Change in Flavor Components of Black-fermented Garlic Wine according to the Type of Chips during the Manufacturing Process (흑마늘와인 제조과정 중 숙성칩의 종류에 따른 향기성분 변화)

  • Black fermented garlic includes many pharmacological components. Therefore, in this study, black fermented garlic wine was manufactured and its flavor compounds were investigated difference of aging chips from America and France. The fermented wine was stored at $10^{\circ}C$ for 6 months. GC/MS was used for the flavor components analysis. Wine using American chip contained 2-methyl-1-propanol, 3-methyl-1-butanol, 2-methyl-1-butanol, acetaldehyde, butanoic acid, octanoic acid, 1,1-diethoxyethane, and allyl methyl sulfide. 1-Propanol, 2-methyl-1-propanol, 3-methyl-1-butanol, acetaldehyde, acetic acid, propanoic acid, butanoic acid, octanoic acid, 2-heptanone, 1,1-diethoxyethane, N-amino32-hydroxypropanamidate, n-butylamine, and chloroacetonitrile were detected as major flavor compounds using France chips. Especially, the wine contained allyl methyl sulfide that was resulted from black fermented garlic. There were more compounds that smell like fruit in the wine using American chips relatively. And allyl methyl sulfide was detected only in the wine using America chips. Whereas acetic acid was detected only in the wine using France chips.

Effect of xylitol on the taste and fermentation of Dongchimi (자일리톨 첨가가 동치미의 맛과 발효숙성에 미치는 영향)

  • The effect of xylitol on the Dongchimi fermentation was investigated by measuring the sensory, physicochemical and microbiological properties during fermentation of up to 30 days. Dongchimi with 0, 1, 2, 3 and 4% w/v xylitol was fermented at 10$^{\circ}C$. The addition of 1% xylitol gave the highest scores in terms of the overall acceptability, texture, ripeness, sweet taste and smell. During the fermentation, the total acidity increased, while the pH gradually decreased. The reducing sugars showed the highest content with the addition of 1% xylitol. The vitamin C was increased in the early stage of fermentation, but reduced gradually after 5 days. The vitamin C content of the Dongchimi with 2% xylitol addition was shown to be the highest. The total viable cells and lactic acid bacteria increased between 2 and 5 days of fermentation, but were gradually reduced thereafter. The numbers of lactic acid bacteria with 1% xylitol addition were more numerous than with the other percentage additions. The current study showed that the application of 1% xylitol to the fermentation of Dongchimi enhanced the sensory values of the fermented product.

Quality Characteristics of Injeulmi by Different Ratios of Red Ginseng Powder, Water and Sugar (홍삼가루, 수분 및 당 첨가량에 따른 인절미의 품질특성)

  • The purpose of this study is to find out the optimal mixing ratios of three different amount of red ginseng powder(0, 5, 10%), water(12, 16, 20%) and sugar(4, 8, 12%) per weight of glutinous rice powder. The microbial count increased with increasing moisture content. The microbial count has decreased in 10% addition group though the microbial count according to the red ginseng powder addition did not have a difference the having mind in 5% addition group. Control group(the red ginseng powder no addition) showed an exponential increase in the change in hardness according to the amount of the red ginseng powder addition 24 hours after(except the moisture addition amount 20%). However, the change in devotion hardly appeared without the relation in moisture and the amount of the sugar addition in the addition group of the red ginseng powder 5%. Moreover, the change in hardness besides the moisture addition amount 12% hardly appeared also in the addition group of the red ginseng powder 10%. It has been understood that the red ginseng powder addition 5% crowd smells, and the taste and the color are suitable though it was clarified to the red ginseng powder addition 10% crowd that a peculiar smell taste and taste to the red ginseng are very strong by the sensory inspection. In conclusion, according to its microbial count, texture and sensory analyses, the optimal Injulmi formulation consisted of red ginseng powder, water and sugar were 5, 16 and 8%. The results suggested that red ginseng powder is effective in increasing the self life of Injulmi.

