노인식 제공을 위한 일부 노인의 음식 기호도 조사 (Food Preference Test of the Korean Elderly Menu Development)

  • This study was performed to test food preferences of the Korean elderly for Korean elderly menu development. The elderly subjects preferred steamed rice cooked with 1.2 times water than that with 1.5 times water (p < 0.001) , whole rice grain gruel than the gruel with ground grain (p < 0.05) . Green tea powder gruels developed as a snack, there were no significant differences in the preference of the elderly between gruel with different contents of green tea powder (2, 3, $4\%$). The preferences of the salt concentration of the soup were tested by using soybean sprout soup and soybean paste soup. The elderly preferred 0.7 - $0.8\%$ salted bean sprout soup and $7\%$ soybean paste soup. The elderly preferred Kimchi cut in widths of 1 - 2 cm than that in 0.5 cm. The elderly preferred sweeter grape jam ($67\%$ vs. $50\%$ or $37\%$ sugar content) and were not concerned about chewing seeds. This result could be useful to develop menus for the elderly. 전주지역 중학생의 학교급식에 대한 만족도, 메뉴기호도 및 개선사항 조사 (The Study of Satisfaction, Meal Preference and Improvement on School Lunch Program of Middle School Boys and Girls in Jeonju)

  • This study was conducted with 262 middle school student(118 boys, 144 girls) to examine their satisfaction, meal preference and improvement of school lunch program(SLP) in Jeonju area. Major plate waste ranked high in soup, fishes, vegetables, Kimch and rice. The overall reason for plate waste were listed as being tasteless and disliking food except for rice. In the case of rice, it because of too big portion size. On the satisfaction with SLP, the lowest satisfaction category was waiting time for meal. The changes after taking part in SLP of students ranked in having a regular meal time(31.4%), lessening to eat snack except for regular meals(18%) and correcting habit about picking favorite food(15.2%), in order. The improvement on SLP of students were listed as more appetite food, various side-dishes, squaring of the western and eastern food and so on. To improve the satisfaction SLP and provide a high quality service, it should be needed to make proper dining space, increase the frequency of survey on complaints and taste of students and reflect the menu plan.

대학생들의 섭식유형과 음식 소비행동 (Eating Styles and Food Consumption Behaviors of College Students)

  • This study analyzed the survey results of 302 college students from a coed university in Korea. The following three research components were examined: relationships among different eating styles, violation behaviors after unwanted eating, and consumption behaviors for three different food types. The analysis results showed that restrained eating was positively related to emotional eating, but negatively related to external eating. And emotional and external eating displayed a positive relationship. Body shape dissatisfaction was a significant variable in explaining restrained eating behavior. After unwanted eating, the restrained eaters expressed more regrets and stronger determination to diet than the less restrained eaters. The emotional eaters and external eaters responded that they could not stop eating and performed binge eating behaviors when they failed their diet. With regard to food attitudes and eating styles, snacks were favorably related to emotional eating. Fast food attitudes were negatively associated with restrained eating. Preference was the only significant variable in explaining snack consumption frequency; however sex, preference, and restrained eating were significant for fast foods. Finally, vegetarian foods were explained by preference and sex.

A Study on Dietary Behaviors and Food Preference of Elementary School Children in Gyeonggi Area

  • To investigate the dietary behavior and food preference by the obesity index, 524 children (male 265, female 259) from 4 elementary schools in Gyeonggi area participated in this study. The overweight group included more boys (52.5%) than girls (47.5%). The overweight group had significantly higher values in height, weight, Obesity index (OI), Body mass index (BMI), and Rohrer index (RI) than the underweight or normal weight groups. The majority (43.4%) of children showed 11-20 minutes of eating time, and boys ate significantly rapidly than girls (p<0.00l). Snack was consumed 2-3 times a day, with the preference principally for ice-cream and cookies. The frequency of eating out was 1-2 times a month, representing 71.4% of subjects, and 73.3% of children preferred Korean style meals, followed by Western, Chinese and Japanese foods. Twigim (frying) was the preferred cooking method for vegetables, fish and meat. The food preference study showed that Ssalbap, Hyunmibap and Boribap were preferred in the rice group. For one-dish foods in the rice group, Jjajangbap, Kimchibokeumbap, Bokeumbap were preferred, with the tendency that boys preferred significantly more Curry rice (p<0.05) and Chickenbap (p<0.01) than girls. The preference for guk, jjigae, and tang group showed that Soegogimiyeokguk, Chamchikimchijjigae were preferred Boys preferred significantly more Samgyetang (p<0.05), Haemultang (p<0.05) and Yukgaejang (p<0.01) than girls, and girls preferred significantly more Kongbijijjigae (p<0.05) than boys. It is considered that organized and continuous nutritional education beginning in childhood, is necessary to for the development and formation of desirable dietary behaviors.

