To catch the relative importance of varietal and environmental variation in various grain quality components associated with palatability of cooked rice, grain appearance, milling recovery, several physicochemical properties of milled rice and texture or eating quality of cooked rice for rice materials of five japonica cultivars, produced at four locations of the mid-mountainous and alpine area of Korea in 1989, were evaluated and analyzed the obtained data. Highly significant varietal and locational variations were detected in 1000-grain weight, amylose content, K/Mg ratio, gelatinization temperature, peak viscosity, breakdown and setback viscosities as compared with variety x location interaction variation. Also, marked locational variations were recongnized in milling recovery from rough to brwon rice, alkali digestibility and protein content, and significant varietal variation was caught in stickiness /hardness ratio of cooked rice. The variety x location interaction variation was especially large in quality components of grain appearance and ripening, palatability of cooked rice and consistency viscosity. One thousand kernel weight was heaviest in Jinbuolbyeo and Odaebyeo, and the unfilled grain ratio was lowest in Jinbuolbyeo. Odaebyeo showed slightly' lower ratio of intact and clear milled rice because of more chalky rice kernels compared with other cultivars. Amylose content of Jinbuolbyeo and Sobaegbyeo was about 1% lower than that of others and K/Mg ratio of Odaebyeo was the lowest one among rice materials. Odaebyeo, Sobaegbyeo and Jinbuolbyeo revealed significantly low gelatinization temperature and setback viscosity while high peak and breakdown viscosities. Cholwon rice showed the greatest kernel weight, good grain filling but lowest ratio of intact and clear milled rice while Jinbu rices exhibited the highest milling recovery from rough to brown rice and ratio of sound milled rice. Amylose content of milled rice in Jinbu rices was about 2-3% lower than those in other locations. Protein content of polished rice was about 1% lower in rice materials of middle zone than those of southern part of Korea. K/Mg ratio of milled rice was highest in Jinbu rice and potassium content was slightly higher in the rice materials of middle region than in those of southern region. Alkali digestion value and gelatinization temperature of polished rice was markedly high in Jinbu rices as compared with other locations. Breakdown viscosity was hightest in Chlown rices and next higher with the order of Hwaso>Unbong>Jinbu rices, and setback viscosity was the quite contrary tendency with breakdown. The stickiness /hardness ratio of cooked rice was relatively higher value in Cholwon rices than in the others and the palatability of cooked rice was a little better in Unbong and Cholwon rices than in Jinbu and Hwaso rices, although variety x location interaction variation was large. The rice materials can be classified largely into two groups of Jinbu and the others by the distribution on the plane of 1st and 2nd principal components (about 60% of total informations) contracted from twelve grain quality properties closely associated with eating quality of cooked rice. Also, Jinbu and the other rices were divided into two and three rice groups respectively. Varietal variation of overall rice quality was smallest in Hwaso. The most superior rice group in overall quality evaluation included Odaebyeo produced at Cholwon, Unbong and Hwaso, and Sobaegbyeo grown at Unbong
This study examined the germination characteristics by collecting fruits and pretreatment of the diaspore from April 2014 to June 2015 to investigate the diaspore characteristics, seed dispersion, and seed germination characteristics of two myrmecochorous spring ephemerals (MCSE): -Jeffersonia dubia (Jb) and Corydalis remota (Cr)-. The diaspore of Jb was about 5mm-long yellow-dark brown, oblong seeds with the attached amorphous white elaiosome. The mean weights of diaspore, seed, and elaiosome were 15.86mg, 13.46mg, and 2.40mg, respectively, and the elaiosome ratio was 15.13%. The diaspore of Cr was about 1.2mm diameter and glossy black ovoid seeds with the attached white spatula-shaped elaiosome. The mean weights of diaspore, seed, and elaisome were 2.58mg, 2.05mg, and 0.53mg, respectively, and the elaiosome ratio was 20.54%. Camponotus niponensis and Formica japonica transported the diaspore of Jb while Formica japonica and Lasius japonicus transported the diaspore of Cr. The germination percentage of Jb seeds was statistically significant and had the significance level of 1% with the pretreatment and date of sowing. However, it was independent of attachment of elaiosome. The mean germination percentages of Jb seeds was 65.0% during sowing on June 20, 17.5% during sowing on August 19, and 0% during sowing on October 20. The germination percentage of Cr was statistically significant and had the significance level of 5% and 1% with the attachment of elaisome and date of sowing, respectively. The mean germination rates were 54.17% and 35.0% in the non-treatment section and the treatment section with elaisome detached, respectively. The mean germination percentages of Cr seeds was 75.0% during sowing on June 20, 53.75% during sowing on August 19, and 5.0% during sowing on October 20. Considering the fact that the ants transported the diaspores to the ant house when the fruits of MCSE were ripened and dropped the seeds, the direct seeding right after collecting may be most suitable to the characteristics of the evolution of these plant species and may be the best method to obtain the highest germination percentages. Since the ants distribute their seeds, the MCSE produces and attaches the elaiosome to the seed to maintain the symbiotic relationship with ants. The ants then transport the seed to the ant house where the environment is controlled for suitable temperature and humidity, and then the MCSE succeeds in germination after the embryo grows sufficiently in the next spring.
