흑마늘 추출액의 첨가 농도에 따른 간장의 품질특성 및 항산화 활성 (Quality Characteristics and Antioxidant Activity of Soy Sauce with Added Levels of Black Garlic Extract)

  • Purpose: In order to develop soy sauce and increase its functionality, by adding black garlic extract. Methods: We compared quality characteristics and antioxidant activity of 20 days aging black garlic soy sauce from mixed manufacturers with raw soy sauce (commercial fermented soy sauce) and different ratio of black garlic extract (65 Brix, 0.3-5.0%). Results: The salt content of the black garlic extract (0.3-5.0%) added soy sauce were 12.35-12.77%. The pH was lowered to 4.99, and acidity was increased to 2.12%, depending on the increase in black garlic extract added ratio. The crude protein and total nitrogen contents were 6.23-6.62% and 1.10-1.16%, respectively, and content of amino form nitrogen was 0.52-0.53%, without significant differences between experimental groups. Contents of reducing sugar and free sugars (fructose and glucose) tended to be higher with higher mixing ratios of black garlic extract. Total phenolic compounds and flavonoids contents were significantly increased in the 3% and 5% black garlic extract addition group. At concentrations of 62.5, 125, 250, 500, 1,000 and $2,000{\mu}g/mL$, the DPPH and ABTS radical scavenging activity of the polysaccharides isolated from control soy sauce and 5% black garlic extract added soy sauce showed higher correlation with their concentration. Conclusion: These results, confirmed that the soy sauce produced by adding more than 3% of black garlic extract has high antioxidant activity.

Incorporation Effect of Green Manure Crops on Improvement of Soil Environment on Saemangeum Reclaimed Land during Silage Corn Cultivation

  • This study was carried out to investigate the incorporation effect of green manure crops (GMC) such as the hairy vetch on improvement of soil environment in reclaimed land during silage corn cultivation over the past two years. Plots consisted of conventional fertilization (CF) and incorporation of GMC were divided by addition rate of nitrogen fertilizer (100 kg $ha^{-1}$) with 30 - 100% of non nitrogen fertilization (NNF). Soil physico-chemical properties and growth and yield potential of silage corn were examined. The tested soils showed strong alkali and saline properties with low contents of organic matter and available phosphate while contents of exchangeable sodium and magnesium were high. Soil salinity increased during cultivation of summer crop. However, corn was not affected by salt content. The fresh weight of GMC at incorporation time was 18,345 kg $ha^{-1}$. Content of total nitrogen was 3.09% and the C/N ratio was 12.8 at incorporation time. Fresh and dry matter yield of silage corn were higher in the order of N30% reduction, CF, N50% reduction, N70% reduction, N100% reduction and NNF. Fresh and dry matter yield potential of silage corn for N30% reduction were comparable to those of CF. Bulk density of the soil decreased with incorporation of GMC, while porosity was increased. The soil pH decreased while content of exchangeable calcium, available phosphate, and organic matter increased. Also contents of exchangeable sodium and potassium decreased with incorporation of GMC. The data indicate that incorporation of hairy vetch can improve soil physical and chemical properties and reduce nitrogen fertilizer application especially for alkali saline reclaimed soil such as Saemangeum reclaimed land.

Quality comparison between imported hams from black and white pigs available in the market

  • This study was performed to compare the physicochemical characteristics between imported dry-cured Hams from black and white pigs available in the domestic market. The black dry-cured hams contain higher moisture and ash contents than that of white hams, whereas the black dry-cured hams had lower fat contents than that of the black ones (p < 0.05). The hams from black ones had lower lightness ($L^*$) and yellowness ($b^*$) values than those from the white ones (p < 0.05). Moreover, the pH values and salt contents of the hams from the black ones were higher than those from the white ones (p < 0.05). Moreover, the black ones had a higher water holding capacity (WHC) than that of the white ones (p < 0.05). The thiobarbituric acid reactive substances (TBARS) values of the black ones were lower than those of the white ham samples (p < 0.05). For texture profile analysis, hardness, gumminess, chewiness, cohesiveness and shear force values were significantly lower in the black ones than in the white samples (p < 0.05). Saturated fatty acids in the white ones were higher than in the black ones, whereas unsaturated fatty acids in the black ones were higher (p < 0.05). Free amino acids such as aspartic acid and glutamic acid in the black ones were higher than in the white ones (p < 0.05). The shrinkage of muscle fiber was stronger in the white ones. Considering the meat quality parameters of ham, the black ones showed a superior meat quality. In general, this research can be used as fundamental information for the mass production of dry-cured hams in Korea.

