Development of a Continuous High-Speed Single-Kernel Brown Rice Sorting Machine Based on Rice Protein Content

  • To select kernels for breeding that have required constituent content from either naturally distributed samples or artificially mutated ones, it is necessary to process batch samples in a short time. The constituent content of single-kernel grains such as wheat and rice has been determined using conventional bench type NIR instruments; however, it takes a lot of time and effort. Shizuoka Seiki (Fukuroi-city, Japan) and NFRI (National Food Research Institute) of MAFF (Ministry of Agriculture, forestry and Fisheries of Japan) have jointly developed a continuous high-speed single-kernel brown rice sorting machine based on rice protein content. It consists of several sections such as a feeding mechanism, measuring unit, sorting mechanism and controlling PC. The feeding mechanism picks up single-kernel brown rice from the hopper (maximum of 5kg storage capacity) and sends it to the measuring unit. A spectrum of the brown rice is obtained in the measuring unit, which consists of a near-infrared array sensor. The brown rice is then sorted in the sorting mechanism based on its protein content estimated by the controlling PC. In the present study, measuring speed was approximately 500ms for the full spectrum range and overall sorting speed was approximately 2.8s for one kernel. Accuracy of estimation was approximately SEP=0.5% of dry matter protein content for nonglutinous rice.

Effect of Inoculation of Aflatoxin and Aspergillus flavus on the kernel Development and Nutrient Composition in field-grown rice (Aflatoxin 및 Aspergillus flavus의 처리가 벼의 성숙 및 쌀의 성분에 미치는 영향)

  • Two Rice cultivars , a high yield variety of Cheongcheong and a Korea native kind of Chucheong were grown in paddy. 1$\mu\textrm{g}$ and 10$\mu\textrm{g}$ of aflatoxin B1 and Aspergillus flavus (106 conidia/ml) were inoculated at milk stage. At harvest, kernels from the inoculated plant showed slightly lower ripening rates and 100-grain weight than did those of controls. The nutrient and fatty acid composition of unpolished rice of inoculated group were similar to those of controls and difference between the control and inoculated group were not significantly different.

  • This study was intended to search the thermal properties of rice which are necessary in preventing qualitative and quantitative losses in the drying and milling processes. First, the coefficient of cubical thermal expansion of brown rice was measured, which is required for analyzing the internal stress of rice, and then theoretical thermal and moisture stresses were calculated. The results are summarized as follows: 1. The coefficient of cubical thermal expansion of brown rice was about $2.81{\times}10^{-4}/^{\circ}C$ in the temperature range of $10^{\circ}C-60^{\circ}C$. 2. When the shape of brown rice was assumed to be a sphere or a cylinder, maximum thermal stress due to temperature change of $20^{\circ}C-60^{\circ}C$ was in the range of $25-100kg/cm^2$. And maximum moisture stress was in the range of $450-650kg/cm^2$ when the drying temperature was $35^{\circ}C$, initial and final moisture contents of brown rice were 20% and 14% (w.b.), and the moisture diffusion coefficient was assumed to be $6.79{\times}10^{-4}cm^2/hr$. 3. Consequently, it was concluded that crack formation in a rice kernel is mainly caused by moisture stress.

The Effect of Milling on the Nutrients of Raw and Parboiled Rices (파보일미(parboiled rice)의 이화학적 특성 1. 추청벼 파보일미의 도정 및 영양특성)

  • The effect of milling on the nutrients of raw and parboiled rice grain samples was investigated. Parboiling treatments of choo chung paddy decreased head rice yields and pressure parboiling proved to be more beneficial in reducing white belly rice. Except PP sample mean length/width ratio of parboiled milled rice kernels(8% milling degree) were more larger than raw milled rice and the extent depended on severity of parboil heat treatment. Parboiling had no effect on the protein content of browm rice(0% milling degree) but increased in 4%, 8% milling degree and in PL40 sample. Parboiled rice had a lower fat and the extent depended on degree of milling. Ash content of parboiled brown rice decreasd compared to raw brown rice and generally decreased according to milling degrees were high. Nevertheless, PP, PT40 and PL40 parboiled milled rice samples(0% milling degree) contained more ash than raw milled rice. Parboiling increased total sugar and reducing sugar and increased according to milling degrees were high. Parboiled rice had a high reducing sugar content than raw rice except for PT sample, and more contained as higher milling degree. Total amino acid content of parboiled brown rice increased compared to raw brown rice except for PL40 sample. Parboiled rice of 4% milling degree had a lower total amino acid content and then 8% milling degree had a higher than raw rice. Ca content of parboiled rice was lower than raw rice and tended to have lower as milling degree were high. Parboiled rice of 0 and 4% milling degree had a lower Fe content degree but higher in 8% milling degree. PP and PT40 samples contained more Fe than any other parboiled rice. Parboiled milled rice contained more thiamin than raw milled rice. Rice of milling degree 6% and PL sample contained most thiamin.

