We determined the optimum pretreatment conditions such as pH and time for swelling duck feet and investigated the effects of the extracting method, such as water bath (WB), pressure cooker (PC), and microwave oven (MO), on quality characteristics of the duck feet gelatin for improving utilization of duck feet as a novel source of gelatin. The soaking solution of pH 1 among pH 1-14 with unit intervals was selected due to the highest yield. The quality characteristics of the gelatin tested were color, pH, gel strength, viscosity, and melting point. For the extracted gelatin with different methods, the CIE $L^*$, $a^*$ and $b^*$ values were in the following order: MO>PC>WB (p<0.05), WB>PC>MO (p<0.05) and PC>MO>WB (p<0.05), respectively. The gelatin extracted using WB showed the highest pH and that extracted using MO showed the lowest pH (p<0.05). The gel strength, viscosity, and melting point were the highest for MO (p<0.05). The gel strength and melting point were the lowest for PC (p<0.05). No significant difference was found in viscosity between the gelatins extracted using WB and PC (p>0.05). The quality characteristic of duck feet gelatin was affected by extracting methods, and MO extraction can be one of the effective methods for duck feet gelatin.
Chitin and chitosan samples prepared from crab's shells under different conditions were compared for their physicochemical properties; and functionality in gastrointestinal tract by in vitro test. Their bulk density was in the range of $127{\sim}208\;mg/ml$, and their viscosity was $80{\sim}581\;cP$ in 0.1 chitin and $80{\sim}3,670\;cP$ in 0.5% chitosan solution, showing a wide variation. The degree of deacetylation in chitosan samples as determined by IR spectral analysis was relatively high, showing $81{\sim}93%$. At the same alkali concentration and reaction temperature, a longer reaction period gave an increased degree of deacetylation and lower viscosity. The water holding capacity of chitic substance became greater at higher soaking temperature; chitosan D at $37^{\circ}C$ showed the greatest value. Chitic substance with lower bulk density showed the higher water holding capacity. The retardation effect toward glucose absorption was higher in critic substances of lower density and higher water holding capacity; chitosan D showed the highest value of 38%. The retardation index toward bile acid absorption after 1 hour dialysis was $15{\sim}34%$ in chitic substances, 39% in pectin and 9% in cellulose. The retarding effect showed the highest value of 34% in chitosan D at 3% concentration.
Dielectric properties of sardine-starch paste with moisture content of 4 to $13\%$ were investigated as functions of moisture and frequency. And the effects of the levels of fat and starch of the mixtures upon dielectric permittivity, critical moisture, were also mentioned. In addition, a theoretical prediction of frequency dependence of dielectric constant which was computed by the lumped circuit of two layer condenser model was evaluated. For the preparation of sardine-starch paste, comminuted sardine meat was washed thoroughly several times in chilled water by soaking and decanting, and finally centrifuged. This procedure was extended longer to provide a low fat sample. The centrifuged meat was mixed with adequate amounts of starch and salt, and ground for 25 minutes in a stone mortar, moulded in the form of disk with 7cm diameter and 1.2cm thickness and then freeze dried. Dried meat disks were cut off for the size of 5.5cm diameter and 1.0cm thickness and their moisture contents were controlled in humidified desiccators with saturated solutions. Dielectric constants of sardine-starch paste tended to decrease frequency was increased showing a critical charge at the moisture called critical moisture content. In case of the sample with $20\%$ starch and $2\%$ salt an average complex permittivity($\epsilon^{\ast}$) at 7 to $8\%$ morsture as the critical moisture content was presented; $\epsilon^{\ast}$=3.37+j 0.39 at 0.1 MHz, $\epsilon^{\ast}$=2.54+j 0.19 at 15 MHz, and $\epsilon^{\ast}$=2.15+j 0.08 at 1.8 GHz, respectively. The theoretically obtained complex permittivity values from the two layer condoner model were in close agreement with these actual measurements under the same conditions, that appeared as $\epsilon^{\ast}$=2.53+i 0.09 at 0.1 MHz and $\epsilon^{\ast}$=2.28+j 0.06 at 15 MHz, respectively. The fast level of the mixture also revealed an influence on dielectric property that defatted neat with $1.0\%$ fat showed a higher hc and $\epsilon^{\ast}$ value than the meat with $4.8\%$ fat. Complex permittivity being related to the moisture level remained nearly unchanged or slightly changed at the moisture range of 4 to $8\%$ but was dispersed widely at higher moisture contents.