The factor of sensory processing that affect on the motor and process skill of children with cerebral palsy (뇌성마비 아동의 운동 및 처리기술에 영향을 미치는 감각처리 요인)

  • This study was conducted to identify sensory processing factors that affect motor and process skills of children with cerebral palsy. A total of 36 children with cerebral palsy who attended at the J pediatric development center and the N rehabilitation hospital in Seoul participated. Pearson's correlation coefficients were used to test the relationship between motor skills, process skills and sensory processing abilities of children. Moreover, hierarchical multiple regression was used to identify the sensory processing factors influencing motor and process skills. Motor skills of children with cerebral palsy were correlated with auditory filtering, low energy/weakness, and visual/auditory sensitivity of sensory processing items, whereas process skills were correlated with tactile sensitivity and taste/smell sensitivity. The hierarchical regression model for motor skills revealed movement sensitivity, auditory filtering, and low energy/weakness as significant factors influencing sensory processing items. However, no factors were shown to influence process skills. The results of this study will be useful as a basic resource for rehabilitation of children with cerebral palsy. However, further studies evaluating a larger population should be conducted to verify the results presented herein.

Survey of Recognition on Periodontal Health Inpatients of Some Dental Clinics in Geoje (거제지역 치과 내원환자의 치주 건강에 관한 인식도 조사)

  • The following are the results of questionnaire research targeting 213 people at 4 dental clinics in Geoje region in order to examine recognition on the periodontal health in Inpatients of dental clinic. 1. In the item of recognition on periodontal health, the patients, who know about whether or not recognizing periodontal disease, were indicated to be 62.9%. Women were knowing better than men. The significant difference by gender was indicated(p < .01). As for a route of acquiring information on periodontal disease, a case of obtaining via television and internet was surveyed to be 31.6%. As for recognition on frequency of tooth scaling, a case of recognition as saying of the necessity of doing once a year was indicated to be 43.7%. The significant difference was indicated depending on job and academic background(p < .001). 2. As for the periodontal-health status, the patients of recognizing that the condition in the gums is mostly healthy were indicated to be 75.1%. The more professional job led to showing the significant difference depending on occupation(p < .001). As for a reason for a visit to dentistry, a case of visiting due to smell in the mouth was indicated to be 18.1%. As for kinds of dental treatment, the patients. who received the tooth scaling by visiting a dental clinic. were the largest with 46.5%. The significant difference was indicated depending on job(p < .01), academic background(p < .05), And monthly income(p < .001).

Processing of Functional Mackerel Fillet and Quality Changes during Storage (기능성 고등어 Fillet제조 및 저장 중 품질 변화)

  • In order to endow mackerel fillet with antioxidant effect, functionality and remove fishy smell, chitosan, oligosaccaride, extracts of green tea, dill weed and ginger was used as soaking solution additives. Quality characteristics of soaked mackerel fillet(SMF) was investigated during storage temperature and time after vacuum packing with polyvinyl chloride film. From the results of VBN measurement, initial spoilage was showed within 2 or 3 weeks in SMF soaked with brine including extracts of green tea, herb and ginger at 5$^{\circ}C$. In case of adding chitosan and oligosaccarides to the solution mentioned above, initial spoilage was found from 4 to 7 weeks, oxidation was reduced remarkably and SMF stored at -20$^{\circ}C$ maintained the freshness during 80 days. Viable cell counts were reached to 108 for 3 weeks storage at 5 and 0$^{\circ}C$. But no change of viable cell counts was founded at -20$^{\circ}C$. The shelf-lifes of SMF according to 5, 0 and -20$^{\circ}C$storage temperatures were 2 to 3, 4 to 7 weeks and about 3 months, respectively.

Processing of Radish Juice by Mixed Culture with lactic Acid Bacteria (유산균의 혼합배양에 의한 무주스의 가공)

  • The starters, 0.3% of Leuconostoc mesenteroides, Lactobacillus brevis and Lactobacillus fermentum, were added in radish juice to process the radish juice by single and mixed cultures. The radish Juice was fermented for 7 days at 25$^{\circ}C$, 20 days at 15$^{\circ}C$, and 36 days at 5$^{\circ}C$. When fermented at 25$^{\circ}C$, the number of lactic acid bacteria in the juice made with mixed culture was higher than that of the single culture. But, juice fermented at low temperatures (15∼5$^{\circ}C$), the addition of starters was not effective, although there were some differences by inoculation strains. Although there was a little differences by inoculation strains, the content of nonvolatile organic acid and L-ascorbic acid were found more in the juice inoculated with lactic acid bacteria than the juice not inoculated. When the single and mixed cultures at the optimal maturity were tested, the significant difference was found at 5% level except the yeasty and moldy smell and the unripe taste. According to the preference test, the mixed-cultured radish juice incubated at 25$^{\circ}C$with Lactobacillus brevis and Leuconostoc mesenteroides were evaluated superior to commercial Dongchimi. As a result, taste and quality of radish juice was improved by addition of starters.

