Estimation of Growth Curves and Suitable Slaughter Weight of the Liangshan Pig

  • The Liangshan pig is a traditional Chinese small-sized breed; it has a relatively long feeding period and low meat production ability but superior meat quality. This study utilized three non-linear growth models (Von Bertalanffy, Gompertz, and logistic) to fit the growth curve of Liangshan pigs from an unselected, random-bred pig population and estimate the pigs most suitable slaughter weight. The growth development data at 20 time points of 275 Liangshan pigs (from birth to 250 d) were collected. To analyze the relative gene expression related to development, seven slaughter weight phases (50, 58, 66, 74, 82, 90, and 98 kg) (20 pigs per phase) were examined. We found that the Liangshan pig growth curve fit the typical S-curve well and that their growth turning point was 193.4 days at a weight of 62.5 kg, according to the best fit Von Bertalanffy model based on the goodness of fit criteria. Furthermore, we estimated that the most suitable slaughter weight was 62.5 to 74.9 kg based on the growth curve and the relative expression levels of growth-related genes.

  • Intensive selection for muscle development and against fat deposition in pigs during the last 50 years has contributed to the increased incidence of porcine stress syndrome (PSS) and pale soft exudative pork (PSE). Genetics, nutrition and management, preslaughter animal handling, stunning, dehairing and carcass chilling influence the incidence and magnitude of the PSE condition. The normal incidence of PSE has been reported to range from 10 to 30%, but in some isolated instances is up to 60%. The elimination of halothane-positive pigs in breeding programs has reduced PSS and PSE. Further improvements in meat quality by terminal sire evaluation and selection can be achieved within halothane-negative populations because around 20% of the variation in meat color and water binding capacity seems to be genetically related. Pre-slaughter handling on the farm, during transit to the packing plant and at the packing plant can greatly influence the meat quality, contributing 10 to 25% of the variation. An effective stunning method, skinning instead of scalding/dehairing and rapid post-slaughter chilling further reduce the incidence of PSE pork. In addition to proper care and handling a carcass-merit based marketing system, that reflected the value differential between desirable and undesirable meat quality in the pricing system for pigs, would provide a great incentive to change pork production systems in order to improve meat quality, thus improving the image and usefulness of pork as food.

돈군의 Salmonella 모니터링을 위한 림프절 추출액 사용에 대한 평가 (Evaluation of the extract from lymph nodes for Salmonella monitoring in pig herds)

  • The objective of this study was to investigate the use of extract from mesenteric lymph nodes as an alternative to serum for ELISA to detect Salmonella antibodies in slaughter pigs. Among 324 slaughter pigs, 65 (20.1 %) were positive in the serum ELISA and 76 (23.5%) were positive in the ELISA with extract from lymph nodes. A total of 24 (7.4%) Salmonella representing 6 serotypes were isolated from mesenteric lymph nodes and 35 (10.8%) Salmonella belonging to 2 serotypes were also recovered from cecal contents of slaughter pig samples, respectively. The most prevalent serogroup was B (55.9% of isolates) and serotype was Typhimurium (52.5% of isolates). In the comparison of the results of between the serum ELISA and Salmonella isolation, kappa value was 0.28 with mesenteric lymph nodes and 0.37 with cecal contents, respectively. However, the extract ELISA had sensitivity of 98.5%, specificity of 95.4% and kappa value of 0.88 as compared with the serum ELISA. Because high degree of concordance between the serum ELISA and the extract ELISA was observed (P=0.24), extract from lymph nodes could be used as an alternative to serum for the detection of Salmonella antibodies in the ELISA.