  • Alkali digestion value of rice kernels was increased with delayed planting date and decreased with temperature during ripening. Varietal difference in average digestion value between low and high groups of rice varieties was the greatest under the conditions of 1.4 percent solution of potassium hydroxide, early planting and day/night temperature of 30/22$^{\circ}C$ Segregation ratio of alkali digestion value in $F_2$ generation was varied with crosses showing 3:1 for nine crosses, 1:3 for one cross, 9:7 and 13:3 for two crosses respectively and non-segregation for one cross of 15 crosses between low and high varieties in the digestion value.

  • Parboiling, a popular technology used to protect rice from nutrient loss during milling and to increase the shelf-life of rice, was applied to barley kernels, and its effect on nutrient retention and chemical composition was evaluated. Before 36 days after ear emergence, barley kernels showed water content higher than 40%, and parboiling without presoaking resulted in at least 43% of gelatinization degree. This implies that soaking, an important step of parboiling, is dispensable for barley at milky stage. Parboiling did make little change in the appearance of the kernel after 31 days from ear emergence. Nonreducing sugars such as sucrose and raffinose remained unchanged while reducing sugars of barley was decreased by parboiling, with exception that maltose increased. Pearling led to decrease in crude protein, fat, fiber and minerals of barley sampled and parboiled on 36th day from ear emergence. Free sugars in the parboiled barley also was reduced with increasing pearling rate. Vitamin $B_1$ content of the parboiled barley was $260\;{\mu}g\;per\;100\;g$ as dry basis at 50% pearling rate, compared to $36\;{\mu}g$ for raw barley at same pearling rate. Thus parboiling appeared to be very effective in the retention of vitamin $B_1$ during pearling.

Effect of Grinding Method on Flour Quality in Different Rice Cultivars (분쇄 방법이 품종이 다른 쌀가루의 품질에 미치는 영향)

  • Eight rice cultivars grown in Korea were analyzed to investigate the quality of flour prepared using wet and dry grinding methods. The hardness of the kernel was related with starch damage following dry grinding but not following wet grinding. Although Chenmaai had the hardest steeped kernel, its flour exhibited minimal starch damage, a lower water absorption index (WAI), and a smaller difference between the RVA properties of wet and dry ground flour. However, Seolgan and Suweon517 are soft grains, and their flours had more starch damage and a higher WAI. In general, soft kernels produce better grinding characteristics. However, our wet grinding results indicated that grain hardness was not the main factor affecting the grinding characteristics. Even Chenmaai, with its hard kernels, had good grinding characteristics, whereas the softer kernels of Seolgan and Suweon517 did not show the appropriate grinding characteristics.

