제주지역(濟州地域)의 식품금기(食品禁忌)에 관(關)한 연구(硏究) (I)-임신기(妊娠期)를 중심(中心)으로- (A Study of Food Taboos on Jeju Island (I)-Focused on Pregnancy-)

  • Nutrition counselors in Korea often encounter difficulty in their attempt to change village women's attitudes regarding food taboos which are counter to good eating habits. There are a great many food superstitions which are not due to religious influence, but seem to be related to shape and composition of food. Many expectant mothers superstitiously avoid eating certain foods for fear that they may cause mental or physical abnormality in their babies. As was shown in a previous survey (Mo, 1966)of villages in all provinces except Jeju Island, such superstitions were common among pregnant and lactating mothers. Many food taboos and superstitions based on non-scientific and irrational ideas do exist even in modern society, and are a major obstacle to nutritionally adequate food consumption. A study of food taboos among women of Jeju Island was undertaken from November to December of 1976, these results to be compared as well with those of the previous study. There were 73 items found to be prohibited during pregnancy. Of these, 48.7% were of the deaf group, 17.4% fish, 5.5% eggs, 4.7% cereal, and only 2.2% fruit. Of 252% women respondents, 111 (45% ) abstained from eating chicken, duck, and shark because of the belief that they would cause their babies to be born with gooseflesh or shark skin. Many of them avoided rabbit meat for fear that their babies might be born with harelip. It was also feared that a baby would become disfigured if his mother ate duck, goat, dog meat, chicken or duck eggs, or soup made of bones. A common superstition was that highly spiced or salty foods would cause the fetus to be hairless. Squid and octopus were believed to cause babies to have weak bones, or none at all. Most of these food taboos were associated with fears concerning Physical structure and appearance of unborn babies. Other taboos were associated with fear of undesirable behavioral characteristics. For example, some mothers thought that a baby would pinch or bite the mother's breast during the weaning period, if crab meat were eaten during pregnancy. Unevenly sliced rice cake, loach, snake meat and eel were also believed to cause a baby to be ill-tempered. The findings of this study are remarkably similar to those of the previous study conducted by the authour in 1966. Most of the same food taboos, based on non-scientific and irrational reasons, were found on Jeju Island as on the peninsula, and thor were similarly wide-spread. The results of correlational analysis show that the most significant factors related to prevalence of food taboos, are level of education and religious background. Number of food taboos is correlated with level of education. Also, food taboos are least freqent among the Christian woman. Proper nutrition education should he undertaken in order to encourage intake of protein-rich food, particularly during pregnancy when nutritional needs of mother and fetus are great.

1900년대 이전 문헌에 기록된 전 조리법의 문헌적 고찰 (A Bibliographical Study of Korean Fan Fried Side dishes(Jeon) in Korean Literatures before the 1900s)

  • Jeon refers to a type of Korean cuisine used as a side dish, made with various ingredients such as meat, vegetables, or fish, mixed with flour batter and coated with egg batter and then pan-fried on both sides with oil so that heat spreads through them well. The aim of this study was to provide a cornerstone of further research on Korean dietary life, by reviewing types, recipes and names of Jeon recorded in ancient cookbooks (Korean literatures) and by analyzing changes in recipes to make Jeon, which our ancestors used wisely as one type of side dish. Considering developments and changes recorded in old documents, the Jeon recipe appeared relatively later than the recipes for grilling, steaming et al, which had been developed much earlier, and it had not been recorded until the 1600s. Changes of Jeon recipes by time period are as follows. In the 1600s, there were three recipes: frying only with grain batter after preparation of ingredients, frying right after preparation of ingredients, and putting ingredients on already fried watery batter. These three recipes were still used in the 1700s, in addition to a new recipe, in which ingredients were oil-fried to be skewered. Today's recipe in which prepared ingredients are fried after getting coated with flour and egg only appeared in 1800s. This has been the main recipe for Jeon ever since. In that time period, there was more variety of recipes and ingredients than before. For instance, Jeon was used for soup or steamed dishes instead of being served as a dish itself. Buchimgae with mixed ingredients was also considered Jeon. In the 1900s, there appeared more names for Jeon as more sorts of ingredients got used, even though there were no new recipes for Jeon. The above-mentioned historical records show that traditional recipes for Jeon have been applied to various dishes, using diverse ingredients, and it might be a smart solution to today's problematic dietary habits involving excessive intake of nutrients, in that it provides a healthy way to add fat. In the same sense, the recipe for Jeon can play an active role in internationalization of Korean foods, in which healthiness is a main feature. According to ancient documents, the recipes for Jeon were used even for meals that were not side dishes, such as Jun-Gwa (Jung-Gwa), Jun-Yak and fried rice-cake. Also, there were dishes using the same recipes even without carrying the name of Jeon, like Buchim or Jijim. This might be worthy of further examination in culinary science.

