Monitoring of Tar Color Content in Children's snack and Its Exposure Assessment (어린이 기호식품 중 타르색소 모니터링 및 노출량 분석)

  • This survey was conducted to develop an appropriate management for safety of children snacks. In this study, monitorings of food additives such as nine kinds of tar colors (tartrazine, sunset yellow FCF, brilliant blue FCF, indigo carmine, new coccine, amaranth, erythrosine, allura red and fast green FCF) which are sold at stationary store around the school, were performed. Eighty two samples (3 snacks, 71 candies, 4 chocolates and 4 beverages) were analyzed for tar colors. Results of risk assessment for tar colors were expressed as EDI (Estimated Daily Intake) comparing with ADI (Acceptable Daily Intake). The ratio of high risk group for tar color intake (95th) were 0-3.56%. The consumptions of tar colors from domestic and imported products for nine kinds of tar colors in candies were not significantly different. The results of this study indicated that each ED! of nine kinds of tar colors sold at stationary store around the school is much lower than each ADI in general. Consequently, the children snacks are thought to be safe for consumption.

Optimizing the Drying Conditions of Surimi Snacks Using a Response Surface Methodology (반응표면분석법을 이용한 생선연육 스낵의 건조조건 최적화)

  • Surimi has been widely investigated for developing fish snacks; however, few studies have examined the optimal drying conditions of surimi for fish snacks. This study used a response surface methodology to optimize the drying conditions for the overall acceptance of fish snacks. The drying temperature (X1, 51-65℃) and drying time (X2, 1.5-2.5 h) were chosen as independent variables. The dependent variables were overall acceptance (Y1, points), hardness (Y2, N), moisture content of the dried intermediate product (Y3, %), and volatile basic nitrogen of the fried final product (Y4, mg/100 g). The estimated optimal conditions for overall acceptance (Y1) were X1=64℃ and X2=2 h. The predicted values of the dependent variables at the optimal conditions were overall acceptance (Y1)=8.60 points, hardness (Y2)=10.07 N, and moisture content of the dried intermediate product (Y3)=10.00% and were similar to the experimental values. Scanning electron microscopy images revealed that the drying conditions affected the microstructure of the fish snacks. Our results could be used to increase the productivity of fish snacks made by small- and mid-sized seafood companies.

The Elderly Families' Food Habit and Dietary Management in Rural, Korea -Comparison with Middle Aged Family- (농촌거주 노년가족의 식습관과 식생활 관리 -중년가족과의 비교-)

  • For the life quality improvement of rural elderly family placed in risk of frail, this study was investigated. Health habit, food habit, and dietary management were analyzed between elderly and middle aged family The subjects 1870 collected in 9 provinces 88 cities or guns by sampling with probability proportional to size(PPS). Questionnaire method was used. Survey was conducted by trained interviewers. Statistical analyses were performed using SAS(version 8.1). Chi-square tests and General Linear Models were used. The elderly families' characters were odd pair$(42.0\%)$, with patients$(17.6\%)$ and health examination per 1 or 2 years$(44.0\%)$. The elderly families' health habit: high of no-drink$(55.2\%)$ and low of smoke$(31.3\%)$ situation was better than those of middle aged families'. The states of diets of elderly family: having breakfast$(94.1\%)$ but 1-2 kinds$(17.7\%)$ or 3-4 kinds$(59.4\%)$ of side dishes allowed to guess lower status of food intake balance. Nutritional supplements$(27.5\%)$with tablets of vitamins$(63.5\%)$ were the most frequent states in elderly family. The aspects of dietary habit of elderly family: no instant foods$(72.6\%)$, no snack$(3.08\%)$ and no dine-out$(67.7\%)$ were significantly different with those of middle aged family. Dietary habit score(8.28/12 points) of elderly family was not significantly different with 8.22/12 points of middle aged family. Food purchase place of elderly family was mainly at traditional market$(43.6\%)$, but it was significantly different with super-market$(47.6\%)$ of middle aged family. In elderly family, traditional dish preparation was seldom$(49.8\%)$ except winter kimchi$(91.5\%)$, but significantly higher rate of in middle aged families' traditional dish preparation and winter kimchi$(94.5\%)$. From these results, more of snack, traditional dishes and dine-out were needed to improve quality of life for rural elderly.

