  • In a sensory evaluation, the data obtained by a result of evaluation have a wide dispersion and fuzziness because human sense organ is used as a means of measuring sensation instead of measuring instruments. These dispersion and fuzziness are caused by all kinds of time error and have a great influence on a sensory evaluation, but most of previous papers don't deal with these time errors. In this study, a comparative judgement capacity of an evaluator is discriminated by means of the eigen-structure analysis on the premise that evaluation value of sensory evaluators obtained by a paired-comparison become different by the order of sample presentation

  • The purpose of this study was to develop the better fitting and more comfortable slacks pattern for women. 10 types of slacks pattern were made and worn compared with the sensory evaluations method. The main results of this study were as follows 1. Sensory evaluation for appearance; According to the result of means among the 10 slacks patterns, Type 2 method slacks was most satisfactory, and the next was the Type 4 slacks followed by Type 3, Type 5,6, Type 8, Type 1, Type 7, Type 9 Type 10 method slacks. 2. Sensory evaluation for comfort; The result of means showed that the Type 5 method slacks was most comfortable, and the next was the Type 3,8 slacks followed by Type 6,9 Type 7, Type 1,2,3, Type 10 method slacks.

Handle analysis of Cosmetic Textiles and its Correlation with Subjective haracteristics -Focus on puff textile-

  • This study examined the correlation between a handle evaluation of cosmetic puff textile and a sensory evaluation. The KES-F system was used to analyze the main mechanical factors for the handle evaluation and a statistical method was used for the sensory evaluation. The results revealed different mechanical properties and handle values of the tested cosmetic puff textiles. A material type and structure of the cosmetic textile affected the handle property of the material which is the most important factor for a cosmetic purpose. Particularly, the physical properties of textile material are likely to be important factors for the sensory property of cosmetic material. In addition, the sensory evaluation also revealed different sensory characteristics of the cosmetic efficiency according to the cosmetic puff textile. No close relationship was observed between the mechanical properties and sensory evaluation on the cosmetic puff textiles. The sensory evaluation of a cosmetic efficiency is not only decided by the physical and mechanical characteristics of the cosmetic textile material. Overall, when using textiles used for the cosmetic purposes, it is important to consider not only the proper mechanical properties of the textiles but also the use and sensory satisfaction. Development and selection of the cosmetic textiles should be focused on both the material function and consumer satisfaction.

The Study of Discriminant Validity for the Sensory Processing Scale for Children (SPS-C) of Children with and without Sensory Processing Disorder (아동감각처리척도(Sensory Processing Scale for Children; SPS-C)의 판별타당도 연구)

  • Objective : The objective of this study was to determine a discriminat validity of the Sensory Processing Scale-Children (SPS-C) for children with and without Sensory Processing Disorder (SPD). Method : The SPS-C was completed by parents of 151 Korean children including 68 typically developing children (control group), 83 children with SPD (known group) in the age range 3-5 years, in South Korea. ANCOVA with sex as covariable was used to identified the difference between the children with typically development and SPD. Results : Sensory processing differences in sensory domains and sensory factors were detected and the gender differences were not effective between typically developing children and children with SPD. Significant differences were found in all sensory domain score and total score except proprioceptive processing in sensory domain. In sensory factors, significant differences were found in overrsensitivity, underresponsivity, and discrimination, but sensory seeking was not significant. SPS-C was a valid assessment tool to identify or screen of SPD in Korea. Conclusion : The psychometric characteristics for the standardization study of SPS-C were presented, and the discriminant validity to screen the children with sensory processing problems was presented as a verified evaluation tool. SPS-C will be helpful in screening, analyzing and interpreting characteristics of sensory processing, and establishing an intervention plan.

Development of A Method for The Musical Expression of Cognitive Food Taste

  • We developed a musical composition and performing method for the dynamic expression of food taste, to replace the static expression obtained from a numerical sensory score and linguistic method. The musical score was composed using cognitive food sensory data gathered while eating potato chips via a computer equipped with a sound card and a master keyboard, as well as Cakewalk 9.0, Goldwave 5.0, and Windows Media Player. The music score included four lines, one representing sensory data and three reflecting three layers of human consciousness. Different time units were applied by incorporating different repetition cycles for the relevant consciousness layers. The musical scores of individual subjects differed in terms of the score pattern and its sound. The music representing food taste was played by four instruments and showed different sound and acoustic frequency patterns for each individual subject during the consumption of potato chips. The musical expression method was applied to analyze the individual taste characteristics in the cognition of food.

