대전지역 남녀 대학생의 식생활습관과 식사의 질 변화 (Differences in the Dietary and Health-Related Habits and Quality of Diet in University Students Living in Daejeon)

  • This study was investigated the differences in the dietary habits and quality of diet among 148 university students in Daejeon between 1993 (71 subjects) and 2000 (77 subjects). Among male students, there were increases in height and decreases in weight, but the number in the normal weight group assessed by the BMI, increased. Significant increases in meal regularity and the rate of considering a balanced diet at meal time and significant decreases in the rate of eating unbalanced meals were noted over time among the male students. The number of male students drinking alcohol and those drinking alcohol frequently decreased significantly. When considering differences in the nutrient intake of males according to the Korean RBA, the percentages of energy, iron, and Vitamin B$_2$ decreased, while those of Vitamin C, calcium, and phosphorus increased over time. The NAR (Nutrient Adequacy Ratio) of most nutrients, especially in iron and Vitamin C were higher, than those of 1993, but the NAR of calcium, iron, Vitamin B$_2$, niacin and MAR (Mean Adequacy Ratio) were lower than 0.75 in the males. The INQ (Index of nutritional quality) of Vitamin C was higher than that of 1993, and the mQ of calcium and Vitamin $B_2$ were lower than 1 among the males. Among the females, there was no change in height and weight between 1993 and 2000, but the normal weight group, as assessed by the BMI, increased as among the males. However, unlike among the males, significant decreases in meal regularity and significant increases in the rate of alcohol drinking were noted over time. The intake of energy and nutrients showed trends similar to those among the males. The NARs of most nutrients were lower than those of 1993 among in the females. The INQs of protein, calcium, Vitamin $B_1$ and Vitamin C increased significantly, but the INQs of calcium, iron, and Vitamin $B_2$ were lower than 1 among the females. From these results, we found that male students showed relatively desirable changes over time in their dietary and health-related habits and the quality of their diets, while female students showed undesirable changes in their dietary and alcohol drinking habits and the quality of their diets.

비비만과 비만 초등학생의 식사상황 및 음식기호도 비교분석 (Comparative Analysis on Meal and Food Preference between Non-obese and Obese Elementary School Children)

  • This study was carried out to find out differences about meal conditions and food preference between non-obese and obese elementary school children. Ten children(non-obese 5 and obese 5) from each of the nationwide 192 schools were surveyed by self-developed questionnaire. Total of 1,767 questionnaires(815 from non-obese and 952 from obese children) were collected and data were analyzed using SPSS 12.0 program. The results of the comparative analysis were summarized as follows. There was not significantly different in height between non-obese $group(151.0{\pm}12.5cm)$ and obese $group(151.2{\pm}12.3cm)$. But BMI was significant difference between non-obese $group(18.0{\pm}2.2cm)$ and obese $group(27.3{\pm}3.2cm)$. Economical status was not significantly different between 2 groups. But educational level of parents and mother’ job were significant differences between 2 groups. Only 2/3 of the subjects reported to have breakfast at regular basas, regularity of having breakfast was not significantly different between 2 groups. Also regularity of having lunch during vacation was not significantly different between 2 groups. But Reasons of skipping breakfast and lunch were significantly different between 2 groups. Regularity of having dinner, reasons of skipping dinner, intake amount in dinner, and frequency of having snacks were significantly different between 2 groups. But the time required for lunch and dinner were under 20 minutes of 60-80% of the subjects, and were not significantly different between 2 groups. Non-obese group have liked fast foods, fruits & juices, sweets, and cakes & cookies than obese group. Obese group have liked meat & meat products and ramyeon, but they have not eaten those foods frequently because of anxiety about being more fatty. These findings suggested that nutrition education programs include different strategy according to obesity and obese prevention program is needed for non-obese school children.

