A Study of Cooking Properties of the Noodle Made of Composite Flour with Green Tea Powder (녹차분말을 첨가한 국수의 조리 특성에 관한 연구)

  • This study was conducted to investigate the cooking properties of noodles made from composite flour blended with green tea powder. As the ratio of green tea powder increased, development time was longer than that of the control. The stability of dough showed higher value than the control except 2% addition group. The highest viscosity was at the 4% addition group. but 2% addition group showed the lowest viscosity. As the additional ratio of green tea powder was increased. the volume expansion ratio was increased, but water soluble solid matters contents in all addition groups had a lower level than that of the control. Also, the yellowness level of noodle was increased, but the brightness, redness and color and flavor acceptability was decreased, as the additional ratio was increased. However. 2~4% addition group of green tea powder had a similar acceptability profile to that of the control group.

  • Antithrombotic function of doenjang was investigated using thoroughly desalted aqueous extract. In the presence of the extract, thrombin suffered loss of its fibrin-clotting activity, whose extent increased in a dose-dependent manner. The active substance involved in thrombin inhibition showed a high thermal stability. Results of Sephadex G-25 permeation chromatography indicated that there were at least two soluble thrombin inhibitors in doenjang with different molecular sizes.

Synthesis and Characterization of New Orange-Red Light-Emitting PPV Derivatives With Bulky Cyclohexyl Groups

  • A series of 2,5-dialkoxy substituted poly(1,4-phenylenevinylene) derivatives containing a rigid and bulky cyclohexyl group in the side chain, poly[2-(7-cyclohexylheptyloxy)-5-butoxy-1,4-phenylenevinylene] (PBCyHpPV), Poly[2-(6-cyclohexylmethoxyhexyloxy)-5-butoxy-1,4-phenylenevinylene] (PBCyHxPV), Poly[2,5-di-(6-cyclohexylmethoxy-hexyloxy)-1,4-phenylenevinylene] (PDCyHxPV) were synthesized via the Gilch polymerization. The synthesized polymers were soluble in common organic solvents and showed good thermal stability up to $370^{\circ}C$. The maximum absorption of PBCyHpPV, PBCyHxPV and PDCyHxPV as thin films was at 513 ㎚, 515 ㎚, 511 ㎚, respectively. Photoluminescence maximum emission of above polymers appeared at 590 ㎚, 597 ㎚, 590 ㎚, respectively. The electroluminescence (EL) maxima of the polymers appeared around 585-590 ㎚, and also showed another shoulder around 630 ㎚ strongly. PDCyHxPV showed the highest EL efficiency and EL power than those of other polymers due to the dilution effect of the two rigid and bulky cyclohexyl groups.

  • Anthocyanins are water-soluble glycosides and acylglycosides of anthocyanidins, having different color variations due to its substitution patterns. Anthocyanins, present in various fruits, vegetables and crops as natural colorant, have been well characterized for its bioactive properties, anti-oxidant, anti-cancer, anti-proliferative and anti-inflammatory properties. During extraction and purification, the factors, such as pH, temperature, oxygen, light, enzymes, nucleophilic agents, sugar derivatives and co-pigments, have affected on anthocyanin stability. For this reason, the extraction method should be thoroughly checked for the qualitative/quantitative analysis of anthocyanin in particular plant material. To identify the optimum extraction method of cyanidin-3-glucoside, major anthocyanin of dark purple-colored grains, Oryza sativa cv. Heugjinjubyeo, Phaselous vulgaris, Phynchosia gngularis, Sesamum indium, Rhynchosia nulubilis and Lablab purpureus, reversed-phase HPLC analysis using solvent system of acetonitrile, methanol and water were accomplished.

  • Copolyspiroacetals were synthesized by interfacial polycondensation from 3, 9-bis(4-hydroxyphenyl)-2, 4, 8, 10-tetraoxaspiroundecane(SAB) and 4, 4'-biphenol(BP) with sebacoyl chloride. These copolymers were soluble in polar solvent such as phenol/tetrachloroethane and sulfuric acid, and exibited good thermal stability. But they did not exhibit thermotropic mesophases. The structures of spiroacetal moiety were observed by computer-aided-modeling that had two types of conformational isomers and not linear and/or not planar conformations.

