating. (Formulation and processing conditions))

  • Sardine ant mackerel so called dark muscled fish have been underutilized due to the disadvantages in bloody meat color, high content of fat, and postmortem instability of protein. Recent efforts were made to overcome these defects and develope new types of product such as texturized protein concentrates and dark muscle eliminated minced fish. Approach of this study is based on the rapicl dehydration of foamed fish-starch paste by dielectric heating. In process comminuted sardine meat was washed more than three times by soaking and decanting in chilled water and finally centrifuged. The meat was ground in a stone mortar added with adequate amounts of salt, foaming agent, and other ingredients for aid to elasticity and foam stability. The ground meat paste was extruded in finger shape and heated in a microwave oven to give foamed, expanded, and porous solid structure by dehydration. Dielectric constant ($\varepsilon$′) and dielectric loss ($\varepsilon$") vcalues of sardine meat paste were influenced by wavelength and moisture level. Those values at 100KHz and 15MHz were ranged 2.25∼9.86 ; 2.22∼4.18 for $\varepsilon$′ and 0.24∼19.24 ; 0.16∼1.25 for $\varepsilon$", respectively, at the moisture levels of 4.2∼13.8%. For a formula for fish-starch paste preparation, addition of 20∼30% starch (potato starch) to the weight of fish meat, 2∼4% salt, and 5∼10% soybean protein was adequate to yield 4∼5 folds of expansion in volume when heated. Addition of egg yolk was of benefit to micronize foam size and better crispness. In order to provide better foaming and dehydration, addition of 0.2∼0.5% sodium bicarbonate foaming agent, was proper to result in foam size of 0.5∼0.7mm and foam density of 200∼400/$\textrm{cm}^2$ which gave a good crispness.
