고조리서에서 살펴본 조선시대($15{\sim}19C$) 국의 조리과학적 고찰 I -맑은 국을 중심으로- (A Study on the Cooking Science of Guk(Korean Soup) from Old Cookbooks from the Chosun Dynasty($15{\sim}19C$) -Focused on Malgunguk -)

  • Guk has been a very important part of the Korean table service for a long time. To study the historical transition of traditional Guk, an analysis of old cookbooks from the Chosun dynasty ($15{\sim}19C$) was conducted based on cooking science. The following is the results of 52 types of Malgunguk from representative old cookbooks such as Sangayorok (1450), Suunjabbang (early 1500s), Eumshikdimibang (1670), Jeungbosallimgyungje (1766), Gyuhabchongsu (1815), Juchan (mid 1800s), Sieuijunsu(late 1800s). The ingredients for Malgunguk contain 30, 35, and 12 types of animal foods, plant foods, and seasonings, respectively. Fish and two to three meats are combined for the main ingredients of Guk, to harmonize the taste. Notably, deer and birds such as pheasants along with parts of beef (short ribs, marrow, Holdaegi) were used. Moreover, it is interesting to note that meat such as pork and chicken were favored to beef, which is contrary to preferences of today. There are only a few Malgunguks that have been passed down before the 16th century those after the 17th century have mostly been reported, but the ingredients have been simplified.

신선로(열구자탕) 조리법의 역사적 고찰과 전통적 표준조리법의 제시 (The Historical Study and Standard Traditional Cooking Methods of Sinsulro)

  • "Sinsulro(신선로)" is the famous soup of Cho-sun Dynasty Royal Cuisine, and the original food name is "Yulgujatang(열구자탕)". The first record is on [Sumunsasul] (1740) and the origin history related with Hirang-Jung is on [Headongjukji] and [Chosunyorihak]. From the analysis with Royal banquet menu and 16 kinds of old culinary literatures, "Sinsulro" are contained 54 and 70 material items and used variety cooking methods. Soup base of "Sinsulro" is well boiled meat, shank, brisket, stomach and intestine of beef with water, Some of beef is made meatball and seasoned raw meat. Beef marrow and tripes and liver are sauted with egg. Dried abalone and sea cucumber are soaked in water and then cutting slices after well boiled. Sliced white fish fillet are sauted with egg. Egg white and egg yolk made to thin sheet on pan with oil. Dropwort made to one sheet with flour and egg. Radish are boiled with meat soup and other vegetable are cooked with boiled or sauted. Seeds of pinenut, gingko, walnut are used of decorative seasonings. Filling mehtods of the Sinsulro casserole, the first layer is seasoning raw beef meat, 2nd layer is cooked slice of meat and radish, 3rd layer is rectangle pieces of egg sheet and sauted fish and intestines of beef. The top layer is decorated with meatball and naked nuts. After hot soup is poured until top of the materials, buning charcoal put into the center fire place and then served.o the center fire place and then served.

Varietal Variation of Productivity and Chemical Components on Seed-Mustard (Brassica juncea Cosson) Lines

  • Seed mustard is high in nutrient quality and grows continuously under cold condition. Accordingly, it possessess high potential to bring about more efficient use of land when it is grown as a seasonings crop at paddy field in winter season. Recently, Seed mustard has aroused people‘s interest as a catch crop. The purpose of this trial is to examine productivity and chemical components of seed mustard and to select suitable variety in the southern area of Korea. Seed-mustard cv. Yeongsanpo local showed higher seed yield than any other varieties used in the experiment. It showed relatively high content of Oil, Protein, Ash, Carbo, $P_2O_5$, $K_2O$, Ca and T-N. The heritabilities of all the characters were estimated to be high. Therefore, it was concluded that Youngsanpo local was the most suitable variety with high yield and high nutrient quality at the southern area of Korea.

노인 고혈압 환자의 저염식이 이행, 나트륨 섭취 및 짠 맛에 대한 기호도 (Compliance with a Low-Salt Diet, Sodium Intake, and Preferred Salty Taste in the Hypertensive Elderly)

  • Purpose: This study aimed to examine the compliance to a low-salt diet, sodium intake, and preferred salty taste in elderly patients with hypertension. Methods: A cross-sectional descriptive design was used. Participants were 105 elderly patients with hypertension living in a rural area. The compliance with a low-salt diet, sodium intake, and preferred salty taste, blood pressure, body mass index, and waist circumference were measured, and compared according to the general characteristics and the levels of blood pressure. Descriptive statistics, $X^2$-test, t-test, and ANOVA were used for data analysis. Results: compliance with a low-salt diet was marginally elevated. Sodium intake was relatively high and the main sources were seasonings and vegetables. The participants tended to prefer high levels of salt. Sodium intake was significantly higher the hypertensive individuals (stage I and II) compared to prehypertensive subjects on a normal maintenance diet. Sodium intake from vegetables was also significantly different between the two groups. Conclusion: Nursing intervention for hypertensive elderly patients should include strategies to decrease sodium intake.

