Effects of Temperature and Relative Humidity on Water Soluble Vitamin Contents in Commercial Vitamin Tablet (저장 온도 및 상대습도가 비타민 정제 중 수용성 비타민 함량의 변화에 미치는 영향)

  • Effects of temperature and relative humidity on contents of water-soluble vitamins (vitamins $B_1,\;B_2,\;B_3,\;B_6$, and C) of two commercial tablets ("Multivitamin Dandelion" and "Chewable vitamin C") were investigated. When stored at various temperatures (25, 35, and $45^{\circ}C$) with cap, all measured vitamins were stable and degraded very slowly during 24 weeks of storage; low relative humidity (11% RH) without cap also provided stability during storage period. At higher relative humidities (75 and 100% RH), contents of all water-soluble vitamins, except vitamins $B_2\;and\;B_3$, decreased significantly at early storage period. These results showed that stability of water-soluble vitamins is highly dependent on relative humidity rather than storage temperature.

Investigation of Water-Soluble Vitamin (B1, B2, and B3) Contents in Rice, Noodles, and Sauces (밥, 면, 소스류에 존재하는 수용성 비타민 B1, B2 그리고 B3 함량 검토)

  • In this study, the contents of soluble vitamins B1 (thiamin), B2 (riboflavin), and B3 (niacin) in 13 kinds of rice, 11 kinds of noodles, and 15 kinds of sauces were identified. The limit of detection (LOD) and limit of quantification (LOQ) were checked to determine the reliability of the experimental results, and the accuracy of the results through the standard reference material (SRM 1849a) was verified to show excellent indicators. As for thiamin, japchaebab (stir-fried glass noodles with rice) was found to contain the highest content among rice dishes, makguksu (buckwheat noodles) among noodle dishes, and tomato spaghetti sauce among sauces. Riboflavin was identified as having the highest content in slightly spicy jajangbab (black-bean sauce with rice), bibimguksu (spicy noodles) for noodles, and spicy curry with turmeric for sauces. Niacin was highest in content in the deep and rich flavors of spicy chicken-fried rice, janchiguksu (banquet noodles), and black-bean sauce, respectively. As a result of checking the amount of recommended daily intake of water-soluble vitamins for Korean adult men and women, the highest content of riboflavin was 217.40% for men and 271.75% for women. Through this study, we are going to establish a database of nutrients for the water-soluble vitamins contained in rice, noodles, and sauces to provide the necessary dietary data concerning the content of the water-soluble vitamins contained in foods for daily recommended intake.

Determination of Water-Soluble Vitamins by Free Solution Capillary Electrophoresis (모세관전기영동을 이용한 수용성비타민의 분석)

  • This study was designed to investigate the method of the simultaneous determination of water-soluble vitamins (thiamine, ascorbic acid, riboflavin, folic acid, cyanocobalamine, pyridoxin, nicotinic acid) by free soloution capillary electrophoresis. Factors affecting on the separation were pH of the buffer, applied voltage and temperature. On-column detection at 254 nm allowed accurate and reproducible determination of these compounds. All these compounds were separated within ca. 8 min with fused silica capillary at 20 kV.

Study on the Additional Effect of Fat-Soluble Vitamins to Antioxidative Action of Ginseng Saponin (인삼(人蔘)사포닌의 항산화작용(抗酸化作用)에 대한 지용성(脂溶性) 비타민의 첨가효과(添加效果))

  • This study was to demonstrate the additional effect of fat-soluble vitamins on inhibitory action of Korean ginseng (Panax ginseng C. A. Meyer) saponin to lipoperoxide formation in vitro and in vivo. The ginseng saponin and vitamins were added to the substrate of linoleic acid and incubated on a shaking water-bath at $60^{\circ}C$, and the inhibitory action on lipoperoxide formation was examined by measuring the TBA value (532 nm), POV (500 nm) and EDA (electorn donating ability to ${\alpha}$, ${\alpha}$-diphenyl-${\beta}$-picrylhydrazyl at 525nm) for in vitro. The ginseng saponin and vitamins were administered to Sprague-Dawley rats (♂, 100~120g) orally, and the inhibitory effect on lipoperoxide formation was examined by measuring the TBA value in vivo. EDA to DPPH of ginseng saponin added with vitamin A and D were higher than that of ginseng saponin only. Ginseng saponin added with vitamin A and D inhibited strongly lipoperoxide formation of initial step by extension of induction period in vitro. Fat-soluble vitamins such as vitamin E and A were approved the additional effect on inhibitory action of lipoperoxide formation in vitro. The additional effect of fat-soluble vitamins to ginseng saponin for inhibitory action of lipoperoxide formation was effective vitamin E and D for blood, vitamin A and E for liver in vivo.

Formulation of Multivitamin Solutions for Infants (유아용 종합비타민 액제의 제제 설계)

  • In order to formulate aqueous multivitamin solutions containing both oil-soluble (A, D, E) and water-soluble vitmains ($B_1,\;B_2,\;B_6,\;B_{12}$, C and niacinamide) in 1ml-dose, the effects of various additives such as cosolvents (propylene glycol, polyethylene glycol, glycerin), a sweetener (sorbitol) and a surfactant (Cremophor$^{\circledR}$ RH40) on the solubility of oil-soluble vitamins in water were evaluated. Cremophor$^{\circledR}$ RH40 showed the excellent capacity on the solubilization of oil-soluble vitamins, and the simultaneous addition of cosolvents and surfactant resulted in synergetic effects on the solubilization of oil-soluble vitamins. The effects of the combination of the cosolvents and sweetener on the stability of multivitamin solutions were also evaluated by determining the amount of vitmain A and $B_1$ remained in the solutions after storing at $40^{\circ}C$ for 9 weeks. The formulation consisting of Cremophor$^{\circledR}$ RH40 15%, PG 20%, and sorbitol 20% resulted in the best stability of vitamin A and $B_1$. The stability of vitamin A and $B_1$ in this formulation was evaluated at 50, 60, and $70^{\circ}C$ up to 40 days. The shelf-lives of vitamin A and $B_1$ in the formulation, calculated using the Arrhenius equation, were 1,521 days and 475 days at $20^{\circ}C$, respectively.