This study was conducted to evaluate the growth and yield by sowing times and spacing using machine seeder on Coix Lachryma-jobi L. var ma-yuen $S_{TAPF}$. Adlay was seeded at four different dates (April 20, May 5, May 20 and June 5). Planting spaces were controlled by the seed roller of tractor drill seeder attached to tractor at three spacing ($60{\times}15cm,\;70{\times}15cm\;and\;80{\times}15cm$). The results were summarized as follows. Required days to emergence and days to anthesis were shortened as sowing date was late. But days to maturity were prolonged when sowing date was late. The accumulated temperature increased such as required periods increased. In growth characteristics, culm length was significantly different at different sowing times. But all growth characteristics was not affected by different spacings. In yield components, 1,000 grain weight and ripening rate were significantly different at different sowing times, also the number of tillers and branches was significantly affected at different spacings. Grain yield/ha was significantly different at different sowing times. But it was not significantly different at different spacings. Thus, in order to improve the yield of adlay using drill seeder, if it is not frost, sowing should be done as early as possible. As a result, suitable sowing time was April 20 with spacing at $60{\times}15cm$ using machine seeder in Korea.

Before the advent of pasteurization and other microbiological controls in the dairy industry, milk product-borne diseases such as scarlet fever, typhoid fever, septic sore throat, and tuberculosis were globally widespread. Pasteurization was invented by Louis Pasteur, and it has been considered as one of the most effective ways to control milk product-borne diseases since the 20th century. Nevertheless, till date, various types of cheese in the EU, the USA, and other countries are made from unpasteurized milk as artisan cheese, following the specific food regulations of each nation. Furthermore, after the effectiveness of the Free Trade Agreement (FTA) negotiations between Korea and many nations, the import of various types of cheese made in different conditions and influenced by acidity, preservatives, temperature, competing flora, water activity, and salt concentration increased yearly. Hence, the objective of this review was to describe (1) the 60-day aging rule of cheese, (2) characteristics of the outbreaks linked to cheese manufactured from unpasteurized milk since 1998 to 2011 in USA, and (3) serious health risks from unpasteurized milk, to ensure food protection and safety and to use this basic information for risk assessment.

This study was performed to identify the cheese starter potential of antifungal lactic acid bacteria isolated from Kimchi. Eight fungi were isolated from cheese or the cheese ripening room, and identified as Penicillium and Cladosporium by ITS-5.8S rDNA analysis. Twenty-two lactic acid bacteria species with antifungal activity were isolated from Kimchi, and identified as Lactobacillus and Pediococcus by 16S rRNA sequence analysis. Six lactic acid bacteria species were selected (L. sakei subsp. ALJ011, L. sakei subsp. ALI033, L. sakei subsp. ALGy039, P. pentosaceus ALJ015, P. pentosaceus ALJ024, and P. pentosaceus ALJ026) based on higher antifungal activity from the initial 22 species. Out of the six identified species, L. sakei subsp. ALI033 had the highest antifungal activity. For growth of the six lactic acid bacteria, optimal temperature and pH were $30{\sim}37^{\circ}C$ and 7.0, respectively. Proteolytic activities of the six lactic acid bacteria were almost as strong as the commercial strain Str. thermophilus Body-1. Coagulative activities of L. sakei subsp. ALI033, P. pentosaceus ALJ015, and P. pentosaceus ALJ024 were higher than those of L. sakei subsp. ALJ011, L. sakei subsp. ALGy039, and P. pentosaceus ALJ026. The acid resistance of L. sakei subsp. was higher than that of P. pentosaceus. The major organic acid component of the lactic acid bacteria culture medium was lactic acid.
Several experiments were conducted to investigate the achene viability and growth characteristics of Eclipta prostrata (L.) L. No dormancy and no after-ripening requirement were found for E. prostrata achenes. When achenes were stored at room temperature, germination did not decrease with up to 5 months storage. Large differences in loss of viability of E. prostrata achenes occurred when different dehydration methods were used. Immediate dehydration resulted in high viability, but slow dehydration resulted in severe loss of viability. Achene viability at shallow burial depths (5 and 10 cm deep) was lower under upland soil conditions than under lowland soil conditions. Seedling growth was greatly reduced when flooding to a depth of 10 cm occurred at or before the 4-leaf stage. Flooding after the 4-leaf stage stimulated stem elongation. Branching started from the second week and usually terminated at the tenth week. Leaf size was determined by the branch which are related to the assimilate supply. Flowering of E. prostrata started during the fifth week after emergence, and mature achenes were produced from the sixth week. Ten to 14 days were needed for the achenes to mature. About 14,000 achenes were produced on each plant. Achene production per week increased from the sixth week to the tenth week and thereafter it declined. The average number of achenes per inflorescence decreased with delay in flowering.
