This study investigated the effect of oxidized soybean oil in the diet of young chickens on growth performance and intestinal oxidative stress, and indices of intestinal immune function. Corn-soybean-based diets containing 2% mixtures of fresh and oxidized soybean oil provided 6 levels (0.15, 1.01, 3.14, 4.95, 7.05, and $8.97meqO_2/kg$) of peroxide value (POV) in the diets. Each dietary treatment, fed for 22 d, had 6 replicates, each containing 30 birds (n = 1,080). Increasing POV levels reduced average daily feed intake (ADFI) of the broilers during d 1 to 10, body weight and average daily gain at d 22 but did not affect overall ADFI. Concentrations of malondialdehyde (MDA) increased in plasma and jejunum as POV increased but total antioxidative capacity (T-AOC) declined in plasma and jejunum. Catalase (CAT) activity declined in plasma and jejunum as did plasma glutathione S-transferase (GST). Effects were apparent at POV exceeding $3.14meqO_2/kg$ for early ADFI and MDA in jejunum, and POV exceeding $1.01meqO_2/kg$ for CAT in plasma and jejunum, GST in plasma and T-AOC in jejunum. Relative jejunal abundance of nuclear factor kappa B ($NF-{\kappa}B$) P50 and $NF-{\kappa}B$ P65 increased as dietary POV increased. Increasing POV levels reduced the jejunal concentrations of secretory immunoglobulin A and cluster of differentiation (CD) 4 and CD8 molecules with differences from controls apparent at dietary POV of 3.14 to $4.95meqO_2/kg$. These findings indicated that growth performance, feed intake, and the local immune system of the small intestine were compromised by oxidative stress when young broilers were fed moderately oxidized soybean oil.

Considerable beneficial effects on osteoporosis from soy intake in postmenopausal women are being reported (Murkies et al.1998, Arjmandi et al. 1996). Isoflavones(IF), one of phytoestrogenic substances in the soybean, have been suggested for the effect. Our preliminary study showed that even the young chicks fed IF-rich diet tended to have higher bone ash content than those fed IF-poor diet. IF have been reported to decrease bone ash content than those fed IF-poor diet, IF have been reported to decrease bone loss by reducing bone resorption. Soybean meal has been one of the most important protein sources in poultry diets. We assume that the IF intake through dietary soybean meal could give meaningful influences on the birds. This study was carried out to determine effects of dietary IF from soybean sources on bone development in young chicks. Soy protein concentrate (SPC, IF-poor)and an IF concentrate(Phyto-Nutramin) were formulated together with purified-type ingredients to provide three different levels(25, 240 and 480 mg/kg) of total IF. Control diet(240 mg/kg) was prepared with isolated soyprotein(ISP, IF-rich). The diets were fed to 96, 3-day old, layer-type, male chicks, divided into 4 treatments with 3 replications for 3 weeks. Chicks fed the ISP diet had better gain/feed ratios than fed the SPC diets. Birds fed the diets with higher levels of IF tended to show higher values in serum total and ionized Ca% and tibial bone density, length % ash, stiffness and strain. This trend however, appeared less significant at the end of third week. No noticeable differences in sizes of comb and testicle and serum alkaline phosphatase activities were observed among the dietary groups. These results suggest that dietary isoflavones from soybean sources could be associated with chemical composition and physical properties of bone in sizes of comb and testicle and serum alkaline phosphatase activities were observed among the dietary groups. This study was conducted to monitor the carbendazim residues in soybean and mungbean sprouts using LC-MS/MS method. Eighty-two samples were collected from markets in western Seoul. No carbendazim was detected in mungbean sprouts, however, it was detected in 6 among 59 soybean sprout samples showing a 10.2% of detection rate. Among these 6 carbendazim- detected soybean sprout samples, five exceeded the maximum residue limit presenting 83.3% of violation rate. The mean concentration in the detected samples was 0.063 mk/kg (0.012 ~ 0.104 mg/kg) and 5 of the 6 detected samples came from bulk sold products. None of the samples came from domestic products; three were from imported products and 3 were from unidentified sources. Risk assessment for the carbendazim from soybean sprout dietary intake was deemed safe and at less than 1 %Acceptable Daily Intake.