Development of Sugar-Soaked Black Soybean Snack and Its Quality Change on Functional Components (당침지 검정콩 스낵 제품의 개발 및 기능성 성분의 변화)

  • We developed and investigated sugar-soaked black soybean snack (SSBSS) to increase the availability of black soybean. The most desirable moisture contents and texture properties of hardness and gumminess in preparing SSBSS were obtained at a sugar concentration of $40^{\circ}brix$ for the first sugar soaking step and $50^{\circ}brix$ for the second sugar soaking process. Sensory evaluation also showed that SSBSS prepared with $40^{\circ}brix$ for first sugar soaking step and $50^{\circ}brix$ for the second sugar soaking process was graded higher than the other samples in all questionnaires. Prepared SSBSS had a final moisture content of $5.50{\pm}0.39%$, crude protein content of $16.25{\pm}0.07%$, and crude lipid content of $34.26{\pm}3.95%$. The ash and carbohydrate contents of SSBSS were $0.51{\pm}0.05%$ and $43.48{\pm}0.01%$, respectively, and the final glucose content was $10.20{\pm}0.10^{\circ}brix$. GABA concentration was $15.24{\pm}1.47\;mg$/g and the contents of daidzein, genistein, daidzin, and genistin were $695.7{\pm}6.08\;{\mu}g$/g, $810.6{\pm}3.9\;{\mu}g$/g, $755.8{\pm}39.6\;{\mu}g$/g, and $1640.7{\pm}390.8\;{\mu}g$/g, respectively. In addition, the phenolic compound and flavonoid contents in SSBSS were $0.16{\pm}0.01$ and $2.33{\pm}0.40\;mg$/g, respectively.

Development of Customer Sentiment Pattern Map for Webtoon Content Recommendation (웹툰 콘텐츠 추천을 위한 소비자 감성 패턴 맵 개발)

  • Webtoon is a Korean-style digital comics platform that distributes comics content produced using the characteristic elements of the Internet in a form that can be consumed online. With the recent rapid growth of the webtoon industry and the exponential increase in the supply of webtoon content, the need for effective webtoon content recommendation measures is growing. Webtoons are digital content products that combine pictorial, literary and digital elements. Therefore, webtoons stimulate consumer sentiment by making readers have fun and engaging and empathizing with the situations in which webtoons are produced. In this context, it can be expected that the sentiment that webtoons evoke to consumers will serve as an important criterion for consumers' choice of webtoons. However, there is a lack of research to improve webtoons' recommendation performance by utilizing consumer sentiment. This study is aimed at developing consumer sentiment pattern maps that can support effective recommendations of webtoon content, focusing on consumer sentiments that have not been fully discussed previously. Metadata and consumer sentiments data were collected for 200 works serviced on the Korean webtoon platform 'Naver Webtoon' to conduct this study. 488 sentiment terms were collected for 127 works, excluding those that did not meet the purpose of the analysis. Next, similar or duplicate terms were combined or abstracted in accordance with the bottom-up approach. As a result, we have built webtoons specialized sentiment-index, which are reduced to a total of 63 emotive adjectives. By performing exploratory factor analysis on the constructed sentiment-index, we have derived three important dimensions for classifying webtoon types. The exploratory factor analysis was performed through the Principal Component Analysis (PCA) using varimax factor rotation. The three dimensions were named 'Immersion', 'Touch' and 'Irritant' respectively. Based on this, K-Means clustering was performed and the entire webtoons were classified into four types. Each type was named 'Snack', 'Drama', 'Irritant', and 'Romance'. For each type of webtoon, we wrote webtoon-sentiment 2-Mode network graphs and looked at the characteristics of the sentiment pattern appearing for each type. In addition, through profiling analysis, we were able to derive meaningful strategic implications for each type of webtoon. First, The 'Snack' cluster is a collection of webtoons that are fast-paced and highly entertaining. Many consumers are interested in these webtoons, but they don't rate them well. Also, consumers mostly use simple expressions of sentiment when talking about these webtoons. Webtoons belonging to 'Snack' are expected to appeal to modern people who want to consume content easily and quickly during short travel time, such as commuting time. Secondly, webtoons belonging to 'Drama' are expected to evoke realistic and everyday sentiments rather than exaggerated and light comic ones. When consumers talk about webtoons belonging to a 'Drama' cluster in online, they are found to express a variety of sentiments. It is appropriate to establish an OSMU(One source multi-use) strategy to extend these webtoons to other content such as movies and TV series. Third, the sentiment pattern map of 'Irritant' shows the sentiments that discourage customer interest by stimulating discomfort. Webtoons that evoke these sentiments are hard to get public attention. Artists should pay attention to these sentiments that cause inconvenience to consumers in creating webtoons. Finally, Webtoons belonging to 'Romance' do not evoke a variety of consumer sentiments, but they are interpreted as touching consumers. They are expected to be consumed as 'healing content' targeted at consumers with high levels of stress or mental fatigue in their lives. The results of this study are meaningful in that it identifies the applicability of consumer sentiment in the areas of recommendation and classification of webtoons, and provides guidelines to help members of webtoons' ecosystem better understand consumers and formulate strategies.