"Cheongan" is a new japonica rice variety developed from a cross between SR15225-B-22-1-2-1 and Iksan431 in summer season, 1997 by National Institute of Crop Science, RDA. The line SR15225-B-22-1-2-1 has good canopy architecture and multi-disease and insect resistance, and Iksan431 has translucent milled rice and good eating-quality. Heading date of Cheongan is August 13 in central lowland and mid-mountainous areas. "Cheongan" having culm length of 84 cm shows relatively semi-erect pubescent leaf blade and rigid culm, tolerance to lodging with and good canopy architecture. This variety has 14 tillers per hill and 126 spikelets per panicle. It shows tolerance to heading delay and spikelet sterility comparable to Hwaseongbyeo when exposed to cold stress. Leaf senescence of Cheongan progresses slowly during the ripening stage and the viviparous germination ratio was 59 %, similar to that of Hwaseongbyo. "Cheongan" shows moderately resistance to blast disease, but susceptible to stripe virus and brown planthopper. The milled rice of "Cheongan" exhibits translucent, clear non-glutinous endosperm and medium short grain. It shows similar amylose content of 18.7%, gelatinization temperature, and similar palatability of cooked rice compared to Hwaseongbyeo. The milled rice yield of this cultivar is about 5.54 MT/ha at ordinary season culture in local adaptability test for three years. Especially, "Cheongan" has better milling properties of higher 98.4% and 73.9% in the percentage of head rice in milled rice and milling recovery of head rice, respectively, than those of Hwaseongbyeo. "Cheongan" could be adaptable to the central and mid-southern plain area, and mid-western coastal area of Korea.
'Hanseol' is a new very early-maturing, cold tolerant and high quality japonica rice variety developed from a cross of 'Jinbu24' and 'Jinbu25' by the rice breeding team of National Institute of Crop Science (NICS), Rural Development Administration (RDA) in 2009. The heading date of this variety is July 25, which is four days earlier than check variety, 'Jinbubyeo'. 'Hanseol' has 65 cm of culm length, 99 spikelets per panicle, 82.9% of ripened grain rate, and 21.5 g of 1,000 grain-weight of brown rice. This variety shows susceptibility to bacterial leaf blight and virus diseases, and insect pests. It is tolerant to cold stress in terms of less heading delay and high fertility in cold water irrigated cultivation. This variety shows delayed leaf senescence and considerable tolerance to viviparous germination at ripening stage. The milled rice of this variety exhibits translucent, clear non-glutinous endosperm and medium-short grain. 'Hanseol' showed low gelatinization temperature and 6.1% protein content, 19.1% amylose content and good palatability of cooked rice. The milled rice yield of this variety is about 5.43 MT/ha at ordinary culture in local adaptability test for three years. 'Hanseol' would be highly adaptable to mid-north and mid-mountainous areas, and mid-northern alpine area in Korea.
'Pyeongwon' is a new japonica rice cultivar which is developed from a cross between Jinbu19 and Samjiyeon4 from North Korea by the rice breeding team of National Institute of Crop Science, RDA. Pyeongwon has about 107 days duration from seeding to heading in mid-northen plain, alpine, north-eastern coastal and southern alpine areas. It has about 67 cm culm length and tolerance to lodging. Pyeongwon has 13 tillers per hill and 82 spikelets per panicle. It showed tolerance to heading delay and spikelet sterility due to cold treatment similar to Odaebyeo. It also showed slow leaf senescence and moderate tolerance to viviparous germination during the ripening stage. Pyeongwon has resistance to blast disease but susceptible to stripe virus and brown planthopper. Milled rice of Pyeongwon has translucent kernels, relatively clear non-glutinous endosperm and medium short grain. It is characterized as a low gelatinization temperature and slightly lower amylose content (17.1%) variety compared to Odaebyeo (19.5%) and has good palatability of cooked rice. The milled rice yield performance of this cultivar was about 5.28 MT/ha by ordinary culture in local adaptability test for three years. This cultivar may be highly adaptable to the mid-northen plain, alpine, north-eastern coastal and southern alpine areas of Korea.
This study was carried out to evaluate spatial variations in rice production areas by simulating rice growth and yield with CERES-Rice growth model under GCM $2{\times}CO_2$ climate change scenarios. A modified window version(v4.0) of CERES-Rice was used to simulate the growth and development of three varieties, representing early, medium, and late maturity classes. Simulated growth and yield data of the three cultivars under the climate for 1971 to 2000 was set as a reference. Compared with the current normal(1971 to 2000), heading period from transplanting to heading date decreased by 7~8 days for the climate in $2^{\circ}C$ increase over normal, and 16~18 days for the climate in UKMO with all maturity classes, while change of ripening period from heading to harvesting date was different with maturity classes. That is, physical maturity was shortened by 1~3 days for early maturity class and 14~18 days for late maturity class under different climate change scenarios. Rice yield was in general reduced by 4.5%, 8.2%, 9.9%, and 14.9% under the climate in $2^{\circ}C$, $3^{\circ}C$, $4^{\circ}C$, and about $5^{\circ}C$ increase, respectively. The yield reduction was due to increased high temperature-induced spikelet sterility and decreased growth period. The results show that predicted climate changes are expected to bring negative effects in rice production in Korea. So, it is required for introduction of new agricultural technologies to adapt to climate change, which are, for example, developing new cultivars, alternations of planting dates and management practices, and introducing irrigation systems, etc.