Carnitine and/or GABA Supplementation Increases Immune Function and Changes Lipid Profiles and Some Lipid Soluble Vitamins in Mice Chronically Administered Alcohol

  • This study evaluated the effects of carnitine and/or GABA supplementation on immune function, lipid profiles and some vitamins in mice chronically administered alcohol. BALB/c mice were fed with either AIN-76 diet (N), control diet plus alcohol (4 g/kg bw, E), E plus 0.5 g/kg bw carnitine (EC), E plus 0.5 g/kg bw GABA (EG), or E plus 0.5 g/kg bw carnitine plus 0.5 g/kg bw GABA (ECG) for 6 weeks. Administrations of the carnitine and/or GABA prevented alcohol-induced increases in triglyceride concentrations in serum and liver. However, there was no difference among the supplemented groups. Serum vitamin E concentration was higher in mice supplemented with EC and EG, but not in mice given ECG. Phagocytic activity of peritoneal macrophages was increased in EG group compared with E group. The subpopulations of murine splenocyte's TH cells were increased significantly in EC and ECG groups. These data suggest that immune function, lipid profiles and some immune-related lipid soluble vitamins were positively changed by supplementation of carnitine or GABA, but do not show any synergistic effect of mixed supplementation.

Lactobacillus rhamnosus CBT-LR5 Improves Lipid Metabolism by Enhancing Vitamin Absorption

  • Probiotics provide a symbiotic relationship and beneficial effects by balancing the human intestinal microbiota. The relationships between microbiota changes and various diseases may predict health abnormalities and diseases. Treatment with vitamins and probiotics is one therapeutic approach. To evaluate the effect of probiotics on vitamin absorption, we chose Lactobacillus rhamnosus CBT-LR5 treatment, which has resistance to vitamin C-inducible toxicity, with vitamins in high-fat diet (HFD)-induced obesity models. CBT-LR5 affected the absorption of micronutrients, such as ionic minerals and water-soluble vitamins. An increase in vitamin C absorption by CBT-LR5 enhanced the antioxidant response in HFD-induced obesity models. Increased vitamin B absorption by CBT-LR5 regulated lipid metabolism in HFD-induced obesity models. These favorable effects of CBT-LR5 on the absorption of vitamins should be investigated as candidate therapeutic target treatments for metabolic diseases.

Factors Influencing Biohydrogenation and Conjugated Linoleic Acid Production by Mixed Rumen Fungi

  • The objective of this study was to evaluate the effect of soluble carbohydrates (glucose, cellobiose), pH (6.0, 6.5, 7.0), and rumen microbial growth factors (VFA, vitamins) on biohydrogenation of linoleic acid (LA) by mixed rumen fungi. Addition of glucose or cellobiose to culture media slowed the rate of biohydrogenation; only 35-40% of LA was converted to conjugated linoleic acid (CLA) or vaccenic acid (VA) within 24 h of incubation, whereas in the control treatment, 100% of LA was converted within 24 h. Addition of VFA or vitamins did not affect biohydrogenation activity or CLA production. Culturing rumen fungi at pH 6.0 slowed biohydrogenation compared with pH 6.5 or 7.0. CLA production was reduced by pH 6.0 compared with control (pH 6.5), but was higher with pH 7.0. Biohydrogenation of LA to VA was complete within 72 h at pH 6.0, 24 h at pH 6.5, and 48 h at pH 7.0. It is concluded that optimum conditions for biohydrogenation of LA and for CLA production by rumen fungi were provided without addition of soluble carbohydrates, VFA or vitamins to the culture medium; optimum pH was 6.5 for biohydrogenation and 7.0 for CLA production.

Nutritional and Organoleptical Aspects of UHT Treated Milk (UHT처리된 우유의 영양 및 미각적 분석)

  • The UHT treatment and consequent storage effect on nutritional value of milk are discussed. Compared with the conventional sterilization the UHT treatment of milk represents a relatively small thermal stress. During UHT processing, nutritive value of protein, fat, carbohydrates, fat-soluble vitamins and minerals are generally unaffected. Nutritive value of some water soluble vitamins and protein are adversely affected in a small degree during storage. It has been recommended that UHT milk has best nutritional and organoleptic qualities on storage under refrigeration. Some unsolved future problems are also suggested.

  • Vitamins are bio-active materials and essential elements in our body but some of them are very low in milt Various vitamin-fortified milks are developed by the help of milk processing technology. However, heat treatments can affect vitamins contents in milk. Total loss of vitamins during the UBT(ultra high temperature) treatment was investigated. UHT treatment caused 60∼70% loss for vitamin C, and 30∼40% loss for vit. D3 and vit. E which are well-known as heat stable materials. On the contrary, degradation of water-soluble vitamins is relatively very low in the capsule-coated state. The capsule could reduce the loss of vitamins by protecting vitamins from the degradation factors such as heat, oxygen, lights etc. The fortification method using capsule can be thought as a new way to reduce the loss of vitamins during milk processing. Further study about heat treatment time and temperature, and capsule coating and materials will be required to minimize the loss of vitamins in milt.
