Antioxidant, anti-inflammatory, anti-adipogenesis activities and proximate composition of Hermetia illucens larvae reared on food waste enriched with different wastes

  • The use of insects as a food source is not a new idea, but it has gained momentum in recent years due to the need for sustainable protein source in livestock feedstuffs and for more environmentally friendly organic waste treatment. In the case of black soldier fly larvae, Hermetia illucens, research has focused on their ability to convert organic waste into usable nutrients and their potential as a protein source for animal and human consumption. In this study, black soldier fly larvae were reared on raw food waste (FW) mixed with garlic peel waste (G) and hydronic growth media waste (H) and the proximate composition and bioactive potential of black soldier fly larvae extract (SFL) were compared. Analysis showed that protein content of SFL fed with G was 4.21% higher and lipid content was 9.93% lower than FW. Similar results were obtained for SFL fed with H. Antioxidant activity of SFL-G was higher than that of SFL-FW and SFL-H. SFL-G treatment exhibited enhanced anti-inflammatory and anti-adipogenesis activities as well compared to SFL-FW. Current results suggested that feeding black soldier fly larvae with food waste added with garlic peel and hydroponic growth media waste resulted in increased nutritional value, polyphenol content and bioactivity for SFLs. In this context, garlic peel waste-added food waste was suggested a promising substrate for black soldier fly larvae to obtain high-quality protein source with enhanced antioxidant, anti-inflammatory and anti-adipogenic potential.

Anaerobic digestion of food waste to methane at various organic loading rates (OLRs) and hydraulic retention times (HRTs): Thermophilic vs. mesophilic regimes

  • Generation of food waste is a serious issue that needs to be addressed worldwide. Developing suitable treatment methods while generating energy (methane) is a common practice for sustainable treatment of waste. In this study, methane generation by food waste was investigated in mesophilic and thermophilic regimes at various hydraulic retention times (HRTs) and organic loading rates (OLR). In temperature regimes, influent concentrations and HRTs ranged from 30 to 110 g COD/L and 18 to 30 days, respectively, which corresponding to an OLR of 1.0 to $6.1kg\;COD/m^3-d$. Better methane production and organic removal was observed under thermophilic conditions because of the enhanced hydrolysis of complex polymers and microbial activity at higher temperature. The peak methane productivities attained in thermophilic and mesophilic regimes were 1.30 and $0.99m^3/m^3-d$, respectively. The maximum methane yields were achieved at 50 g COD/L and HRT of 24 d in both cases, and the values were 264 and $221m^3/ton$ COD, respectively. The results of this study will facilitate the development of sustainable methane production technologies using food waste as a feedstock.

Comparison of Anaerobic Digestion Efficiency with Different Temperature of Food Wastes (음식물류폐기물의 성상별 온도변화에 따른 혐기성소화 효율 비교 연구)

  • A comparative study on the anaerobic digestion efficiency according to the temperature change was conducted considering the characteristics of domestic food wastes with high water content of about 80 % or more. The substrate was tested for anaerobic digestion efficiency in two substrates, a liquid component separated naturally from food waste and food waste itself. In the anaerobic digestion experiments, the digestion efficiency was the highest at $55^{\circ}C$ (thermophilic temperature). However, the digestion efficiency at $45^{\circ}C$(middle high temperature) was lower than that at $35^{\circ}C$(mesophilic temperature). The comparison of general food wastes anaerobic digestion requiring 30 days of hydraulic retention time to the liquid component indicated a stable digestion efficiency even after 15 days of hydraulic retention time.In the experiments conducted on food waste, the digestion efficiency at $55^{\circ}C$ was higher than that at $35^{\circ}C$. When the food waste, especially the liquid component originating from food waste, is treated by anaerobic digestion method, the mesophilic temperature and thermophilic temperature conditions are more favorable in the digestion efficiency than the middle high temperature ($45^{\circ}C$). However, when applying thermophilic or mesophilic temperature anaerobic digestion process operation in the field, the amount of energy input should be considered.

