The effect of smoking on the quality boiled sausage (훈제 처리가 가열소지에 미치는 영향)

  • The effect of smoking on the quality sausage Sausages were prepared from beef, port, chickens, games, fish and shellfish with polyphosphate salt and spices. Sausage history goes back to 3,000 years of age. The procedure of sausage 1) Meat Curing 2) Meat Control 3) Add Spices 4) Permissible Ingredients 5) Grinding 6) Mixing Emulsion 7) Stuffing 8) Showing 9) Smoking 10) Cooking 11) Drying 12) Packaging Sausage Product to get information on the effect of smoking onto the quality of meat produces. Sausage was smoked under a given conditions. Smoking was conducted as 35f$^{\circ}C$to 6$0^{\circ}C$ the related humidity of smokehouse was still at 60 to 70 percent. Results are as follows: 1. The Penetrated smoke in sausage was prolonged < p.<0.02 when sausage was smoked 2hours at 60~$65^{\circ}C$ the penetrated amount of free acetone in sausage was 0.5mg%. 2. Peroxide value of sausage as heating treatment both at 3$0^{\circ}C$ and at 5$0^{\circ}C$ was prolonged. 3. When sausage was heated at 3$0^{\circ}C$, bacteria of sausage increased In number while at 60~$65^{\circ}C$ bacteria of sausage increased In number fourteen hours. 4. When sausage was treated with smoking the distribution of free amino acids in sausage was changed markedly. 5. The longer smoking time of the products was the higher the content. 6. In case of oak wood smoke flavoring all of test samples. 7. Rapid decrease of does-response mutagenic curve of the smoke flavoring of oak wood and apple wood by in the peak of curve and phenol in the smoke flavoring. Continuous efforts are required to make sausages easily in the butcher shops and in the restaurants. 8. Sausage texture evaluation has 13 rules. It is Elasticity, Surface Moisture, Surface Smoothness, Center Hardness, Skin Toughness, Cohesiveness, Denseness, Moisture Release, Cohesiveness of Mass, Lumpiness, Graininess (of Contents), Skin separation, Oiliness and sensory 11 rules evaluation is color, texture, mold, flavor, sweet test, salty, sourness, bitter, and savory taste. 9. Smoked, component, peroxide value, bacteria, color, free amino acid, tenderness, flavor, shrinkage are important values.

Dental Properties of Polymer Composite Filled with Barium Silicate Hybridized with Hydroxyapatite (수산화인회석으로 혼성화시킨 바륨실리케이트가 충진된 고분자 복합체의 치과적 물성)

  • Dental properties of polymer composite loaded with hybrid filler of barium silicate (BaSi) and hydroxyapatite, which is a principal component of human bone material, were investigated. A visible light system was utilized to activate the acrylic resin matrix of the composite. Based on the experimental results, it was found that mechanical strength of the composite was consistently increased with an increase of BaSi content in the hybrid filler. And those value rose above the dental specification enough to apply for dental materials. However, abrasion resistance was slightly decreased with increasing BaSi content in the filler. Depth of cure value was 6 to 9 mm applicable for dental restoration irrelevant to hybrid filler composition. On the other hand, there was no strict trend between filler composition and polymerization shrinkage as well as degree of conversion.

BIOLOGICAL EFFECTS OF pH CONCENTRATION ON CULTURED HUMAN PERIODONTAL LIGAMENT CELL ACTIVITY IN VITRO (수소이온 농도의 변화가 배양 인체 치주인대 세포의 활성에 미치는 영향)