「수운잡방」과 「음식디미방」에 나타난 조리법 비교 (Comparative Study of Cooking Methods in 「Suwoonjabbang」 vs. 「Eumsikdimibang」)

  • This study aimed to examine the cooking methods used in the Joseon Dynasty using cooking books. We chose "Suwoonjabbang" (1500's) and "Eumsikdimibang" (1610) as the subjects of this study. Cooking methods from these two recipe books were categorized into staples, side dishes, rice cakes, Korean traditional sweets and cookies, drinks, fermented foods, seasonings, and storage methods. Firstly, "Suwoonjabbang" contains a total of 121 cooking methods divided into two volumes. In contrast, "Eumsikdimibang" includes 146 cooking methods. There are 18 methods for noodles and dduks, 74 methods for fish and meat, and 54 methods for drinks and vinegars, and others. Secondly, "Suwoonjabbang" written by Yu Kim in Chinese characters can be described in simple terms. It provides caution against indulging in the taste of food. In contrast, "Eumsikdimibang" by Kye Hyang Jang contains detailed cooking methods that have disappeared. Thirdly, "Eumsikdimibang" introduced more diverse cooking methods for noodles, dumplings, side dishes, rice cake, Korean traditional sweets and cookies, and fermented foods as compared to "Suwoonjabbang". In conclusion, unique cooking methods introduced in these two cooking books, which are rare these days, are expected to be further applied and developed.

국민영양조사를 이용한 우리나라 다소비 식품의 섭취량에 관한 연구(I) -식품의 섭취량 조사 분석- (The Study on Frequently Consumed Food Items from 1993 Korean National Nutrition Survey(I) -Amounts and Frequency of Foods-)

  • The purpose of the present study is to collect information in terms of the frequency and amounts in frequently consumed foods. We conducted the secondary analysis from '93 Korean National Nutrition Survey. Mainly informations about 2-day food records were used to investigate food intakes and to compare different food patterns by area. Amounts and frequencies of food intakes are on the list by the order of contributing amounts and frequencies. Amounts of total daily intake of food per capita are 1,054g in nationwide, 1,076g in large city, 1,049g in small city, 1,017g in rural. The major foods consumed in large quantities were rice, kimchi, milk, in nationwide, large city, and small city and rice, kimchi, Korean radish in rural. The intake frequency of kimchi, rice, and basic seasonings as garlic, green onion, salts, soy sauce et al, were higher than other foods in all area. However, there are need for further researches to investigate individual dietary intake and seasonal variation of intakes. Also, food consumption patterns for different groups considering age, sex, area should be studied.

중국 고령친화형 HMR 제품 개발을 위한 소비자 요구도 (Consumer Needs for HMR Product Development of Chinese Elderly Consumers)

  • This study analyzed consumer needs for the development of elderly-friendly HMR products in China. In developing the products, items needed to be improved, types and packages of the necessary products, additional improvements and food preferences were investigated. According to the demographic characteristics of elderly Chinese consumers, these was analyzed as well. A survey was conducted on a total of 370 elderly people, and data analysis was performed using SPSS 18.0 program. Items related to product quality safety, such as "marks of origin by ingredient", "rich nutrients", "expansion of letter size of packaging", "rich nutrients" and "clear manufacturing date and expiration date", were required to develop HMR products. The types of products that should be developed were porridge and noodles, and the packaging types that should be developed were eco-friendly packaging and recycled packaging. In addition, "low-calorie HMR", "development of various seasonings", "use of eco-friendly food ingredients" and "HMR to digest easily" should be improved. The demand for product improvement and food preference showed significant differences according to the degree of education, monthly income and oral health. The results were intended to prepare basic data for setting the direction when developing elderly-friendly HMR.