한.중.일 세시풍속과 세시음식(歲時飮食)에 대한 비교 (Comparative Study on Seasonal Festival and Food Culture among the Korea, China and Japan)

  • We conducted a consensual, expansive, and successive study to compare cultural differences and similarities between Korean, Chinese and Japanese's Seasonal Festivals and Foods documentarily. It showed interesting results that the three countries had celebrated with similar meanings, and shared similar events and special foods. Seasonal Festivals happen throughout the year sequentially: the New Year Day, January $15^{th}$(first full moon festival), March $3^{rd}$(double three day), May $5^{th}$(double five day), July $7^{th}$(double seven day) and finally the Year Farewell Festival. While, the festival of a royal birthday of Buddha happens on April $8^{th}$ in both countries: Korea and Japan. There is also one of the big festivals called the harvest moon festival on August $15^{th}$, and this event celebrates with special foods both in Korea and China. On December $23^{th}$, it is a special day for both Chinese and Japanese, but they celebrate the day with different meanings to it. Three countries have a special seasonal event celebrated each other. Koreans have a special event called Sambok to overcome summer with special food during a middle of June to the beginning of July. Chinese have a special event for overcoming winter with soup on December $8^{th}$. Japanese have a special event with rice cake to safety on January $11^{th}$. On these seasonal festivals, it is different to note that two different kinds of calendars are used. The lunar calendar is used by Koreans and Chinese whereas the solar calendar is used by Japanese. Because of the similarity in Buddhism, and agricultural industry, and especially sharing Chinese Characters in words, these three countries have in common in many ways to celebrate Seasonal Festival, and it is very unique custom in the world. Nowadays; however, these traditional events and special foods are changing in more simplified version and almost disappearing in all three countries. Therefore, we suggest that the Seasonal Festivals and Foods should be more emphasized in flourishing and exchanging between Korea, China and Japan.

강원 지역 일부 여대생 중 골밀도 정상군과 위험군의 식품섭취빈도법을 이용한 식품과 영양소 섭취 상태 비교 (Evaluation of Food and Nutrient Intake by Food Frequency Questionnaire between Normal and Risk Groups according to the Bone Mineral Density of Female College Students Residing in Gangwon Area)

  • The purpose of this study was to examine the relationship between bone density and dietary intake for college women in their twenties. This study was performed on 160 female college students residing in Gangwon-do. It was conducted using ultrasound measurement of calcaneus bone density, anthropometric checkup and food-frequency questionnaires (FFQ) comprising 94 kinds of commonly consumed foods. Subjects were divided into two groups according to the T-score of bone density: a normal group (n = 113 persons, T-score ${\geq}1$) and a risk group (n = 47, T-score < 1.0). The average age of the subjects was 20.17 years and there was no significant difference between the two groups. Body weight and body fat percentage of the normal group were significantly higher than those of the risk group. The mean daily energy intake of the normal group was significantly higher than that of the risk group. Also, protein, fat, vitamin A, niacin, vitamin B6, folate, calcium, phosphorus, sodium, potassium, iron and zinc intake for the normal group were significantly higher than for the risk group. For the intake of the commonly consumed foods (or dishes) listed in FFQ, the mean daily intake amount of loaf bread, rice cake, potatoes, spicy beef soup, cucumber, seasoned spinach perilla leaves, crown daisy, stir-fried mushroom, sea mustard, beef rib, ham, chicken, mackerel, common squid, drink type curd yogurt, oriental melon and chocolate in the normal group was significantly higher than in the risk group. While, the mean daily intake of ramyun (instant noodle) and carbonated beverage by the normal group was significantly lower than that of the risk group. In conclusion, 20 something female college students showed a higher rate (26.9%) of the bone mineral density risk group (osteopenia or osteoporosis). For the risk group, the levels of nutrient and food intake were lower than in the normal group. Therefore, the bone density risk group needs to increase their nutrient intake and diet quality by increasing the intake of various foods. In addition, they should decrease the intake of foods, which are negative for skeletal health such as instant noodles and carbonated beverages.

