Regional variation in the fatty acid content of shellfish was investigated on 5 species of Korean shellfish including murex shell, ark shell, jack-knife clam, orient hard clam, and little neck clam that were originated from 2 geographically different regions in Korea (Region 1: South coast, $34-35^{\circ}N$, $127-129^{\circ}E$; Region 2: West coast, $36-38^{\circ}N$, $126-127^{\circ}E$). Significant regional difference in total fatty acids content was observed in murex shell and little neck clam (p<0.01), but not in the other species of shellfish. The contents of saturated fatty acids, monounsaturated fatty acids, and polyunsaturated fatty acids including n-3 and n-6 fatty acids were appreciably higher in murex shell from Region 2 and in little neck clam from Region 1 than the shellfish originated from their counterpart areas (p<0.05). Nevertheless, relative percentages of the fatty acids remained constant within same species regardless of geographic regions or species. Considering the facts of that the fish/shellfish are unique sources of n-3 fatty acids and a little neck clam is the most-consumed shellfish in Korea, n-3 fatty acids intake might vary with the habitat of the shellfish that Koreans consume.
Processing conditions for dried condiments with oyster, pen shell and cockle shell were investigated. The enzymatic hydrolysis for 3 hours was more profitable than hydrothermal extraction to develop flavoring matters from oyster, pen shell and cockle shell. As a result of omission tests, nucleotides were predominated in the taste compounds of shellfish hydrolysates rather than free amino acids, and the contribution of nucleotides and free amino acids to the taste of shellfish hydrolysates was remarkable. The major flavoring components of shellfish hydrolysates were free amino acids and oligopeptides below 500 dalton. When shellfish hydrolysates were separated with membrane (molecular weight cutoff 500 dalton) for recovering flayer, recovering yields of amino type nitrogen were $92.1\~92.8\%$. Moisture contents of dried shellfish condiments prepared with pretense hydrolyzed oyster, pen shell and cockle shell were $3.5\%,\;3.8\%$ and $3.7\%$, respectively. Contents of total nitrogen were $69.4\%,\;78.8\%$ and $74.2\%$, and those of amino nitrogen were $45.5\%,\;48.9\%$ and $45.4\%$, respectively. Drying yield, solubility and absorption rates at Aw 0.88 were $11.7\%,\;78.4\%$ and $6.8\%$ in oyster, $8.2\%,\;73.6\%$ and $6.1\%$ in pen shell, $9.8\%,\;76.9\%$ and $6.6\%$ in cockle shell, respectively.

Harmful shell-boring species of the genus Polydora (Polychaeta: Spionidae) were frequently reported from commercially important mollusk species in Korea, Japan and China. The traditional approach based on the morphological characteristics showed limitations for species discrimination among shell-boring species. Therefore, DNA barcoding was adopted to identify Polydora species using molecular markers. Two Polydora species (P. haswelli and P. hoplura) in abalone shells were reported from our previous molecular phylogenetic study. In this study, we additionally reported the presence of shell-boring Polydora haswelli in commercially sold shellfish. The taxon-specific cox1 marker used in this study successfully allowed the isolation of P. haswelli from cockle Scapharca subcrenata, mussel Mytilus galloprovincialis, oyster Crassostrea gigas and scallop Argopecten irradians. Polydora hoplura was not found in these shellfish species. The genetic variations were found on the intraspecific level of P. haswelli and the same genotype was also detected in different shellfish species. This result can provide information on a new host and accurate parasitic Polydora species. Moreover, this report can be used as the biodiversity data of Polydora species on the invasion and transition of harmful Polydora species in mollusk aquaculture farms.
Growth-line analysis was carried out on 80 hard clam (Meretrix petechialis) from the Neolithic Age Eurwang-dong Shell Midden, Incheon, Korea, to determine the seasonality of shellfish collection and site occupation. Growth increments and the marginal index (MI) of the specimens were examined. And then the marginal index was compared to the monthly MI of modern specimens under the assumption that the growth pattern was the same as it is today. MI of the archaeological specimens ranged from 0.12 to 1.55 and was divided into four categories: < 0.63, spring; 0.63-0.76, summer; 0.76-0.89, fall; $${\geq}_-0.89$$, winter collection. As a result, 57 specimens (71.25%) of 80 specimens represented spring, 8 (10.0%) summer, 3 (3.75%) fall and 12 (15.0%) winter collection. The result indicates that shellfish could be collected year-round at the site with an emphasis on spring. Based on the size distribution of shells and the content of the midden, however, it seems that the midden site was not occupied permanently throughout the year but was used repeatedly but temporally for shellfish gathering and processing.
In the case of being contaminated with pathogenic Vibrio, shellfish pose a serious threat for public health. This study was conducted to investigate the presence of Vibrio parahaemolyticus and V. vulnificus in the seawater, bottom deposit and shellfish samples collected from the Gomso Bay, west coast of Korea. V. parahaemolyticus (30-80 CFU/g) was detected from seawater Jul. to Oct. and highest at Sep. V. parahaemolyticus was detected less than 10 CFU/g from seawater at Nov. with $14.6^{\circ}C$ of seawater temperature. V. parahaemolyticus (180-1,850 CFU/g) was detected more than 100 CFU/g from 3 kinds of shellfish, Short-necked clam Ruditapes philippinarum, Corb shell Cyclina sinensis, and Surf clam Mactra veneriformis, Jul. to Oct. and was highest in Surf clam at Oct. V. parahaemolyticus was detected less than 20 CFU/g from all tested shellfish at Nov. V. vulnificus (1.8-2.7 MPN/100 mL) was detected from seawater Jul. to Oct. and was not detected at Nov. V. vulnificus (18-236.7 MPN/100 g) was also detected from 3 kinds of shellfish Jul. to Oct. and was highest in Corb shell at Jul. V. vulnificus was not detected from all tested shellfish at Nov.