전남 무안 농촌지역 주민의 식습관 실태조사 연구 (A Study on the Dietary Habit in Residents of Rural District Muan of Chonnam)

  • This study was to investigate dietary habit for residents in the rural area of Chonnam, Muan. The subjects were composed of $61.2\%$ male and $38.3\%$ female (510 adults). In regularity of meal time, $56.3\%$ of the subjects had meals regularly. The older people were significantly higher than the younger people at regular intervals of meal times (p < 0.0001) . The majority of the subjects had appropriate meal amounts. $73.5\%$ of the subjects had balanced diets. Unbalanced diet was higher in younger people than in older people. The highest frequency to dining out was once a month and the lower age was significantly higher than older age (p < 0.001) When dining-out, the most important criteria for selecting a meal was the taste of food. $62.4\%$ of the subjects ate meat and greasy animal food more than once a week. The younger in age and higher in educational levels have increased meat intake frequency. In the eating methods of animal fat, $37.5\%$ of the subjects were high by eating generally untouched. The older in age, lower in education level have more increased animal fat intake frequency. $60.7\%$ of the subjects took snacks. The kinds of snacks were fruits, coffee, alcoholic drinks, candies and confectioneries, drinkables and tea, milk and dairy products, in order. Consequently, nutrition education is for them with special emphasis on regularity of meal times, unbalanced diets, dining-out and snacks to the younger people, whereas it is the necessary eating methods of animal fat and snacks to the older people.

춘천시 고등학생의 식습관과 건강관련 행동에 관한 연구 (A Study on the Food Habits and Health-related Behaviors of High School Students in Chunchon)

  • The purpose of this study is to investigation the eating habits and health-related behaviors of adolescent students. 700 students are randomly selected in 6 high schools in Chunchon area. The most students take three meals a day. but most of girl students take less two meals a day or often go without a meal. There are the tendency that boy-students are more satisfied with their meal habits, but they have the health problems caused by irregular meals. There are more boy-students have the regularity of meal habits than girl students. and the former have the more tendency of going without a meal than the later which shows that girl-students have to give more attention to their health management. Their sleeping hours are not enough to recover the tiredness. The higher grads they are in the less time they have to take a rest. The tenth grads students are shown to feel the most serious stress. but have few opportunities to take a medical examination, which means that we have insufficiency of health education as a precautionary measures. Accordingly, it is important that teachers have to provide students with education of good meal habit which is fit to their real life. In modern times, as there are the tendency that more women participate in the social activity. we will reinforce the education that the boy-students may take active part in the health management without distinction of the roles between boy and girls-students.

식품영양학 전공 여대생과 비전공 여대생의 외식산업식품에 대한 식생활 태도 조사 (A Study of Dietary Attitude on the Product of Food Service Industry in Nutrition Major and Non-Major College Women)

  • This survey was carried out to investigate the effects of dietary attitude on the nutrition knowledge, food habits and the intake of instant food, convenience food and fast food between two groups of college women, a nutrition major group and nutrition non-major one. Questionnaires were completed by 214 nutrition majors and also by 145 non-majors. Nutrition majors showed better average in meal time regularities per week than nutrition non-majors. And nutrition non-majors had a higher frequency rate in taking of instant food and fast food than nutrition majors. In the case of both college women, those who take a meal regularly at each meal times have a higher score in food habits. The women who ate instant foods more frequently got a lower score in food habits, bot the frequency of the intake of instant foods did not affect the score of nutrition knowledge On the other hand, the women who had fast foods more frequently got a higher score in food habits and lower score in nutrition knowledge. When college women have a little of nutrition knowledge, they have a tendency to keep their meal time regularity and right dietary attitude pattern. In the dining-out pattern, the college women liked to eat flour foods and they preferred western foods than Korean foods. The motivation of food selection was for convenience and for time saving which were the reason for satisfaction to the products of food service industry. The products of food service industry were found to be unsatisfactory in nutrition and sanitation. Therefore, we must be mute aware of preventing the disappearance of Korean traditional foods and for developing dietary culture successively, the products of food service industry which are more suitable for Korean should be developed.

부산, 경남지역 청각장애 고등학생의 영양지식, 식행동 및 영양소 섭취 상태 (A Study on the Nutrition Knowledge, Dietary Behaviors and Nutrient Intakes of the Deaf-mute High School Students)