어린이의 식습관(食習慣)이 체위(體位)에 미치는 영향(影響)에 관한 연구(硏究) (The Influence of Food Habits on Body Stature of Children)

  • The Purpose of this study was to determine every possible correlation between food habits and body statures of primary school children, aged ten years old. This study was conducted from July to October of 1975. In July, prepared questionaires concerning life style, anthropometry, food preference, and food behavior were distributed through school teachers to 425 children; 219 boys and 206 girls, in the 5th grade of three elementary schools in the city of Seoul. Then, in October, when subjects had been classified into underweight/obese by statistical analysis, mothers of obese or underweight children were interviewed by the authors to determine weaning history, daily food consumption of their children, and opinions of various snacks for children. Analysis of results in terms of correlation coefficient, chisquare test and percentage calculations, are as follows: 1. Physical growth and development Boys Girls Height (cm) $134.8{\pm}5.74\;134.4{\pm}5.97$ Weight (kg) $30.0{\pm}4.27\;29.5{\pm}5.16$ Chestgirth (cm) $64.1{\pm}3.59\;63.3{\pm}3.81$ Arm circumference (cm) $18.3{\pm}1.61\;18.2{\pm}1.70$ Triceps skinfold thickness (mm) $10.9{\pm}5.13\;12.7{\pm}4.86$ Various indices of nutrition such as relative weight, relative chestgirth, $R{\ddot{o}}hrer's$ index, Kaup index, Vervaeck index were determined. 2. Food habits 1) Food $preference{\cdots}{\cdots}A$ varying number of foods were selected from 60 items were accepted. It was found that the food which children liked best was fruit and snacks were popular one. Lowest ranking among LIKED foods were from strongly flavored vegetables and organ meat. In general, girls had more food dislikes than did boys. Selected as liked foods were fruits, rice noodle soup, biscuits, and peanuts. Disliked foods were liver, green onions, onions, green pepper, mushrooms, oysters, shellfish, and pork. Items which children never ate before were liver, mushrooms, fish cake, boiled rice mixed with sorghum, mayonnaise, and fresh water firsh. Reasons which children gave for dislike were undesirable flavor and odor. 2) Food $behavior{\cdots}{\cdots}It$ was found that boys liked sweet and salty flavors more than did the girls who more often liked sour flavor. The majority of children enjoyed evening meals more than lunch and breakfast. A number of children skipped breakfast because of lack of appetite or lack of time before going to school. Snacks were the most popular food, especially among girls. Their snacking habits were formed by the encouragement of the mother, and the relieve boredom. Educational backgrounds of mothers and family economical levels of children were remarkable correlated with mothers' attitudes toward feeding of children. There were several interesting findings relating body stature to some other responses; such as that the obese child has a small number of brothers, higher birth order, higher educated mothers and higher family cultural background. It was also discovered that food perference, except for fat and oil group foods was not related to body stature. Sweet taste was liked best and pepperly taste was mostly disliked. Sour taste was popular in the group of underweight. Underweight children were more finicky, disliked snacking, and didn't get much attention from their mothers. 3) Correlation between body stature and nutrition during their infancy. The majority of children, both from obese and underweight, were breast fed as infant. Twenty five per cent of obese children and 17.4 per cent of underwight children started weaning at $1{\sim}6$ months old. The most popular supplemental food of weaning was cereal gruel for the obese group, while boiled white rice and cereal gruel were most common for the underweight group. Highly significant relationships were found between stature of parents and their children. In the obese group 47.8 per cent of fathers and 45.9 per cent of mothers were overweight; however, none of the fathers and only one mother was found to be underweight. In daily food consumption patterns, meals consisting of bread or noodle were popular in the obese group but disliked by the underweight group. The study found clear contrast in that the obese group liked meat and fish while the underweight group liked fruits and vegetables, especially kimchee. The obese children desired to eat cereal foods, milk and milk products, and fat foods while the underweight group desired to eat fruits and vegetables. Frequency of snacks per day was much greater in the obese group. Foods which mothers believed to be good for the health were carrots, cucumbers, fruits, milk, potatoes, sweet potatoes, and breads, while sweet foods such as candies, drinks. chocolate were considered not good for the teeth. Watching television was not significantly related to statures of children. Most significant relationships were found beween frequencies of family guest meals/and eating-out, and children's statures. Nutritional problems which have been considered for the malnourished children in addition to those of children who have a tendency toward obesity, must be taken into consideration in the development of proper nutrition education through the channels of regular school teaching and teaching by parents in the homes. Korean standards of anthropometric measurements for children should be revised, current measurements show much higher figures than present Korean standards.