Microbial Community Dynamics in Batch High-Solid Anaerobic Digestion of Food Waste Under Mesophilic Conditions

  • Microbial community shifts, associated with performance data, were investigated in an anaerobic batch digester treating high-solid food waste under mesophilic conditions using, a combination of molecular techniques and chemical analysis methods. The batch process was successfully operated with an organic removal efficiency of 44.5% associated with a biogas yield of 0.82 L/g $VS_{removal}$. Microbial community structures were examined by denaturing gel gradient electrophoresis. Clostridium and Symbiobacterium organisms were suggested to be mainly responsible for the organic matter catabolism in hydrolysis and acidogenesis reactions. The dynamics of archaeal and methanogenic populations were monitored using real-time PCR targeting 16S rRNA genes. Methanosarcina was the predominant methanogen, suggesting that the methanogenesis took place mainly via an aceticlastic pathway. Hydrogenotrophic methanogens were also supported in high-solid anaerobic digestion of food waste through syntrophism with syntrophic bacterium. Microbial community shifts showed good agreement with the performance parameters in anaerobic digestion, implying the possibility of diagnosing a high-solid anaerobic digestion process by monitoring microbial community shifts. On the other hand, the batch results could be relevant to the start-up period of a continuous system and could also provide useful information to set up a continuous operation.

Regional Optimization of Food Waste Management - Focused on Three Cities in Kyungnam Province - (음식물쓰레기 관리의 광역적 최적화 방안 - 경남 3개 도시를 중심으로 -)

  • Limited landfill area and finance as well as a large generation of food wastes, have called for systematic approaches towards potential cost savings. In this study, the regional management system of food wastes generated from the residential and commercial sources was considered in three cities bounded each other; Changwon, Masan, and Jinhae city. Total thirteen alternatives were established and compared by applying the WRAP (Waste Resource Allocation Program). The following results were obtained: 1. While relatively small amounts were generated from the commercial sources such as cafeteria, restaurants, and market facilities, almost 80% of food wastes were generated from the residential sources. 2. Unit costs for food waste management in three cities were different according to their present situation such as the type and location of major generation sources and treatment facilities. Especially, the highest cost appeared in Jinhae city due to the most expensive construction of coastal landfill site. 3. Considering proper revenue, the whole conversion of food waste into animal feed was selected as the optimal alternative and represented 60% to 74% of the management cost of the whole landfill alternative in all cities. Comparing the other alternatives, composting of food waste was more economical than landfill alternative and the incineration was the most expensive alternative. 4. Some of the regional management systems using common food waste processing facilities together in three cities showed to be more economical than the single management system. Therefore, more detailed research for the regional management systems of food waste was recommended.

Suggestion of an Evaluation Tool for Sustainable Practices in School Foodservices and Analysis of Performance: Focus on Gyeonggi Province (학교급식 맞춤형 지속가능한 급식활동 평가도구 제안 및 수행률 분석: 경기도 지역 중심으로)

  • Sustainable practices of school foodservices are gaining more attentions. The study aimed to investigate dietitians' performance levels of sustainable practices in school foodservice settings in Gyeonggi Provinces. Using a survey method was used, and data were collected from 358 participants (response rate 59.7%) to be analyzed using the SPSS program. The evaluation tool for sustainable practices of school foodservices consisted of four sections and 34 criteria with 100 points. Employment status of the respondents was as follows: nutrition teachers 40.9%, dietitians (permanent) 45.1%, and temporary position dietitians 13.2%. Dietitians' performance for sustainable practices marked 65.67 points out of 100 (performance rate 66%) and were in the following order by section: sustainable foodservice management criteria (69%), support activities (69%), planning and evaluation (68%), and outcome management (52%). Regarding sub-sections, criteria that acquired higher performance rates were labelling of food origin (99%), use of seasonal vegetables and fruits (98%), food waste management by contract dealer (98%), and planning for reducing of food waste and solid waste (91%). Meanwhile, criteria that showed the lowest scores were installing water conservation devices on equipment (19%), operating food donation programs for communities (21%), use of sensor lights for electricity conservation (24%), planning for annual energy conservation (40%), and implementation of education programs for foodservice workers on sustainable activities (42%). Performance scores differed according to school levels and working experience of dietitians, indicating that dietitians at elementary school foodservices or with work experience of 15 to 20 years showed higher performance than those at high schools or with less than 5 years of work experience (P<0.001, P<0.05). Based on the results, action plans for improvement were suggested.

