Effects of Antler Development Stage on Fatty acid, Vitamin and GAGs Contents of Velvet Antler in Spotted Deer (Cervus nippon)

  • This study aimed to provide basic information as the foundation for further studies on the assessment of velvet antler quality by investigating the changes in fatty acid, vitamin A and E, minerals and GAGs contents by development stage of antler in spotted deer (Cervus nippon). Twelve stags (aged 4 to 5 years) were divided into two groups and velvet antler harvested 40 days (FDG) and 60 days (SDG) after casting of the buttons from the previous set. Total saturated fatty acid was lower in FDG than SDG (p<0.05). Total monounsaturated fatty acid, conjugated linoleic acid (p<0.05), polyunsaturated fatty acid and ${\omega}$3 fatty acid were higher in FDG than SDG. The vitamin A content of FDG was higher than that of SDG, but the vitamin E content of FDG was lower than that of SDG (p<0.05). SDG had significantly higher calcium and phosphate content than FDG (p<0.05). The magnesium content showed a similar trend to the contents of calcium and phosphate, but there was no significant difference between SDG and FDG. Uronic acid content was higher in FDG than SDG but there was no significant difference. The contents of GAGs and sialic acid were significantly higher (p<0.05) in FDG than SDG. These results indicated that the longer stage of antler development had lower content of activating components and this lead to a decrease of antler quality.

참깨 종류에 따른 참기름의 이화학적 특성 (Physical and Chemical Characteristics of Sesame Oils by Kinds of Sesame)

  • This study was investigated to viscosity, color, chemical properties, and lipid and fatty acid composition for examination of physical and chemical characteristics of sesame oils. Yield of sesame oil was higher in Ansan sesame than that of Chinese and Dambaek sesame. Viscosity of sesame oils was higher than that of shame oils from Dambaek and Chinese sesame, but turbidity and sedimentation rate were higher in Dambaek's sesame oil than those of Ansan's and Chinese sesame oils. In the acid value, saponification value and iodine value of sesame oils, and chemical characteristics of Dambaek's sesame oil were better than those of the others. The neutral, glycolipid and phosholipid contents of sesame oils were 91.1∼92.1, 2.5∼3.5 and 5.5∼6.4%, respectively. The major fatty acids of sesame oils were oleic, linoleic palmitic and stearic acid. The content of oleic acid was higher in Dambaek's and Ansan's sesame oil than that of Chinese sesame oil, and the content of linoleic acid was higher in Chinese sesame oil than the others. The fatty acid composition of neutral lipid, glycolipid and phospholipid were similar to those of total lipid. The ratio of unsaturated fatty acid and saturated fatty acid was higher in Korean sesame oils than those in Chinese sesame oil. The mineral(Mg, Cu, Fe, In, Al, Mn) content of Korean sesame oils was higher than that of Chinese sesame oil. and heavy metals(Cu, Ag, Pb, Cd, As) were not detected.

Lipid and Fatty Acid Composition of the Antarctic Krill Euphausia superba

  • Total lipid content, lipid class and fatty acid composition of the Antarctic krill Euphausia superba collected from the water of King George Island, Antarctica during austral summer of 1997-1998, were investigated. The overall lipid content of 5. superba was 72 mg/g dry mass similar to the reported values for most temperate species. The neutral lipid of E. superba was 29% of the total lipid and that of phospholipid was 71%. The majority of neutral lipid was triacylglycerols(31.6% of neutral lipids) while phosphatidyl choline (44% of phospholipid) was the most abundunt in phospholipids. The quantitative composition of the fatty acid in E. superba show consisting mostly of the saturated 16:0 (16.6% -22.1%), along with the polyunsaturated 20:5(n-3) (20.6% -22.1%) and 22:6(n-3) (14.9% -16.9%) acids.

한국 근해의 난바다곤쟁이 Euphausia pacifica의 지방 조성에 의한 섭식 생태 비교 (Comparisons of Feeding Ecology of Euphausia pacifica from Korean Waters Using Lipid Composition)