The study of bioproduct production from inexpensive biomass such as marine biomass has recently attracted considerable attention. Because, marine biomass which compared to land biomass, it can be grown rapidly and is easily cultivated without the need for expensive equipment. In addition, the carbohydrate contents are similar or higher than land biomass such as woody biomass and can be easily converted to chemicals through proper chemical processes. In the production of various biochemicals from marine biomass, levulinic acid is a highly versatile chemical with numerous industrial uses and has the potential to become a commodity chemical. It can be used as a raw material for resins, plasticizers, textiles, animal feed, coatings and antifreeze. In this study, experiments were carried out to determine the optimum conditions of temperature, acid concentration and reaction time for production of levulinic acid from marine biomass, Gelidium amansii, using two-step treatment. In the first hydrolysis step, solid-state cellulose which was used to produce ethanol by fermentation and liquid-state galactose which used to produce bioproduct such as levulinic aicd were obtained through acid soaking. In the second hydrolysis step, the liquid-state galactose was converted into levulinic acid via a high-temperature reaction in a batch reactor. As a result, the overall production yield of Gelidium amansii to levulinic acid in the two-step acid hydrolysis was approximately 20.6% on the initial biomass basis.
To enlarge application field of electrolyzed acid-water(EAW) on food industry, the changes of EAW properties by storage conditions and heating were investigatet. It was showed that storing EAW in closed container is mon effective to keep up the oxidation-reduction potentials(ORP), hyperchloride content and pH than stored in opened ones. ORP of EAW stored in closed container could be kept mon than 1 month as 1,150 mV levels. Ruing heating from 2$0^{\circ}C$ to 95$^{\circ}C$, ORP was increased to 1,150 mV levels at 95$^{\circ}C$ after gradual decrease to 5$0^{\circ}C$. Tyrosinase activity was decreased approximately to 26%~35% in EAW having a 950 mV~1,140 mV ORP. Also it was confirmed that EAW has anti-browning effect as sliced apple and potato, and their juices treated with EAW had conspicous difference in their $\Delta$E value. 12 kinds of pesticides such as aldrine, capful diazinon, diedrin, $\alpha$-endosulfan $\beta$-endosulfan, endosulfan sulfate, endrin, $\alpha$-BHC, o,p'-DDT, procymidone, PCNB added in EAW were recovered from ND~73.6% comparing to ones added in distilled water. The recovered amounts of pesticides, procymidone and diazinon in lettuce after soaking in EAW were 1.12 ppm and ND, compared with those of amounts soaked in distilled water were 3.67 ppm and 3.05 ppm respectively. So, it seems that EAW has potentials to promote the degradation of pesticides.

This study was carried out to investigate the utilization of pruned branch of a peach tree as natural dyeing material. The dyestuff was extracted from pruned branch of a peach tree. we examined the dyeing ability on silk and cotten fabrics. The surface color of silk fabrics differed depending on mordants. E values in treatments of mordants ranged from 11.63 to 30.86 as compared to non-treatment. Dyeing properties of cotten fabrics were improved with a treatment of sulfate of iron as compared with of non-treatment. The values a increased when the slaked lime and sodium hydroxide were used as mordants, while the values b increased when copper sulfate, alum and apple vinegar were used. We investigated the surface colors of silk and cotten fabrics after washing three times. In general, the surface colors of silk and cotten fabrics between the treatments of all mordants and non-treatment were diminished by the washing. We also investigated the surface colors of silk and cotten fabrics when those were washed and treated by the light after soaking those into various pH solutions. The surface colors of silk and cotten fabrics were considerably preserved by the washing, the light and pH concentration. In conclusion, our results suggest that the dyestuffs from pruning branch of a peach tree would be useful as a natural dyeing material using the optimized conditions for silk and cotten dyeing.