파김치에 대한 중국인과 일본인 소비자의 인식 및 요구도 분석 (Perception and requirement of Green Onion Kimchi by Chinese and Japanese consumers)

  • A survey on the quality improvement and preference for green onion kimchi by Chinese and Japanese consumers was conducted by 30 Korean specialists in order to develop an improved green onion kimchi product. The long green onion shape, kimchi juice, seasonings, off-odor of fermented sea food, and stimulatory flavor of green onion were the main issues considered for the improvement of green onion product. Usage of the favorite ingredients of the Chinese and Japanese consumers was also suggested. The percentages of Chinese and Japanese who already knew green onion kimchi were 54.1% and 30.3%, respectively, whereas 46.8% of Chinese and 28.1% of Japanese have actually tried green onion kimchi in Korea. There was no significant difference in the preference for green onion kimchi between Chinese (3.25/5.0) and Japanese (3.17/5.0) consumers. For recommendations for improving the quality of green onion, Chinese consumers thought off-flavor, fibrous texture, and fermentation level were more significant while the Japanese considered red color, various taste, MSG content, and length of green onion. Seasoned tofu with green onion and rice were suggested as complementary foods to green onion kimchi by the Chinese and Japanese, respectively.

우육조리법(牛肉調理法)의 역사적(歷史的) 고찰(考察) - I. 우육을 사용한 국류의 조리법을 중심으로 - (The Historical study of Beef Cooking - I. cookery of soup based on beef -)

There were 21 kinds foods and preservation of beef and the number of dishes were 346 in the literatures written before 1943. 2.Soup(羹) was appeared first, and followed by dried beef(肉脯), steamed(蒸), sliced of boiled beef(熟肉과 片肉), preservation(貯臟), pan broiled beef(濕熱炒), salted beef(肉醬), raw beef(膾), shish kebab(算炙), roasted with seasoning(炙), beef with vegetables cooked in pan(煎鐵), calf`s-hoof jelly(gelatin)(足片), jaban(佐飯), hardboiled beef(boiled in soy sauce), ravioli (饅頭), beef juice(肉汁), thick broth(heavy soup, 助致), grilled beef (煎油魚), mix with the season(muchim), sun(膳) and gruel(粥). 3.The total of 14 different names of soup were found in the literatures which are Yang tang(stomach soup), Dunggol tang(marrow soup), Dogol tang(medulla soup), Sungi kuk(ox-blood soup), Sogogi kuk(beef soup), Gom kuk(bone attached beef and organs soup), Jap tang(bone attached beef, organs and tough beef soup), Yukgaejang(fresh beef, organs and green onion soup), Joujeo tang(foot starched soup), Jok tang(foot soup), Kori tang(ox-tail soup), Kalbi tang(rib soup), Malgun jangkuk(clear soup), Wan ja tang(beef ball soup). 4.The number of staple ingredient were Tripe and fresh meat among 26 kinds of major ingredient, radish, wheat flour, egg among 21 kinds of miner ingredient black pepper, soy sauce and seasame among 22 kinds of seasonings, and Thin layer-fried egg among 9 kinds of decorating ingredient were used commonly in cooking for soup.

조직콩 단백의 첨가가 쇠고기 완자의 기호 및 Texture에 미치는 영향 (Effect of Texturized Soy Protein on the Sensory Characteristics and Texture of N[eat Balls (Wanja))

  • In this study, we tried to compare and determine wat the effects will be to the sensory characteristics and textures of a meat balls when the proportion of the textu-rized soy protein (TSP) varies from 0, 10, 20, 30, and 40%. Evaluation was conducted through sensory evaluation and objective evaluation. The results are as follows: 1. As the level of 40% TSP increased the meat ball maintained a better appearance. 2. Color, beef flavor, tenderness, juiciness and acceptability shelved the tendency to decrease as TSP proportion increased. (1) No significant change to the outside color revealed to the level of 20%. How-ever, inside color showed a significant change after the level exceeded 20%. (2) Soy flavor tended to increased and beef flavor tended to decrease as the TSP proportion increased. However up to the level of 30% one could not taste the flavor of soy. (3) Tenderness tended to decrease as the TSP proportion increased however difference was not significant. (4) Juiciness decreased as TSP proportion increased. (5) Acceptability tended to decrease as the TSP proportion increased but to a 40% addition, the level of TSP did not have much effect on the sensory characteristics as long as sufficient seasonings were added. 3. Instron measurement incidated that springiness, cohesiveness and shear force tended to dcrease as the TSP proportion increased but hardness increased and chewi-ness was the highest at 20% TSP level. 4. Color and difference meter indicated that the figure L and b tended to increase and AE decreased as the TSP proportion increased. 5. Cooking retention tended to increase as the TSP proportion increased. From thiss tudy, we can conclude that the level of up to 40% of TSP in making meat ball did not affect the preference.