  • Dietary lipid biomarkers (fatty acids, fatty alcohols, and sterols) in adult specimens were analyzed to compare and understand the feeding ecology of the euphausiid, Euphausia pacifica, from three geographically and environmentally diverse Korean waters (Yellow Sea, East China Sea, and East Sea). Total lipid content of E. pacifica from Korean waters was about 10% dry weight (DW) with a dominance of phospholipids (>46.9% of total lipid content), which are known as membrane components. A saturated fatty acid, C16:0, a monounsaturated fatty acid, C18:1(n-9), and two polyunsaturated fatty acids, C20:5(n-3) and 22:6(n-3), were most abundant (>60% of total fatty acids) in the fatty acid composition. Some of the fatty acids showed slight differences among regions although no significant compositional changes of fatty acids were detected between these regions. Phytol, originating from the side chain of chlorophyll and indicative of active feeding on phytoplankton, was detected all samples. Trace amounts of various fatty alcohols were also detected in E. pacifica. Specifically, krill from the Yellow Sea showed relatively high amounts of longchain monounsaturated fatty alcohols (i.e. 20:1 and 22:1), generally found in herbivorous copepods. Three different kinds of sterols were detected in E. pacifica. The most dominant of these sterols was cholest-5-en-$3{\beta}$-ol (cholesterol). The lipid compositions and ratios of fatty acid trophic markers are indicative of herbivory in E. pacifica from the Yellow Sea and East Sea (mainly feeding on dinoflagellates and diatoms, respectively). The lipid compositions and ratios of fatty acid trophic markers are indicative of carnivory or omnivory in E. pacifica from the East China Sea, mainly feeding on microzooplankton such as protozoa. In conclusion, lipid biomarkers provide useful information about krill feeding type. However, further analyses and experiments (i.e. gut content analysis, in situ grazing experiment, etc.) are needed to better understand the feeding ecology of E. pacifica in various marine environments.

쌀가루를 이용한 쌀식빵 영양성분분석 (Nutritional Compositions of Rice Bread with Different Rice Flours)

  • This study analyzed the general components of rice bread with 75% rice content such as water, crude ash, crude protein, crude fat and carbohydrate, and its nutrients such as vitamin C, vitamin A, vitamin E content, minerals, amino acids, and fatty acids. The contents of crude protein were high and those of crude fat were low with the contents of crude ash, crude protein, and crude fat being 1.61, 18.50, 0.04 g/100 g respectively. Vitamin A was not detected and the contents of vitamin C and vitamin E were 3.85 and 3.04 mg/100 g, respectively. The calcium, potassium, magnesium, iron and sodium contents were 222.0, 117.90, 24.12, 2.30, 555.90 mg/100 g respectively. Rice bread contains 9 essential amino acids such as valine, leucine, isoleucine, methionine, threonine, lysine, phenylalanine, histidine, and arginine. The analysis of rice bread fatty acid showed 58.04 mg/100 g of saturated fatty acid, 26.31mg/100 g of monounsaturated fatty acid and 15.64 mg/100 g of polyunsaturated fatty acid. The total essential fatty acid content was 15.49 mg/100 g. With the rising interest in processed rice products, well-being, and diet, it is necessary to develop processed rice foods that are nutritional and low in calories using rice powder that is nutritionally better than flour.

  • 채취시기에 따른 황칠나무 잎중의 화학성분의 변화를 분석한 결과 수분 함량은 계절이 지남에 따라 점점 감소하였으나 지방, 회분 및 섬유 함량은 오히려 점점 증가하였고 단백질 함량은 봄부터 여름까지는 감소하다가 가을에서 겨울로 감에 따라 다시 증가하는 경향을 보였다. 유리당은 검출된 세 종류의 당이 모두 봄으로부터 겨울로 감에 따라 점정 증가하는 것으로 나타났고 지방산은 일반적으로 포화지방산보다 불포화지방산이 더 많이 함유되어 있었으며, 가장 많이 함유된 포화지방산 및 불포화지방산은 계절에 관계없이 각각 arachidic acid 및 cis-13,16-docosadienoic acid였다. 유리 아미노산은 15종이 검출되었는데 계절에 관계없이 arginine의 함량이 가장 높았고 계절이 지남에 따라 점차 감소하는 것으로 나타났다. 무기성분은 채취시기에 따라 그 함량이 약간씩 차이가 있어서 칼슘 또는 칼륨이 가장 많이 함유되어 있었고 다른 무기성분의 함량은 거의 동일한 경향을 보였다. 총 비타민 C 함량은 계절이 점차 겨울로 감에 따라 감소하는 경향이었으나 수용성 탄닌 함량은 오히려 증가하는 경향을 보여 새잎보다 성숙된 겨울에 채취한 잎에 훨씬 더 높은 것으로 밝혀졌다.

Increase of Conjugated Linoleic Acid Level in Milk Eat by Bovine Feeding Regimen and Urea Fractionation

  • Increasing conjugated linoleic acid (CLA) content in dairy products has been a research Interest due to the potential health benefits resulted from consuming CLA. Attempts were made to obtain high level natural CLA containing fatty acid fractions from milk fat through bovine feeding of sunflower oil (SO) and urea fractionation. SO feeding changed the fatty acid profile of milk fat. increasing the CLA content five-fold at eight weeks of trial. Milk fat obtained from S0-fed cows was hydrolyzed to free fatty acids, which were then fractionated with urea at various ratios. The profiles of fatty acids were also greatly influenced by urea fractionation. Long-chain unsaturated fatty acids, Including CLA, were concentrated in milk fat after the fractionation, whereas saturated long-chain counterparts were eliminated. The highest level of CLA was achieved by the fractionation at 2:1 urea/fatty acid ratio (UFR2). CLA level was elevated 2.5-fold, and the Cl8:1/C18:0 fatty acid ratio was increased 120 times after the fractionation. The level of CLA in high CLA-milk fat (24mg/g fat) obtained from the feeding study was further increased through urea fractionation up to 52mg/g fat, 10 folds as high as CLA in the control milk fat (5mg/g fat).