Characteristics of Doenjang (Soybean Paste) Fermented with Multiple Starters Including Tetragenococcus halophilus

  • Tetragenococcus halophilus CY54, an isolate from jeotgal, grows best in media with 5% NaCl and can grow at 18% and higher salt concentration. Three different doenjang samples were prepared with multiple starters including T. halophilus CY54. TBZA doenjang was prepared with T. halophilus, Bacillus subtilis, Zygosaccharomyces rouxii and Aspergillus oryzae. BZA doenjang was prepared with the same 3 starters except T. halophilus. KACC doenjang was prepared with a single starter, B. subtilis KACC16750. During 16 weeks of fermentation at 25℃, the viable counts were maintained in the range of 7-8 log CFU/g in all 3 samples. As fermentation progressed, pH decreased and titratable acidity (TA) gradually increased. Crude protein contents decreased slightly. TBZA doenjang showed higher amino-type nitrogen (ANN) and volatile basic nitrogen (VBN) contents, and KACC doenjang showed higher ammonia-type nitrogen (AMN) content. TBZA doenjang showed higher fibrinolytic and protease activity than other doenjang samples. Metabolites analyses by GC/MS showed that doenjang samples were separated from each other by partial least squares-discriminant analysis (PLS-DA) analysis. Seventeen major metabolites involved in the differences between samples were identified and they included organic acids, amino acids, sugars, fatty acids and alcohols. TBZA doenjang showed higher contents for most metabolites responsible for flavor and taste of fermented foods including doenjang. These results showed that T. halophilus could be useful as a starter for doenjang and can improve the product quality by accelerating the fermentation processes.

시판 홍어 김치의 이화학적 및 미생물학적 특성 (Physicochemical and Microbiological Properties of Skate (Raja kenojei) Kimchi on the Market)

  • In this study, the physicochemical and microbiological properties of market-available skate (Raja kenojei) kimchi were evaluated in comparison to long-term fermented Baechu kimchi. The comparative results for the skate (Raja kenojei) and Baechu kimchi products are as follows: salt concentrations = 3.40% and 3.95%, respectively; pH and acidity values = 4.01 and 3.90, and 0.65% and 0.82%, respectively; redox potential Eh values = 119.82 mV and 123.08 mV respectively; reducing sugars levels = 15.51 mg% and 13.23mg%, respectively; ascorbic acid levels = 24.21mg% and 22.18mg%, respectively; color L-values = 46.86 and 44.54, a-values = 15.46 and 12.28, and b-values = 29.94 and 28.36, respectively; hardness properties = 11.36 kgf and 10.23 kgf, respectively; hot water soluble pectin (HWSP) contents and sodium hexametaphosphate soluble pectin (NaSP) contents = 15.23% and 17.35%, and 32.51% and 29.64%, respectively; hydrochloric acid soluble pectin (HClSP) contents = 55.1% and 53.2%, respectively; total viable cell counts = $4.78{\times}10^8$ and $1.35{\times}10^8$, respectively; lactic acid bacteria counts = $5.18{\times}10^5$ and $1.32{\times}10^5$, respectively; and yeast levels = $8.52{\times}10^5$ and $5.23{\times}10^5$, respectively.

Growth characteristics and antioxidant activity of domestic calla lily (Zantedeschia aethiopica)

  • Calla lily is one of the most iconic and widely recognized ornamental plants. This study compared the extracts of 11 cultivars of domestic calla lily bred by the National Institute of Horticultural and Herbal Science for their total polyphenol and antioxidant activities. Eleven cultivars were evaluated for their growth and flowering characteristics as per the Manual for Agricultural Investigation Rural Development Administration (RDA) form. The antioxidant activities were measured using 2,2'-azinobis (3-ethylbebzothiazoloine-6-sulfonic acid)-diammounium salt (ABTS+) and 1,1-diphenyl-2-picrrylhydrazyl (DPPH) radical scavenging effect. The plants have an average height of 63.80 ± 5.4 cm, average flower diameter of 7.2 ± 1.1 cm, and width of 12.4 ± 1.7 cm. On average, the diameter and width of leaves were 33.7 ± 3.5 cm and 20.0 ± 1.4 cm, respectively. Extracts of flowers and leaves in the 11 cultivars of white calla lily were compared for their antioxidant activities and total polyphenol contents. ABTS+ and DPPH radical scavenging, which are indicative of antioxidant activity, were higher in flowers than in leaves. When comparing by cultivar, we found that 'White Egg' showed the highest antioxidant activity in both the flowers and the leaves. Additionally, we found that by part, the content of total polyphenols was highest in flowers, and by cultivar, it was highest in the 'Swan' and 'White Egg' cultivars. Furthermore, the days to flowering showed correlations with ABTS+ radical scavenging, total phenolic contents (TPC), and total flavonoid contents (TFC). Our results indicate that calla lily can be used as breeding material material according to its growth characteristics and as a natural antioxidant source.