산채류의 이용실태에 대한 조사 (A Survey on the Usage of Wild Grasses)

  • 경기, 강원, 전라남도, 충청북도, 경상남도, 제주도 지역민들의 산채 대한 인지도, 식용빈도, 이용방법 등에 대한 질문지 조사를 한 결과는 다음과 같다. 1) 산채에 대한 인상은 ${\ulcorner}$자연식품이다${\lrcorner}$라는 응답을 한 경우가 42.6%로 가장 높아서 자연식품에 대한 관심이 높아지고 있음을 알 수 있었다. 2) 산채의 떫은 맛을 우려내는 방법은 ${\ulcorner}$특별히 하지 않는다${\lrcorner}$가 62.9%로 가장 많은 것으로 나타났다. 3) 산채의 입수 방법은 재래시장에서 가장 많이 구입하고 있었으며, 도시보다 농촌이, 60세이상의 연령층에서는 들에서 직접 채취하는 비율이 높았다. 4) 산채의 식용빈도는 총 응답자의 28.7%가 가끔 먹는다라고 답하였으며, 도시보다 농촌의 경우 자주 먹는다는 응답율이 높았고 노인 동거가족과 40세 이상 연령층(31%)에서 자주 먹고 있는 것으로 나타났다. 5) 잘 알고 있는 산채의 이름은 평균적으로 더덕, 도라지, 고사리, 쑥, 달래를 95%이상 잘 알고 있다라고 응답하였으며 두릅 고들빼기는 각각 88.6% 85.1%이상 알고 있었다. 자주 먹는 산채는 고사리, 도라지, 달래, 더덕, 쑥, 고들빼기의 순이었으며 전라 경상지역에서는 도라지 다음으로 자주 먹는 산채를 쑥으로 응답하였다. 6) 밥에 넣어 먹는 산채는 총 25종류였으며 그 중 쑥의 이용율이 41.9%로 가장 높았다. 쑥은 떡으로 77.8%, 튀김이나 전으로 50.1%, 술담그는데 4.6%가 이용되고 있었다. 국 찌개, 생채의 조리에는 달래가 가장 많이 이용되고 있었으며, 나물이나 볶음에 이용되는 산채의 종류는 58종으로 가장 많았으며, 고사리가 볶음에 가장 많이 이용되고 있었다. 김치에는 돌나물과 고들빼기가 가장 많이 이용되고 있었으며, 술과 장아찌용으로는 더덕이 각각 40%, 46%로 가장 많이 이용되고 있었으며, 도라지는 가장 다양한 조리법으로 이용되고 있었다. 7) 산채의 저장법으로 데쳐서 말려서 저장하는 산채는 43종이었으며 그 중 고사리가 32.3%로 가장 높은 비율이었으며 참취, 고비, 참나물, 쑥, 곰취도 데쳐서 건조하여 저장하고 있었다. 그외 고들빼기, 도라지, 씀바귀, 고사리 등은 소금물에 담가 저장하고 있었으며, 냉동저장도 다수가 응답하였다.