This study was performed to investigate the geochemical and benthic environment of three shellfish farms in Suncheon Bay during the period of September 2014 ~ April 2015. Three sampling stations were selected; St.1 is the shellfish farm of razor clam near Jangsan area. St.2 is the shellfish farm of small ark shell near Hwapo area and St.3 is the shellfish farm of razor clam near Yongdu area. Razor clam was the dominant species at St.1, small ark shell and granulated ark shell were dominant at St.2 and St.3, respectively. Granulated ark shell inhabited St.3, although it is not cultured at that station. This station's exposure to air during the ebb tide and sediment composition likely provides the appropriate habitat for granulated ark shell species. Analysis of the number of different species showed that 8 benthos species were found to be distributed at St.1, 18 species at St.2, and 13 species at St.3. Among three stations, the highest Ignition Loss (IL), Chemical Oxygen Demand (COD) and Acid Volatile Sulfide (AVS) values were obtained from the sediment at St.2. The analysis of pore water from St.2 also showed the highest values of Total Organic Carbon (TOC), ammonia ($NH_4^+$), Dissolved Inorganic Nitrogen (DIN) and phosphate ($PO_4^{3-}$). These results are related to the fact that species dominance and richness is the highest in St.2.
Oxygen isotope ratios (${\delta}^{18}O$) of three Pacific oyster (Crassostrea gigas) specimens from the Neolithic Yeondae-do shell midden site, Tongyeong, Korea, were analyzed to determine the seasonality of shellfish gathering and site occupation. Oxygen isotope samples were taken from the left valve hinge sections of the specimens. Oxygen isotope values ranged between -0.1 ‰ and -2.4 ‰, between -0.2 ‰ and -2.9 ‰, and between 0.3 ‰ and -2.8 ‰ in oyster specimen #one, #two and #three, respectively. The isotope profiles showed seasonal temperature cycles, providing information related to the seasonality of shellfish gathering and site occupation. Hinge-edge oxygen isotope values of the specimens showed decreasing trends after passing through maximum values (winter), indicating that they formed during spring. Thus it can be assumed that during spring season, oysters were gathered and the site was occupied.
To examine inshore radioactive contamination caused by nuclear power plants, nuclear testing, hospital and laboratory, both gross ${\beta}$-radioactivity and ${\upsilon}$-spectrometry were measured. The measurements were taken with the Abalone and Top shell, which had been collected from the four different sites at the coast in Jeju-do (Seongsan, Deajeong, Wimi, Dodu). The activity ranges of concentration were respectively 0.11-0.29 Bq/kg-wet for $^{90}Sr$, 0.01-0.04 Bq/kg-wet for $^{137}Cs$, 36 - 53 Bq/kg-wet for $^{40}K$ in shellfish on the Jeju island. The radioactivities of $^{90}Sr$, $^{137}Cs$ and $^{40}K$ were similar to those in sampling location of shellfish in the coastal on the Jeju island. The radioactivity of $^{90}Sr$ for the Abalone was lower level than that for Top shell. The radio- activity of $^{137}Cs$ for the Abalone was similar to that for the Top shell. But the radioactivity of $^{40}K$ for the Abalone was higher level than that for the Top shell. As a result, the gross ${\beta}$-radioactivity observed was similar to that in nature. Among radionuclides, only $^{90}Sr$, $^{137}Cs$ and $^{40}K$ were detected in a very small amount, and each was also close to the natural levels.
Domoic acid, and amnesic shellfish poison, is a neurotoxin frequently found in shellfishes. Guidance level for the consumable shellfish has been established as $20\;{\mu}g$ domoic acid/g by Health and Welfare Canada and U.S. FDA. Domoic acid is produced by pennate diatom, a Nitzschia pungens f. multiseries ingested by the shellfish. Content of domoic acid in shellfish samples collected along the Korean shoreline from May to December of 1999 was analyzed. The collection included 1 Gastropoda (Murex shell) and 11 Bivalvias (oyster, little neck clam, orient hard clam, venus clam, surf clam, ark shell, hard-shelled mussel, pen shell, jack-knife clam, pink butterfly shell, and granulated ark shell). Samples were homogenized, extracted with 50% methanol, filtered, and analyzed by reversed-phase liquid chromatography at 242 nm with mobile phase consisting of 10% acetonitrile and 0.1% trifluoroacetic acid. Recovery of the HPLC analysis was 95.80% (${\pm}1.09$). All tested samples showed no domoic acid at the detection limit of 50 ng/g.
The purpose of this study was to determine the extent of domoic acid (DA) a potent neurotoxin, responsible for the syndrome amnesic shellfish poisoning (ASP) contamination of various species of bivalve shellfish purchased from fish market in Korea and the implications for food safety. Liquid chromatography (LC) methods were applied to quantify DA in shellfish after sample clean-up using solid-phase extraction (SPE) with strong anion exchange (SAX) cartridges. Toxin detection was achieved using photodiode array ultraviolet (LC-UV) and electrospray ionization-mass (LC-ESI-MS). DA was identified in 4 bivalve shellfishes of 872 shellfishes collected from March, 2006 to October, 2007 in Korea. DA amount of 3 surf clams (Mactra veneriformis) collected at Seoul, Daejeon, and Daegu were 4.13, 1.99, and 1.94 mg/kg, respectively. DA amount of 1 pink butterfly shell (Peronidia venulosa) collected at Seoul was 3.02 mg DA/kg. The amounts of DA that were present in 4 bivalve shellfishes were within EU guideline limits for sale of shellfish (20 mg DA/kg).