  • This study was conducted to provide basic information on the nutritional status and dietary behaviors of the deaf teenagers. The subjects of this study were 87 deaf-mute high school students in Pusan and Kyung-nam area and, in comparison,90 general high school students in Ham-an area. The survey was investigated by using a self-administered questionnaire. The results were as follows: Deaf-mute group was consisted of 63.2% male and 36.8% female, and mean of height and weight of male were 171.2 cm and 61.9kg, female were 158.0cm and 51.7kg. Obesity index and body mass index (BMI) were normal range in both deaf-mute and normal groups. The average nutrition knowledge score of the deaf-mute group was 6.8 $\pm$ 1.5 out of possible 10 points, that was significantly lower than 7.3 $\pm$ 0.8 of the normal group (p<0.01). The mean of self-control and conscious control scores in the eating behaviors of the deaf-mute group were 2.6 $\pm$ 1.2 and 2.4 $\pm$ 1.3 out of possible 5 points from each item, which was significantly higher than 2.1 $\pm$ 1.3 and 1.8 $\pm$ 1.4 of the normal group (p< 0,01). Nutrients consumed below 90% of Korean RDA were energy (79.9%), Ca (71.5%) for deaf-mute male students and Ca (88.5%) for deaf-mute female students. Energy (71.4%), protein (87.8%), Ca (74.8%), vitamin B$_1$ (83.4%) intake of normal male students and energy (72.8%), Ca (71.2%), Fe (78.7%) intake of normal female students were below 90% of Korean RDA. Energy, protein, fat, vitamin B$_1$, niacin intake of deaf-mute male students were significantly higher than normal male students and all nutrients intake of deaf-mute female students were significantly higher than normal female students. By the correlation of nutrients intakes with nutrition knowledge, there was positive correlation with the intakes of Ca, Fe, vitamin A, vitamin B$_2$, and vitamin C in the deaf-mute group, while there was negative correlation with the nutrients intakes (except for protein and fat) in the normal group. The amount of meal, breakfast, regularity of meal time, frequency of snacks showed a positive relation to nutrient intakes in deaf-mute group and amount of meal, breakfast, regularity of meal time, frequency of overeating showed a positive relation to nutrient intakes in normal group. The nutrition knowledge had no correlation with food habits or eating behaviors in both groups.(Korean J Nutrition 35(9) : 982~995, 2002)

광주지역 일부 초등학교 3학년 아동의 식습관의 영양소 섭취량 (The Eating Behaviors and Nutrient Intakes of Third Grade Primary School Children in Kwangju)

  • The purpose of this study was to determine eating behaviors and nutrient intakes of 256 third grade primary school children(134:boys, 122:girls) in Kwangju. There were no significant differences in the heights, weights, physical circumferences measurements between the boys and girls, but the skinfold thickness measurements were significantly different. Most nutrient intakes were higher than the Rec ommended Dietary Allowances but the intake of energy, calcium, and vitamin E were lower than the RDA. The intakes of calcium, niacin, and vitamin E of the girls were significantly lower than those of the boys. With regard to meal volume, 13.6% of the subjects has been 'much'. With regard to meal speed, 24.6% of the subjects has been 'fast'. The study also found that 50% of the subjects skipped breakfast, 67.6% of the subjects had irregular meal times, 64.6% of the subjects ate snacks after dinner and 85.9% of the subjects ate snacks. These results show that the nutrient intake of children was related to snack eating more than regular meals. With regard to dietary behavior and nutrient intakes, meal volume, meal speed, skipping breakfast, eating snacks and eating snacks after dinner were major influences. But regularity of meal time was not influence on nutrient intakes. These results suggest that children's eating behaviors are in needs of correction. This reasserts the importance of nutrition education to children through teachers, parents and dietitians. The findings of this study should be applied to nutrition education to ensure better physical fitness of children.

여대생과 그들 어머니의 외식산업에 대한 식생활 태도 조사 (A Survey of Dietary Attitude on the Food Service Industry in college women and Their Mothers)

  • This survey was carried out to Investigate the effects of dietary attitude on the nutrition knowledge, food habits, the daily average nutrient Intakes and the intake of Instant food, convenience food & fast food between college women and their mothers. Questionnaires were completed by 214 college nutrition majors and also by their mothers numbering at 173. College women's mothers showed a better average in meal time regularities per week than that of. college women. Also it is the fact that the college women had a higher frequency rate of instant food and fast food than their mothers. In the case of both college women and mothers if they eat at regular meal times they had a higher score in food habits. But the daily average nutrient intakes was not significant because of the fact that the meal time regularity and nutrient intakes 414 not concise. The higher frequency of instant food intake had a lower score in food habits and nutrition knowledge. The higher frequency of fast food Intake had a higher food habits score but it also had a lower score in nutrition knowledge. As in the intake of instant food and convenience food the college women had a higher Intake frequency. In the dietary pattern the college women they liked to eat (lour foods. But their mothers liked to eat Korean foods. The selective motive and the degree of satisfaction of food service industry product was for convenience and time saving. The food service industry products were found to be unsatisfactory in nutrition and sanitation. Therefore we must be more aware of preventing the disappearance of Korean traditional foods. For the continuing development of our dietary culture we need to have the food service industry to develop more suitable diet for Korean.