  • P city government considers to treat a part of food waste leachate in a municipal wastewater treatment plant (MWWTP), as the capacity of an existing combined treatment plant for food waste leachate is lower than the generation of food waste leachate in the city. Furthermore, the combined treatment plant also treats landfill leachate and directly discharges the effluent to the sea, which may result in a potential environmental problem. Therefore, this study examined the feasibility of the addition of food waste leachate and the effluent of the combined treatment facility on the MWWTP. Acceptable addition amount of the food waste streams, increased pollution loading on the MWWTP, and the treatment cost were estimated according to four scenarios. All the scenarios estimated that the MWWTP would receive most of the food waste streams according to the manual of the ministry of environment with little increase of pollution loading.

A Study on Biogas Yield According to Food Waste Leachate Acid Fermentation Conditions (음폐수 산발효 조건에 따른 바이오가스 생산량에 관한 연구)

  • This study performed acid fermentation pre-treatment to improve production efficiency of methane that is produced as a product in case of anaerobic fermentation by using food waste leachate, and attempted to confirm the acid fermentation optimum through the BMP test by using pre-treated food waste leachate to increase the yield of methane. As a result of the BMP experiment by using acid fermented food waste leachate, the highest yield of methane of 0.220 L/g VS was confirmed in the HRT three-day condition, and in the initial BMP test by pH, pH 6 was 19,920 mg/L that the highest VFA and acetic acid/TVFA(76.2%) were shown. At this time, it was confirmed that the yield of methane was mostly within 10 days that was reduced to around one-third compared to the general methane fermentation (within 30 days). As the yield of methane was 0.294 L/g VS, it showed a high efficiency of around 1.3 times compared to the control group.

Optimum Mixing Ratio of Sewage Sludge during Composting of Food Wastes (음식물쓰레기의 퇴비화시 하수슬러지의 최적 혼합비율)

  • Food waste is becoming by environmental problem nowdays increasing festinately in Korea during past 10 years. Food waste collected from garbage trucks that is offered in S municipal government that food waste mixs enough, and sewage sludge collected in the country. Composting experiment conditions achieved in the mixture ratio rate that food waste and sewage sludge are each 10:90, 30:70, 50:50, 60:40, 70:30 and 90:10 $wt\%$. The fermentation temperature was $18{\sim}22^{\circ}C$ at the beginning, and then it was sharply increased to $44{\sim}66^{\circ}C$ up to 1 day after fermentation, which was maintained for more than 3 days. Then, it was slowly decreased to $18{\sim}25^{\circ}C$ up to 8 days after fermentation, which was maintained all the time. It could be known from examiation of various conditions, including reaction rate, salinity. carbon/nitrogen(C/N) ratio, temperature, organic substance, etc.. Optimum mixture ratio rate of composting using food waste and sewage sludge was 60:40 $wt\%$.

The Study of Satisfaction, Meal Preference and Improvement on School Lunch Program of Middle School Boys and Girls in Jeonju (전주지역 중학생의 학교급식에 대한 만족도, 메뉴기호도 및 개선사항 조사)

  • This study was conducted with 262 middle school student(118 boys, 144 girls) to examine their satisfaction, meal preference and improvement of school lunch program(SLP) in Jeonju area. Major plate waste ranked high in soup, fishes, vegetables, Kimch and rice. The overall reason for plate waste were listed as being tasteless and disliking food except for rice. In the case of rice, it because of too big portion size. On the satisfaction with SLP, the lowest satisfaction category was waiting time for meal. The changes after taking part in SLP of students ranked in having a regular meal time(31.4%), lessening to eat snack except for regular meals(18%) and correcting habit about picking favorite food(15.2%), in order. The improvement on SLP of students were listed as more appetite food, various side-dishes, squaring of the western and eastern food and so on. To improve the satisfaction SLP and provide a high quality service, it should be needed to make proper dining space, increase the frequency of survey on complaints and taste of students and reflect the menu plan.
