A Comparison of the Essential Amino Acid Content and the Retention Rate by Chicken Part according to Different Cooking Methods

  • This study set out to identify the changes in the nutrient contents during the chicken cooking process as basic data for the establishment of a national health nutrition policy. Samples were produced using 3 chicken parts (wing, breast, and leg) and 7 cooking methods (boiling, pan-cooking, pan-frying, deep-frying, steaming, roasting, and microwaving), and the essential amino acid contents, principal components, and retention rates were analyzed. Weight loss was observed in all chicken parts with all cooking methods. The protein and essential amino acid contents of the chicken samples differed significantly according to the part and the cooking method (p<0.01). The protein and essential amino acid contents (g/100 g) of raw and cooked chicken parts showed ranges of 16.81-32.36 and 0.44-2.45, respectively. The principal component analysis (PCA) clearly demonstrated that the cooking methods and chicken parts produced similar trends for the essential amino acid contents. The retention rates of the chicken parts varied with the cooking methods, yielding a minimum value of 83% for isoleucine in a roasted wing, 91% for protein in a steamed breast, and 77% for isoleucine and lysine in a roasted leg. Therefore, the protein and amino acid contents of the roasted breast were higher than those of the other cooked chicken parts.

  • This study was carried out to understand and analyze the cooking and processing methods presented in CHE MIN YO SUL (chapter 82~86). The result from the study are as follows; 1. Byung was made from dough of wheat flour, glutinous rice flour, small green peas flour an rice of millet etc. by steaming, roasting, deep fat frying or sauted, or it had eaten Byung which was made from egg or seagull's egg without cereal was simillar to Korea's fried egg cake. 2. Jong and Youl were steamed product made from mixture of millet and rice which were wrapped with leaf of Julpool or bamboo's leaf. It's shape was simillar to Korea's Song-Pyun but different from materials and cooking method. 3. Jamyong's cooking method was boild the mixture of white rice soup, Myong-Jup, and salt. and then pour the rised Bal. 4. Ye and Lo were boiling product made from new oat and appricot seed flour. It was simillar to sweet drink made from rice, and put them in the jar for storage.

Alpha-Tocopherol Contents of Peanut Seeds Depend on Varieties and Processing Methods

  • The purpose of this study is to establish an extraction and analysis method for $\alpha$-tocopherol, and to then distinguish among varieties. The $\alpha$-tocopherol contents of 22 varieties of peanut seeds were analyzed by HPLC. Peanut seeds of cv. Palkwang were processed in two ways, by boiling and roasting. The $\alpha$-tocopherol contents of the two types of peanuts were compared with fresh seeds without any processing. $\alpha$-Tocopherol was detected at a retention time of 2.95 minutes. Five standards of $\alpha$-tocopherol covering a range of $20{\sim}100{\mu}g/ml$ were made up in 2% isopropyl alcohol/n-hexane and analyzed in duplicate. The $\alpha$-tocopherol contents differed according to extraction temperature. The contents were $85{\mu}g/g$ or less at $10^{\circ}C\;and\;20^{\circ}C$ and $94{\mu}g/g$ at $30^{\circ}C$, but they were decreased at $40^{\circ}C$ or higher. The $\alpha$-tocopherol contents in 22 peanut varieties were $61.36{\sim}96.80{\mu}g/g$ according to variety. Fresh peanuts contained $106.7{\mu}g/g$ of $\alpha$-tocopherol, while boiled peanuts contained $108.8{\mu}g/g$ of $\alpha$-tocopherol, and roasted peanuts contained $109.2{\mu}g/g$ of $\alpha$-tocopherol.