  • Preparation of asymmetric polyimide membranes by the phase inversion process was investigated to develop ultrafiltration, reverse osmosis and pervaporation membranes for organic solutions, using a commercially available solvent-soluble polymaide. The influences of the various factors such as the composition of a cast solution, casting conditions, gelating solutions and others on membrane structure and performance were studied in detail, and it was made clear that a wide variety of asymmetric polyimide membranes ranging from UF to RO for organic solutions could be prepared from the aromatic polyimide used. It was also found that the chemical stability and separation performance of the asymmetric polyimide membranes could be improved by annealing in a liquid or a vacuum at above 200$\circ$. The membrane annealed at 300$\circ$ in a vacuum exhibited the separation factor $\alpha(H_2O/EtOH)$ of 900 with the flux of 1.0 kg/$m^2\cdot h$ at 60$\circ$C for an aqueous ethanol solution of 95 vol%.

A Study on the Extraction of Soluble Colorants of the Gardenia jasminoides Ellis (수용성 치자 색소의 추출에 관한 연구)

  • The study was performed to obtain the optimum extraction conditions for crocin from gardenia fructus. Generally crocin is unstable on heat, light, acid and base solution. The extraction efficiency of crocin from gardenia depended upon the extraction time, extraction temperature, pH in the extraction bath and the optimum conditions of crocin extraction were determined as 60 minutes of extraction time, 4$0^{\circ}C$ of extraction temperature, pH 7 of extraction bath. The molar extinction coefficient of crocin was 12,515 and the color yield of purified crocin was about six times higher than that of non-purified crocin. The heat-stability at extraction temperature and lightstability in irradiation with xenon lamp for one hour of the purified crocin were higher than those of non-purified crocin. Intensity of &{\lambda}_{max}&of crocin was decreased by irradiation for one hour but UV-Vis. spectra of crocin was not changed. The colors of purified and non-purified crocin dissolved wit methanol was evaluated by means of CIE L* a* b* system.

Preparation of S-keratose/PVA Nonwoven Webs by Electrospinning (전기방사를 이용한 S-keratose/PVA 부직포의 제조)

  • Soluble keratose(S-keratose) could be obtained by oxidizing the wool keratin with performic acid. S-keratose/PVA solutions were made by dissolving them in the formic acid and S-keratose/PVA web of sub-micron size was made by electro-spinning technique. SEM, elemental analysis, FT-IR, X-ray diffractometry, and TGA were used to characterize the properties of S-keratose/PVA solutions and fibers. As the S-keratose content in S-keratose/PVA solution increased, viscosity of solution decreased while electrical conductivity has increased. The fiber diameter has decreased with increasing the S-keratose content. S-keratose/PVA ratio in fibers were similar to the ratio in the solutions. The crystalline structures of S-keratose and PVA existed separately in the electrospun webs. Thermal stability of the web increased with the PVA content increasing.

Preparation of S-keratose/Nylon 6 Nonwoven Webs by Electrospinning (전기방사를 이용한 S-keratose/Nylon 6 부직포의 제조)

  • Oxidation method was used to extract S-keratose from wool. Wool was treated with performic acid and soluble fraction(S-keratose) was collected by evaporating the solvent. S-keratose and Nylon 6 were dissolved in formic acid at the ratio of 100/0, 80/20, 50/50, 20/80, and 0/100, and S-keratose/Nylon 6 web of sub-micron size was made by electro-spinning technique. SEM, EA, FT-IR, XRD, and TGA were used to characterize the properties of S-keratose/Nylon 6 solutions and electrospun fibers. As the Nylon 6 content increased, viscosity, conductivity of the electrospinning solution and the diameter of spun fiber increased. Electrospun nonwoven webs have the same S-keratose/Nylon 6 ratios of the spinning solutions. The crystalline structures of S-keratose and Nylon 6 existed separately in the electrospun webs. Thermal stability of the webs increased due to Nylon 6 content.