출하 전 마그네슘 단기급여가 돼지의 혈중 스트레스 관련 호르몬 함량 및 육질에 미치는 영향 (The Effects of Dietary $MgSO_4$ Supplement on Serum Stress Hormones Concentrations and Pork Quality in Late Finishing Pigs)

  • 본 연구는 우리나라 도축장 현실에서 출하 전 마그네슘 단기 첨가 급여가 돈육 육질을 개선시키고 PSE 돈육 발생을 억제시킬 수 있는지를 구명하기 위하여 거세비육돈(Landrace) 60두를 대조구(MgSO₄ 무첨가구)와 MgSO₄ 급여구로 30두씩 나누어 도축 전 5일 동안 사료와 물을 무제한 급여하여 6일째 도축장으로 수송한 후 2시간 내에 도축하였다. 도축 전 MgSO₄ 첨가 급여는 도축 시 혈중 마그네슘 함량에 영향을 미치지 않았으며, 혈중 스트레스 관련 호르몬(adrenaline, noradrenaline) 역시 마그네슘 급여구와 대조구 사이에 차이가 없었다. 사후 초기 pH는 대조구가 더 높았고, 최종 pH는 유의적인 차이가 없었다. 사후 도체온도는 도축 직후 MgSO₄ 급여구가 더 높았으나 3시간과 6시간에는 비슷하였다. PSE 발생율은 대조구 30%, 마그네슘 급여구 23.3%로 마그네슘 급여구가 약간 낮은 경향을 보였으나 드립로스와 육색 명도에는 차이가 없었다. 비록 본 연구에 공시된 비육돈의 유전적 배경과 도축 전 비육돈의 취급방법이 기존 보고자들과 달랐지만 우리나라의 현실적인 여건을 고려할 때 마그네슘 첨가급여에 의해 돈육 육질을 개선하는 방법이 확립된다면 돼지 사육업자나 가공업자에게 큰 이익을 가져다줄 것이므로 마그네슘 효과를 극대화시킬 수 있는 방법을 찾아낸다면 경제적인 방법이 될 것으로 보인다.

Backfat Characteristics of Barrows and Gilts Fed on Tuna Oil Supplemented Diets during the Growing-finishing Periods

  • This study was conducted to evaluate the effect of supplementing tuna oil to diets of growing-finishing pigs (barrows and gilts) on backfat characteristics when slaughtered at different weights. Four hundred and eighty crossbred (Large White$\times$Landrace$\times$Duroc) pigs averaging 30 kg were allotted to 12 treatment combinations (40 pigs/treatment combination) in a completely randomized design with a $2{\times}2{\times}3$ factorial arrangement of treatments. The treatments were: dietary tuna oil supplementation (0 and 2%); sex (barrows and gilts); and slaughter weight (90, 100 and 110 kg). As pigs reached their slaughter weight, they were randomly selected (8 pigs/treatment combination; 96 pigs in total) and slaughtered. Backfat colour, hardness and fatty acid profile were assessed. There were significant (p<0.05) differences in colour (L* and a* values) among treatments. Backfat of the control group was harder than on the tuna oil (p<0.001) and that of barrows was harder than of gilts (p<0.05). In addition, the thiobarbituric acid reactive substances (TBARS) values of fat from the tuna oil group stored for 3 days were higher (p<0.001) than the control group. The TBARS values of gilts tended to be higher than those of barrows and increased with increasing slaughter weight in the tuna oil group. The cholesterol and triglyceride levels were not affected by diet and sex but the triglyceride level increased with increasing slaughter weight (p<0.01). The tuna oil group had higher polyunsaturated fatty acid (PUFA) content, ratio of PUFA: saturated fatty acid (SFA) and total n-3 fatty acids but lower monounsaturated fatty acids content and n-6:n-3 fatty acids than the control group (p<0.01). Gilts had higher PUFA and n-6 fatty acids in backfat than barrows (p<0.05). The backfat from both 90 and 100 kg slaughter-weight groups had a lower ratio of n6:n3 fatty acid than the 110 kg slaughter-weight group (p<0.05). However, this was more pronounced in the tuna oil group. The PUFA: SFA was also increased while the n-6:n-3 ratio tended to reach the recommended levels for healthy eating in human beings of <5. However, due to oxidative susceptibility, barrows should not be slaughtered at more than 100 kg for the meat to be acceptable to consumers.