영.유아의 연령과 성별에 따른 식행동과 식품 기호도에 관한 연구 (Study of Eating Behavior and Food Preference in Young Children: Differences by Age and Gender)

  • The primary object of this study was to examine both preferences in a variety of foods and snacks and the eating habits among young children (aged 13 months through 50 months old). In addition, this study examined whether there would be significant differences in the preferences and eating habits by of young children of different ages and gender of young children. This study included 193 infants (85 boys, 108 girls) of aged 13 through 50 months of old who were enrolled in early childhood education and care settings in Seoul and Gyunggi Province. The information regarding food and snack preferences among young children were gathered through surveys filled out by their mothers and the children's overall eating habits were assessed by their teachers. The main results of this study were as follows. Overall, there were some patterns in eating bere asss and food preferences in foods and snacks among young children. There were no significant differences in both eating bere asss and food preferences by gender of young children. But, however, there were significant differences in food (p<0.001) and snack preferences (p<0.001) by of children of different ages of young children.

식생활 조사연구에 사용된 설문지의 내용 분석 (Content Analysis of the Questionnaires Used in Dietary Surveys)

  • The purpose of this study is to analyze the contents of the questionnaires used in dietary surveys and to evaluate each item in relation to the item construction strategy. Articles of which the contents were related to food, nutrition, diet, dietary behavior, and related areas. Published from 1997 to 1999 were searched fir and a total of 121 questionnaires were collected and analyzed. The questions in the questionnaires were classified into related areas and sub-areas. Among the keywords in the title of the articles, the term 'nutritional status'(or 'dietary intake status') was most frequently used. The terms such as dietary status, obesity, health, food habit, and dietary behavior were also frequency used. Major topics of the items in the questionnaires varied according to the life cycle of the subjects of the study. The topics most frequently asked in each lift cycle were as follows : overeating, snack, and food preference for preschool- and school-aged children ; anthropometry, weight control, and snack for middle and highschool students : meal skipping, smoking, and drinking for college students : disease, smoking, drinking, and exercise for adults : and smoking, drinking, disease and perceived health for the elderly. Inappropriate questions with complicated language, typographic and grammatic errors, unnecessary words, and negative questions were found. Therefore, care should be taken to construct each question so as to avoid possible misinterpretation. Also, a standardized questionnaire be developed for survey researchers.

수도권 지역 고등학생의 식행동 및 간식 섭취 실태에 관한 연구 (Study of Dietary Behaviors and Snack Intake Patterns of High School Students in Seoul, Incheon, and Gyeonggi-do)

  • The purpose of this study was to investigate the snack and beverage intake patterns of students by body mass index groups (BMI <18.5, 18.5-23, 23-30, ${\geq}$30). Questionnaires were completed by 1381 high school students in Seoul, Incheon, and Gyeonggi-do, the area of Korea's capital region. There were no significant differences in skipping meals for overweight (BMI 23-30 and ${\geq}$30) or under-nourished (BMI <18.5) students. Girls skipped dinner more frequently than boys. Boys and girls both preferred meat and disliked fish regardless of BMI. Girls with BMI 23-30 disliked vegetables. Boys and girls would rather have crackers, candies, and chocolates than potatoes as snacks regardless of BMI. Obese boys (BMI ${\geq}$30) preferred flour-based food, fast food, and other food as snacks. Girls liked fruits more than boys. Snacks were eaten 2-3 times per week, when students were hungry or bored. There were no significant differences in the frequency or reasons (habitual, stressed) for snack consumption by BMI. Girls liked juice more than boys did, and boys preferred soda water more than girls did. Both the under-nourished (BMI <18.5) boy and girl groups had more juice than the overweight (BMI 23-30 and ${\geq}$30) groups. Obese (BMI ${\geq}$30) boys did not more drink soda water than other BMI groups. The under-nourished (BMI <18.5) boy group had more soda water than the normal (BMI 18.5-23) and overweight (BMI 23-30) groups. Girls in the overweight (BMI 23-30) group had 2 more cups of soda water a day than the normal group (BMI 18.5-23). Therefore, skipping meals and beverage intake patterns might influence BMI.

부산지역 대학생들의 식습관 및 식이섭취 실태에 대한 조사연구 (A Study on the Food Habits and Dietary Intakes of University Students in Busan Area)

  • This study was conducted to investigate the food habits and dietary intakes of University students in Busan areas. The survey was carried out by self-questionnaires with 130 male and 156 female students. The results obtained were as fellows. 1. 95.3% of male and 76.4% of female students answered they are moderate or healthy. The rates of alcohol drinking in male and female students were 94.5% and 81.0% and the rates of smoking were 73.2% and 2.0% respectively 34.6% of male and 56.9% of female students didn't regular exercise. 2. 21.3% of male and 10.5% of female students were satisfied with their current body image and 74.3% of female students wanted thinner figure. Male students attempted to weight control by exercise and females did by exercise and fasting. 3. The average BMI of students were 22.60 in males and 19.53 in females respectively and 78.0%, of female students were underweight. 4. Breakfast was skipped in 79.5%, of male and 83.7% of female students and it appeared male students eat faster than female students. 5 Male students preferred beverage and noodles and females preferred bread, biscuit, snack and beverage as snack food and female students had a higher tendency to enjoy snack time. The frequency of eating out was higher in female students and the standard of food choice was preference > price > convenience > nutritional value. The favorite dishes were meats > poultry > fruits > fishes, cereals, noodles in male and fruits > meats > cereals > poultry > noodles > fishes in female students. 6. The average energy intake were 1715.70kca1 in male and 1588.71kcal in female students respectively and the intakes of Ca, vitamin A and B2 were lower than RDA in male and female students.