Investigation of the Effects of Oat and Barley Feeding on Performance and Some Lipid Parameters in Table Ducks

  • The effects of barley and oat feeding in table duck were investigated. During a 49-day growing period a corn-based diet was supplemented by 45% barley and 45% oats (isonitrogenously and iso-energetically), respectively. Daily feed intake, FCR-, and weight gain were measured. Abdominal fat, liver, and gizzard weights were determined and dry matter, protein, fat content and fatty acid composition of femoro-tibial muscles and liver fat were measured on the $35^{th}$, $42^{nd}$ and $49^{th}$ days of age. Feeding 45% barley caused a decrease of growth rate ($p{\leq}0.05$) during the first 4 weeks, which was followed by a rapid, compensatory growth from the $6^{th}$ week of age ($p{\leq}0.05$). Both barley and oat supplementation increased protein ($p{\leq}0.05$), while decreasing fat ($p{\leq}0.05$) and dry matter ($p{\leq}0.05$) content of the liver. Feeding of 45% oats in the diet decreased the monounsaturated fatty acid ($p{\leq}0,05$) and increased the n-6 ($p{\leq}0,05$), n-3 ($p{\leq}0,05$) and total polyunsaturated ($p{\leq}0,05$) fatty acid content of the intramuscular fat owing to the high proportion of soluble non-starch polysaccharides (NSP) in the diet. This might be explained by the more pronounced decrease in digestibility of saturated than unsaturated fatty acids in birds fed a soluble NSP-enriched diet. This result might be caused by the "cage effect" of soluble NSP trapping the bile salts which are more important for the absorption of saturated than polyunsaturated fatty acids.

Characterizing Sections of Elk Velvet Antler by pH and Mineral, Fatty Acid, and Amino Acid Composition

  • This study was conducted to determine the composition change in different sections of elk velvet antler at 90 days. The following parameters were analyzed: moisture, crude protein, crude fat, crude ash, crude fiber, pH, minerals (Ca, P, K, Mg, Fe, Mn, Zn, Cu, and Pb), amino acids, and fatty acids. Dry matter, crude fiber, and crude ash contents were higher in the base of the antlers and lower in the tip. In contrast, crude protein and crude fat contents were highest in the tip. Moisture content was high in the upper and medium sections of the antlers, but the difference was not significant. Calcium (Ca), phosphorus (P), and magnesium (Mg) contents were high in the base of the antlers, potassium (K) content was high in the tip of the antlers, and zinc (Zn) content showed no difference between antler sections. Saturated fatty acid content was highest in the base of the antlers, whereas unsaturated fatty acid content was highest in the tip. Among unsaturated fatty acids, monounsaturated fatty acid content was high in the tip of the antler, whereas polyunsaturated fatty acid content was high in the upper section of the antler. Essential amino acid content was highest in the upper section of the antler, whereas non-essential amino acid content was lowest in the base. Crude protein, crude fat, K, and unsaturated fatty acid content tended to be high in the tip of the antler, and essential amino acid and polyunsaturated fatty acid contents tended to be high in the upper section of the antler. The tip of the antler had the highest nutrient content. In order to prevent cardiovascular disease, consumption of a certain amount of polyunsaturated fatty acids and amino acids from the upper section of the antler could be beneficial in terms of pharmacological efficacy.

조기분만과 임신성 고혈압 산모의 초유내 총지질, 총콜레스테롤 및 지방산 조정 (Total Lipid, Total Cholesterol and Fatty Acid Composition in Colostrum from Mothers with Preterm Delivery and Pregnancy Induced Hypertension)

  • In this study, total lipid and cholesterol contents and fatty acid composition of colostrum milk obtained from 30 normal mothers, 10 mothers who was delivered of preterm infant and 8 pregnancy induced hypertensive mothers were analyzed. While total cholesterol content in preterm colostrum was significantly lower than other groups (p<0.05), total lipid content was not different among three groups, ranged 2.24-.2.2g/dl. Composition of saturated fatty acide, such as lauric acid and myristic acid which are medium chain fatty acids in preterm milk were higher than those of normal-term and hypertensive mother's milk. There was no difference n total composition of polyunsaturated fatty acids and the rationh of $\omega$6/$\omega$3 among 3 group mother's colostrum, ranged 19.45-21.45% and 6.42-7.87, respectively. but the composition of arachidonic acid and DHA in colostrum of hypertensive mothers were significantly higher than those of normal and preterm mothers. These data indicates that gestational length and complications during pregnancy may change the lipid profile and fatty acid composition of hyman milk colosstrum.