  • Periodontal therapeutic modalities should be re-establishing and regenerating the periodontal tissue previously lost to the disease. To achieve periodontal regeneration, periodontal ligament cells must selective migrate to the deneded root surface, attached and proliferated it. Local pH concentration is one of the most factors that periodontal regeneration. The aims of this study were to examine on biological effects of pH to the human periodontal ligament cells in vitro, especially on the cell morphology, attachment, activity, vitality and viability. Human periodontal ligament cells were cultured from extracted tooth for non-periodontal reason. Immediately after extraction, any soft tissue adhering to the cervical parts of the roots was carefully removed with a sterile curette. To produce different pH levels in the media, Eagle's MEM was adjusted from pH 6.6 to 8.2 in 0.2 intervals with 1 M NaOH and 1 N HCl. After cultivation, Then, Periodontal ligament cells were cultured at pH ranging from 6.6-8.2. attachment assay was done at 1, 2 day incubation and activity assay was done at 1, 2, 3 day incubation. The experiments were evaluated by scaning electron microscopic techniques (HITACHIX-650 Scaning Electron Microanalyzer, Tokyo, Japan), MTT assay, and the cultured periodontal ligament cells were fixed in neutral formalin for 24 hours and immunohistochemically processed by PCNA for proliferating ability. The surviving cells in the medium showed slightly increased volume and widening intercellular distances at low concentration of pH than control group (pH 7.4), and apparently shrinkage at high concentration of pH than control group (pH 7.4). The results of the statistical analysis from the experiment on attachment, vitality and viability were as follows. Attachment of periodontal ligament cells at 1st and 2nd day, similar attachment rate of low concentration pH compared with control value (pH 7.4). But above pH 8.0, attachment rate were statistically significant decrease from control value(P<0.05). Periodontal ligament cell's activities were maximum at pH 7.6 by MTT assay. Similar with control value at low concentration of pH. But, the activities were statistically significant decrease at high concentraration of pH(P<0.05). Cellular proliferating rate (PCNA index) were statistically significant decrease from control value at low and high concentration of pH(p<0.05). This results suggested that hjgh concentration pH, in other words, alkali pH was cytotoxic effects on human periodontal ligament cells in vitro.

Effect of Transportation at High Ambient Temperatures on Physiological Responses, Carcass and Meat Quality Characteristics in Two Age Groups of Omani Sheep

  • The aim of this study was to determine the effects of short road transportation in an open truck during hot season on live weight shrink, physiological responses, and carcass and meat quality of Omani sheep at 6 and 12 months of age. Thirty-six male sheep, 18 of each age group, were used. Age groups were assigned randomly to transported and not-transported groups. The transported group was transported to the slaughterhouse the day of slaughter in an open truck covering a distance of approximately 100 km. The average temperature during transportation was $37^{\circ}C$. The not-transported group was kept in a lairage of a commercial slaughterhouse with ad libitum feed and water for 48 h prior to slaughter. Blood samples were collected from sheep before loading and prior to slaughter via jugular venipuncture to assess their physiological response to transport in relation to hormonal levels. Animals were weighed just before loading onto a truck and after transport to assess shrinkage. Muscle ultimate pH, expressed juice, cooking loss percentage, WB-shear force value, sarcomere length and colour L*, a*, b* were measured on samples from longissimus dorsi, biceps femoris and semitendinosus muscles collected at 24 h postmortem at $1-3^{\circ}C$. Live weight shrinkage losses were 1.09 and 1.52 kg for 6 and 12 month transported sheep, respectively. The transported sheep had significantly (p<0.05) higher cortisol, adrenaline, noradrenaline, and dopamine concentration levels prior to slaughter at both ages than the not-transported sheep. Transportation significantly influenced meat quality characteristics of three muscles. Muscle ultimate pH and shear force values were significantly higher, while CIE L*, a*, b*, expressed juice and cooking loss were lower in transported than not-transported sheep. Age had a significant effect on meat quality characteristics of Omani sheep. These results indicated that short-term pre-slaughter transport at high ambient temperatures can cause noticeable changes in physiological and muscle metabolism responses in sheep.