제주지역 고등학생의 기숙사급식 만족도 및 급식메뉴 기호도 조사 (A survey of foodservice satisfaction and menu preference of high school boarding students in Jeju)

  • 본 연구는 기숙사 생활을 하는 제주지역 고등학생을 대상으로 기숙사급식 만족도와 급식에서 제공되는 메뉴에 대한 기호도를 조사 분석함으로써 기숙사 학생들의 다양한 요구와 필요에 부합하고 기숙사 급식의 질적 향상을 모색하기 위한 기초자료로 활용하고자 실시하였다. 조사대상 고등학생의 성별은 남자가 71.1%, 학년은 2학년 46.0%, 기숙사 거주기간이 2~3학기인 학생이 45.3%, 월평균 용돈은 3만원 미만이 39.0%, 동지역에 거주하는 학생이 68.3%로 나타났다. 방학 중 외식횟수는 한 달에 1~2회가 51.4%, 부모가 맞벌이를 하는 학생은 73.7%, 어머니의 학력은 고졸이 46.9%, 본인이 건강하다고 생각하는 학생은 60.3%로 나타났다. 조사대상의 기숙사급식 만족도에 있어서는 메뉴 품질에 대한 만족도 (3.26)보다 서비스 및 위생에 대한 만족도 (3.46)가 높았고, 메뉴 품질에 있어서는 주식 (밥)의 양 (3.70), 음식의 온도 (3.50), 음식의 신선도 (3.42), 음식의 맛 (3.14)의 순으로, 서비스 및 위생에 있어서는 급식 정보 제공 (3.66), 식당 분위기(3.53), 급식 위생 (3.48), 식사질서 지도 (3.43), 원활한 배식 (3.34), 조리종사자의 친절도 (3.33)의 순으로 나타났다. 조사대상 고등학생의 끼니별 급식 만족도는 저녁식사 (3.70), 점심식사 (3.50), 아침식사 (3.14)의 순으로 나타났으며, 성별에 있어서는 아침식사의 경우 여학생의 만족도 (3.36)가 남학생의 만족도 (2.93)보다 유의적으로 높게 나타났다 (p < .01). 조사대상이 기숙사급식에서 제공받은 음식의 섭취량을 끼니별로 분석한 결과 저녁식사 (3.70), 점심식사 (3.50), 아침식사 (3.14)의 순으로 나타났고 점심식사와 저녁식사는 남학생의 섭취량 (각 4.12, 4.17)이 여학생 (각 3.72, 3.76) 보다 유의적으로 많았다 (p < .001). 조사대상 고등학생의 기숙사급식에 대한 개선점에 있어서는 맛의 향상 (43.4%), 메뉴의 다양성 (31.0%), 배식량 증가 (17.4%), 급식위생 (3.8%), 급식환경 (3.3%)의 순으로 응답율을 보였고 남학생의 경우 맛의 향상 (49.2%), 메뉴의 다양성 (28.7%), 배식량 증가 (14.9%), 급식환경 (4.6%), 급식위생 (1.3%)의 순으로, 여학생은 메뉴의 다양성 (36.6%), 맛의 향상 (29.3%), 배식량 증가 (23.6%), 급식위생 (8.1%), 급식환경 (1.6%)의 순으로 나타났다 (p < .001). 조사대상의 주식류에 대한 기호도는 면류 (4.06), 일품음식류 (3.92), 밥류 (3.66)의 순으로 높게 나타났고 밥류에 있어서는 검정쌀밥 (3.80), 일품음식류는 볶음밥 (4.05), 면류에 있어서는 스파게티 (4.21)의 기호도가 가장 높게 나타났다. 