The use of semiquantitative food frequency questionnaires to estimate dietary intake has become widespread in nutritional epidemiologic studies. It had been suggested that knowledge about a person's usual portion size of each meal in addition to consumption frequency will improve the accuracy of this method. This study was performed to investigate the dietary intake status(nutrient, food, and dish intake) and one portion size of commonly consumed food and dishes to develop a semiquantitative food frequency questionnaire that will be used to expore the relationship between the incidence of cardiovascular disease and diet in Korean women after menopause. Intake of food or dish in 123 elderly women were measured by 3-day food records in March to May, 1996. The results obtained in this study were summarized as follow : 1) Calcium, vitamin A, and vitamin E intakes were less adequate than Recommended dietary allowances(RDA). 2) The subjects who consumed more than 20% of the energy from fat were 35% and the subjects consumed dietary cholesterol more than 300mg were 18$\%$. 3) The most frequently consumed foods or dishes by the subjects were Korean cabbage kimchi〉cooked rice, well-milled〉laver〉apple〉strawberry〉mixed rice〉soybean soup. 4) The major dish groups which contributed to most daily nutrient intakes were cooked rice, Korean cabbage kimchi, soybean soup because of large amount and high frequency of intake although they do not contain large amount of most nutrients. 5) One portion size of commomly consumed foods and dishes in elderly women was different from one portion size suggested in the Korean nutrition society. This study provides information for the design of data-based semiquantitative food frequency questionnaire. for Korean elderly women. This study was performed to investigate anti-microbial activity of soybean extract against oral microbes, and to determine the minimum inhibition concentration (MIC) for microbes causing oral diseases. The soybean extract was prepared using ethyl acetate and it was treated with 16 types of oral microbes at a concentration of 5.00 mg/ml (0.5%). The MIC of soybean extract for three major microbes causing oral diseases was determined. The anti-microbial activity and MIC were measured using broth dilution method. Significant reduction of microbial activities of 9 types oral microbes when the soybean extract was added to the broth compared to the control (p<0.01). The extract showed higher anti-microbial activity against some anaerobic strains (P. gingivalis and P. intermieia). S. mutans, which causes dental caries, showed MIC at a concentration of 40 mg/ml for the soybean extract. P. gingivalis, which causes adult periodontal disease, showed MIC at a concentration of 20 mg/ml for the extract. C. albicans, which causes denture stomatitis and angular stomatitis, showed MIC at a concentration of 20 mg/ml for the extract. These results indicate that soybean extract showed anti-microbial effort against 9 types of oral microbes, and the anti-microbial effect of the extract against oral microbes was stronger against fungi than against bacteria. The anti-microbial mechanism of soybean extract against oral microbes should be investigated, and more research for clinical application is required at a level of actual intake.
The effects of raw and processed small black soybean powders on dietary fiber content and gastrointestinal function in rats were investigated. The crude oil, protein, and ash contents of raw small black soybean powder were not significantly different from those of processed small black soybean powders. The germination process increased soluble and insoluble dietary fiber contents significantly, as compared to raw small black soybean powder. The germinated small black soybean powder diet led to a significantly different food intake than the basal diet in both normal and loperamide-induced constipated rats. The body weight gains of the experimental groups, however, were not significantly different from that of the basal diet groups for both the normal and loperamide-induced rats. The gastrointestinal transit times and fecal weights for normal and loperamide-induced rats consuming the processed small black soybean powder diet were significantly different from those on a basal diet. These results suggest that the processes of cooking and germinating the small black soybean might contribute to acceleration of fecal excretion in both experimental normal and constipation model rats.
The objective of this study was to investigate the effect of enzymolytic products of soybean meal (ESBM), as one of the protein sources in the diet, on the growth performance, nutrient digestibility and immune function of weaned piglets. Soybean meal produced by bioprocessing with fermentation and enzymolysis contains reduced anti-nutritional factors and improved protein utilization. A total of 240 weaned piglets (Duroc${\times}$Landrace${\times}$Yorkshire, $9.01{\pm}0.22\;kg$ body weight) were randomly allocated to 4 treatments with 6 pens per treatment and 10 piglets per pen. The diets were based on corn-soybean meal and ESBM partially replaced soybean meal and soybean protein isolate at the inclusion level of 5, 10 or 15% in the basal diet. Feed intake and body weight were measured weekly. On days 24 to 27, faeces of each replicate were proportionally collected to determine the nutrient digestibility. On day 28 of the experiment, one piglet from each replicate was slaughtered humanely to collect immune organs. The results showed that inclusion of ESBM increased (p<0.05) the final weight, daily feed intake and daily gain of weaned pigs compared with the control diet, and ESBM at the inclusion levels of 10 and 15% improved (p<0.05) the feed/gain compared with the control diet. There were no differences (p>0.05) in daily feed intake among the levels of ESBM, but increasing the levels of ESBM from 5 to 15% improved (p<0.05) the final weight, average daily gain of pigs and feed/gain. The inclusion of ESBM at 5 to 15% increased (p<0.05) the digestibility of crude protein (CP) by 5 to 16%, and ESBM at 15% increased (p<0.05) the digestibility of digestible energy (DE), Ca and P compared with the control diet. ESBM increased (p<0.05) the relative weights of thymus and mandibular lymph nodes by 57.7 and 29.6%, respectively. The percentages of T lymphocytes, CD4+ and CD8+ in peripheral blood of weaned piglets were also increased (p<0.05) by feeding ESBM. The results suggest that ESBM can be a better protein source in improving growth performance, nutrient digestibility and immune function of weaned piglets.