  • The purpose of this study was develop a skirt pattern drafting method for pregnant women on the basis of their physical characteristics. The study procedures and results were as follows; 1. One hundred and one women who were 7,8 or 9 months pregnant were measured on 29 items. The result was computed to obtain descriptive statistics and correlation coefficients between each items. 2. Two new skirt patterns were developed based on the data analysis. 3. The sensory evaluation was applied to evaluate the new patterns for pregnant women by comparing them with the Japanese MOONHWA method skirt pattern for pregnant women. Sensory evaluation for appearance: According to the result of Mann-Whitney test among the three skills the skirt A was most satisfactory, and the next was the skirt B followed by Japanese MOONHWA method Skirt. Sensory evaluation for comfort; The result of Mann-Whitney test showed that the skirt B was comfortable, and the next was the shirt A followed by Japanese MOONHWA method skirt.

Assessment Tools of Sensory Processing for Preschool-Aged Children: A Systematic Review (학령전기 아동을 위한 감각처리 평가도구의 체계적 고찰)

  • Objective : The purpose of the study was to investigate the characteristics and psychometric properties of assessments which were developed to measure sensory processing functions of preschool-aged children. Method : Comprehensive search for assessments measuring sensory processing functions was administered by using multiple electronic databases, including PubMed, Cochrane, CINAHL and PsycINFO. The titles and abstracts from the retrieved papers were screened. Then assessment tools that met all of the inclusion criteria were selected. Results : Thirty-eight assessments were identified. There were eight assessment tools that met the pre-defined inclusion criteria. Sensory Processing Measure-Preschool (SPM-P) was verified to be the most reliable and valid assessment tool, whereas Sensory Experiences Questionnaire (SEQ), Sense & Self-Regulation Checklist (SSRC), and Sensory Processing Scale Assessment (SPSA) showed inadequate reliability and validity. Conclusion : Based on the results from this systematic review, it would be useful for clinicians and researchers to select assessment tools of sensory processing for preschool-aged children.

  • In case of sensory evaluation with multi-samples and long-period, in spite of using method with good sensitivity, quality differences among samples could net be detected well because of panel's fatigue and tiredness. So new method to reduce panel's sense of psychological and physiological responsibility, "Trio Paired Comparison", is designed, and New Modified Scheffe's Method 2 as the statistical method for a test of "Trio Paired Comparison" is proposed. And also in this paper problems and countermeasures in applicating "Trio Paired Comparison" are considered.

The Physiochemical Characteristic and Descriptive Sensory Evaluation of the Blackberry Fruit Beverage (복분자 음료의 이화학적 특성 및 묘사적 관능평가)

  • The purpose of this study was to analyze the physiochemical properties of blackberry fruit beverage(BFB) and to develop a descriptive analysis procedure for evaluating the sensory characteristics of BFB. The amount of soluble solid, free sugar, pH, acidity, chromaticity, flavonoid, and anthocyanin of BFB were determined. All BFB samples demonstrated significantly different physicochemical properties(p<.01). Ten highly trained panelists identified the following eleven sensory attributes in the BFB and defined by standardized terminology for each attribute; turbidity, chromaticity for appearance characteristics, berry, grass, fermented, sweet, astringent, and sour for flavor characteristics, throat hit, refreshing, as well as astringent grade for textural characteristics. There were significant differences in all the eleven sensory attributes of the BFB samples(p<.001). Descriptive terminology used in the BFB analysis was capable of classifying the sensory attributes of the BFB. Based on these results, the analysis method and sensory evaluation techniques used in this study could be reasonably applied to other fruit beverages for establishing similar physiochemical characteristic and descriptive sensory attributes.

Effect of Different Cooking Methods and Temperatures on Physicochemical and Sensory Properties of Pork Hams: Ocoo, Sous-Vide, steaming, and boiling (조리 온도와 조리 방법에 따른 돼지고기 뒷다리살의 물리 화학적 및 관능적 품질차이 비교연구)

  • Quality changes of cooked meat products are dependent upon cooking temperature and heating methods. Pork ham is the most preferred pork dish using pork hams in South Korea although it is not suited to various cooking methods because its low fat content does not provide desirable physiochemical and sensory properties to consumers. Therefore, the objective of this study was to evaluate the effect of four different cooking methods on pork legs by comparing Ocoo, Sous-vide, steaming, and boiling technique at $80^{\circ}C$ and $100^{\circ}C$. Ultimately, the most effective cooking method and temperature to improve the quality of cooked pork hams was investigated. As the results of texture analysis, the samples cooked using Ocoo and Sous-vide methods showed higher springiness and cohesiveness than those using steaming and boiling methods. For the sensory evaluation, participants liked the hardness, juiciness, chewiness, tenderness of the samples using the OC method, resulting in the highest overall acceptance rate. The results of this study showed that using Ocoo or Sous-Vide cooking methods can improve the quality of cooked pork hams in both physicochemical and sensory properties.