국 및 찌개류에 대한 기호도는 갈비탕 (4.10), 김치찌개 (3.99), 된장찌개 (3.92), 순두부찌개 (3.79), 육개장 (3.78)의 순으로 나타났고 동태찌개 (2.72)와 북어국 (2.61)은 보통 이하의 기호도를 보였다. 조사대상의 부식류에 대한 기호도에 있어서는 찜류 (3.95), 튀김류 (3.87), 볶음류 (3.57), 김치류 (3.54), 구이류 (3.49), 조림류 (3.27)의 순으로 나타났고 무침류는 3점 미만인 2.89를 나타내 보통 이하의 기호도를 보였다. 메뉴 아이템에 있어서는 갈비찜 (4.24), 닭튀김 (4.23), 닭볶음 (4.19), 돈까스 (4.17), 탕수육 (4.10), 돼지고기볶음 (4.04)의 순으로 높은 기호도를 보였고, 5점 만점에 대해 4점 이상을 나타냈으며, 콩조림 (2.94), 시금치무침 (2.94), 애호박무침 (2.89), 느타리버섯볶음 (2.84), 생선구이 (2.81), 마늘쫑무침 (2.69), 취나물무침 (2.67), 청경채 겉절이 (2.71), 톳무침 (2.65), 생선조림 (2.63), 건파래 무침 (2.59)은 5점 만점에 대해 3점 미만을 나타내 보통 이하의 기호도를 보여 생선이나 채소류보다 육류를 이용한 음식에 대한 기호도가 높음을 알 수 있었다. 후식류에 있어서는 쥬스류의 기호도 (4.52)가 가장 높았고 요구르트 (4.50), 생과일 (4.42), 빵류 (4.33), 우유 (4.08), 떡류 (4.01)의 순으로 나타났으며 빵류 (p < .05) 와 떡류 (p < .01)에 대해 남학생보다 여학생의 기호도가 유의적으로 높게 나타났다. 조사대상의 메뉴 기호도는 기숙사급식 만족도 (r = 0.369), 메뉴 품질 (r = 0.348), 서비스 및 위생 (r = 0.344), 끼니별 급식 만족도 (r = 0.418), 제공된 음식 섭취량 (r = 0.220)과 정 (+)의 상관관계를 (p < .01), 기숙사급식 만족도는 메뉴품질 (r = 0.944), 서비스 및 위생 (r = 0.931), 끼니별 급식 만족도 (r = 0.707)와 다소 높은 정 (+)의 상관관계를 (p < .01), 메뉴품질은 서비스 및 위생 (r = 0.758), 끼니별 만족도 (r = 0.717)와 다소 높은 정 (+)의 상관관계를 (p < .01), 서비스 및 위생은 끼니별 급식 만족도 (r = 0.604)와 정 (+)의 상관관계를 나타냈다 (p < .01). 이상의 연구결과를 토대로 살펴볼 때, 기숙사급식에의 의존도가 높은 기숙사생들이 영양적으로 균형 있는 음식을 섭취하고 올바른 식습관을 형성할 수 있도록 다각적이고 체계적인 영양교육이 병행되어야 하며 배식량 및 배식방법 등을 개선하고 다양한 조리법 및 이벤트 메뉴 등을 개발하는 등 학생들이 성장기에 필요한 영양소를 충분히 섭취할 수 있도록 다양한 방안이 모색되어야 할 것으로 사료된다.