The experiment was conducted for a period of 56 days with twelve Bangladeshi bull calves of average body weight of $127.20{\pm}11.34$ kg. The calves were divided into 3 groups having 4 animals in each. The animals were fed urea-treated rice straw designated as A) 4% urea-treated rice straw, B) 4% urea+4% soybean-treated rice straw and C) 4% urea+6% soybean-treated rice straw. In addition, all the animals were supplied 2 kg green grass, 350 g Til-oil-cake and 100 g common salt per 100 kg body weight of animals. Straw was treated with 4% urea solution and soybean meal at 4 and 6% were added to treated straw and kept for 48 h in double layer polythene bags under anaerobic condition. Urea treatment improved crude protein (CP) content of rice straw from 2.68 to 8.70% and it was further increased by 10.74 and 12.12% with the addition of 4 and 6% soybean meal. Dry matter (DM) intake (kg) was higher (p<0.05) in C (4.2) followed by B (4.1) and A (4.0). Crude protein intake was significantly higher (p<0.05) in group B and C than group A. Total live weight gains were 20.2, 24.8 and 25.6 kg for calves of group A, B and C respectively (p<0.01). The addition of soybean meal to treated rice straw did not affect the coefficients of digestibility of DM, OM, EE and NFE. However, CP and CF digestibility were significantly higher in group B and C (p<0.05). The values for digestible crude protein (DCP), digestible ether extract (DEE), digestible nitrogen free extract (DNFE) and total digestible nutrients (TDN) were significantly (p<0.05) higher in diet C and B in comparison to diet A, but there were no significant difference in digestible organic matter (DOM) and digestible crude fibre (DCF) value among the groups. It may be concluded that 4% urea treated rice straw can be fed to growing bull calves with 2 kg green grass and a small quantity of concentrate without any adverse effect on feed intake and growth. Moreover, soybean meal at 4 and 6% can be added to urea treated rice straw at the time of treatment for rapid hydrolyzing of urea, which resulted an improvement in nutrient digestibility and better utilization of rice straw for growth of growing bull calves.
The Kimchi intake of elementary students in both school and home is decreasing due to their westernized eating habits which have been affected by the rapid economic growth and industrialization in our modem society. The purposes of this study were to examine the influence of menu selections on the Kimchi intake rate and to provide basic data for an appropriate Kimchi serving size to reduce the plate-waste rate. The results showed that the average daily intake rate of Kimchi of low-grade students was 58.2%, equating to 6${\sim}$18 g, compared to 64.6% for high-grade students, equivalent to 13${\sim}$24 g. Correlation analysis of the intake rate of menu items and Kimchi showed that the Kimchi intake rate increased with increasing total meal intake rate, rice intake rate, soup intake rate, rice mixed with grains intake rate, clear soup intake rate and soybean-paste soup intake rate, but that it decreased as the intake rate of seasoned uncooked vegetables of high-grade students increased. This study is expected to be utilized as a solution to increase the Kimchi intake rate of elementary school students, and also to determine the proper serving size per person on the menu items by grade.
This study was conducted to detennine the dietary and lifestyle factors related to bone the mineral density (BMD) of postmenopausal women with decreased BMD. The subjects (N =163) were recruited from women who visited a orthopedic clinic for BMD check up. A trained dietition interviewed subjects individually to obtain data about dietary behavior, consumption frequency of foods known as main dietary source of calcium and potassium, and clinical symptoms. The risk factors were identified by correlation and multiple regression analysis of variables. The mean age of the subjects was 66.8 yews. Most of them showed low levels of education and monthly income. The mean age of menarche and menopause were 17.2 and 48 year, respectively. The mean menopause duration was 18.7 year. Most of the consumption of calcium was centered to vegetable foods. Education level were positively correlated (r =0.272, P < 0.05) with BMD whereas age, menarch age, menopause duration, number of children were negatively correlated (r=-0.355, r=-0.240, r=-0.283, r=-0.193, respectively, p < 0.05) with BMD. The consumption of soybean, radish were positively correlated (r=0.187, r=0.158, respectively, p < 0.05) with BMD. Potassium intake with rice showed significantly negative correlation with BMD (r =-0.189, P < 0.05), but calcium intake with brown seaweeds, bean sprouts were positively correlated (r =0.247, r =0.254 respectively, p < 0.05) with BMD. Protein intake with roasted pork was also positively correlated (r =0.216, P < 0.05) with BMD. Multiple regression analysis showed that the most prominent negative predictor influencing the BMD was age. Minor negative factors influencing the BMI were age of menarche, potassium intake from rice. But the significantly positively factors influencing the BMD were consumption of radish and soybean intake, education, and protein intake with roasted pork. In conclusion brown seaweeds, radish or soybeans can be promoted as cheap foods replacing milk and milk products for menopausal women with low income.