명아주과 식물의 생리생태학적 특성 - 무기 및 유기용질을 통한 접근 - (Ecophysiological Characteristics of Chenopodiaceous Plants - An Approach through Inorganic and Organic Solutes -)

  • 건조지대 및 염의 영향을 받는 지역에 널리 분포하는 명아주과 식물의 생리생태학적 적응 특성을 규명하기 위하여 교란지, 염습지, 사구, 간척지 등 다양한 환경에 적응하여 살아가고 있는 10종 명아주과 식물의 무기 및 유기용질의 양상을 조사하였다. 조사된 명아주과 식물은 토양의 칼슘 함량과는 무관하게 체내에 매우 소량의 수용성 칼슘을 함유하였으며, 아주 높은 수용성 K/Ca 비를 보였다. Na/sup +/, K/sup +/와 같은 양이온 및 Cl/ sup -/, SO₄/sup 2-/와 같은 음이온을 많이 축적하는 경향을 보였으며, 염 환경에서는 K/ sup +/보다 Na/sup +/ 이온을 선호하는 경향을 보였다. 이들 식물의 체내 총 질소함량은 높았지만, 아미노산성 질소는 총 질소함량의 5% 이하로 매우 낮은 값을 보였다. 세포질성 삼투인자로 널리 알려진 proline을 거의 함유하지 않았지만, 가용성 질소의 함량이 높은 것으로 보아 proline 이외의 다른 질소화합물이 체내 삼투 조절에 관여할 것으로 여겨진다. 야외에서의 이러한 생리적 특징이 통제된 환경에서도 동일한 양상을 보이는지를 조사하기 위하여, 사구 및 염습지의 대표적인 명아주과 식물(퉁퉁마디, 칠면초, 호모초, 가는갯능쟁이, 나문재) 5종을 선택하여 염환경 하에서 생육시켰다 (200 mM Nacl). 조사된 명아주과 식물은 매우 낮은 체내 수용성 Ca/sup 2+/ 함량, 알칼리 양이온의 축적 등 야외식 물과 유사한 생리양상을 보였다. 종합하면, 명아주과 식물은 알칼리 양이온 및 Cl/sup -/, NO₃/sup -/ 및 SO₄/sup 2-/와 같은 무기 음이온을 상당량 축적하고, 체내로 유입되는 Ca/sup 2+/을 Ca-oxalate로 침전시켜 세포질 내 수용성 칼슘함량을 매우 낮은 수준으로 유지하며, 아미노산이외의 다른 가용성 질소화합물을 보편적으로 함유하는 미네랄 대사의 특성을 보여준다. 이에 부가하여 토양 환경의 변화에 따라 체내의 무기이온 및 유기용질의 양상을 적절히 조절하는 독특한 생리적 특성이 이들 명아주과 식물을 건조 및 고염과 같은 불리한 환경을 극복하여 적응케 하는 토대가 되는 것으로 여겨진다.

숙성기간에 따른 멸치액젓의 성분변화 (Changes of Components in Salt-Fermented Anchovy, Engraulis Japonicus Sauce during Fermentation)

  • 재래식방법으로 멸치액젓 숙성 중에 성분변화를 실험하기 위하여 동부산수협의 숙성탱크로부터 $1.5{\~}3$개월 간격으로 원액만을 직접 채취하여 성분변화를 조사하였다. 멸치육의 가수분해도는 숙성 12개월까지는 $67.8{\%}$로 큰 폭으로 증가하였으나, 그 이후에는 분해속도가 둔화되어 숙성 18개월 후에는 $74.6{\%}$이었다. 수분함량과 pH는 숙성기간에 따라서 약간씩 감소하는 반면, 조단백질함량과 VBN 함량은 증가하였으며, 회분함량과 염분함량은 큰 변화가 없었다. 총질소 및 아미노산성질소함량은 숙성기간에 비례하여 증가하였으며, 총질소함량이 아미 노산성 질소함량보다 증가속도가 더 컸다. 액젓 중의 ATP 관련물질은 $ATP{\~}IMP$는 극미량, HxR은 약간 검출되었고, 거의 대부분 ($80.1{\~}92.7{\%}$)이 Hx과 요산이었다. ATP 관련물질 총량의 증가는 주로 요산량의 증가에 의한 것이며, 숙성기간에 따라서 일정하게 증가하였다. 숙성 11.5개월 전까지는 HxR+Hx 함량이 요산량보다 높다가, 그 이후에는 요산량이 HxR+Hx 함량보다 높게 나타났으며, HxR+Hx 함량과 요잔량이 교차하는 숙성 11.5개월 부근은 가수분해도 $66.9{\%}$, 가용파율 $74.6{\%}$로 나타나 높은 분해율을 보이는 지점이었고, 수분함량도 현행 품질기준인 $68{\%}$ 이하로, 관능적인 맛과 냄새면에서도 좋은 것으로 나타났다. 색도는 숙성기간에 따라서 $a값, {\Delta}E값 및A453값$은 증가하였고, L값 및 b값은 감소하였다. 멸치육의 총아미노산함량은 24,155 mg/100g로 나타났으며, 조성은 aspartic acid가 $14.6{\%}$로 가장 높았고, 다음이 $cystine(11.6{\%}),\;lysine(9.1{\%}),\;glutamic acid (8.9{\%}),\;valime\;(7.7{\%}),\;alanine\;(6.8{\%}),\;leucine\;(6.5{\%})$ 등의 순이었다. 18개월간 숙성시킨 멸치액젓의 유리아미노산 총량은 9,070.2mg/100ml로 원료육 총아미노산함량의 약 $38{\%}$정도였으며, 조성비는 glutamic acid가 $20.5{\%}$로 가장 많았고, 다음이 $leucine\;(14.2{\%}),\;alanine\;(14.0{\%}),\;lysine\;(12.2{\%}),\;isoleucine\;(8.0{\%}),\;valine\;(7.9{\%})$ 등의 순으로 나타나, 원료육의 아미노산 조성과는 차이를 보였다.