임산부의 산전관리와 산욕기 영양실태에 관한 연구 (Clinical Study on Prenatal care, and Dietary Intakes for Pregnant Women and new Mothers)

  • This study was projected to provide basic data on prenatal care for future direction in maternity and child care, and also to investigate the diet of women during pregnancy and the period directly afterwards in order to offer to mothers appropriate advice for the improvement of nutritional standards. A clinical study on prenatal care was based on 1054 delivery cases. A nutritional survey was performed on 174 mothers admitted to the department of obstetrics at St. Mary's Hospital during the period of March, 1975 to February, 1976. The results obtained are summarized as follows; I. Clinical study on prenatal care 1) The age distribution showed 59.4% of the mothers were between the ages of 25 to 29 years old. 2) The gestational period was highest between the 37th and 40th gestational weeks. 33.7% of the mothers were primigravidae and 31.8% of them primiparae. 3) 41.3% of the mothers had not received prenatal care or had only received it once before. 4) Induced deliveries were 61.8% and spontantaneous deliveries 38.2%. 61.9% of the mothers had received prenatal care, while those without prenatal care accounted for 61.6% of the total induced deliveries. 5) Low birth weights were 7.7% and 5.0% of the mothers had received prenatal care, while 11.5% had no prenatal care. 6) There were 1.13% of still births, 0.32% of the mothers had prenatal care and the remainder did not have prenatal care. 7) Of those receiving prenatal care, 2.1% showed in the $0{\sim}3$ Apgar score group, 6.3% in the $4{\sim}6$ Apgar score group, and 91.6% in the $7{\sim}10$ Apgar score group. Among the non-prenatally cared for group 5.0% of the newborns were in the $0{\sim}3$ Apgar score group, 9.7% were in $4{\sim}6$ Apgar score group and 85.3% were in the $7{\sim}10$ Apgar score group. 8) Obstetrical complications were developed in 11.86% of the pregnant women when they were hospitalized. Among the group receiving the prenatal care 8.1% of the mothers had obstetrical complications. In the group without prenatal care 17.16% of the mothers had obstetrical complications. The most common obstetrical complication was malpresentation. 9) The first prenatal care was received between the 37th and 40th gestationl weeks. II. Food intake during pregnancy The following are the results from the questionnaires of the mothers concerning diets during pregnancy; 1) Main meals and snacks In 32.2% of the cases, their main meals during the diet amounted to more than was usually eaten at other times. In 67.8% of the cases, their main meals during the diet were the same as that usually eaten. In 22.4% of the cases, snacks during the diet amounted to more than usually eaten at other times. In 77.6% of the cases, snacks during the diet were the same as usually eaten. 2) Itemized list The mothers made a special effort to include certain items in their diets, the following is a breakdown of those items; a. egg, meat, fish 33.3% b. fruit, vegetables 32.2%. c. milk, fruit juice 18.4% d. cake, bread 2.9% e. nothing special 13.2% 3) Milk 44.8% of the mothers had at least one cup of milk everyday. 33.4% of the mothers had at least one cup of milk on occasion. 15.5% of the mothers did not have any milk. 4) Vitamins 39.7% of the mothers had vitamins everyday. 24.7% of the mothers had vitamins occasionally. 35.6% of the mothers did not have any vitamins. 5) Anemic symptoms 9.2% of the mothers very often had anemic symptoms during pregnancy. 39.1% of the mothers often had anemic symptoms during pregnancy. 51.7% of the mothers did not have anemic symptoms at all. 6) Taboos on food 23% of the mothers recognized 'taboos' on food during pregnancy 27% of the mothers displayed on uncertainty about the 'taboos' on food during pregnancy 50% of the mothers displayed indifference toward the taboos. III. Nutritional survey on the new mothers diet. 1) The diets for new mothers can be divided into four categories, such as general diet, low sodium diet, soft diet and liquid diet. 2) Cooked rice and seaweed soup were the main foods for the new mothers as has been the traditional diet for Korean mothers. 3) The average diet contained 1,783g. And the average consumption of the basic food groups per capita per day was 1,265g for cereals and grains, 456g for meats and legumes, 58g for fruits and vegetables, 0g for milk and fish and 4g for fats and oils. 4) In addition to the 1,783g of food in the main diet there was also 142.8g of food taken as snacks. 5) The average daily consumption of calories and nutrients was 2,697 Kcal and 123.4g for proteins, 44.9g for fats, 718.2mg for calcium, 14mg for iron, 2,101.4 I.U. for vitamin A, 0.43mg for thiamine, 1.02mg for riboflavin, 15.88mg for niacin, 5.26mg for ascorbic acid. When these figures are compared with the recommended allowances for new mothers in Korea, the calories and nutrients taken in were satisfactory. But the intake of minerals and vitamins was below the recommended allowance.