백진주 쌀가루를 이용한 비유탕 쌀과자 제조조건의 최적화 연구 (A study of optimization of non-fried rice snack using Baekjinju rice flour)

  • 본 연구는 백진주 쌀가루를 이용한 비유탕 쌀과자 제조조건의 최적화를 목적으로 두 가지 독립변수인 쌀 수침시간과 콩물 첨가량에 따라 9가지 조건의 비유탕 쌀과자 품질특성을 분석하였다. 무게는 쌀 수침시간이 길어짐에 따라 증가하다가 11.26일 이후에는 다시 감소하였으나 콩물 첨가량은 영향을 주지 않는 것으로 나타났다. 부피와 부피팽창율은 쌀 수침시간이 길어지고, 콩물 첨가량이 증가할수록 증가하는 것으로 나타났다. 밀도는 쌀 수침시간이 1.94일 이전이고, 콩물 첨가량이 32.23% 이상일 때 밀도가 가장 낮은 구간으로 나타났다. 색도에서 쌀 수침시간이 3.52일 이상이고 콩물 첨가량이 35.47%일 때 L값은 높은 구간으로 나타났고, a값은 유의성이 없는 것으로 나타났으며, b값은 쌀 수침시간이 길어지고 콩물 첨가량이 증가할수록 높게 나타났다. 경도는 쌀 수침시간이 5.28~8.53일이고, 콩물첨가량이 5.34~20.26%일 때 가장 높은 구간으로 나타났다. 색, 향미, 외형 및 전체적인 선호도는 쌀 수침시간이 짧고, 콩물 첨가량이 적을수록 선호도가 높은 것으로 나타났다. 최적 조건을 설정하기 위하여 독립변수인 쌀 수침시간과 콩물 첨가량을 범위 내에서 최소로 설정하고, 종속변수에서 밀도는 최소로 설정하고 다른 항목은 최대로 설정하였을 때 백진주 쌀가루를 이용한 비유탕 쌀과자의 최적 조건은 쌀 수침시간 0.69일이고 콩물 첨가량은 26.67%로 나타났다.

도시지역주민의 식습관과 연관요인 연구 (A Study on the Eating Habits and Its Related Factors of Residents in Urban Area)

  • This study was conducted to investigate the awareness and practice level of health food intake and use the information for the development of Public Health Policy and Health Education Program in order to help healthy dietary life. The interview was done by trained surveyors on 1, 143 city dwellers who were selected randomly from Oct. 2, to Oct. 21, 1992. The results are summarized as follows: 1) General characteristics of subjects; Among 1, 143 respondents, there were more female(53.8%) than males(46.2%) and the age group of 20-29 account for the hightest portion, 46.7%. As for the education levels, 45.3% of the subjects were college graduates. And 38.9% of the subjects were students. 2) The percentage of subjects who assess themselves ‘Healthy’ was 46.7% and ‘Not Healthy’ was 17.4%. 3) The subjects who have irregular meals(3 times a day) was 48.7%, the rate of females was higher than males. The proportion of unmarried subjects, people with low economic level, high education level, and students was high. 4) As for the amount of 1 meal, 72.4% was ‘moderate’, 16.3% was ‘too much’ amount, which was higher in 19 years old, single, low economic level, elementary school graduate, than other groups. 5) As for the eating speed, 40.2% was fast, which was higher in single(44.3%), in low economic level(50.0%). college graduate(44.9%), student(44.7%) than other groups. 6) As for the level of preference to hot and salty food, 25.7% preferred to have hot and salty food. The difference in the degree of preference to hot and salty food by age and economic level was significant. 7) With regard to the individual food taste, the subjects who prefer to meat and fried food were 12.3%. Which was higher in the group under 19 years old, single, and college graduates. 8) With regard to having a snack, 38.7% have a snack. By characteristics, the subjects who have a snack were higher in female, under 19 years old, single, high economic level, apartment dwellers, college graduate, and student than other groups. 9) As for the coffee intake amount per day, 39.8% of subjects was more than 3 cups daily. 10) With regard to the self-assessment of body weight, the subjects who assess themselves over body weight had late dinner time. 11) As for the correlation among related variables, the age and taking breakfast was positive correlation. And sex and drinking alcohol was positively associated while age had negative correlation.