Statement of problem: The increasing demand for esthetic restorations has been required developing new materials for tooth colored restoration. Ceromer(Ceramic Optimized Polymer) has some advantages over porcelain, and has gained increasing popularity in restorative dentistry. However, there is little information on the dimensional changes in a clinical restoration in moist conditions. Purpose: This study examined the dimensional changes in Ceromer restorations with a clinical crown shape that were fabricated in a clinical manner. Material and methods: The crowns for the maxillary central incisor were fabricated with two Ceromers($BelleGlass^{(R)}$ and $Targis^{(R)}$) using a similar clinical restoration manufacturing technique. A total of twenty specimens were prepared and immersed in distilled water at room temperature to allow for water absorption. The weight, height and width were measured at 24, 72 and 168 hours. The accumulated ratios of the changes were calculated and evaluated using a paired t-test and an independent independent t-test. Results: The dimensions and weight increased with increasing soaking time. $Targis^{(R)}$ showed significant differences in height and weight between 24 hours and the other times(P<.05). $BelleGlass^{(R)}$ showed significant differences in width and weight between 24 hours and the other times. The two materials showed different changing patterns of the dimensions but there were no statistically significant differences between them. Conclusion: The dimensions and weight of the Ceromer restorations were changed by water absorption. The clinical crown shaped specimen showed more complicated dimensional changes than the simplified specimens.

This study were investigated to analyzed an optimum preparation condition of coating film and its antimicrobial activity on pathogenic and deteriorative bacteria to obtain fundamental data for development of active packaging film using antimicrobial peptide, polysine. In the preparation conditions of coating film, antimicrobial activity was depending on the concentration of polylysine and polyamide respectively, and relatively high activity was obtained in the film prepared with more than $1.0\%$ (w/v) of polylysine, $40\%$ (w/v) polyamide, and more than $50\;{\mu}m$ of film thickness. Concentration of polylysine migrated from coated film to distilled water was reached at the maximum concentration, about 20 ppm after 3 days and in equilibrium after 7 days of soaking in sterilized water. An antimicrobial activity of coated film showed bactericidal effect of about $10^5\;CFU/mL$ comparing with the control against Bacillus cereus having $4.8{\times}10^5\;CFU/mL$ of initial viable cell numbers, and of about $10^2\;CFU/mL$ comparing with the control against Klebsiella pneumoniae having $6.8{\times}10^5\;CFU/mL$ of initial viable cell numbers. Consequently, it was revealed that polylysine coating film has a potential of applicable possibility as antimicrobial packaging film.

The weapons excavated from the de-militarized zones (DMZ) of Korea are vulnerable to corrosion due to the immediate and drastic environmental change. Especially, the chloride ions (Cl-) in iron weapons cause active corrosion and require removal. In this study, conservation treatment and de-salination was performed for the discovered weapons from excavation sites of soldiers killed in action during the Korean War. Furthermore, an attempt was made to prepare the most stable plan for conservation treatment through the comparative study of soaking weapons in distilled water without chemicals and in a solution of sodium (SSC) at different temperatures. In the preliminarily experiments, the comparison of the eluted Cl- ions according to different conditions of de-salination showed that the highest number of ions were detected from the de-salination with SSC at a temperature of 100℃, and its duration was much smaller, i.e., 1~2 weeks. Accordingly, for the parts from the guns and rifles amongst other objects, a six-time de-salination was conducted in the SSC solution for 8 hours at 100℃ and subsequently, for 16 hours at room temperature during which the distilled water and SSC were exchanged every week. However, in the case of a loaded rifle, the de-salination was not conducted, considering the risk that the high temperature and pressure by impregnation in vacuum could cause an explosion