광주지역 일부 초등학교 저학년 아동의 식습관과 영양소 섭취량 및 혈액성상에 관한 연구 (The Eating Behaviors, Nutrient Intakes and Hematological Status of the Lower Grade Primary School Children in Gwangiu)

  • The purpose of this study was to examine height, weight. chest circumference, sitting height, hematological status. eating behaviors and nutrient intakes for the lower grade primary school children in Gwangju. The subjects consisted of 76 boys and 60 girls aged 9 years old. Height, Weight, Chest circumference, Sitting height, Hct, WBC, RBC, Hb, serum GOT, GPT and cholesterol were measured. With regard to regularity of meal time, 66.7% of the subjects has been 'regular'. With regaled to amount of eaten food, 100.0% of the subjects has been 'moderate'. With regard to nutritional balance, 66.6% of the subjects has been 'think,but do not practice'. The study also found that 100.0% of the subjects skipped breakfast, liked korean food. Their dietary intake vase assesed for 1 day by means of 24 hours dietary recall method. The mean energy intake of the subjects was 1,306 kcal. The subjects consumed 47.9g protein, 28.8g lipid, 3.9g fiber, 446.9mg calcium, 835.0mg phosphorous, 7.9mg iron, 3,721mg sodium, 1.863mg potassium, 362.3RE retinol, 0.8mg thiamin, 1.1mg riboflavin, 10.8NE niacin, 93.9mg ascorbic acrid and 173.5mg cholesterol respectively. Energy, protein, calcium, iron, retinol, thiamin, riboflavin and niacin intake was lower than the Korean RDA. There were positive correlations between meal time and protein intake or fat intake or fiber intake or iron intake or retinol intake : negative correlations between meal time and sodium intake negative correlations between saltiness and cholesterol intake positive correlations between use of perilla seeds and riboflavin intake or niacin intake : negative correlations between energy intake or carbohydrate intake or phosphorous intake : negative correlations between frequency of eating-out and protein intake or fat intake or fiber intake or iron intake or retinol intake or thiamin intake or riboflavin intake or niacin intake.

충남 지역 일부 대학생의 생활 스트레스가 식사행동에 미치는 영향 (The Effect of Life Stress on Eating habit of University students in Chungcheongnam-do Province)

  • The purpose of this dissertation is to analyze the factors which university students feel as stress in their daily life and the correlation between these and their eating habits. The subject are students enrolled at 'H' university in Asan. There are 801 students who response for this research. We surveyed and analyzed the correlation between the life stress and eating habit of university students. It is analyzed that the objects suffered stress most by 'schooling' and 'job complication.' Surveying the general eating habit of university students, it is found that they do not eat meal regularly, i.e., 'average meals (40.9%)' and 'irregular meal(35.2%).' No significant difference was observed in the regularity of meals between sexes. When it comes to overeating or voracity, male students answered 'sometimes(77.6%)' or 'often(22.5%)', but female students answered 'sometimes(66.2%)' or 'often(28.2%)', which means that female students are more frequent in overeating or voracity. The frequency of eating snack is more than once a day 60.1% in female students and 47.3% in male students, which shows that the rate of female students is much higher than that of male students. Surveying the correlation between stress that male and female university students suffer and the regular meal, we found that both of them tend to eat meal irregularly if they are stressed. Comparing the stress for its factor, male students eat meal irregularly if they are stressed by 'schooling' and female students eat meal irregularly if they are stressed by 'figure.' Checking the correlation between stress and time spent for meal, it is found that while male students eat meal in a hurry when they are stressed by 'job affair', female students do so when they are stressed by 'home economy. Analyzing the correlation between frequency of snack and stress, both male and female tend to eat snack more frequently when they are stressed more. In general, males like the oily food more than male, but when students get stresses, females want to eat oily food than male. Analyzing the correlation between stress and preferential menu, males like green vegetables, sea food in the life get less stresses than others Females like a menu of meat get higher stress than others.