Eating Patterns of Children with Cerebral Palsy by Table Utensil-Handling Skills (식사도구 사용능력에 따른 뇌성마비아동의 식생활)

  • The purpose of this study was to investigate the eating patterns of children with cerebral palsy having motor disturbances as well as stiffness. The food habits, nutritional status, and snack intakes of 1 to 7 year-old children with cerebral palsy were examined. The subjects were grouped into three categories according to their table-utensil handling skills: superior, normal, and inferior. The children in the superior group were significantly taller and heavier compared to children in the other two groups. The %EARs of folic acid and total calorie intake were insufficient in all three groups; however, their %EARs of other nutrients were fully sufficient. When comparing the children's intake frequencies and preferences for snacks, the superior group showed a greater likelihood to consume various kinds of snacks than the inferior group. And the inferior group disliked more kinds of snacks than the other two groups. It was also shown that the inferior group had a significantly higher tendency for problems in chewing and swallowing. These results indicate that the development of table utensil-handling skills is very important for the food intake and growth of children with cerebral palsy, and the better their table utensil-handling skills the greater their physical development. Thus, considering their preference and intake frequency, it seems necessary that children in the inferior group be provided a greater variety of snacks and foods to receive more calories.

Study on the Eating Habits and Growth Development in Korean Preschool Children (학령 전 아동에서 식습관과 신체발달에 관한 연구)

  • The study was designed to observe the correlation between the eating habits and growth development in 1,574 children (3-6 years old) in Kyunggi-do and Seoul, Korea. The eating habits and nutrient intake were determined by mini dietary assessment and food frequency questionnaire (FFQ). 35.6% children had been practicing an unbalanced diets. Children with unbalanced diet consumed less amount of protein source foods (meat, fish, egg, soy products), vegetables and fruits and had irregular meal time, but more of them preferred sweet foods (ice creme, cookies) and carbonated drinks as snack compared with children in balanced diet. 24-35% children consumed energy, iron (Fe), calcium (Ca), Niacin, Zinc (Zn) less than 75% RDA. Energy intake of children with unbalanced diet was not significantly different from those with balanced diet, but they consumed less amount of niacin, Fe, Ca and Zn than those with balanced diet. By using the relative percentage of standard weight-length-index (WLI), 65.7% children was normal weight, 12.9% was underweight, 13.4% was overweight and 7.9% was obese. However, 11.9% of underweight and normal weight children was so called thin obese since their body fat content was greater than 20%. There were 16.8% underweight in children with unbalanced diet and 12.6% underweight in those with balanced diet. Compared to normal weight, the underweight children significantly consumed less amount of milk and its product, high protein foods, fried foods and fruits, but obese children consumed more high protein source foods (meat, fish, egg, etc) and sweet foods. In conclusion, the eating habits of unbalanced meal was prevalent problem in preschool children which resulting in their health risks. Therefore, it would be needed that new approach for nutrition education to improve eating habits in preschoolers.