  • We report the seasonal prevalence of the mycoplasmal pneumoniae of swine (MPS) in slaughter pigs from July of 1999 to June of 2000. Gross finding of lung lesion observed and examined by dot-ELISA. In gross finding of lung lesion from 750 pig samples, 465 (62.0%) was MPS, and 129 (17.2%) was single or double infection with actinobacillosis and pasturellosis. However, 156 (20.8%) had no lesion. In seasonal detection, the prevalence was found to be winter (69.5%), autumn (63.5%), summer (60.0%) and spring (54.7%) in orderly frequency. 영남지방 도축돈의 Mycoplasma 폐렴조사 및 분리균에 대한 약제 감수성 (Survey on mycoplasmal pneumonia of swine in Youngnam area and antimicrobial susceptibility of Mycoplasma hyopneumoniae isolated from Slaughter pigs)

  • The present study was carried out to investigate the prevalence of mycoplasmal pneumonia of slaugter pigs in Youngnam area during the period from 1995 to 1997. The prevalence and pathomorphology of gross lung lesions were studied from 682 slaughter pigs in 8 swine herds. Gross lesions of pneumonia were recorded in the lungs of 442(64.8%), from 367 out of them(83.0%) were diagnosed as mycoplasmal pneumonia. Microbiological examination was performed with 197 lungs with gross lesions of mycoplasmal pneumonia of slaughter pigs from 8 different swine herds. M hyopneumoniae, P multocida, A pleuropneumoniae, Streptococcus spp, Corynebacterium spp, and H parasuis were detected in 24. 4%, 48.2%, 2.5%, 11.2%, 3.6%, and 1.0% of the pneumonic lungs, respectively. A total of 48 strains of M hyopneumoniae was investigated for their in vitro susceptibility to 8 antibiotics. Among the drugs tested, lincomycin, oxytetracycline, tiamulin and tylosin showed the high activity in minimal inhibitory concentration(MIC) of $0.04{\sim}5{\mu}g/ml$ while erythromycin showed low activity in MIC values($1.25{\sim}{\geq}40{\mu}g/ml$).

The number of bacteria in antemortem meat surface was higher ten times in March and ten to one thousand times in June to August compared with postmortem meat surface. 2. 도축돈에서의 Actinobacillus pleuropneumoniae 분리, 동정 및 감염률 조사 (Isolation, identification and serological investigation of Actinobacillus pleuropneumoniae in slaughtered pigs)

  • This study was conducted to isolate the Actinobacillus pleuropneumoniae (APP) and to find out the distribution of 15 serovars mainly in southern Gyeonggi province, Korea. From July 2011 to Nov. 2012, a total of 2,204 slaughter pigs (110 herds) were inspected for evaluation of APP like pneumonic lesions. 48 (33.8%) APP strains were isolated from the 142 lungs and identified using PCR assays (cps, apx/omlA, biovar). Consequently, the serotype ratio were as in the following; type2 41.7% (n=20), type5 33.3% (n=16), type12 10.4% (n=5), type1 6.2% (n=3), type4 and 7 2.1% (n=1) and unknown 4.2% (n=2). Also serological test was implemented for 452 (83 herds) serum samples randomly collected from above slaughter pigs using commercial ELISA kits. The positive ratio of each serotype for tested pigs were 19.1% (77/404) on [2], 7.1% (32/452) on [3, 6, 8], 6.9% (28/404) on [5a, 5b], 6.2% (28/452) on [4, 7], 2.8% (9/320) on [12], 2.0% (9/452) on [1, 9, 11] and 0.0% (0/452) on [10]. And 49.3% (223/452) of pigs were positive on apxIV antibody. On the basis of latter screening test, the infected farm ratio accounted for 71.1% (59/83) and that was much higher than previously reported data.