  • Rice quality is much dependent on the pre-and post harvest management. There are many parameters which influence rice or cooked rice qualitys such as cultivars, climate, soil, harvest time, drying, milling, storage, safety, nutritive value, taste, marketing, eating, cooking conditions, and each nations' food culture. Thus, vice evaluation might not be carried out by only some parameters. Physicochemical evaluation of rice deals with amy-lose content, gelatinizing property, and its relation with taste. The amylose content of good vice in Korea is defined at 17 to 20%. Other parameters considered are as follows; ratio of protein body-1 per total protein amount in relation to taste, and oleic/linoleic acid ratio in relation to storage safety. The rice higher Mg/K ratio is considered as high quality. The optimum value is over 1.5 to 1.6. It was reported that the contents of oligosaccharide, glutamic acid or its derivatives and its proportionalities have high corelation with the taste of rice. Major aromatic compounds in rice have been known as hexanal, acetone, pentanal, butanal, octanal, and heptanal. Recently, it was found that muco-polysaccharides are solubilized during cooking. Cooked rice surface is coated by the muco-polysaccharide. The muco-polysaccharide aye contributing to the consistency and collecting free amino acids and vitamins. Thus, these parameters might be regarded as important items for quality and taste evaluation of rice. Ingredients of rice related with the taste are not confined to the total rice grain. In the internal kernel, starch is main component but nitrogen and mineral compounds are localized at the external kernel. The ingredients related with taste are contained in 91 to 86% part of the outside kernel. For safety that is considered an important evaluation item of rice quality, each residual tolerance limit for agricultural chemicals must be adopted in our country. During drying, rice quality can decline by the reasons of high drying temperature, overdrying, and rapid drying. These result in cracked grain or decolored kernel. Intrinsic enzymes react partially during the rice storage. Because of these enzymes, starch, lipid, or protein can be slowly degraded, resulting in the decline of appearance quality, occurrence of aging aroma, and increased hardness of cooked rice. Milling conditions concerned with quality are paddy quality, milling method, and milling machines. To produce high quality rice, head rice must contain over three fourths of the normal rice kernels, and broken, damaged, colored, and immature kernels must be eliminated. In addition to milling equipment, color sorter and length grader must be installed for the production of such rice. Head rice was examined using the 45 brand rices circulating in Korea, Japan, America, Australia, and China. It was found that the head rice rate of brand rice in our country was approximately 57.4% and 80-86% in foreign countries. In order to develop a rice quality evaluation system, evaluation of technics must be further developed : more detailed measure of qualities, search for taste-related components, creation and grade classification of quality evaluation factors at each management stage of treatment after harvest, evaluation of rice as food material as well as for rice cooking, and method development for simple evaluation and establishment of equation for palatability. On policy concerns, the following must be conducted : development of price discrimination in conformity to rice cultivar and grade under the basis of quality evaluation method, fixation of head rice branding, and introduction of low temperature circulation.

  • Quality evaluation must be more developed in order to offer the sufficient information for producer, distribution centers buyer, consumer. There are many parameters which influence the rice quality and cooked rice. It is difficult to evaluate the quality of rice and cooked rice by only some parameters. In the case of rice quality evaluation in Korea, physicochemical inspection is performed by examining the minimum and maximum limits of brown rice recovery, moisture content, damaged kernel, and colored kernel as inspection standard. Marketing standard of rice defines the limits of perfect, white core and belly, colored, damaged kernels, and broken rice, classifying into special, excellent, and normal grades. As a research direction for the development of rice quality evaluation, establishment as parts of technical field, must be further developed as follows : more detailed measure of characters, search of unknown taste-related components, creation and grade classification of quality evaluation factors at each management stages of treatment after harvesting, evaluation as food material as well as cooking rice, method development for simple evaluation and establishment of equation for palatability. In the side of policy, the following concerns must be conducted: price discrimination in conformity to rice cultivar and grade under the basis of qualify evaluation method developed, fixation of head rice branding, and introduction of low temperature circulation.

A New High Amylose Rice Variety "Goamibyeo" (아밀로스함량이 높은 벼 품종 "고아미벼")

  • 'Goamibyeo', a mid-late maturing ecotype with high amylose content in kernels, was developed by the rice breeding team of National Yeongnam Agricultural Experiment Station(NYAES) in 2000 and released in 2001. This variety was derived from the three way cross of Milyang 95//Kimcheonaengmi/$2^*Ilpumbyeo$ (in 1992 summer) through the pedigree breeding method and designated as 'Milyang 168' in 1997. The heading date of 'Goamibyeo' was Aug. 18 in ordinary season with culm length of 85 cm. However, 'Goamibyeo' showed susceptible to bacterial leaf blight, stripe virus and leaf blast disease. The amylose content of 'Goamibyeo' in milled rice kernels is about 26.7% with translucent and clear in chalkness. Thus, 'Goamibyeo' is expected to be used as a source grain for rice noodle industries. The milled rice yield potential of 'Goamibyeo' is about 5.38 MT/ha in local adaptability test of three years and it would be adaptable to Yeongnam plain of Korea.