Fermentation and Quality Characteristics of Yakju According to Different Rice Varieties (쌀 품종에 따른 약주의 발효 및 품질 특성)

  • This study was performed to improve quality of traditional Yakju and compares quality of Yakju according to different rice cultivars. The pHs of Ilmi Yakju and Hanarum Yakju showed 4.14 and 4.07, respectively and the other Yakju's pHs were ranged from 3.92 to 3.98. The content of total acid of Yakju using Indica rice imported from Thailand was the highest among the samples. The major components of free sugar was glucose and the highest content of total free sugars was found in Indica Yakju. The content of reducing sugars in Yakju using Indica rice was the higher than other samples. The ethanol content of Hanarum Yakju showed higher than those Yakju's and the lowest ethanol content found for the indica Yakju. The volatile compounds from the rice Yakju were identified by GC-MS. Twenty-one volatile compounds were found in rice Yakju. And the major volatile compounds were ethanol, acetic acid, 1-methyl-1-propanol, 2-methyl-butane, 3-methyl-1-butanol, iso-amylalcohol and 1-hexanol from Yakju. As the result of sensory test, higher scores for smell and color were found for the Yakju used Hanarum Yakju. The highest score sweat and acid were found for the Anda rice Yakju in sensory test. The result of sensory evaluation indicated that Hanarum Yakju and Anda Yakju were better than the other samples, and the value of bitterness was no significant in this test.

Quality characteristics and antioxidant activities of rice cookies added with Lentinus edodes powder (표고버섯 분말을 첨가한 쌀 쿠키의 품질 특성 및 항산화 활성)

  • This study was conducted to investigate the effect of Lentinus edodes powder on the quality characteristics and antioxidant of rice cookies. The cookies for this experiment was made by 3 main ingredients including rice powder, flour, Lentinus edodes powder. The proportion of rice powder was fixed to 50% for the total amount of ingredients. The amount of reminded 2 ingredients (flour and Lentinus edodes powder) were varied. The amount of flour was decreased up to 38%, and the addition of Lentinus edodes powder was increased to 4%, 8% and 12%. Density of the dough, hardness, total polyphenol content, DPPH free radical scavenging activity, and reducing power increased with increasing Lentinus edodes powder content. Moisture content, pH of the dough, spread factor, loss rate, leavening rate, and L values of the cookies were decreased with increasing Lentinus edodes powder content. The result of consumer acceptance test revealed that there were no significant differences in smell, taste and overall acceptability, while the preference of color decreased as the amount of Lentinus edodes powder increased. To sum up, the cookies with 12% Lentinus edodes powder can produced the best results in terms of quality and antioxidant potential.

The Correlation Between Smartphone Addiction and Sensory Processing Feature Depending on Gender in College Students (작업치료전공 대학생의 성별에 따른 스마트폰 중독과 감각처리와의 관련성)

  • Objective : The purpose of this study was to investigate smartphone addition and sensory processing character depend on gender for occupational therapy (OT) students, and to identify the correlation between smartphone addiction and sensory processing feature. Methods : Participants of this study were 168 (70 male/90 female) students majoring occupational therapy. Measurements in this study were a questionnaire about general information of subject, smartphone addiction scale, and adult/adolescent sensory profile. Data collection period was from November 2017 to March 2018. Methods for the data analysis included descriptive statistics, independent t-test and Pearson correlation of SPSS 22.0. Results : In term of the purpose of using smartphone, majority response was communication and gaming ranked in next. There were difference between male and female in the total smartphone addition, cyberspace-oriented relationship, withdrawal and tolerance. The result showed that all sensory processing are related with total smartphone addition (r = .236 ~ .603) for man. And for women, total smartphone addition is little related with the taste/smell processing (r= .290), visual processing (r= .324), touch processing (r= .214), low registration (r= .214), sensory sensitivity (r= .243), and sensory avoiding (r= .217). Conclusion : This study found that there is difference between male and female in terms of relation between smartphone addition and sensory processing feature according for occupational therapy students.