Comparison of NaCl and D-Pinitol Content of Freeze-Dried Ice Plant, Natural and Purified Commercial Salts and their Radical Scavenging Activity

  • 본 연구는 아이스플랜트의 기능성 소금 대체제로서의 가능성을 조사하고자 천연 및 정제소금과의 NaCl, D-pinitol, 총 페놀, 총 플라보노이드 및 DPPH 라디칼 소거능에 대한 기초자료를 비교 조사하였다. 아이스플랜트 동결건조분말의 NaCl 함량을 분석한 결과 19%이었고 D-pinitol의 함량은 777 mg/100 g으로 천일염 및 정제염에 비해 NaCl 함량은 유의적으로 낮으나 D-pinitol을 함유하고 있어 건강기능성에는 도움이 될 것으로 사료된다. 또한, 아이스플랜트 동결건조분말의 총 페놀 및 플라보노이드 함량은 각각 115 mg/100 g 및 985 mg/100 g을 함유하고 있어 DPPH라디칼 소거능의 항산화효과를 갖는 것으로 나타났다. 따라서 아이스플랜트 분말의 bioactive compound을 함유한 대체 소금 천연소재로서 가능성을 확인한 기초 연구를 제공하였다.

저염건 조기의 냉동저장 중 화학적 변화 (Chemical Changes of Low Salt-dried Yellow Corvenia Muscle During Frozen Storage)

  • 참조기에 $14\%$ 정도 천일염을 가해 저열건조기를 가공한 후 근육만을 $-20^{\circ}C$에서 냉동저장 하면서 영양 및 화학적 조성의 변화를 살펴보았다. 저염검 조기의 수분, 단백질, 지방, 회분은 각각 $74.6\%,\;18\%,\;3.4\%$$2.3\%$로 냉동 저장 중 큰 변화는 없었고, 유리아미노산의 경우는 저장 중 약 2배 정도 증가 하였으며 주요 유리아미노산으로는 glutamic arid, alanine, lysine, glycine이었다. 근육에서 추출한 중성지방질의 주요 구성지방산은 palmitic acid, stearic acid, palmitoleic acid, docosahexaenoic acid 이었으며 인지질의 주요 구성지방산은 docosahexaenoic acid, palmitic acid, eicosapentaenoic acid 이었다. 유리지방산 함량 및 산값은 가공직후 각각 $3.8{\mu}M/g,\;0.25mg/100g$에서 냉동 10개월 후에는 $7{\mu}M/g$과 0.4mg/100g로 약간의 증가 후세를 보였고, TBA값은 $20{\mu}M/kg$에서 저장 2개월째 $60{\mu}M/kg$으로 증가하였으며, 그 후 완만한 증가를 보였다. 산도 및 pH는 냉동 저장 중 거의 변화가 없었으며, 아미노태질소는 가공직후 90mg/100g에서 자장 10개월째에는 18mg/100g으로 약간의 증가 추세를 보였다. VBN은 초기 18mg/100g에서 저장 5개월째에 초기 부패 단계까지 증가하였으며, 이후 계속 증가하는 경향을 나타내므로, 저염건 조기를 $-20^{\circ}C$ 냉동저장할 경우, 5개월 정도 저장 가능할 것으로 생각되었다.