The Prognostic Value of the Tumor Shrinkage Rate for Progression-Free Survival in Patients with Non-Small Cell Lung Cancer Receiving Gefitinib

  • Background: The efficacy of epidermal growth factor receptor tyrosine kinase inhibitor (EGFR-TKI) therapy can be measured based on the rate of treatment response, based on the Response Evaluation Criteria in Solid Tumors (RECIST) criteria or progression-free survival (PFS). However, there are some patients harboring sensitive EGFR mutations who responded poorly to EGFR-TKI therapy. In addition, there is variability in the PFS after EGFR-TKI treatment. Methods: We performed a retrospective analysis of the medical records of 85 patients with non-small cell lung cancer, who had achieved a stable disease or better response at the first evaluation of treatment response, after receiving a 2-month course of gefitinib. We calculated the tumor shrinkage rate (TSR) by measuring the longest and perpendicular diameter of the main mass on computed tomography before, and 2 months after, gefitinib therapy. Results: There was a significant positive correlation between the TSR and PFS (R=0.373, p=0.010). In addition, a simple linear regression analysis showed that the TSR might be an indicator for the PFS ($B{\pm}standard$ error, $244.54{\pm}66.79$; p=0.001). On univariate analysis, the sex, histologic type, smoking history and the number of prior chemotherapy regimens, were significant prognostic factors. On multivariate regression analysis, both the TSR (${\beta}$=0.257, p=0.029) and adenocarcinoma (${\beta}$=0.323, p=0.005) were independent prognostic factors for PFS. Conclusion: Our results showed that the TSR might be an early prognostic indicator for PFS in patients receiving EGFRTKI therapy.

The Fundamental Properties of Alkali-Activated Slag Cement (AASC) Mortar with Different Water-Binder Ratios and Fine Aggregate-Binder Ratios (물-결합재 비와 잔골재-결합재 비에 따른 알칼리 활성화 슬래그 모르타르의 기초특성)

  • This study investigates the fundamental properties of the water-binder (W/B) ratio and fine aggregate-binder (F/B) ratio in the alkali-activated slag cement (AASC) mortar. The W/B ratios are 0.35, 0.40, 0.45, and 0.50, respectively. And then the F/B ratios varied between 1.00 and 3.00 at a constant increment of 0.25. The alkali activator was an 2M and 4M NaOH. The measured mechanical properties were compared, flow, compressive strength, absorption, ultra sonic velocity, and dry shrinkage. The flow, compressive strength, absorption, ultra sonic velocity and dry shrinkage decreased with increases W/B ratio. The compressive strength decreases with increase F/B ratio at same W/B ratio. Also, at certain value of F/B ratio significant increase in strength is observed. And S2 (river sand 2) had lower physical properties than S1 (river sand 1) due to the fineness modulus. The results of experiments indicated that the mechanical properties of AASC depended on the W/B ratio and F/B ratio. The optimum range for W/B ratios and F/B ratios of AASC is suggested that the F/B ratios by 1.75~2.50 at each W/B ratios. Moreover, the W/(B+F) ratios between 0.13 and 0.14 had a beneficial effect on the design of AASC mortar.

Development of Analysis Tool for Structural Behavior of Domestic Containment Building with Grouted Tendon (CANDU-type) (국내 부착식 텐던 격납건물(CANDU형)의 구조거동 분석 도구 개발)

  • The structural integrity of containment building in Nuclear Power Plants has to be verified by the ISI(In Service Inspection) because there are some variations on the structural behavior of it due to the change of the physical properties of concrete and tendon with the lapse of time. In this study, the program 'SAPONC-CANDU' which can monitor and analyze the structural behavior of the containment building with grouted tendon (CANDU-type, 'Wolsong unit-2, 3, and 4' in Korea) was developed. This program is based on the algorithm which can calculate the prediction values of the quantities of strain variation for the vibrating-wire strain gauges embedded into the concrete of the containment building under temperature and time dependent factors which are creep, shrinkage, and prestressing force. The readings of the strain gauges are used as input data for the operation of the program. And it finally provides graphically a prediction value, line and band of the quantity of strain variation for the respective strain gauges, therefore, it is thought that the site engineers are able to assess the structural integrity of the domestic containment building with grouted tendon with easy using this program.