  • 고속액체크로마토그라프를 이용하여 참기름에 이행된 세사몰린과 세사민의 함량을 측정하고 배소공정중 이들 성분의 안정성, 저장중의 함량변화등을 분석하여 참기름품질평가의 지표로 이용할 수 있는 가능성을 검토 하였다. 참기름중 세사몰린과 세사민의 함량은 품종별로 다소 차이가 있었으며 두성분 모두 국내산 참깨보다 수입산 참깨의 함량이 다소 낮은 경향이었다. 참기름 가공을 위한 배소공정중 상당량의 세사몰린이 감소되었으나 세사민의 안정성은 매우 높았고 착유방법별 뚜렷한 유의차가 나타나지 않았으며 참기름 저장중에도 세사몰린과 세사민의 함량변화는 거의 나타나지 않았다. 이와같은 연구결과로 세사민을 품질평가의 지표로 삼았고 내부표준물질로 첨가된 안트론의 양에 대한 상대값으로 참기름의 품질을 평가하기 위한 방법에 대하여 고찰하였다.

열처리에 따른 씀바귀 침출차의 품질특성 (Quality Characteristics of Tea Thermally Processed from Dried Ixeris dentata Root)

  • 씀바귀뿌리를 이용하여 침출차를 제조하고자 건조온도 및 처리조건을 달리하여 유리당, 유기산, cynaroside 및 총폴리페놀성물질 함량, 유리아미노산, 색도 및 관능적 특성을 검토하였다. 총유리당, 유기산, 유리아미노산 및 cynaroside 의 함량은 천일건조한 것이 가장 높았으며 총폴리페놀성 함량은 열풍건조 후 볶음 처리한 것이 가장 높았다. 건조한 씀바귀뿌리의 유리당 중 sucrose, glucose, fructose 및 galactose는 열풍건조에 의하여 감소하였고 천일건조 시 검출되지 않았던 maltose가 열풍건조에 정량되었으며 증숙 후 열풍건조 시 1.67%의 높은 함량을 보여주었다. 씀바귀뿌리 내에 함유되어있는 유리아미노산함량 중 arginine이 669.2 mg%으로 가장 높았고 뒤이어 serine이 379.9 mg%으로 높은 함량을 보여주었다. 씀바귀뿌리 건조분말의 색도는 열풍건조 후 볶음처리를 한 것이 밝기, 적색도 및 황색도 모두 가장 높았으나 열수침출 후의 색도는 적색도와 황색도는 타처리구에 비하여 가장 높았지만 밝기는 가장 낮게 나타났다. 씀바귀뿌리를 이용한 침출차의 관능검사결과 열풍건조 후 볶음처리한 처리구가 가장 높은 점수를 보였다.

Effect of cooking methods on the phytosterol content in nine selected vegetables

  • Phytosterol contents in nine vegetables such as paprika (red, yellow, and orange), kohlrabi, bamboo shoot, cherry tomato, cucumber, Chinese chive, and corn were analyzed by gas chromatography. Individual contents of ${\beta}$-sitosterol, campesterol, and stigmasterol in fresh and cooked vegetables (boiling, grilling, stir-frying, deep-frying, steaming, roasting, and microwaving) were determined and compared. Total phytosterol content of paprika, cucumber, Chinese chive and cherry tomato ranged from 23.19 to 46.51 mg/kg (0.002-0.005%) of fresh weight of raw vegetables. Total phytosterol content variation (%) was obtained as follows: [(the content of phytosterol after cooking) - (the content of phytosterol before cooking)] / (the content of phytosterol before cooking) ${\times}100$. Total phytosterol content was found to be high in raw kohlrabi at 138.99 mg/kg fw (0.01%), in corn at 302.86 mg/kg fw (0.03%), and in bamboo shoot at 443.15 mg/kg fw (0.04 %). Total phytosterol content variation (%) in orange paprika ranged from 27.5 to 267.3 while that in cherry tomato ranged from -11.0 to 337.5. Generally, high content variation of total phytosterol was found in stir-fried and deep-fried vegetables. Therefore, higher phytosterol levels were obtained from cooked vegetables than raw vegetables. We suggest that these data will be useful to investigate cooking methods for increased intake of phytosterols.