Examining Nutritional and Dietary Risk Factors Across Weight Classes in Elementary School Students using Busan Office of Nutrition Education Center's Dietary Diagnosis System (부산시교육청 영양교육체험센터 식생활 진단 시스템을 활용한 초등학생의 체중급별에 따른 영양·식생활 위험요인 비교)

  • This study was undertaken to analyze the growth, nutritional, and dietary risk factors of elementary school students belonging to the Busan Metropolitan City Office of Education and provide the basic data needed to develop an underweight and obesity prevention program. In 2021, BMI and Dietary Screening Test (DST) data of 4,046 children surveyed by the Nutrition Education Experience Center's "Diagnosis System" of the Busan Regional Office of Education were analyzed. The DST consists of 36 questions about lifestyle habits, meal quality, meal regularity, snack quality, and eating behavior. Of the children included, 6.8% were underweight, 65.4% were normal weight, 13.4% were overweight, and 14.4% were obese. Children in the obesity group had shorter sleep and meal times (P<0.001), lower vegetable and fruit consumption frequencies (P<0.001), higher fast food consumption frequencies (P<0.001), higher rates of skipping meals (P<0.01) and breakfast (P<0.001), and more frequently used smartphones and watched TV during meals (P<0.001). The underweight group had the highest scores for all eating development factors but more frequently had chewing and swallowing difficulties (P<0.001). The study confirms underweightedness and obesity are present different problems and indicates that nutrition teachers should conduct accurate studies on the eating habits and behaviors of obese and underweight students and provide individually tailored nutritional counseling.

Development and Application of an Evaluation-Based, Student-Led Obesity Program (평가 기반 학생 주도형 비만관리 프로그램 개발 및 적용)

  • This study evaluated the effectiveness of an obesity program developed to solve 'obesity', which was selected as the top priority for urgent improvement among the dietary problems of elementary school students in Busan. The program aimed to practice four health rules every day (sleep early, eat two vegetables with each meal, reduce sugary snacks, and exercise for 30 minutes every day). The participants were trained to practice the four rules online in real time every day for three weeks, and their performance in nutrition education tasks was monitored using Padlet. The anthropometric measurements showed no change in the overall average weight before and after participating in the program, but all students grew in height (z=-6.978, P<0.001), and the number of obese students decreased significantly (z=-3.317, P<0.001). This obesity program was effective in improving height growth and obesity in elementary school students. In terms of dietary changes, after participating in the program, the frequency of vegetable consumption increased significantly (z=-4.849, P<0.001), the frequency of sweet snack consumption decreased significantly (z=-4.298, P<0.001), and the bedtime improved (z=-1.000). Therefore, the non-face-to-face, self-directed obesity program developed in this study is expected to reduce the workload of nutrition teachers carrying a heavy workload such as meal service and nutrition classes, and can be used as an efficient nutrition counseling program.

Effect of heat treatment on physicochemical properties of soybean (열처리 방법에 따른 대두의 이화학적 특성 변화)

  • Soybean is one of the most common food materials for making traditional Korean foods such as soybean paste, soy source and soy snack, and their manufacturing processes include heat treatment of soybean. This study was carried out to investigate the effect of heat treatment on the physicochemical properties of soybean. All samples were heat treated under commercial steamed, puffed or air-fried conditions, and then the protein molecular weight distribution, thermal properties, fluorescence intensity, protein solubility, and water and oil holding ability of the heat treated soybeans were examined. Sodium dodecyl sulfate polyacrylamide gel electrophoresis indicated that heat treatment caused fragmentation of polypeptide chain in soybean, showing the band of low molecular ranging from 17 to 40 kDa. The differential scanning calorimetric analysis showed the decrease of enthalpy values (${\Delta}H$) by heat treatment. Fluorescence spectroscopy indicated that the heat treatment caused lipid oxidation as proved by increasing emission intensity. The protein solubility at pH 3-6, and water holding capacity of heat treated soybeans were the higher than no treatment. These results suggest that the heat treatment resulted in decreased enthalpy values, and increased protein degradation, lipid oxidation and water affinity of soybean. Moreover, the effect of heat treatment on physiochemical properties of soybeans was more significant under air-fried condition.