A Study on Moisture Transport of Artificial Lightweight Concrete (인공경량골재 콘크리트의 수분이동 특성에 관한 연구)

  • For the first step on the quantitative evaluation of shrinkage reduction and differential shrinkage analysis of lightweight aggregate concrete, this study sets the moisture transport model of concrete by pre-absorbed water of porous lightweight aggregates and measured effective moisture diffusion coefficient, moisture capacity, degree of humidity supply and degree of humidity consumption by water binder ratio and aggregate type. The effective moisture diffusion coefficient in steady state caused by humidity difference between inside and outside of concrete had low value as low water-binder ratio. And in case of same water-binder ratio, effective moisture diffusion of mixtures used normal aggregates were lower than those used lightweight aggregates. To determine moisture store capability of concrete - moisture capacity, moisture contents were measured in 9 humidity conditions. As a result moisture contents of mixtures used lightweight aggregates was higher than mixtures used normal aggregates in all humidity conditions. This study measured lightweight aggregates' degree of humidity supply that applicable to normal atmospheric environment (above RH 50%) and made it quantitatively. Also amount of moisture release was set as a exponential function that represents a clear trend proportion to time and inverse proportion to humidity of the surroundings. As the result of measurement about degree of moisture consumption inside concrete following the internal consumption caused by cement hydration self-drying, it was showed that rapid decrease of humidity, around 10%, at early ages (7~10 days) when water-binder ratio is 0.3 and slow decrease around 5% and 1% when water-binder ratio is 0.4 and 0.5.

  • Recently, active research has been conducted to enhance the power characteristics and thermal stability of lithium-ion batteries (LiBs) by modifying separators using a ceramic coating method. However, since the thermal properties and surface features of the separator vary depending on the characteristics of the ceramic powders applied to the separator, it is crucial to manufacture ceramic powders optimized for the separator's performance. In this study, we evaluated the characteristics of three types of α-alumina (A-1, A-2, and A-3) produced with varying dispersant contents and milling times, in addition to commercial α-alumina (AES-11). Subsequently, the optimized powders (A-3) were coated onto the separator using an aqueous binder for comparison with the characteristics of an AES-11 coated separator and an uncoated PE separator. The A-3 coated separator improved electrolyte wettability with a low contact angle (44.69°) and increased puncture strength (538 gf). Furthermore, it exhibited excellent thermal stability, with a shrinkage value of 5.64% when exposed to 140℃ for 1 hour, compared to the AES11 coated separator (6.09%) and the bare PE separator (69.64%).

Evaluation of Drying Properties and Yields of Domestic Quercus Species for Enhancing Utilization (국산 참나무류의 이용활성화를 위한 건조특성 및 가공수율 평가)

  • In order to develop value-added utilization technology of domestic oaks the processing yield rate from the standing tree to the flooring material for the Quercus variabilis and Quercus mongolica were investigated. Also, to reduce drying time, improved drying schedule was applied and the physical properties were measured. The drying time was 173 hours in total, and the final moisture content was 5.39% (Quercus variabilis) and 4.17% (Quercus mongolica). The color difference of oak lumber before and after drying showed a significant change as ${\Delta}E$ value from 7 to 11. The shrinkage rates of Quercus variabilis and Quercus mongolica during drying were 8.1% and 8.5% in the tangential direction and 5.0% and 6.2% in the radial direction, respectively. The lumber manufacturing yield rate of sawn lumber was 30 to 40% and that of the final product was 8 to 15%. It is expected that the processing characteristics of the Quercus species investigated in this research could contribute to formulate an efficient production plan of domestic hardwoods that are still under utilization.