학교급식 영양사의 육가공식품에 대한 인식 및 사용실태에 관한 조사 연구 (Attitude of dietitians working for elementary schools on meat products)

  • This study was conducted to investigate the attitude of dietitians on meat products and consumption of meat products in meal service of elementary school. Eight hundred and forty two questionnaires collected from each district of the country were statistically analyzed. Dietitians showed preference of ham and packed meat to other meat products. Dietitians had a good image on meat product regarding it as a good source of protein, imported food and diversely used food for cooking. Whereas 50% and 25.8% of dietitians concerned about the high content of preservative and sodium, respectively. More than 96% of dietitians suggested the food processing company to decrease the addition of preservatives, coloring agents, color formers and sodium. Fifty nine percent of dietitians responded they would increase the consumption of meat product if it is processed to food with low sodium, low cholesterol, low fat and no persavatives. Dietitians used ham for cooking once or twice a month. The reason they used the meat product for meal service was the preference of students and readiness of meat product for cooking. The dietitian's favorite cooking method was roasting ham or sausage with vegetable. Dietitians responded the first thing they checked for purchasing meat product was the date of processing and the term of validity.

포제에 따른 목단피의 성분 중 (+)-Catechin, Paeoniflorin 및 Paeonol의 함량분석 (Quantitative Analysis of (+)-Catechin, Paeoniflorin, and Paeonol in Moutan Radicis Cortex and Its Processed Products)

  • In present study, we conducted quantification analysis of phenolic compound (paeonol), monoterpene glycoside (paeoniflorin), and tannin ((+)-catechin in the 70% ethanol extracts of non-processed Moutan Radicis Cortex (MRC) and processed MRC by roasting using a high-performance liquid chromatography coupled with photodiode array detector. Three marker components were separated on Gemini $C_{18}$ analytical column and the column was maintained at $40^{\circ}C$ using two mobile phase system consisting of 1.0% (v/v) aqueous acetic acid and 1.0% (v/v) acetic acid in acetonitrile. The flow rate and injection volume were 1.0 mL/min and 10 mL. In non-processed MRC sample, the concentrations of three marker compounds, (+)-catechin, paeoniflorin, and paeonol were 0.20, 1.18, and 2.12%, respectively. On the other hand, the concentrations of the three compounds in processed MRC samples were 0.03-0.24, not detected-1.08, and 0.76-1.82%, respectively.

Chemical Composition of Green Teas According to Processing Methods and Extraction Conditions

  • This study examined the influence of manufacturing processes and extraction conditions on the chemical compositions of green tea. Green tea samples grown in various areas (Korea, China, and Japan) and processed by 4 different methods (steaming, pan-firing, steaming and pan-firing, and heavy roasting after steaming and pan-firing) were collected for study. The chemical compositions of the green tea extracts and infusions were different according to their processing methods and extraction conditions, including catechins, caffeine, and free amino acids contents. In all samples analyzed, (-)-epigallocatechin gallate (EGCG), (-)-epigallocatechin (EGC), and theanine were determined as the major catechins and free amino acid, respectively. Studies of samples grown in the same area (Jeju; Korea) showed that there were significant differences in the concentrations of catechins and caffeine in extract and infusion according to the processing methods. These results indicate that processing methods influenced the chemical compositions of the green tea extracts and infusions.

학교급식 보조 유무에 따른 아동의 사회인구학적 특성과 식생활태도 비교 (A Comparison of Sociodemographic Characteristics and Dietary Attitudes by Lunch-provided Types in Elementary Schools)

  • This study was carried out to compare dietary attitudes between the children with school lunch fee provided by parents and by the government. The subjects of this study was consisted of 460 elementary school students in the 6th grade (407 lunch-affordable children. 53 lunch-unaffordable children) . General characteristics was significantly different in two groups. In the free group family size(P<0.001),percentage of living with parents (P<0.001) and education level of parents(father : P<0.05, mother P<0.01) was lower than in the charged group, but the dependence on mother's income(P<0.001) and financial support of government (P<0.001) was higher. There was no significant difference in anthropometric measurements by lunch fee. The preference to cooling method was significantly different(P<0.01), the charged group liked grill except frying and roasting but the free group liked seasoning and salting. When comparing eating habits, general eating behavior(P<0.05) was significantly lower in the free children and especially regularity of breakfast(P<0.05) and daily intake of raw vegetables (P<0.05), fruits(P<0.01). There was no significant difference in the total score of nutrition knowledge between the children of the two groups.
